Here is an easy to use recipe that guides you through the process of making and canning applesauce cake. The process described in this book can be used to can any type of cake.

2: This is a wonderful applesauce cake recipe that I have modified so it could be made into canned cake. This recipe came from the fourth addition of, A Taste of the Country cookbook.

3: Set out the ingredients called for in the recipe 30 minutes before you plan on starting. This way they can reach room temperature. | It is also a good idea to set out the equipment you are going to need beforehand.

4: Have clean mason jars ready to fill. | Get out your measuring spoons and cups. | Preheat the oven to 350 degrees.

5: The first step in the recipe is to cream the butter and brown sugar together until it is light and fluffy.

6: Now add the eggs and beat well.

7: Now get a different bowl | Put flour, baking soda, salt, nutmeg, cinnamon, and cloves. | Sift

8: Now put half of the flour mixture into a different bowl | Stir pecans and craisins into one half of the flour mixture

9: Stir in the remaining flour mixture and applesauce into the wet mixture and mix well. | Add nuts and raisins mixture. Stir ONLY enough to blend.

10: Spray clean mason jars with Pam | Pour mixture into mason jars | Clean off the tops of jars.

11: Place mason jars into a pan filled with one inch of water. | Check to see if the oven says 350 degrees on it. | Place pan with mason jars in it into the oven and set the timer for 30 minutes.

12: Get your bamboo stick ready. Or whatever implement you are going to use to check if the cake is done. | When the timer goes off pull out the oven rack and insert your bamboo stick into the cake. If your stick comes out clean then the cake is finished. If it comes out gooey then put the cake back in for 10 minute intervals until it is finished.

13: Make sure you have your sealing lids and tops ready | When cake is finished quickly place the sealing lids and screw on tops on the jars. As the cake cools it will seal the jar.
