2: Soda Biscuits
3: Ingredients: 1 C Butter 2 C Sugar 3 Eggs 1 C Sour Milk = 1 C Milk + 1 tsp Vinegar 6 C Flour 2 tsp Baking Powder Dash of Salt 2 tsp Baking Soda Dash of Nutmeg | Directions: Sift together dry ingredients. In separate bowl, cream butter and sugar, add eggs one at a time, mixing well between each. Slowly add dry ingredients to butter. Slowly add sour milk until absorbed and mixed. Dough should pull away from sides of bowl, not too sticky. Do not over mix. On floured surface, roll out portions of dough to 1/4 inch thick. Cut shapes with cookie cutters. Center of cookie should be raised and not wet looking. Bake: 350 degrees for 8-10 minutes, until lightly brown | Frosting Ingredients: 4 C 10x Sugar 1/2 C Soft Butter 3 to 4 T Milk 2 tsp Vanilla Directions: Mix well.
5: Ingredients: 3/4 C Butter, Softened 8 oz Cream Cheese, Softened 1 Egg, Separated 2 C Flour 1 T Baking Powder Directions: Cream butter, cream cheese and egg yolk. Stir in flour and baking powder. Mix until stiff dough forms. Refrigerate for 1 hour. On lightly floured surface, roll dough. With sharp knife cut into 3 inch squares. Place 3 inches apart on ungreased cookie sheet. Brush with egg white. With sharp knife, cut the dough diagonally from each corner to within 1/2 inch of the center. Sprinkle with colored sugar. Fold alternate corners of the square to the center to form pinwheel. Bake: 350 degrees for 9-12 minutes
6: Orange Drops
7: Ingredients: 2/3 C Butter 3/4 C Sugar 1 Egg 1/2 C Orange Juice 2 T Grated Orange Rind 2 Cups Flour 1/2 tsp Baking Soda 1/2 tsp Baking Powder 1/2 tsp Salt Directions: Preheat oven to 400 degrees. Mix shortening, sugar and egg thoroughly. Stir in orange juice and rind. Blend in dry ingredients. Drop by teaspoonful 2 inches apart on ungreased cookie sheet. Bake. Cool. Frost. Bake: 400 degrees for 8-10 minutes, until lightly brown edges | Frosting Ingredients: 2-1/2 T Butter 1-1/2 C 10x Sugar 1-1/2 T Orange Juice 2 tsp Grated Rind Directions: Blend butter and sugar. Stir in orange juice and rind until smooth.
9: Ingredients: 1 C Margarine 8 oz Cream Cheese 2 C Sugar 2 Egg 2 tsp Vanilla 3 C Flour 1 tsp Baking Powder 1 tsp Salt 1/4 tsp Baking Soda Add to Divided Dough: 1 C Cocoa 1-1/2 C Flour Directions: Cream together margarine, cream cheese, sugar, egg and vanilla. Mix in flour, baking powder, salt and baking soda. Divide dough in half. Put in 2 separate bowls. Add cocoa to first half and add flour to second half. Divide cocoa dough in half and divide vanilla dough in half to make 4 total batches of dough. Roll a batch of cocoa dough out on wax paper. Roll out a batch of white dough on floured table. Each should be same shape and thickness. Flip wax paper cocoa dough over onto white dough, remove wax paper and roll up. Roll in the direction that will make the longest roll. Repeat with second batch. Chill for 2 hours. Slice into inch pieces. Sprinkle with sugar, optional. Bake: 350 degrees for 12-15 minutes
10: Ricotta Biscotti
11: Ingredients: 1/2 lb Soft Butter 2 C Sugar 3 Eggs 4 C Flour, Sifted 1 tsp Baking Soda 1 tsp Salt 1 lb Ricotta Cheese 2 tsp vanilla Directions: Cream together butter and sugar. Add eggs one at a time, beat well after each. Start and end with flour. Add Flour, baking soda, salt and ricotta. Mix well so cheese is mixed in thoroughly. Add vanilla. Mix well. Drop by teaspoonful onto greased cookie sheet. Cool. Frost. Bake: 325 degrees for 15 minutes | Frosting Ingredients: 8 C 10x Sugar 1 C Soft Butter 6 to 8 T Milk 4 tsp Vanilla Directions: Mix well.
12: Peanut Butter Kisses
13: Ingredients: 1/2 C Crisco All Vegetable Shortening 3/4 C Peanut Butter 1-1/4 C Firmly Packed Light Brown Sugar 3 T Milk 1 T Vanilla 1 Egg 1-3/4 C Flour 3/4 tsp Salt 3/4 tsp Baking Soda Sugar Hershey Kisses Directions: Combine shortening, peanut butter, brown sugar, milk and vanilla in a large bowl. Beat at medium speed until blended. Add egg, beat just until blended. Separately combine flour, salt and baking soda. Add to creamed mixture at low speed. Mix just until blended. Make quarter-sized dough balls. Roll ball in sugar and place 2 inches apart onto ungreased cookie sheets. Bake. Once removed from oven press a Hershey Kiss in to center of each cookie. Bake: 375 degrees for 7-8 minutes
14: Pecan Tarts
15: Ingredients: 3 oz. Cream Cheese, Softened 1 C Flour 1/4 lb Butter, Softened Directions: Mix cream cheese, flour and softened butter. Grease tart pans. Place and shape dough in tart pans to form cups. Layer of dough should be thin. Mix filling ingredients separately and fill tarts half way with a spoon. Bake: 350 degrees for 20 minutes | Filling Ingredients: 1 Egg 1 C Brown Sugar 1/2 tsp Salt 1 tsp Vanilla 2 T Butter, Melted 3/4 Cup Pecans, Chopped
16: Thumb Prints
17: Ingredients: 1 C Butter 1/2 C Sugar 4 Egg Yolks 2 C Flour 1/2 tsp Salt 1 tsp Vanilla Directions: Cream together butter and sugar. Add egg yolks one at a time, beat thoroughly after each. Blend in flour, sugar and vanilla. Form dough into 1 inch balls and place on greased cookie sheet 1-1/2 inches apart. Press thumb in center of each ball to make indentation to hold filling. Bake. Cool. Fill. Bake: 325 degrees for 25 minutes | Chocolate Filling Melt 4 oz semi-sweet chocolate with 2 T butter. Jelly Filling Currant jelly or a thick preserve.
18: Chocolate Crinkles
19: Ingredients: 1/2 C Oil 4 Squares Unsweetened Chocolate, Melted 2 C Sugar 4 Eggs 2 tsp Vanilla 2 C Flour 2 tsp Baking Powder 1/2 tsp Salt 10x Sugar for Rolling Directions: Mix oil, chocolate and sugar. Add eggs 1 at a time, beat thoroughly after each. Mix in remaining ingredients. Refrigerate for 3 hours. Make 1 inch balls and roll in 10x sugar. Place on greased cookie sheet 2 inches apart. Bake. Bake: 350 degrees for 6-7 minutes, until not wet in center
20: Sand Tarts
21: Ingredients: 1-3/4 C Flour 1/4 tsp Salt 2 tsp Baking Powder 1/2 C Shortening 1 C Sugar 1 Egg, Beaten 1/2 tsp Vanilla 1 T Milk Directions: Sift flour, salt and baking powder into large bowl. In separate bowl, cream together shortening and sugar then add beaten egg and vanilla. Mix wet and dry mixes together plus milk. Roll out thin and cut with cookie cutters. Place cut outs on cookie sheet, brush with egg white and decorate with an assortment of sprinkles. Bake: 375 degrees for 12 minutes
