4: Ireland is located in the Atlantic Ocean, west of Great Britain. Ireland has mild winters and cool summers with consistent humidity. In most parts of Ireland, there is an overcast over half the time.
5: Ireland is approximately 68, 883 square km, which is slightly larger than the size of West Virginia. The population of Ireland is about 4, 670, 976. English is the language that is generally used, but along the western coast, the people mainly speak Irish.
8: The government in Ireland is republic. Ireland has a parliamentary democracy which is a democratic form of government in which the party or coalition of parties with the greatest representation in parliament forms the government. 87% of the Irish population is Roman Catholic, about 3% are with the Church of Ireland with the rest of the population being a part of some other religion.
10: People in Ireland celebrate Valentine's Day, St. Patrick's Day, Easter, Halloween, Christmas, and St. Stephen's Day. St. Stephen's Day, also known as the Feast of St. Stephen, is a Christian saint's day and is celebrated the day after Christmas. St. Stephen's Day commemorates St. Stephen, the first Christian martyr.
11: The Anglo-Normans arrived in Ireland in 1169 and affected both farming and diet in Ireland. In the late 1500's, potatoes were introduced to Ireland. The potato became the main crop in Ireland within 200 years. In the 1840's however, the disaster known as the Irish Potato Famine destroyed some of the potato crops in Ireland. The Most popular potato grown by most Irish farmers was the one that was highly sensitive to disease. One-third of Ireland's total potato crops were destroyed in 1845, and two years later, two-thirds of the total crop was destroyed. More than one million people died from this famine with another two million moving to other countries. Even after the hardships of the famine, Irish natives continue to love potatoes and it was determined in 2001 that Ireland eats more potatoes than most other countries.

14: In winter, the temperature tends to drop below freezing at night and lakes partially freeze over. Because their main crop of potatoes are in season mainly in the summer, the freezing temperatures don't have that big of an affect on the potatoes. In cooking, most Irish foods are made without herbs. Salt and pepper are the only seasonings that are mainly used.

Bacon Sausages Black & White Pudding Fried or scrambled Eggs Tomatoes Mushrooms Potato Bread Baked Beans (personal choice) Wheaten bread How to make a traditional Irish Breakfast Shallow fry the bacon, sausages, eggs and Black & White pudding until cooked. If you are having Potato Bread also shallow fry with chopped tomatoes or mushrooms until cooked. You may also be interested in making your own soda bread to also add to the breakfast. Serve the fry-up with wheaten bread, toast, jam, butter, marmalade along with a pot of tea and glasses of freshly squeezed orange juice and you have yourself a full Irish breakfast.
18: Ingredients: 4 lb rolled salted silverside 1 onion, peeled and sliced 1 small turnip, peeled and sliced 3 carrots, peeled and sliced 1 bay leaf 12 cloves 2 oz soft brown sugar Juice of 1 lemon teaspoon each of ground cinnamon, allspice and nutmeg 1 level teaspoon mustard powder Directions: Soak the meat overnight in cold water. Next day, rinse well and tie up with kitchen string to form a firm, neat joint. Put the onion, turnip and carrot in a large saucepan, place the meat on top, add the bay leaf then cover with cold water. Bring to the boil, skim then cover and simmer gently for 3 to 4 hours. Leave to cool completely in the liquid. Preheat oven to 350 degrees F. Drain the meat very well, place in a roasting tin and stick with the cloves. Mix together the remaining ingredients and spread over the meat. Bake for 40 minutes, basting from time to time. Remove the string. Serve hot or cold. Serves 4-6 | Irish Spiced Beef

20: Ingredients: 2 tablespoons of Irish butter 2 medium sized onions 3 large potatoes, washed & peeled 1 cube chicken bouillon 2 cups of milk 1 clove garlic, crushed 1 teaspoon dried parsley 3 pieces of celery, chopped 1 pinch ground black pepper & salt 1 cup of grated cheese Directions: Thinly slice the onions and potatoes and add to a pan with melted Irish butter. Add the chicken bouillon, celery, dried parsley, garlic and season with salt & pepper. Cover the pan allowing the vegetables to soften under a low heat, do not let them brown. Add milk and mix until soup becomes thick then stir in cheese until fully melted. Serve piping hot with a few slices of buttered bread and enjoy.

23: INGREDIENTS: 3/4 cup butter (1-1/2 sticks) 2/3 cup sugar 1/4 teaspoon salt 1 egg 1/4 teaspoon peppermint extract or vanilla Few drops green food coloring 2 cups all-purpose flour Green colored sugar DIRECTIONS: In a large mixer bowl beat butter with an electric mixer on medium speed until softened (about 30 seconds). Add sugar and salt and beat until fluffy. Add the egg, peppermint extract or vanilla, and a few drops of green food coloring. Beat mixture well. With mixer on low speed gradually add flour to butter mixture and beat well. Divide dough into 3 equal parts. Shape each part into a roll about 1 inch thick and about 8 inches long. Roll each in green colored sugar. Wrap rolls in plastic wrap. Chill in refrigerator for at least 2 hours or up to 1 week. Unwrap rolls. Slice crosswise so the slices are 1/4 inch thick. To shape each shamrock, place 3 slices of dough with sides touching in a shamrock shape on an ungreased cookie sheet. Cut a stem from a fourth slice and attach to the shamrock (save the rest of this slice for cutting other shamrock stems). Gently push the slices together so each leaflet curves in slightly. Bake in a 350 degree F oven about 8 minutes or until edges are light brown. With a pancake turner lift the cookies onto a cooling rack to cool. Makes 32 cookies.
25: Ingredients for Irish Home Made Apple Pie *2 cups plain all purpose flour * Pinch salt *1/4 cup butter or margarine *1/4 cup lard, shortening * 2 tablespoons cold water *2lb cooking, tart apples peeled, cored & thinly sliced *2 whole cloves * 1 teaspoon cinnamon *3 tablespoons brown sugar *3 tablespoons milk *Cream or custard to serve How to make Irish Apple Pie Mix the flour and salt in a bowl then using your finger tips rub in the butter or margarine and the lard or shortening until the mixture resembles breadcrumbs. Add enough of the cold water to form firm dough. Roll out of the pastry on a lightly floured surface and use to line a 20 cm/ 8 inch pie plate. Cover with the apples and place in the cloves and sprinkle on the cinnamon and sugar. Roll out the remaining pastry and use to cover the pie moistening the edges to seal the lid. Flute the edges and decorate with the trimmings of the pastry. Cut a vent in the top of the pie and brush the top with milk. Bake in a pre-heated oven at 200C/400F gas mark 6 for about 30 minutes or until the pastry is golden. Serve with custard or cream.
