1: . | I hope this cookbook will bring your home lots of tasteful recipes that over the years all of you have enjoyed. As you read through the book I am sure it will bring fond memories of times when you were growing up. We had great meals, good food, jokes and laughter. The dinner table was always a place to spend quality family times and discuss our days events. I hope that this tradition will carry in your homes and you always remember the most precious moments gathered at the family "Table" With all my love, 12/2011

4: The following recipes are from Papa & Grammy Guay both were fine "chef's" and knew how to please any palette and appetite. Papa was known for making the best biscuits around. I clearly remember the time in Holeb and insisting that I "have a biscuit" and never being fond of biscuits politely saying "No thank you" and being my first visit and needing to make a good impression, after much persistence on his part I finally gave in to having "a biscuit" and must say that it was the best one ever. To this day I don't know a person that can make a biscuit like your Papa did. Unfortunately I don't have his biscuit recipe to pass on to you just this memory of a great Man and awesome cook.

5: Grammy Guay was also an exceptional cook she introduced me to several dishes that are now today some of my favorites. The first dish she introduced me to was also in Holeb. On a trip into visit papa and grammy she placed in front of me a bowl on homemade Onion Soup Au gratin. I remember thinking "who eats onions cooked in a broth and tops it with cheese?" but politely ate so I wouldn't be rude...again this was awesome and today is truly at the top of my favorites. Another one of her gourmet meals "ragu & Pigs feet..yes that right pig feets only recently have I come close to her recipe. She truly was an great cook.

6: Molasses Cookies From Papa 1/2 cup sugar 1 egg 1/2 cup molasses 2 Cups Flour 1/3 cup shortening 1 tsp baking soda 1/2 cup sour milk* 1 tsp Cinnamon (*add 1-2 TBS vinegar to milk) 1 tsp cloves/nutmeg Combine first three ingredients than add sour milk and egg, mix to blend. Add remaining ingredients. Cook @ 350 till done - approx 12-15 minutes

7: These recipies were truly family favorites that you will never be found in cookbook. They have been tested over and over in many 'Guay" kitchens | Grammy Guay Egg Pastry Pie Crust (makes 2 crust) 1 Cups of Lard (not shortening) 3 cups of flour 1 egg beaten 1 Tbs Vinegar, dash of salt 6 TBS water (I add a bit more) blend flour & lard well than add remaining ingredients. Best Pie Crust ever...yummy.

8: Apple Topping for Cake 1 Egg white 1 cup Sugar 1 Apple grated Beat egg white and slowly add sugar to get meringue consistency, add grated apple. Serve over warm cake.


10: Grammy Guay's Trout Chowder This recipe was never written anywhere it was just something she put together". she shared it with me and maybe some day you will be pro's at this great chowder. Each time I make it, I say "still not as good as your Mom's!! 8-10 Large Clear pond trout - yup chances are you will catch them right in front of this beaver house 3 large onions diced (more or less to your taste) 4-6 slices salt pork 2-3 sticks of butter ( no this isn't "light") 1 can stewed tomatoes-chopped 6-8 cups diced potatoes 1-2 cans evaporated milk 12 oz whipping or heavy cream (if desired) Boil trout in approx. 8-10 cups of water till cooked. Remove trout, and remove bones Reserve your broth, add potatoes and cook till done. Dice onion and cook in salt pork (4-6 thick slice will do) when done add onions and salt pork to potatoes. You can now add trout and stewed tomatoes. You may need to experiment some as I did, hopefully my measurements are close!!

11: Lemon Cheesecake 1 pkg graham crackers 1/2 cup melted butter Layer bottom of 9x13 pan with above crumbs ____________________ 7 oz lemon gelatin 2 cups boiling water 1/2 cup sugar 1/4 cup lemon juice 3/4 cup cold water 12 0z. Cream Cheese 2 cups banannas 1/2 cup marischino cherries dissolve gelatin in boiling water,add sugar,lemon juice and softened cream cheese, add cold water. chill mixture 1-2 hrs. Smooth mixture with blender or mixer. Add fruit, mix and refrigerate

12: RAGU from Grammy Guay (pigs feet and meatballs) First you will need to brown flour till flour to a nice golden brown. I find the best method is to use a cast iron fry pan and brown flour on low heat. Years ago when grammy made this recipe she did actually use pigs feet, today you can't find them... I know your thinking thats a great thing, I must admit it does not sound to appetizing. MEATBALLS 2 lbs Hamburg 1 lb ground pork 1 onion 3/4 -1 cup bread/cracker crumbs 2 eggs garlic powder, basil, oregano Mix above ingredients, shape into balls and cook @ 350 for approx. 20 minutes. you will also need approx. 2 lbs pork, I use boneless and lean pork ribs. Place pork ribs, cooked meatballs in crock pot add water to cover (about 3 -4 cups) add onions and simmer till ribs are done. when done thicken with your "brown flour".

