S: Favorite Family Recipes

1: Elaine's Blueberry Muffins In separate bowl, mix together: 1 3/4 c flour 1/3c sugar 2 tsp baking powder 1/4 tsp salt Stir in small bowl: 1 beaten egg, 3/4c milk, 1/4c oil Add wet ingredients to flour mixture, stir until moist (batter may be lumpy). fold in 2 c blueberries. Spray muffin tin with pam for baking and spoon batter into muffin wells. Bake at 350 degrees x 35 min...if not browned, broil for 2 min while watching closely. | Emma loves Grammie's Muffins... | 1

2: Diana Thompson's Banana Bread Recipe 3 bananas, mashed 2/3c sugar 1 egg 2 tbsp vegetable oil 2 c flour 1 tsp baking powder 1 tsp baking soda 1 tsp salt Mix flour, baking soda, baking powder & salt in order given & set aside. In lg bowl, add bananas (mash 1 at a time), egg, vegetable oil then sugar (add in order given) sift in flour mixture transfer into greased and floured bread pan Bake at 375 degrees x45 min Makes one loaf | Lillis Howard, Diana & Darrell | 2

3: Zucchini Bread 3 eggs 1 c veg oil 3 c flour 2 c sugar 3 tbsp ground cinnamon 2 c grated zucchini 1 tsp baking soda 2 tsp vanilla extract 1/4 tsp b.powder 1 tsp salt Preheat oven to 325 degrees. Grease & flour two 8x4in loaf pans. In lg bowl beat eggs until fluffy, mix in oil & sugar. Stir in zucchini & vanilla. Combine flour, cinnamon, baking soda, b.powder salt & stir into egg mixture. Transfer into loaf pans. Bake 60 -70 min | Lillis Howard's Donut Recipe 4c flour 1 tsp b.soda 1/2tsp cream of tartar 1/2tsp nutmeg 1/4tsp cinn 1 c sugar 2 eggs 1 c sour milk 1 tsp salt Beat eggs & sugar, add sour milk then dry ingredients flour board generously (3/4cmilk & 1/4c vinegar makes sour milk) | 3

4: Pat Kenniston's | Blueberry Muffins | 1/2 c butter 2 tsp baking powder 2 c flour 1/2 tsp salt 1 c sugar 2 1/2 c blueberries 2 eggs 1 tsp vanilla 1/2 c milk 2 tsp sugar (for tops) On low speed, cream butter & sugar until fluffy. Add eggs, one at a time and mix until blended. Sift dry ingredients & add alternately with milk. Mash 1/2 c berries & stir in by hand. Grease muffin tins & fill with batter topping them with a sprinkle of sugar. Bake at 375 degrees x 30minutes | 4

5: New England Banana Muffins 1 3/4c all purpose flour 1 egg, slightly beaten 1 tsp baking soda 1 tsp vanilla extract 1/2 tsp baking powder 2 med bananas, mashed 1/2 c sugar 4 tbsp milk 1/4 c melted butter 4 tbsp real maple syrup Preheat oven to 375 degrees. In med bowl, sift flour, baking soda and baking powder together. Mix in sugar. In lg bowl, combine melted butter, egg, vanilla, bananas, milk and maple syrup & beat with fork until well blended. Stir flour mixture into banana mixture until blended. Spoon into muffin tins. Bake 20 min | 5

6: EASTER | happy | Elaine's Corn Bread 1 c flour 3/4 tsp salt 1 c yellow cornmeal 2 eggs 1/4c sugar 1 c milk 4 tsp baking powder 1/4c oil Stir together flour, cornmeal, sugar, baking powder & salt. Add eggs, milk, & oil & beat until smooth (don't over beat). Turn into a greased 9x9 in pan Bake 425 degrees x 20-25 minutes | 6

7: N..ew England Boiled Dinner | In large stock or lobster pot add: Pork shoulder or Butt if not pre-cooked, boil then discard water, fill with water again and bring back to a boil. 6-8lb = 3 1/2hrs Boneless 2lb = 2hrs (boil around 30-35min/lb) then add: cabbage, cut into large pieces & one turnip, cubed. Cook 10-15min then add Potatoes (peeled & halved) and peeled carrots & cook 10-15 min longer | 7

