BC: Why this scrapbook and why at Christmas? Around about May 2011 Rene and I talked about what we wanted to do for Christmas this year. She talked about last Christmas and spending it at the cabin and how much fun it was, the family that came, the food we had, and decorating together. She reminded me that it took the commercialism out of the holiday that should be given to our Lord Jesus. We talked about the first time we spent Christmas in the cabin; she called it our “Charlie Brown Christmas Tree Christmas”. We illegally cut down that ugly tree (probably the only illegal thing she ever did). She said, “that tree was ugly but is sure was the prettiest tree we ever had”. She started asking about gifts for the kids for this year, things to get everybody and then she said, “Well, if I am not here would you do something for me?” I didn't want to talk about it and she knew it. I told her simply, “Granny, you are going to be here for many more Christmas’ to come so don't talk like that.” After a while I began to think about what she said, and I called her and we talked about it a little more. We threw around some ideas of what to get those babies, and then she came up with this. She asked me to make a special scrapbook for her kids and grandkids to keep so they could remember her forever. I told her she is not someone that could easily be forgotten, and that will never happen, I will make sure of it!! God being the most important part of her life, she began to think of some Bible verses she wanted me to put in this book. Her favorite verse is Philippians 4:11; that's why it's on the front page. She gave me some specifics, so I did the best I could. She told me some things she wanted her grandkids to know about her, and asked me to just do what I could with the idea. So I did, and here you have it. I thought this would be easy since we scrapbooked together all the time, but I was wrong. It has been the hardest scrapbook I have ever created. It was hard because I wanted her to be here with me to put it together, and most of all I wanted her approval before I printed it. And she told me to keep it to myself in case I didn't finish. If the words say “I”, then she said it. I jotted down a lot of what she said to me and just kept a little journal. I poked questions at her from time to time because to just come out and talk about it was too hard for me, not her. The handwritten part is all hers. I just hope that I have put together a scrapbook that you can save forever and share with your family for years to come. I know that she is not here to give it to you, but it comes directly from her! I can only hope that one day I can live up to her expectations and be the mother and friend that she has been to me! She IS and exceptional, amazing, caring, and forgiving Christian woman. Even as sick as she was she never complained and was always worried about you. I am proud her son asked me to marry him so that I could be her daughter-in-law! Ecclesiastes 2:26 | A couple of my | Macaroni & Tomatoes 1 bag shell macaroni 1 can whole tomatoes 3 Tbsp mayonnaise Salt and pepper to taste In a large pot cook macaroni according to instructions on the bag. Drain the macaroni and put back into the pot, add the tomatoes, mayonnaise, and salt and pepper. Stir well and serve! Yummm! | Biscuits: 2 cups all-purpose flour 3 teaspoons baking powder 1 teaspoon salt 6 Tablespoons butter 1 cup milk 1. Stir together flour, baking powder and salt. 2. Cut in the butter with a fork until mixture resembles coarse crumbs. 3. Stir in the milk until incorporated into a light dough. 4. Drop by tablespoons biscuits onto a lightly buttered baking sheet. Bake in a pre-heated oven at 450 degrees for 12 to 15 minutes until lightly browned. | Tomato Gravy: 1/4 cup bacon grease or shortening (you can also use oil) 1/4 to 1/3 cup all purpose flour 1 can of whole tomatoes with liquid (broken up) 2 tablespoons butter salt and pepper to taste 1/2 cup of water In large cast iron skillet, heat bacon grease or shortening until melted. Stir in flour and lower heat to med/low. Keep stirring to brown flour to a light brown roux stage. Be careful not to burn roux. This takes a little while so don't try to hurry it up. When flour gets to the light brown roux stage, slowly stir in tomatoes with liquid. Add water (just to make gravy the consistency that you are looking for) a little at a time while stirring tomato gravy. Season with salt and pepper and simmer on low for 10 to 15 minutes. Before serving, add butter and stir. Serve over fresh homemade biscuits with a little extra butter on top! | Biscuits & Tomato Gravy
33: Easy Peach Cobbler Ingredients: 2 sticks butter 1 can peaches 1 box butter or yellow cake mix Directions: Preheat oven to 350 degrees. In an 8x8 glass pan place 1 stick butter in bottom of pan and melt in over. Once butter is melted remove pan from the oven and pour 1 can peaches (undrained) into the pan over the butter. Then pour cake mix (dry) over the peaches. In a plastic/glass cup/bowl melt the remaining 1 stick butter then pour it over the dry cake mix. Lay a sheet of aluminum foil over the cake pan (this will keep the top from burning). Bake for about 30 minutes at 350 degrees. Cool slightly (if you so desire), then serve over ice cream! Mmmmm good!! I hope you enjoy this very easy recipe as much as I have. God Bless | Chicken & Rice 1 chicken fryer (2 1/2 to 3 lbs.), quartered salt, pepper, garlic powder (to taste) 2 lg. onions, sliced 3 cloves garlic, minced 1 can cream of chicken soup Minute Rice Boil chicken in a large pot until chicken is cooked and tender. Remove chicken from the water and set aside to cool leaving the broth in the pot. In a separate sauce pan sauté onion and garlic until translucent and add to the chicken broth. Add your cream of chicken soup and whisk into the broth until well blended and set pot aside. Pick the chicken off the bone and add it to the broth pot then return it to the stove and bring it to a boil. Add rice to your boiling pot of broth and cook until it is tender about 45 minutes. | favorite recipes:
34: Just a few things about me: | Hmmm... What could I say about me: Well, I love papa and I'm glad he loves me!! Favorite Food: I love Heavenly Pudding (with the coconut), Harbor View's chicken salad, diet coke, and orange soda. I don't like seafood. Oh you didn't ask me that did ya! Fun things: Being in Church and singing in Church, reading my Bible (make sure they know I want them to read their Bible), I loved bowling with Papa and spending time with him and our curtain climbing grandkids. I love to shop with Lisa and talk to her on her way to work (even though she woke me up, I think that was the best part, her waking me up), and scrapbooking with you (Lela). I like playing garbage, yard sales and watching ball games. My Health: Too many to list but the biggest; I am diabetic and the obvious Ovarian Cancer. I didn't smoke or drink only because I didn't want to (and neither should they). My Jobs: Babysitting don't count, huh? I got my first job at 48 at the Café and then went to work at Wal-Mart Pharmacy. Misc: I learned to drive and got my drivers license when I was 50, yea 50. Favorite Gift: the 2 cap guns Dan gave me (there were 2 so he could play with me), loved it! Favorite Trips: going to see Daisy and visiting Texas. | Thankful for: Dan for being my ray of sunshine and fighting for our country, I am proud of you my veteran!
