1: Merry Christmas Mom Love, Anya 2008 | Dinner after dinner, as the weather changed we enjoyed, were warmed, comforted by staples, meals we love, count on hearty beef stew, shepherd's pie, steak and potatoes, lasagna, cheese cake Mmmm, so good, smiles welling up on the family’s faces, shining in the glow of the warm feelings of our tummies after the fruits of her labors slice past the tastebuds, knowing the skill and finesse, expressions of love, coming in the next one or in seconds tonight | 1

2: Teriyaki Steak Marinade 2 cloves minced garlic 1 cup green onion tips 1 oz vegetable oil 1 oz vinegar 3/4 cup sugar 1/4 cup worcestershire sauce 1 cup soy sauce | Mix enough 3 lb steaks Marinade overnight Grill | 2

3: Pepper Steak 1 lb round steak 1 tbls paprika 2 tbls oleo 1 tbls garlic salt 1 1/2 cup beef broth 1 cup sliced green onions and tops 1 green pepper 2 or 3 tbls corn starch 1/4 cup cold water 1/4 cup soy sauce | 1. Pound round steak until tender with meat hammer 2. Cut into thin strips 3. Put in bowl and sprinkle with paprika and garlic 4. Mix in 2 or 3 beef bullion cubes in 2 cups of water. Heat to boiling 5. Cut onions up-green ends and all. Cut both ends off 6. Core and slice green peppers into long strips 7. Brown meat in oleo in pan 8. Add broth-cover and simmer on low for 30 min 9. Stir in onions and peppers. Cook for 5 min 10. Mix water, soy sauce, and corn starch together 11. Slowly stir into broth contantly until thick | 3

4: Marinated Beef 1-2 cups liquid (soda, wine, etc.) 2-3 lbs rib eye beef 1/2 cup soy sauce garlic powder 2-3 tbls sesame seed oil pepper 1/2 cup brown sugar | 4

5: Mongolian Beef 1 small onion snow peas carrot green pepper sesame oil to taste soy sauce Serve over cooked rice | 5

6: 1/3 cup olive oil 1 tsp dried thyme leaves 1 tsp minced fresh garlic 1/2 tsp salt 1/4 tsp ground black pepper 1 lb mixed fresh mushrooms, quartered 2 large onions, each cut into 8 wedges 1 large sweet red bell pepper, cut into 1 inch chunks 2 lbs PA beef tenderloin 1/2 cup dry red wine | 1. Preheat oven to 450 degrees 2. Combine olive oil, thyme, garlic, salt, and pepper 3. Toss together mushrooms, onions, red pepper, and 1/4 cup of the oil mixture in baking pan 4. Place a baking rack over the mushrooms; place tenderloin on rack 5. Roast, brushing beef twice with remaining oil mixture, until meat is done as desired 6. Remove beef and spoon mushroom mixture onto a serving platter 7. Place baking pan over medium heat, add wine, and cook 8. Stir frequently for 2 min to loosen brown bits from bottom of pan 9. 7: Swiss Steak Poke and beat steak Add flour Add kitchen bouquet Add cream of mushroom soup Brown and simmer in a frying pan Put in the oven at 250 degrees Cook for 2-3 hours | 7

8: Preheat oven to 300 degrees Use 7 lb roast Put on heavy duty double thick aluminum foil Place 1/2-1 pkg dry onion soup over Wrap tightly especially at seams Place pkg in pan Bake 3 1/2-4 hours DO NOT OPEN FOIL WHILE COOKING | Chuck Roast | 8

9: Taco Salad 1 bag salad mix 1 lb ground beef (browned) shredded cheese tortilla chips 1 green pepper 1 tomato 6 oz french dressing 1/4 cup corn relish 1/2 pkg taco seasoning (powder) | 9

10: 1 lb ground beef 1/2 cup chopped onion 1 tbls vinegar 3/4 cup ketchup 1/2 cup celery 1 tbls brown sugar 1/2 tsp dry mustard 2 tbls flour | S l o p p y | Put ground beef in skillet Stir and brown over medium heat Pour off fat Add the celery, onions, brown sugar, vinegar, mustard, and ketchup Stir to mix well Simmer about 20 min | J o e s | 10