9: Down East Maine Pumpkin Bread 1 (15oz) can Pumpkin puree 4 eggs 1 c vegetable oil 2/3 c water 3 c sugar 3 1/2 c all purpose flour 2 tsp baking soda 1 1/2 tsp salt 1 tsp ground cinnamon 1 tsp ground nutmeg 1/2 tsp ground cloves 1/4 tsp ground ginger Preheat oven to 350 degrees. Grease and flour three 7x3inch loaf pans. In lg mixing bowl, combine pumpkin puree, eggs, sugar, water and oil until well blended. In separate bowl whisk together dry ingredients & add to wet ingredients pour into pans Bake 50min | 9

10: Diana Thompson's stuffing Recipe Saute together: 1 1/2 sticks butter 1 med onion, minced 2/3 c diced celery In lg bowl combine: 1 box bells traditional stuffing mix 1 c mashed potatoes (can use instant) 1/4 tsp bells seasoning add sauteed mixture to stuffing mix, then add 3 2/3 c chicken broth. Toss with a fork, cover and let sit x 5 minutes | Emma's 1st thanksgiving | 10

11: 2 celery ribs, sliced 3c cooked turkey 1 carrot, sliced 1 (12oz) jar turkey 1 cup chopped onion gravy 1/4cup butter 1/4c leftover stuffing 3cans chicken broth 1/4c mashed potatoes 2cups water 2tbsp cranberry sauce 2 cups water 1 cup pearl barley 1 tsp garlic powder salt & pepper to taste 1/2tsp thyme In soup pot saute first 4 ingredients for 2 minutes. Add broth, water & spices. Cover & cook on low 15 min Add turkey, gravy, leftovers &barley Cook until leftovers dissolve & barley is plump and softened. | Left Over Turkey Soup | 11

12: Kathy Yeargle's French Meat Pie 2 lb ground pork 2 lb ground beef salt/pepper to taste 2 small onions, chopped 1 tsp cinnamon 3/4 tsp cloves 4 potatoes, diced Mix together & simmer for several hours. Add water to keep from burning. Simmer out excess liquid or drain out. Place in pie crust Bake until top is golden brown Makes two meat pies. | 12

14: Diana's Chicken Noodle Soup 2 (48oz) College Inn light/fat free chicken broth one xlg onion, chopped 1 heaping tsp onion powder 2-3 tbsp bells seasoning 3 tbsp granulated chix broth 3 small shakes "spike" (all purpose natural seasoning) celery, carrots whole, boneless,skinless chicken (can put in frozen) when done cooking, cut up chicken into chunks . Add few handfuls of noodles and cook an additional 8 min or until noodles tender | Elaine's Corn Chowder 4 good sized potatoes, peeled and cubed 2 onions, chopped Add potatoes & onion to soup pot and fill with water until potatoes & onions covered. Boil 10min. Add 3 cans creamed corn, 1/2 can whole kernal corn, 1 stick butter, 1 can evaporated milk and salt to taste.

15: Meatball Lasagna 2 cans diced tomatoes 1 (8oz)can tom sauce 1 (6oz) tomato paste 1 onion, chopped 1 tsp basil 4tsp parsley 1 clove garlic, minced 2tsp sugar garlic salt to taste Combine the above ingred. & shred one carrot, bring to boil then simmer 20-30min. Boil 24 frozen meatballs seperately (or can use fresh homemade meatballs, then cut up & add to sauce. In sm bowl, add 1 c ricotta cheese, 1 egg (I usually double that) & 3/4c parmesan cheese. Mix & set aside. Layer cooked lasagna noodles, sauce mixture, ricotta cheese mix then noodles etc. ending in sauce. cover with mozz cheese. Bake 350 x45min

16: American Chop Suey cook 2 1/2lb hamburger together with 1 lg onion, diced until cook through Meanwhile, cook 1/2 box elbow macaroni according to box instructions. Add 1/2 stick butter, 1 can stewed tomatoes, 1 can tomato sauce, salt & pepper to taste to hamburger until warm then add macaroni and serve. Stuffed Shells Cook one box large shells. Then combine: 2lb cottage cheese 12oz mozz. cheese 2 eggs and stuff shells with mixture. Cover with spaghetti sauce and bake zt 350 degrees x 30 min | 16

