16: Zoladz Easter Lamb Cake Heat oven to 375 Grease both halves of lamb mold well and flour. Sift 2c. flour with 3tsp. baking powder and 1/2tsp. salt. Cream 1/2c. butter. Add 1c. sugar slowly, creaming until light & fluffy. Add 2 beaten eggs & 1 tsp. vanilla extract. Add flour mixture and 2/3c. milk alternately - mixing lightly and keeping the batter smooth. Take out batter for 4 cupcakes and bake for 20-25 min. Pour remaining batter into FACE HALF of mold being careful to get batter into nose & ears. Place BACK half on to the top and bake face down on a tray for 40 min. Remove from oven and remove back to test. If done, replace back and rest for 5-10 min before removing from mold. If not done, replace back and return to oven. When removing from mold, remove back half first and then front, carefully. Allow cake to cool standing erect. Frost with a fluffy frosting when cool and cover with coconut, if desired. Use 1/2 raisin or slices of black jellybeans for eyes and a small piece of cherry or a slice of a red jellybean for the mouth. | Tradition!
17: Grandma Kapral's Babka | Scald 2 c. milk - set aside until cool. Dissolve 2 packets yeast in 1/4c. lukewarm water. Cream 1/2c. butter with 3/4c. sugar. Add 2 tsp. salt to 5 eggs and beat until thick. Combine beaten eggs with creamed mixture. Add milk & yeast. Add 7 1/2 c. flour, a little at a time, beating well after each addition. (Optional: add 1 c. raisins before adding last cup of flour) | Turn out on well-floured board and knead until dough is smooth and elastic-15min. Add additional flour as needed to avoid sticking. Place dough in large, greased bowl, cover and let rise until double in bulk (2-3 hours) | Punch down dough and knead for additional 5 min. Divide dough into 3-5 portions based on # of loaves desired. Form into loaves and place in greased, floured loaf pans. Let rise once more - 30-35 min. | Bake at 350 for 30-35 min or until golden brown. Brush on glaze (mix 1 egg with 1/4c. water) 5 minutes before removing from oven.