12: Sweet and Sour Meatballs 2 cups water 1 cup orange juice Bring to boil Add corn starch to thicken 1 cup brown sugar 1 28 oz bottle ketchup 1/2 cup vinegar Can add carrots, onions, and green peppers | 12

13: Meatloaf with Mushrooms and Sour Cream | 1 lb mushrooms sliced 1/4 cup butter 2 tbls flour 1/4 tsp ground nutmeg 8 oz sour cream 1 cup fresh bread crumbs 1/2 cup grapefruit juice | 1. Saute mushrooms in butter in a large skillet until tender, 4 mins 2. Sprinkle with flour and nutmeg. Cook while stirring for 1 min 3. Remove from heat and stir in sour cream 4. Combine bread crumbs, grapefruit juice, ketchup, eggs, w. sauce, beef, onion, dill, salt, and pepper in a large bowl 5. Spoon 1/2 of the meat mixture into a lightly greased loaf pan -Make a wide and shallow indentation down center of mixture -Spoon about 1/3 of th mushroom mixture into center, spreading evenly -Spoon remaining meat mixture over filling, cover completely 6. Bake at 350 degrees for 1 hour, remove from oven, and invert onto serving platter 7. Thin remaining mushroom mixture with a little milk if nec., heat over low heat, and serve as a sauce with the meatloaf | 1/4 cup ketchup 2 eggs 1 tbls worcestershire sauce 2 lb ground meat 1 med onion chopped 2 tbls chooped fresh dill or 1 tsp dried dill 1 1/2 tsp salt 1/2 tsp pepper | 13

14: 4 to 6 lbs pork loin roast 1/2 cup chopped onion 3 tbsp vegetable oil 3/4 tsp paprika 3/4 cup water 3/4 cup ketchup 1/2 cup cider vinegar 3 tbls brown sugar 4 tsp worcestershire sauce 3/4 tsp dried oregano 3/4 tsp garlic salt 1/2 tsp salt 1/4 tsp dry mustard 1/8 tsp black pepper 1/8 tsp ground cloves | Preheat oven to 325 degrees Place loin on rack in roasting pan Roast 3 to 3 1/2 hours Meanwhile make barbeque sauce: Cook onion in hot oil until tender Add remaining ingredients and mix Simmer 15 min Baste meat with sauce several times during last 30 min of roasting Serve remaining sauce with meat | Barbeque Pork Loin | 14

15: Baked Ham and Cheese Fondue 2 cups white bread cubes 1/4 cup melted butter 1 1/2 cups cooked ham 1/2 cup red pepper cubes 8 eggs 2 cups grated cheese 1 1/2 cups milk 1 can creamed corn (8oz) 1/4 tsp salt In bottom of 10 inch baking dish toss together bread crumbs and melted butter Set aside 10 strips of ham In large bowl, using wire wisk brush, beat eggs until blended Add milk, corn starch, salt, pepper, cheese, and remaining ham Mix well Pour egg mixture over bread cubes Arrange 10 strips of ham Bake at 350 degrees for 35-40 min until golden brown and puffy | 15

20: Brown Bacon 1 lb bacon 9 tbls sugar 3 eggs 3 tbls flour Mix sugar, eggs, and flour in bowl Add 3 cups milk Pour over bacon Add 15 tbls vinegar Cook the bacon After it thickens, add some celery seed Cook in pot with peals Add hard boiled eggs and paprika | 20

27: Stuff cream cheese Sprinkle with jalapeno pepper Brown it on top of oven Bake it at 350 degrees for 1 hour | 1 jalapeno pepper-zip Break meat off bone Marinate in soy sauce overnight Slice in half to make pocket | G o o s e | B a k e d | 27

28: 1 pkg Rice-a-Roni long grain and wild rice 1/2 lb cooked medium shrimp 1/2 cup dried green pepper Cook Rice-a-Roni as directed on package Keep warm or chill for salad Stir in shrimp and green pepper | Wild Shrimp | 28