17: Homemade Meatballs 2 1/2 lbs ground beef 3 lg eggs, beaten 1 pkg frozen, chopped spinach 2 tbsp Italian herb seasoning 2tsp garlic powder 2 tsp salt 1/2c fine or panko bread crumbs Preheat oven to 400 degrees. Coat baking sheet w/ cooking spray. In lg bowl combine all ingredients, don't overmix. Roll into 1 in balls and place 1/2in apart. Bake 20-25min until lightly browned. (I usually pre-cook spinach slightly in microwave) | Dave's Meatball Recipe from Martha Stewart 2 lbs ground beef 1/2c Romano cheese 1c plain dried breadcrumbs 1/4c parsley 1/4c finely chopped onion 2 lg eggs 1 tsp coarse salt 1/2 tsp pepper 1/4 c olive oil Gently mix by hand to combine. wet hands & roll into 1 3/4in balls. Heat olive oil in med skillet & cook meatballs until browned on all sides transfer onto paper towel to drain & simmer in sauce

18: Roasted chicken with Carmelized onion Soup 2 c roasted chicken, cut into strips 2 tsp veg oil 8 c chicken broth 2 med onions, halved & thinly sliced 1/8 tsp pepper 2 med carrots, sliced 2 stalks celery, sliced 3/4 c uncooked campanelle pasta Heat oil in 10in skillet over med heat add onions & cook until tender & carmelized Remove from heat. In stock pot cook broth, pepper, carrots & celery over med-high heat, Bring to boil & stir in chicken & pasta. Reduce heat to medium Cook for 10 minutes or until pasta is tender. Stir in onions & serve immediately | 18

19: Jesus Is The Reason For The Season | Pan Sauteed Chicken with Vegetables & Herbs 1/8 tsp pepper 1/8 tsp paprika 2 tbsp flour 3 or 4 boneless chicken breast 2 tbsp olive oil 2 sm red onions, cut into quarters 1 lb new potatoes (red), cut into quarters 8 oz fresh baby carrots 1 1/2 c chicken broth 3 tbsp lemon juice (I don't usually use) 1 tbsp oregano 1 tbsp thyme Heat oven to 350 degrees. Combine pepper, paprika & flour. coat chicken w/ mixture. Heat the oil in 12in oven-safe skillet over med- heat add chix & cook until browned. Remove chicken from skillet. Add onion & potatoes to skillet and cook x5min. Add carrots, stock, lemon juice & oregano & heat to a boil. Return chix to skillet & cover. Bake at 350 degrees x20min then uncover& bake x15min or until chicken cooked through &sprinkle with thyme | 19

20: Diana's Irish Beef Stew Cut & cube 2lbs potatoes & place in water Trim the fat off & cut 5 lb stew beef into bite sized pieces. Braise in cast iron frying pan with onion salt. Fill lg pot 3/4 full of water, add 2 cans Hunts tomato sauce or paste. Add 3-4 Beef bullion cubes, 3-4 lipton onion soup mix packets, 3 regular sized onions, chopped. Boil with cover on once at full boil turn down to low & boil x 1 1/2hrs. May add more water if needed. Add sliced carrots, cook 10min, add potatoes, cook 15 min, add frozen peas & turn off heat, leave cover on. | 20

21: Aunt Lou's Seafood Chowder 1 (50oz) can Snow's condensed clam chowder 1/2 lb butter (1c) 1/2 lb white fish 2 (5 oz)bags frozen shrimp 1/2lb bay scallops 1/2 lb sea legs Saute all seafood & butter, add clam chowder then 1 qt. half and half & sprinkle with parsley flakes | 21

22: Heather McAfee's Macaroni & Cheese 1/2 box (8oz) elbow noodles 1 block sharp cheddar cheese 1 1/4c milk 1/2 stick (1/2c) butter 4 tbsp flour Shred cheese using cheese grater & set aside Thoroughly cook noodles. While noodles are cooking, in separate med sized pan over low heat, melt the 1/2 stick butter then add 4 tbsp flour & whisk together until pasty. Then add 1/4c milk to pasty mixture & whisk over med heat x2 minutes. Add another 1 c milk to mixture & heat at medium until thick & smooth. Whisk often to keep from getting lumpy (10min) keep heating until thick & smooth & begins to boil. Add grated cheese by handfuls, whisking until smooth (leave 1 handful for later. Place cooked noodles in 5x7 baking dish. Pour cheese sauce over noodles, stir together with spoon. Sprinkle left over cheese over the top & sprinkle with bread crumbs. Bake at 375 x30 minutes | 22

