FC: EASY RECIPES FROM ALABAMA | SOUTHERN | SIMPLE | COOKIN'

1: VEGETABLE HAM SOUP | Take a left over ham bone from a butt end of ham that still has some meat attached. Put in pressure cooker (10lbs.pressure) covered with water (about 2-3 cups). Pressure 15 mins. Reduce pressure immediately. Remove from broth to cool & cut off bone. 1- onion chopped 2- stalks of celery chopped 1- carrot chopped 1- potato chopped 2- cans diced tomatoes 1/2-pkg. frozen veggies 1- tsp basil 1- tsp oregano 5-6-flakes red pepper salt & pepper to taste Put all in pressure cooker (15 lbs pressure) & cook 10 mins. Reduece pressure immediately. Add cut up ham & simmer 15-20 minutes

2: 6- TBLS BUTTER 1/4- C MINCED ONION 6- TBLS FLOUR 2- C MILK 1 1/2- TSPS SOY SAUCE 2- C COOKED SHRIMP 1- LRG CAN CHOP SUEY VEGGIES (WELL DRAINED) 1- C CHOPPED CELERY OR SLICED CHESTNUTTS SALT & PEPPER TO TASTE. | SHRIMP ORIENTAL | MELT BUTTER OVER LOW HEAT. ADD ONION & COOK UNTIL SOFT. BLEND IN FLOUR. ADD MILK SLOWLY STIRRING CONSTANTLY UNTIL SAUCE IS SMOOTH & THICKENED. ADD SOY SAUCE, SHRIMP,CHOP SUEY VEGGIES & UNCOOKED CELERY. SEASON TO TASTE. POUR INTO BAKING DISH. COOK 350 FOR 25-30 MINS. SERVE WITH DRY NOODLES OR COOKED RICE

3: 1- TBLS olive oil 1- Onion Chopped 3-4- Slices jalapeno peppers 1- Can black beans (washed & drained) 1- Can diced tomatoes 1- TBLS honey 2 TBLS brown sugar 1/2- TSP ginger 1/2- TSP salt Saute onions in olive oil. Add peppers, black beans, tomatoes, honey, brown sugar, ginger & salt. Simmer in sauce pan until hot. Add a bit of water if it get too thick | SWEET & SPICY BLACK BEANS

4: PIMENTO SQUASH CASSEROLE 1lb- Lellow squash 1- stick butter 1- tsp sugar 1/2- cup mayonnaise 1/2- cup onion 1/4- cup green pepper 1- egg 1/2- cup chopped pimento 1/2- cup grated cheese Fresh bread crumbs or fried onion rings Boil squash just until tender. Drain throughly. Saute onions & green pepper in part of butter until soft. Fold in all other ingredients. Mix bread crumbs with rest of butter & sprinkle on top. Bake 350 for 30 mins or until bubbly.

5: Cranberry Pudding 2-cups fresh cranberries 1/3-cup flour 1/2-cup dark syrup 1/3-cup boiling water 2-tsps soda 1-cup flour Pick & wash berries before measuring. Dredge in 1/3 cup flour in mixing bowl. Add syrup & boiling water. Add soda & flour. Mix well. Put in top of double boiler & cover tightly. Steam 2 hrs. or until done. | see next page for pudding sauce

6: SAUCE FOR CRANBERRY PUDDING 2-CUPS SUGAR 1-CUP WHIPPING CREAM 1-CUP BUTTER 1-TSP VANILLA PUT IN SAUCE PAN & STIR UNTIL DISSOLVED & HEATED. SPOON PUDDING INTO INDIVIDUAL DESSERT BOWLS & POUR SAUCE OVER PUDDING. YUM

7: 1-CUP PECANS 3- EGGS 1- CUP DARK CORN SYRUP 1/3- CUP SUGAR 1/8 - TSP SALT 1/4- CUP BUTTER MELTED LINE UNBAKED PIE SHELL WITH PECANS. BEAT EGGS WELL.ADD CORN SYRUP,SUGAR,SALT & BUTTER.POUR INTO CRUST.BAKE 425 FOR 10 M INS. REDUCE HEAT TO 350 & BAKE 40 MINS.LONGER (CHECK AFTER 30 MINS) | SOUTHERN PECAN PIE

8: 3- CUPS SUGAR 1/2- CUP LIGHT CORN SYRUP 1/2- CUP COLD WATER 2- EGG WHITES WHIPPED 3-4- CUPS PECANS CHOPPED 1- TSP VANILLA COOK SUGAR,SYRUP & WATER SLOWLY UNTIL SUGAR IS DISSOLVED. COOK UNTIL SOFT BALL FORMS & ADD 1/2 OF THE COOKED SYRUP IN THE BEATEN EGG WHITES.CONTINUE TO BEAT EGG MIXTURE WHILE THE REMAINDER OF THE SYRUP COOKS TO HARD BALL STAGE.POUR INTO MIXTURE & ADD VANILLA & PECANS. DIP OUT WITH TEASPOON ONTO WAX PAPER & COOL | DIVINITY CANDY | MMMM

9: CREAM FILLING FOR PIES | BEAT YOLKS & ADD SUGAR & MILK.MIX FLOUR WITH A LITTLE MILK & ADD TO MIXTURE.COOK IN DOUBLE BOILER UNTIL THICKEN.ADD BUTTER & VANILLA. | 3- EGG YOLKS 1/2-3/4- CUP SUGAR 1- CUP MILK 1- TSP VANILLA 1/2 CUP FLOUR 2- TSPS BUTTER | POUR IN A BAKED PIE SHELL WITH PINEAPPLE (DRAINED) OR COCONUT OR APPLES OR PEACHES.BEAT EGG WHITES UNTIL FLUFFY & SPREAD ON TOP. ADD 1 TBLS. OF SUGAR FOR EACH EGG WHITES WHILE BEATING. BAKE 375 UNTIL BROWN.

10: BLUEBERRY FRENCH TOAST 1 LG.loaf of Italian bread cut into 1 1/2 cubes . Beat together: 12- eggs 2-cups milk 1-tsp. vanilla 1-tsp.cinnamon 1/2- tsp. nutmeg 1/3-cup maple syrup 8oz.- cream cheese (can use up to 12oz.) 2-cups fresh blueberries, divided 1- cup chopped pecans Grease 9x13 casserole dish with butter, cover bottom with half bread cubes Sprinkle 1 cup of blueberries over all. Pour egg mixture over the bread cubes & smush down until bread is soaked. Cover, refrigerate overnight. Bring to room temp.in the morning (about 30mins.) Top with pecans & bake covered at 350 for 30 mins. Bake uncovered for another 30 mins.

11: CHOCOLATE PIE 1-CUP SUGAR 1-3 CUP COCOA OR 2 1/2 SQAURES CHOCOLATE 1/3- CUP FLOUR 3- EGG YOLKS PINCH OF SALT 2- CUPS MILK 1/2- TSP. VANILLA 1- TSP BUTTER MIX SUGAR,FLOUR,COCOA,SALT TOGETHER.ADD THE MILK& COOK IN DOUBLE BOILER UNTIL THICK. ADD VANILLA & BUTTER. WHIP EGG WHITES WITH 3 TBSP OF SUGAR UNTIL FLUFFY POUR COCOA MIXTURE INTO A BAKED PIE SHELL & TOP WITH WHIPPED EGG WHITES. BAKE 375 UNTIL BROWN ON TOP