29: 4 slices bacon, cooked crisp 1 (12 oz) can whole kernel corn 1 med onion, thinly sliced 1 1/2 cups diced, pared, raw potatoes 1 (10 3/4 oz) can condensed cream of celery soup 1 3/4 cups milk 1 (16 oz) can cream stlye corn | 1. Reserve bacon drippings in pan 3. Drain whole kernel corn, reserving liquid 4. Add water to corn liquid to make 1/2 cup; add to drippings 5. Add onion, potatoes, and 1/2 tsp salt 6. Cover and simmer 1/4 hour or until veggies are tender 7. Add soup, milk, and corns, heat through 8. Season to taste 9. Crumble bacon over chowder | Double Corn Chowder | 29

30: Smoked Sausage Stew 1 lb smoked sausage 1 14 1/2 oz can crushed tomatoes 1 10 1/2 oz can French onion soup 2 medium PA potatoes, peeled and cubed 1/2 tsp worcestershire sauce 10 oz pkg frozen peas and carrots | Cut sausage into 1/4 in slices Brown in large saucepan Drain off fat Add crushed tomatoes, soup, potatoes, and Worcestershire sauce Bring to boiling, reduce heat Cover and simmer 10 min Stir in frozen vegetables Cook 10 min longer or until potatoes are tender | 30

31: 2 lbs raw cubed beef or venison 1 cup peeled, sliced carrots 1 cup diced onions 1 cup diced celery 2 cups diced potatoes 1 cup tomato juice or sauce salt and pepper Combine all ingredients in casserole dish Place in oven at 275 degrees for 4 hours | Beef Stew | 31

32: Golden Cream of Potato Soup 6 cups cubed, peeled red potatoes 2 cups water 1 cup sliced celery 1 cup scraped and thinly sliced carrots 1/2 cup finely chopped onion 2 tsp dried parsely flakes 2 chicken flavored bouillon cubes 1 tsp salt 1/8 tsp pepper 3 cups milk, divided 1/4 cup all-purpose flour 3/4 lb processed cheese, cubed | Combine first nine ingredients in a dutch oven Bring to a boil Cover, reduce heat, and simmer 7 to 8 min or until vegetables are tender Gradually stir 1/4 cup milk into flour making a smooth paste Stir into soup Add remaining 2 3/4 cups milk and cheese Cook over medium heat until soup is thickened | 32

33: 1 1/2 lb beef cubes 1 to 2 tbls margarine 1 quart water 1/4 tsp pepper 2 tbls minced parsely 1/4 cup barley 1 cup cubed carrots 1/4 cup chopped onion 1/2 cup chopped celery 2 cups cooked tomatoes 1 cup frozen peas | Brown meat lightly in fat in large kettle Add water, seasoning, and parsely Cover and cook slowly for 1 hour Add barley and cook 1 hour longer Add carrots, onion, celery, and tomatoes Cook 45 min Add peas and cook 15 min | Barley Vegetable Soup | 33

34: Pick over soup mix and wash Combine with water in kettle Let stand over night Prepare soup Brown diced ham, onion, and garlic in skillet Add to soup mix and soaking liquid Add tomates, broth, celery, basil, bay leaves, salt, and pepper Stir to mix well Bring to boiling, then lower heat Simmer 2 hours or until soup mix is tender | 1 cup (1 lb) Hearty Vegetable Soup Mix 4 cups water 1/2 lb diced ham 1 cup chopped onion 2 crushed garlic cloves 2 cans (13 oz) beef broth 1 1/2 cups diced celery 1 1/2 tbls basil leaves 1 can (2 1bs 3 oz) Italian plum tomatoes 2 bay leaves 1/4 tsp pepper | Hearty Vegetable Soup | 34