23: Macaroni & cheese 1 3/4c macaroni 1 egg, sl beaten 2c small curd cottage cheese 3/4 tsp salt 1c sour cream 1/4tsp pepper 2c montery jack cheese 1 pkg chicken sausage Cook macaroni and drain. Meanwhile cook sausage in pan until golden brown. Add small amount maple syrup to sausage and allow to carmelize, set aside. Combine cottage cheese, sour cream, egg, salt/pepper & shredded cheese; mix well. Stir in macaroni & sausage & spoon into buttered casserole dish. Sprinkle top with crushed Ritz cracker crumbs. Bake at 350 degrees x45min to 1 hour | 23

25: Aunt Donna's Cabbage Rolls 2 lb hamburger Diced onions 2 c minute rice salt/pepper to taste 2 eggs Mix the above ingredients together & add 1/2c tomato juice (if not moist, may add more tomato juice). Boil cabbage in just enough water to cover, when leaves can be removed take out & remove large leaves (3-5 min once at a rolling boil). Add lg spoonfuls of raw hamburger mixture (not too full, because they'll open up). Cook on a bed of Bavarian sauerkraut, lay cabbage rolls on top, cover get it to bubble then cook on medium heat x 1hr & 15-30min | 25

26: Homemade whipped Cream Place beaters in the freezer to chill Use large glass bowl Whip "whipping cream" on high until it starts to firm. Add sugar 1 tbsp at a time to taste then add 1 tsp vanilla and a pinch of salt | Peanut Butter Frosting 1/2 cup butter 1 c creamy peanut butter 4 c confectioners sugar 1/3c cream or milk In large bowl beat butter and peanut butter until light and fluffy, slowly beat in 1/2 of the confectioners sugar, mix 1/4 of the milk. Then mix in the rest of the confectioners sugar and milk or cream until spreadable consistency | 26

27: Vanilla Frosting 3.4oz instant vanilla pudding 1/4 cup of confectioners sugar 1 c milk 8oz coolwhip Combine pudding, sugar & milk. Beat on low x1min Fold in cool whip | White Chocolate Chex Mix 10 oz mini Pretzels 2c salted cocktail 5 cups cheerios peanuts 5 cups corn chex 1 lb M+Ms 2pkg vanilla chips 3 tbsp vegetable oil Melt vanilla chips & vegetable oil. Place all other ingredients in lg bowl &pour melted mixture over. Mix well. Place in Fridge ad break up when chilled. Peanut butter Buddies 9c corn or rice chex 1c chocolate chips 1/2 peanut butter 1/4c margarine 1 tsp vanilla 1 1/2c powdered sugar In lg bowl set chex aside. In 1qt microwavable bowl, microwave choc chips, peanut butter & butter uncovered on high 1 min stir, microwave 30sec longer, stir in vanilla. Pour mixture over cereal. Stir until evenly coated. Pour into ziplock bag, add powdered sugar, seal bag & shake. | Mom's Chocolate Frosting 3 squares unsweetened bakers chocolate 6 tbsp butter 3 cup confectioners sugar pinch of salt 4 1/2 tbsp milk 1 1/2 tsp vanilla | Odds & Ends

29: Dave's Seafood Portifino 1/4 c italian dressing 1/4c chopped shallots 1 c thinly sliced carrots 1 c thinly sliced snow peas 1 c chicken broth 1/2 lb sea scallops 1/2 lb medium shrimp 1/4 c whipping/heavy cream 2 tbsp flour salt/pepper to taste In 12 in skillet, heat italian dressing & cook shallots or onions over medium heat x 2min. Add carrots & snow peas and cook an additional 2 min. Add broth & bring to a boil. Add scallops & shrimp & simmer uncovered x 3min or until seafood done. Stir in cream blended with flour & cook over medium heat stirring occasionally 2 min or until sauce thickened. Serve over capellini or angel hair pasta. | 29

30: Mindy's Crockpot Lasagna Recipe 1 lb hamburger 3 cans tomato sauce (or jar of spaghetti sauce) 2 c mozz cheese 1 container ricotta cheese 1 c parmesan cheese 15 no-boil lasagna noodles Cook hamburger & drain. Stir in tomato sauce. Mix 1 c mozzarela cheese, ricotta & parmesan cheeses together Spoon 1/4 of hamburger mixture in slow cooker. top with 5 noodles, broken into pieces to fit & spread top with 1/2 cheese mixture & 1/4 hamburger mixture. Top with 5 noodles, remaining cheese & 1/4 hamburger mixture. Top with 5 noodles & remaining hamburger mixture. Cover & cook on low 4-6 hrs. then sprinkle top with remaining 1 c mozzarela cheese, cover & let sit 10 min to melt. | 30