13: Jelly Roll From Grammy Guay (original recipe dated 03/04/1947) 1 cup sugar 1 cup flour 4 Egg s separated 6 TBS cold water 1 tsp baking powder 1/2 tsp cream of tartar Beat whites with 1/2 cup sugar, beat yolks with the rest of the sugar and water at same time. Sift flour 3 times with baking powder and cream of tartar. Mix all together. Bake in oven at 325 for 10-15 minutes. Use wax paper in your pan. Use a damp cloth, roll, let cool then unroll and put what you want on it, roll back. Good Luck !! written as grammy guay gave it to me on 03/12/1986

14: GRAHAM CRACKER PIE from your great great grandmother Guay Thanks to Connie she gave us a very old recipe book that belonged to your great great grandmother Guay. I tucked it nicely with all of my treasure's and never noticed in the cookbook was the original recipe written in her own handwriting. 10 or 15 graham crackers rolled fine 1/3 cup melted butter 1/4 cup sugar Mix above with crackers, remove 1/2 cup for top. Bake cracker mixture in moderate oven for 15 minutes after packing in deep pie plate (glass plate) Filling 1 1/2 cups milk 1/2 cup sugar yolks 3 eggs 1 heaping tablespoon flour,vanilla & salt. Cook in double boiler until thickened. Cool, put in baked cracker mixture. Beat 3 egg whites stiff with 1/2 cup sugar then put on top, on top of this add your 1/2 cup crumbs sprinkled over it than bake top.


16: Grampy Begin was featured in this magazine in March 2006 as one the finest "woods cook" around.

19: Grampy Begin was also an exceptional cook and very well known in the community for his great home baked beans and homemade bread. If there was an event or fund raiser he always volunteered a pot of beans, and the locals always looked and asked for "Benny's beans". Grampy was a cook for Scott Paper Co. for nearly 40 years. When he worked at the Moose River Camp I always remember him bringing the left overs. My didn't we eat good, raisin pie, Brown Sugar Pie, Homemade bread, cookies but I must say my favorite of all times was his great spaghetti sauce. He told me secret but I never was able to even come close to mastering his great spaghetti sauce. He did show me how to make homemade bread which of course his is unique to all others. He was able to give me some actual measurements on most of the ingredients except for the flour , I can still visual him telling me " you put in just enough until the dough slightly slips from your hands". I actually made lots of great Batches using his technique. Grampy was a great cook. Truly a great man and greatest "chef'" ever. | Chef Benny Begin

20: 4 packages yeast w/ 2 tsp sugar 2/3 cup sugar 1/2 cup melted lard 8 cups of hot water 4 tsp salt flour (this is the hard part--he never really knew how much, just until it felt right !!) | Grampy Begin's Homemade Bread | Mix yeast w/sugar and 1/2 cup warm water. Let rise Combine sugar, salt water and lard. Mix yeast to above add flour "as needed". Dad always told me just enough until the dough slips off your hand. Good Luck !! Let rise till double. Punch dough and shape into individual loaves. let rise once again Cook @ 425 for 10 min, reduce heat to 350 for 10 minutes

21: Grammy Begin is also an exceptional cook. Over the years she has made many wonderful tasting meals Grammy was a great inspiration and mentor to me learning the tools of the trade when it came to cooking. Grammy could make a meal with just about anything. I remember her making great meals from left overs. One of my favorites was always "red macaroni" today I still make it and it always brings me back to my childhood memories. "Supper" was always on time and plenty to feed all eight of us. Grammy Begin always has a baked goodie to share. She truly is an awesome cook | GRAMMY BEGIN

22: Grammy Begin Thanksgiving dinner 2010

23: THE FAMOUS RED MACARONI Cook approx. 1/2 box of macaroni when done drain. Add 1 can tomatoe soup and 2 TBS butter. reheat till hot. top with onions and butter.