35: 2 tbls olive or vegetable oil 1 1/2 cups coarsely chopped onion 1 cup thin-sliced carrots 1 cup thin-sliced celery 1 cup chopped green pepper 2 tsp minced fresh garlic 4 cups cubed zucchini 1 35 oz can Italian plum tomatoes, undrained 2 13 to 14 oz cans chicken broth, or 3 1/2 cups water 2 tsp dried basil or 1/4 cup chopped fresh basil 1/2 tsp dried oregano 3 cups thin-sliced cabbage 1 20 oz can chick peas, drained 1 20 oz can red kidney beans, drained 8 oz green beans, cut into 1 in pieces (2 cups) 1/2 cup uncooked elbow macaroni salt and pepper chopped fresh parsely fresh-grated parmesan cheese | In a 7 to 8 quart saucepot heat oil over moderate heat Add onion, carrots, celery, green pepper, and garlic Cook 3 to 5 min, stirring occasionally, until onion is translucent Stir in zucchini, tomatoes, broth, basil, and oregano Cover pot and reduce heat to moderately low Simmer about 40 min, stirring occasionally Add cabbage, chick peas, kidney beans, green beans, and macaroni Simmer about 15 min longer, stirring once or twice, until cabbage and macaroni are tender Season with salt and pepper Sprinkle generously with parsely before serving | M i n e s t r o n e | 35

37: 1 lb sweet sausage or 2 lbs sausage and omit hamburger 1 lb hamburger Brown together 1 cup chopped onions 1/2 cup diced celery Mix all together in a casserole Add 1 can of each: yellow beans drained green beans drained kidney beans baked beans tomato soup tomato sauce Bring to a boil 1 cup brown sugar 1/2 cup water 1/2 tsp dry mustard 1/2 tsp chili powder Add to meat mixture Bake at 350 degrees for 1 hour | Sausage Casserole | 37

38: 1 1/2 lbs hamburger 1 large onion 1 green pepper 1 garlic clove 16 shakes tabasco sauce 1 tsp chili powder 1 10 oz can stewed tomatoes 3 15 oz cans chili beans 1 large jar cheese whiz 8 oz shredded mozzarella 16 oz pasta | In a very large skillet, sautee hamburger, onion, green pepper, garlic, and tabasco sauce Drain excess fat Add chili powder, beans, tomatoes, and cheese whiz Mix together with cooked pasta Stir in half of mozzarella cheese Top casserole with remainder Bake at 350 degrees for 30 min | 2 Cheese Mexican Casserole | 38

39: Cook corn 3 or 4 hard boiled eggs 2 tbls sugar salt and pepper Dot with butter | Corn Pie | 39

40: Cheesy Ham and Corn Pie | 1 tsp worcestershire sauce 1 1/2 packages pie crust mix 1 lb diced cooked ham (2 3/4 cups) 2 packages (10 oz) frozen corn slightly thawed | 1/4 cup chopped green onions 1 sweet green pepper 2 tsp butter 4 eggs 1/4 cup milk 1/2 cup shredded cheese 1/4 tsp pepper | Saute green pepper and onion in large skillet until soft Beat eggs and milk Add onion pepper mixture, ham, corn, cheese, and worcestershire sauce Prepare pie crust mix following label instructions Roll out a little more than half the pastry on lightly floured surface with lightly flouring rolling pin Fit into 11x7 baking dish Spoon in ham and corn mixture into pastry lined dish Roll out remaining pastry to 10x14 rectangle Fit over filling Pinch to seal Cut vents | 350 degrees for 1 hour | 40

41: Cut 1 lb bacon in saucepan and brown Pour fat off but keep brown stuff on the bottom Cook whole potatoes for 10 min and then cube potatoes Mix together: 6 tbls sugar 2 eggs 2 tbls flour | PA German | Potato | S a l a d | Add: 2 cups milk 10 tbls vinegar Cook flour, milk, and vinegar on stove until it gets thick Then put in pan to get brown stuff Hard boil 2 eggs, cut, and put on top with paprika | 41

42: Broccoli Salad 1 bunch broccoli 1/2 cup onions 1 cup raisins 1 cup grapes 1 cup sunflower seeds 10 strips bacon (fried crisp) Dressing: 1 cup mayo 1/3 cup sugar 2 tbls vinegar | 42

43: 1 box frozen, chopped broccoli (8 oz) 1 cup minute rice, uncooked 1 cup diced velveeta cheese 1 can cream of mushroom soup 1 small can of mushrooms 1 cup water 1 tsp dry onion 1/2 stick margerine Put in 9x9 pan Bake at 350 degrees for 1 hour | Broccoli | 43