31: Skillet Ziti with Chicken & Broccoli 1 lb boneless chicken, cut into 1/2in strips 1/2 tsp pepper 1/4 tsp salt, divided 2 tbsp butter, divided 1 sm onion, chopped 2 cloves garlic, minced 1/4 tsp dried oregano 2 1/2 c chicken broth 1 1/2 c milk 2 1/2 c uncooked ziti 1 c julienned red peppers 1 bunch broccoli, cut into florets 1/2 c grated parmesan cheese Sprinkle chicken with pepper & 1/8 tsp salt. In lg skillet saute chicken in 1 tbsp butter until no longer pink. Remove & keep warm. In same skillet, saute onion in remaining butter until tender. Add garlic, oregano, & remaining salt cook 1 min longer. Stir i in broth and milk & bring to boil. Add ziti & cook 8-9 min until pasta is tender. Adding broccoli & peppers during last 5 min. Sprinkle with cheese just before serving.

32: Grammie Grant's Spaghetti Sauce Recipe 3 cans Delmonte Onion & Garlic spaghetti sauce 3 Lg cans diced tomatoes 4oz sliced pepperoni 1 cup parm cheese 1/2 - 1/3 cup sugar 2 sm cans tomato paste 1 1/2 heaping tbsp oregano 1 heaping tbsp basil, not sweet Place above ingredients in lg kettle and set aside In olive oil saute 1 xlg onion and green pepper diced, 2 cloves garlic diced extra fine Boil 1 pkg (6 links) sweet Italian sausage x10min. slice & add to sauce | 32

33: Cook 1 1/2 lb hamburger and add to cold ingredients Stir well & simmer 1 1/2 hrs. Cool before freezing | I have yet to taste a sauce that can hold a candle to this one!! | We cooked up a mob-sized batch of Grammie's spaghetti sauce for Emma's first birthday. It's definately one of Emma's favorite foods and it really made the party a hit!

34: Baked Scallops 1 c ritz cracker crumbs 2 lbs large scallops, cut in half 1/4 tsp salt rosemary to taste 1/8 tsp pepper 1/4lb butter cut up 1/2c milk/cream Place 1/2c of ritz cracker crumbs in bottom of oven safe dish. Add scallops to dish. Combine salt, pepper, 1/2 c ritz cracker crumbs and rosemary and sprinkle over scallops. Place butter on top and Bake at 350 degrees x 45 min.

35: Diana's Tuna Casserole 1 1/2 c macaroni 1 can cream of celery soup 1 pkg frozen petite peas 1 soup can of milk 1 sm onion, minced finely 1 can solid white tuna fish Boil Macaroni x6min. Saute onion for a few minutes then add cream of celery soup & milk. Heat until hot. Next add frozen peas and warm. Place tuna in casserole dish and break up flakes with a fork. Add macaroni and soup mixture. May add a crumbled cracker topping if desired. Bake at 350 degrees x 30 minutes. | Fried Rice 2 tbsp veg oil 1/2c frozen peas peel & shred 1 carrot 1/2c corn 1 tsp dried minced onion Place oil in skillet, when HOT Add rest of the ingredients & add 2 tbsp soy sauce & 2 c cooked minute rice

36: Soups | Hamburger Soup Lg can beef broth or water & beef bullion carrots, sliced 2 onions, diced 5 potatoes, cubed 1 clove garlic, minced Lg can petite diced tomatoes 2- 2 1/2 lb ground beef Brown meat in fry pan until cooked through, strain off excess fat/dripping. Add all the above ingredients to crockpot. Cook on low 9hrs or on high 3hrs | Shrimp Wiggle 4 c boiling water 1-2 onions, diced 4 c minute rice salt/pepper to taste 4 sm cans tiny shrimp (& juice) 4 (16 oz) cans stewed tomatoes (cut tomatoes up) Simmer all of the above ingredients x 10-20min then add 1 tbsp baking soda (it will foam up), then add 4 cans of canned milk and 3 sticks butter | 36

37: 1 (15oz) can chicken broth 1 c milk 2 tbsp margarine 2 tbsp cornstarch 1/2 tsp salt 1/2 tsp parsley 1/4 tsp white pepper 1/4 tsp nutmeg 1 1/2 c finely chopped broccoli Combine all ingredients except broccoli in 2 qt microwavable bowl. Stir until cornstarch is dissolved. Add broccoli & cover with plastic wrap. Cook in microwave on 70% 13 -14 min or until broccoli is fork tender Stir once during cooking time. Let stand 3 min before serving | Aunt Lou's Cream of Broccoli Soup