24: MEAT PIE 5 lbs of ground pork 2 lbs of Hamburg 1 large of onions, salt, pepper and 2 TBS. allspice mix all together and cook till done. Remove some fat. Add 4-5 cups of Mashed potatoes. makes approx. 2 pies | BEGIN

25: 1/2 cup shortening 2 eggs 1 cup sugar 1 cup mashed ripe banannas 1 tsp lemon juice 2 tsp baking powder 1/2 tsp salt 2 cups flour mix first 4 ingredients together add to dry ingredients. Bake at 350 till done, approx 1 hour. | BANANNA BREAD

26: DATE CAKE Mix 1 cup chopped dates 1 tsp baking soda & 1 cup boiling water soak above ingredients. 1 cup sugar 1/4 cup shortening 1 egg 1 tsp Vanilla Mix above ingredient together till blended than add date mixture. Than add 1 1/2 cups of flour and 2 tsp baking powder & dash of salt. Bake at 375 till done. Frosting for cake 1 cup brown sugar 1/2 cup chopped walnuts 3 TBS of Milk or cream 5 TBS of Butter Boil above ingredients for 5 minutes after cake has cooled pour frosting on cake

27: GRAMMY BEGIN'S SECRET FAMILY RECIPE | PET DE NOUNE | The name of this recipe translates to "Nun farts" Since 2002 when this recipe was introduced to the family it has been a favorite amongst all. When I obtained the "family" secret Grammy Begin had me promise to never give it out. I am happy to share this with you and hope someday you will make it for your family to enjoy as we all have. 2 cups of pure maple syrup 2 Cups of Cream 2 Tubes of Crescant rolls- cut into 2" slice reserve approx 1/4 cup cream to mix with 3 TBS of corn starch. Heat syrup , cream and cornstarch mixture till hot and thickened. Place crescant rolls into 9x13 cake pan-pour maple sauce over rolls. Bake in over for 30 minutes at 350 | PET DE NOUNE

28: Apple Cake Grammy served this almost every Sunday. This was always one of my favorites. 1/2 cup butter 1 1/2 cups of sugars 2 eggs - beaten 1 tsp. vanilla 3 cups flour 2 tsp baking powder 1 tsp salt 1 cup milk 2-3 cups sliced apple Cream butter, sugar, add beaten eggs and vanilla. combine flour, baking powder and salt. Slowly add milk to mixture. Pour batter into cake pan. Add slices of apples into batter. Mix 1/4 cup Sugar w/ 2 tsp cinnamon sprinkle on cake. Bake @ 350 for 30-40 minutes

29: Raspberry Muffins 3/4 Cup Sugar 1/2 cup oil 2 eggs 1 cup milk 1/2 tsp salt 3 cups flour 2 tsp baking powder 2 cups fresh raspberries Mix sugar, eggs, and oil. combine flour baking powder,salt. slowly alternate flour mixture and milk to batter. Add raspberries. Sprinkle top with sugar. Bake at 400 for 20 minutes


31: Name | MOM'S RECIPES | One of my favorite cooking methods is the Dutch Oven and cooking over a campfire. Over the last few years I have had some successful recipes and some pretty burned meals. I remember my first attempt cooking baked beans in the dutch oven. I think there is still some burned flakes stuck to the bottom of that one. I have found the secret to dutch oven cooking is...start your fire early with lots of good firewood to get a good bed of hot coals. Throughout the day I keep the fire going so I have lots of coals to work with. Set the oven over a moderate amount of coals and add a small amount on the cover. As needed, add more hot coals to bottom and top of oven. Mostly importantly is have patience..... trust me it will cook!!

32: 1 Cup melted shortening 2 cups sugar 4 egg yolks 2 cups sour milk (add 2 Tbs. vinegar to milk) 1 tsp salt 1/2 cup Cocoa 2 tsp baking powder 2 tsp baking soda 4 cups flour Mix shortening, sugar & egg yolks. Combine dry ingredients together. Slowly alternate dry ingredients and milk, mix till well blended. Drop by teaspoon full, cook at 350 for 8-10 minutes. Filling 1 cup Crisco 2 cups fluff 1 1/2 cups confectionate sugar 1 tsp vanilla Mix crisco and fluff till well blended. Add sugar and vanilla. wrap pies in wax paper | WHOPPIE PIE'S

33: Blueberry Cream Cheese Delight 1/4 cup cornstarch 1/2 cup sugar 1/2 cup water 4 cups fresh or frozen blueberries Blend cornstarch with water, add sugar and blueberries. Cook in pan till thick. Cool and set aside. Crust 1/2 cup Butter 1 Cup chopped walnuts 1 Cup flour Mix all ingredients, line 9x13 cake pan and bake at 350 for approx. 10-12 min Filling 2- 8 oz packages Cream Cheese, softened 1 1/2 cups sugar 1 Container of Cool whip Pour Cream Cheese filling on crust, add blueberry sauce to top. Refrigerate until set