44: 1 bag of broccoli slaw 3 stalks celery 5 green onions 3/4 cup sliced almonds 1/2 cup sunflower seeds 1 cup rice noddles | B r o c c o l i | S l a w | 44 | Dressing 1/2 cup oil 1 1/2 tsp soy sauce 1/4 cup vinegar 1/2 cup sugar | Chop up celery and onions Mix in bag of slaw, almonds, and sunflower seeds Make up dressing Pour over mixture before serving Add rice noodles right before meal

45: 4 large yams 1/2 cup honey 1/2 stick butter 1 tsp cinnamon 1/4 tsp nutmeg 1/2 tsp salt 1/4 to 1/2 cup milk Mash all of the ingredients together | Topping 1/4 stick butter 1/2 cup honey 2 tbls milk 1/4 tsp salt 1/4 tsp vanilla Cook together butter, honey, milk, and salt Add vanilla last Pour on top of mashed sweet potatoes Bake several minutes | 45 | Mashed Sweet Potatoes

46: Cook 1 lb spaghetti and drain Add 1/2 stick butter and let cool Scramble 2 eggs with 1 tbls water Add to spaghetti Cook meat and add ragu Put spaghetti in 9x3 pan Top with sauce and bake 30 min Top with shredded cheese Put back in oven until cheese melts Cut in pieces and serve | Spaghetti Pie | 46

47: 2/3 cup sugar 1 tsp lemon juice 6 tbls crisco 2 bananas 2 eggs | Banana Bread | 1 1/3 cups flour 1 tsp baking soda 3/4 tsp baking powder 1/4 tsp salt | Bake at 350 degrees for 1 hour | 47

48: 1/2 cup + 2 tbls butter 2 cups sifted, stone-ground cornmeal 1 tsp salt 2 eggs 1 1/2 cup buttermilk | 1. Preheat oven to 350 degrees 2. Place 2 tsp of butter in a skillet 3. Combine cornmeal and salt in large bowl 4. Cut remaining butter into small cubes and add to cormneal 5. Work until the texture of uncooked oatmeal 6. Whisk together buttermilk and egg yolks in small bowl 7. Beat whites in another bowl until soft peaks form 8. Quickly mix buttermilk mixture into cornmeal mixture 9. Fold in beaten whites 10. Swirl melted butter in skillet to coat bottom and sides 11. Raise heat to high and when butter almost smokes, pour in cornmeal batter 12. Bake uncovered for 40-45 min or until lightly browned | Colonial Corn Bread | 48

49: Pumpkin Bread | Pour 2 greased, floured 9x5 inch loaf pans Bake 350 degrees for 1 hour 10 min | Sift 3 1/2 cups flour 2 cups sugar 1 tbls pumpkin spice | Combine 2 cups canned pumpkin 4 eggs 1 cup oil 1/3 cup water | 2 tsp baking soda 1 1/2 tsp salt Sift baking soad and salt | 49

50: Zucchini Bread | 4 cups grated zucchini 3 cups ww flour 1 cup honey 1 1/4 cups oil or butter 4 eggs 1 tbls vanilla | 1 tbls cinnamon 1 1/2 tsp salt 1 1/2 tsp baking soda 1/2 tsp baking powder 1 cup nuts (opt) Oil 2 loaf pans Bake at 325 degrees for 1 hour | 50

51: Jumbo Banana Nut Muffins | 1 cup flour 1 cup wh wh flour 1 tsp baking powder 1 tsp baking soda 1/4 tsp salt 1/2 cup lightly salted butter or margerine (softened) 1/2 cup sugar 2 eggs 1 1/3 cups mashed ripe bananas 1/4 cup milk 1 tsp vanilla 1 cup pecans | Stir together flours, baking soda, baking powder, and salt Cream butter and sugar until light and fluffy Beat in eggs Stir in banana, milk, and vanilla Add dry ingredients and stir to combine Bake at 375 degrees for 25-30 min | 51

52: Apple Muffins | 2 cups whole wheat flour 3 tsp baking powder 1/2 tsp salt 1/2 cup honey 1 egg 1 tsp vanilla 1/4 cup oil or butter (melted) 1 tsp cinnamon 1/2 cup cloves and allspice 1 cup chopped apples 425 degrees for 20-25 min | 52
