3: Find a clean bay on the Pacific coast with good circulation. Take chicken for a dip. Let it have a good time. Have a dog along to discourage seals, mink and otters. Put the refreshed, formerly happy chicken in a large pot or pan. Sprinkle with seasoning like organic no salt seasoning. Cut an orange in half and put inside the chicken. Put chicken in a 425' oven then turn down to 350' and cook until oven thermometer says done (at least an hour) When done take chicken out of pot and have someone carve it, pour the extra juices from carving into pot. If there is extra fat on top of the juices, remove and store in freezer for cooking. Make gravy by stirring orange halves around in the bottom of pot while simmering. Sprinkle and stir in some flour into simmering gravy. Alternate mixing in flour and liquid. For liquid unclarified apple juice is the best, also vegetable water can also be used. End by mixing in some milk to the gravy and simmering. | Ocean Swum Chicken
4: 1 Tbsp butter 1 onion 1/2 tsp ground cumin 1 head cauliflower A couple potatoes 3 cups stock (chicken or veg) 1 1/2 cups cheese 3/4 cup half and half or whole milk 2/3 cup tomato salsa Sauté onions and cumin. Add veggies and stock. Boil to soft or cook under pressure 6 minutes. Puree then add cheese and milk. Stir in to melt. Serve topped with a spoon of salsa. | I love my ulu | Cauliflower Cheese Soup
5: Chicken Noodle Soup 1 onion 3 cloves minced garlic Grated frozen ginger Cooked chicken, pulled 2 cups or so noodles 1 carrot 3 Tbsp or so miso 3 Tbsp or so soy sauce 2 Tbsp lemon juice Sauté onion in a pan and add garlic. Put into slow cooker with rest of ingredients. Set on slow for a few hours.
7: Cream of Squash Soup 1 Tbsp butter 1 chopped onion 2 tsp freshly grated ginger 3 cups stock 3 - 4lbs squash peeled, seeded and diced 1/4 cup honey 2 cups milk dash nutmeg Sauté onion in butter. Add ginger. Add stock and squash and simmer until tender. Stir in honey, milk and nutmeg. Puree.
9: Salmon Chowder 1/4 cup olive oil 2 onions 2 garlic cloves minced 2 carrots chopped 2 celery chopped leftover salmon 4 cups veg or fish stock 4 potatoes 3 Tbsp herbes de provence 2 bay leaves 1/4 cup flour 1 cup half and half 1/4 cup sour cream or yogurt 1/4 cup butter 1/4 cup chopped parsley Sauté onions, garlic, carrots and celery. Add stock, potatoes, spices and boil until soft. Stir in salmon chunks. Make a paste of flour, half and half, sour cream and butter gradually add to soup and stir for a minute while cooking to thicken. Add parsley last.
11: 2 cups split peas, rinsed 6-8 cups stock 1 large onion 1 carrot 2 Tbsp oil or butter 3-5 cloves minced garlic 1 tsp minced rosemary salt/pepper Measure peas and liquid and start boiling while chopping up the veggies. Sauté and add herbs for a bit. Add veggies to peas. Cook for about 4o minutes add more liquid if necessary. Also can be done in pressure cooker: Sauté veggies in pot first, add rest and bring to high pressure for 15 minutes. | Summer 2011 We managed to grow one small carrot. | Vegetarian Split Pea Soup

13: 1 medium ripe avocado 1/3 to 1/2 cup honey, sugar etc 2-3 Tbsp unsweetened cocoa powder 2 tsp vanilla extract 1/4 sea salt 3-4 Tbsp water Put everything in the blender except the water. Blend and add 1 Tbsp of water at a time until creamy. Chill if you like cold pudding. | Chocolate Avocado Pudding
14: Black Bean Brownies 1 cup black beans 3 large eggs 1/3 cup melted butter 1/3 cup cocoa powder 1/8 tsp salt 2 tsp vanilla 1/2 cup cane sugar 1/2 cup chocolate chips 1/3 cup walnuts oven 350' in 8x8" pan Put all ingredients except chocolate chips and nuts in a food processor. Blend. Add walnuts, pulse a couple times to chop. Mix in chocolate chips and pour into prepared pan. Bake that sucker 30-35 minutes.
15: A few cups leftover rice. Brown short grain is good. Milk to cover Sugar, chunks of whole cane sugar is best Dash of salt Maybe nutmeg, raisins, vanilla, orange peel...you choose. Put rice in a nice, enameled, cast iron pot and pour milk over to cover. Bring to boil and lower to a simmer. When it starts to thicken drop in chunks of whole sugar. Stir every so often. Keep simmering and thickening. Drop in your extra flavours. Add more milk as needed. Take your time. Yum. | Rice Pudding
16: Great Grandma Knoblauch's heirloom rhubarb
17: 2 cups of white/whole wheat flour (combined) 1 tsp baking powder 1/2 baking soda 1/4 tsp cinnamon 1/8 tsp salt 1/2 cup butter 1/2 brown sugar 1/4 cup white sugar 1 egg 1 tsp vanilla 1 cup buttermilk or yogurt/milk About 3 cups or so chopped rhubarb 350' oven 9 x 13" pan Whisk dry ingredients together. Beat butter, sugars, and add egg, vanilla, beat until fluffy. Alternately add flour and buttermilk until well mixed. Stir in rhubarb. Put in prepared pan. Sprinkle a mixture of 1/4 cup brown sugar, 1 1/2 tsp cinnamon and 1/2 cup chopped walnuts on top. Bake for 35 to 45 minutes. 35 | Rhubarb Coffee Cake

19: Granny Mary's Lavender Bundt Cake 3 cups flour 2 tsp baking powder 1/2 tsp salt 1/4 cup lavender flowers 1 cup butter 2 cups lavender sugar (2 c. sugar & 1 Tbsp minced lavender let stand 3 hours) 3 large eggs 1/2 tsp vanilla 1 cup milk 350' in a bundt pan Cream butter, sugar, eggs, vanilla. Add dry ingredients alternately with milk. Bake for 50 - 60 minutes.
21: Berry Pudding 1 lb berries 1 cup flour 1 egg 2 Tbsps sugar 1 Tbsp baking powder Milk to make up to 1 cup Beat egg and add sugar. Pour in milk to make 1 cup and mix into the flour and baking powder. Put in 1 lb berries in a large saucepan, add the batter, let it sit on top and bring to a boil. Turn down the heat to medium and let it simmer for about 15 minutes with the lid on. Serve with fresh cream and sprinkled with sugar