34: DEVILS FOOD CAKE 3/4 Cup Shortening 2 1/2 cups sugar 3 eggs 3/4 cup cocoa mixed w/ 1 1/2 cups hot coffee 2 tsp vanilla 1 1/2 tsp baking soda 2 tsp. salt 3/4 cup boiling water 3 Cups flour Cream shortening & sugar, add eggs. Add cocoa and coffee mixture, vanilla. Fold in Flour and salt. Dissolve baking soda in boiling water and add to remaining ingredients. Pour into large cake pan ( make a big cake) Bake at 350 for approx 45 minutes

35: CRUMB TOP APPLE PIE | 1 Unbaked 9 " Pie Shell 1/4 cup sugar 1 tsp Cinnamon dash of salt Mix with enough apples to fill shell (approx 6-8 large apples) Topping 3/4 cup Brown Sugar 3/4 Cup Flour 1/3 cup butter Mix above into fine crumbs and spread over apples Bake at 375 for 35-40 minutes

36: 1 tsp lemon juice 2 lbs. Large Sea Scallops 4 Tbs Butter 1/4 cup chopped onions 1 small Pkg. fresh mushrooms' 1/3 cup flour 1 Cup Cream 1/2 cup milk 1 Cup grated Cheddar Cheese 1/2 cup White Wine 3 Tbs. parsley Bread Crumbs Boil 1 cup water, with lemon juice. Add Scallops and boil for approx 2-3 minutes. In pan melt butter, add onion and mushroom. Add flour and gradually stir in cream and milk. Bring to boil, reduce heat and simmer till thick add cheese and stir till melted. Add wine and parsley. Sprinkle top with Bread Crumbs (more cheddar cheese if desired). Broil till golden brown. Serve with rice or Linguine. | Coquilles St. Jacques

37: 2 Lbs. Lean Boneless Chicken Breast 1 can of Corn 1 Can of Black Bleans 1 jar Mild Salsa 1/2 Block Light Cream Cheese 1 Packet Uncle Ben's Brown Whole grain Ready rice ( 1 Leave this out and serve on the side. Mix all together in Crock pot and cook on low till done. Serve with light sour cream and Cheddar cheese | Slow Cooker Mexi Chicken | $100 Grand Prize | Jackman's "Biggest Loser Recipe Contest I WON !!!

38: Prime Rib Dinner Let your prime rib stand at room temperature for at least 2 hours. Season rib with yellow mustard, salt and Pepper. Place roast in on preheated oven for 5 minutes per pound. Once you have placed the rib in oven, DO NOT OPEN OVEN DOOR. After cooking for the 5 min per pound. let Rib set in the oven for 2 hours .... again Do not open the door during this process. Rib is ready to carve when removed from oven. Roast will be tender, moist and rare !! HORSERADISH SAUCE 3 tbs. Horseradish or more depending on your taste 1/4 cup sour cream 1 tsp Dijon mustard 2-3 TBS mayonnaise 1 TBS Chopped Chive Mix all together. Better made night before | Traditional Christmas Dinner at the Guay's

39: Twice Baked Potatoes 8 to 10 Large Russet baking potatoes 1 !lb. Cooked bacon-crumbled 1 Stick of Butter 1 Chopped onion/scallions onion salt, garlic powder, parsley 1 - 2 cups sour cream Milk 2 pkgs Extra Sharp Cheddar cheese grated 1/2 cup Parmesan Cheese Cook potatoes till done. Cut potatoes in half and scoop potatoes into large bowl. Keep skins for filling. Add butter and slowly add milk, sour cream and spices. Add Bacon and approx 1/2 of your grated Cheese, Parmesan cheese. Scoop mashed potatoes into skins. top with remaining cheese and bake till cheese in nicely browned.

Cut into blocks | By SUPER WY | Double Peanut Butter & Chocolate Chip Cookies 1/2 Cup Butter 3/4 Cup sugar 1/3 Cup Peanut Butter 1 Egg 1/2 tsp. Salt - 1/2 baking soda- 1 tsp vanilla 1 1/4 cup Flour 1 cup Milk Chocolate Chips 1 Cup Peanut butter chips Mix butter with sugar, add eggs, vanilla and Peanut butter. Add dry ingredients and bake at 350 for 8-10 minutes | DAIGON | TREVOR
