4: Andouille Burgers with Grilled Sweet Onions & Creole Remoulade Sauce | 6 oz andouille sausage cut into 1 inch pieces 1 1/2 # ground beef 1 tbsp minced garlic 2 tsp worcestershire sauce 1 1/2 tsp Essence 3/4 tsp salt | 3/4 tsp black pepper 4 large kaiser onion rolls or 4 (6 in.) french bread 4 (1/4" thick) slices sweet onion - vidalia 1 tbsp olive oil 3/4 cup grated sharp cheddar creole remoulade sauce

5: Preheat grill med-high Chop andouille sausage in food processor. Transfer to large bowl. Add beef, garlic, worcesterchire, 1 tsp Essence, 1/2 tsp salt, 1/2 tsp pepper. Blend together & form into 4 patties. Grill Kaiser rolls until golden. Brush onion slices on both sides with oil & season with remaining 1/2 tsp Essence, 1/4 tsp salt, 1/4 tsp pepper. Grill until golden. Cook hamburgers, sprinkle with cheese. Essence: 2 1/2 tbsp paprika 2 tbsp salt 2 tbsp garlic powder 1 tbsp black pepper 1 tbsp onion powder 1 tbsp cayenne 1 tbsp dried oregano 1 tbsp dried thyme Creole sauce on next page

6: Creole Sauce: 3/4 cup veggie oil 1/2 cup chopped green onions 1/2 cup chopped yellow onion 1/4 cup lemon juice 1/4 cup chopped celery 3 tbsp creole or whole grain mustard 3 tbsp ketchup 3 tbsp chopped parsley 2 tbsp chopped garlic 2 tbsp prepared horseradish 1 tsp salt 1/4 tsp cayenne 1/4 tsp pepper Blend together in blender. Refrigerate for at least one hour. | PETA People For The Eating of Tasty Animals

7: Cheese & Spinach Stuffed Portobellos 4 large portobello mushrooms 1/4 tsp salt 1/4 tsp pepper 1 cup part skim ricotta cheese 1 cup finely chopped fresh spinach 1/2 cup finely shredded parmesan cheese - divided 2 Tblsp finely chopped kalamata olives 1/2 tsp Italian seasoning 3/4 cup prepared marinara sauce Preheat oven 450 degrees. Coat baking sheet with cooking spray. Sprinkle mushroom caps with salt & 1/8 tsp pepper. Roast approx 20 minutes. Meanwhile, mash ricotta, spinach, parmesan, olives, italian seasoning, & remaining pepper. Microwave marinara 30 seconds. 1 Tblsp marinara to each cap. Mound mixture into caps & sprinkle with parmesan cheese. Bake 10 minutes. Serve with remaining marinara sauce.

8: Cajun Chicken Alfredo 2 boneless chicken breast/skinless thin strips 2 tsp cajun seasoning 2 tblsp butter 1 green onion 2 cups heavy cream 1/4 tsp dried basil 1/4 tsp lemon-pepper seasoning 1/4 tsp salt 1/8 tsp garlic powder 1/8 tsp pepper 4 oz linguine - cooked & drained grated parmesan Place chicken & cajun seasoning in bowl / plastic bag . Shake to coat. In skillet over med heat - saute chicken in butter until tender - 5-7 minutes. Add onion, cook & stir for 2-3 minutes. Reduce heat, add cream & seasoning, heat through, add linguine & toss.

9: Italian Baked Chicken Italian dressing Butter Lemon juice Combine LJ 1/4 & TBS Garlic Butter 1 stick 1/4 cp Lea & Perrins 1/2 cp It dressing melt & pour over seasoned chicken bake @ 325 1 hour This recipe is copied exactly as he had written it down.

10: Cajun Martini The best way is 2 get pepper vodka but cant find it down here anymore so just drop some jap peppers in some vodka for a bit then add vermouth or olive juice ice & add hot pickled okra & enjoy some spicy intoxication but be careful | 2.5 jigs peppar vodka 1 jig vermouth 1 jig olive juice shake garnish with hot pickled okra

14: Red Beans & Rice 1 cup onion 2 cans beans 3 cloves garlic 1 lb sausage 1 bellpepper | spices - 3 bay leaves, pinch cayenne, several teaspoon cajun shake, 2 tsp thyme, parsely Brown bacon, sautee onion, bellpeppers, & garlic Add sausage & brown & Louisiana Hot Sauce. Add spices then beans & water. Bring to boil & simmer 30 minutes - 1 hour _______________________ taste & adjust | Cajun shake: tony's or slap yo mamma

15: Deviled Eggs | Boil & peel & halve eggs Mix yolk, mayo, & paprika (lots of paprika to give it an extra kick) Fill egg halves with yolk mix Sprinkle with paprika

16: Tomato & Corn Chowder | 1 lb ground beef 1/2 cup onion slices (white) 1/2 cup chopped green pepper (I omit) 2 tbsp butter 2 tbsp flour (self rising) 1 1/2 cup tomato juice 1 16 oz can tomatoes 1 12 oz can whole kernel corn - drained 1/4 cup grated ramono cheese In large pot brown & drain meat. Add onion & green pepper, cook until tender, | Kansas City Cooler

17: remove from pan. Melt butter & blend in flour. Gradually add tomato juice. Stir in meat mixture & remaining ingredients. Heat 10 - 15 minutes or until hot. Sprinkle with additional cheese if desired. Cook with Bisquick Cheesy biscuits or cornbread.

20: Loaded Twice Baked Potato

21: 4 med russet potatoes 8 oz. 90 percent lean ground beef 1 cup broccoli florets, chopped 1 cup water 1 cup shredded cheddar cheese .5 cup reduced fat sour cream .5 tsp salt .25 tsp freshly ground pepper 3 scallion sliced 1. Pierce potatoes all over with fork. Place in microwave & cook on med, turning over once or twice until potatoes are soft, about 20 min. (use potato function on microwave) 2. Brown meat in skillet over med-high heat. Transfer to large bowl. Increase to high heat, add broccoli & water to pan, cover, & cook until tender, 4-5 min. Drain broccoli - add meat. 3. Carefully cut off top third of cooked potatoes. Scoop out the insides into a medium bowl. Place potato shells in small baking dish. Add .5 cup shredded cheese, sour cream, salt, & pepper to potato insides & mash c masher or fork. Add scallions & potato mixture to the broccoli & meat. 4. Stuff potato shells with mixture & top with remaining cheese. Microwave on high 2-4 min.

22: Chili - Timmy's Version Chop up about 4 slices of bacon & fry it up in your pan until crispy. Then add 1 to 1.5 pounds of hamburger meat & cook until done. Drain your meat. Crush about 3 to 4 pods of garlic & add to pan & cook until tender. Return meat to pan. Add the following spices: (I mix up all together & add all at once) 2 Tbsp Chili powder 1 Tbsp flour 1 tsp salt 1 tsp cumin .5 tsp sugar

23: ThenAdd: 1 jalapeno pepper 1 onion Bay leaf 1 can tomato sauce (6 oz) 1 can diced tomatoes Beer Bring to boil. Then simmer for 30 minutes. It is better the next day as well. Serve over rice or fritos.