39: Italian Wedding Soup 1 egg 1 1/2c chopped celery 3 onions, chopped 2 1/2tbsp butter 2/3c dry bread crumbs 4.5c chopped spinach 1.3lb ground turkey 1/2 tsp dried thyme 1 1/2 -3 tsp olive oil 6 (14.5oz) cans chicken 2 c sliced fresh carrots broth 2 tbsp dried parsley 1/8 tsp pepper 1/8 tsp salt 1 1/4c acini di pepe pasta In lg bowl combine egg, 1/4-1/2c onion, bread crumbs & ground turkey. Mix well shape into balls. In lg skillet brown meat in oil until no longer pink, drain & set aside. Meanwhile, in lg saucepan saute carrots, celery & remaining onions in butter until crisp tender. Add spinach, broth, parsley thyme, salt&pepper & meatballs. Cook uncovered over med heat 10-15min Bring to boil, add pasta and cook 7-9min | 39

40: Garlic Panko Chicken 5 tbsp butter 2 cloves garlic, minced 3/4c panko bread crumbs 1/4c parmesan cheese 1 tbsp parsley (optional) 1 1/4 - 1/2 ln boneless, skinless chicken breast salt/pepper to taste Preheat oven to 400 degrees. In sm saucepan, melt butter over med heat, as butter starts to melt add garlic. Once butter melted, remove from heat & pour garlic/butter mixture into low,flat dish such as a pie plate. In another low, plat dish combine panko, parmesan, parsley & add salt/pepper to taste. Spray baking sheet with non-stick. Remove chicken tenderloin from breast and leave whole, then cut breast crosswise into strips. Roll chicken pieces into garlic/butter then completely dredge in panko mixture & place in bakers sheet. Sprinkle any leftover panko mixture on top of chicken strips Spray top of chicken w/ spray olive oil Bake 15-20 minutes | 40

41: Common Man Steak Marinade Recipe 1c A1 steak sauce 2 oz brown sugar 1 oz ketchup 1 tbsp minced garlic 1 tbsp worcestershire sauce 2 tbsp orange juice 1 tbsp lemon juice

42: Cold Weather | Favorites | Diana Thompson Five Bean Soup 2 Large cans Baked Beans 1/2c Ketchup 1 can dark red kidney beans 1/4c lt.brown sugar 1 can butter beans 1 can crushed pineapple 2 cans chick peas 1 sm can pineapple tidbits 1/2tsp dry mustard 1.3 lb ground turkey Brown meat and add all ingredients to crockpot. Cook on high x1hr and on low x4hrs | 42

43: Home Cooking | Diana's Meatloaf 2 lbs hamburger 3/4 tsp salt 1 c hot water 1/4 tsp pepper 1/4 c minced onions 2c Bells Readymix 2 - 3tbsp ketchup stuffing 4 pieces Bacon Place hamburger in lg bowl, add stuffing onions,salt/pepper, ketchup then add hot water & mix thoroughly. 58: Chocolate Peanut butter Cheesecake 18 chocolate graham cracker squares, finely crushed (1 1/2c) 1/2c butter, melted 2 tbsp sugar 2 (8oz) pkgs cream cheese, softened 1 c creamy peanut butter 1/4c sugar 3 eggs 1 1/2 c semi sweet chocolate pieces 2 tbsp milk 1/2 tsp vanilla Preheat oven to 300 degrees. Combine crackers, melted butter, and 2 tbsp sugar. Press into bottom and 1 inch up sides of a 9 inch springform pan, set aside. In bowl beat one package cream cheese with mixer until smooth. Beat in peanut butter and 1/4c sugar until combined. Fold in one lightly beaten egg; set aside. In saucepan, stir chocolate over low heat until melted & smooth. Remove from heat. Cube remaining cream cheese; add to chocolate. Stir to combine. Stir in milk & vanilla until smooth. Fold in 2 lightly beaten eggs. Spread half the choc mixture into pan. Carefully spread all the peanut butter mixture over layer. Evenly spread remaining chocolate mixture. Bake 45 min or until top is set lightly when shaken. Outer 2 in of top will be slightly puffed & dry looking; center will look darker and wet. Cook in pan on rack 15 min. Use sm sharp knife to loosen crust from sides; cool 30 min. 64: 2 lbs rhubarb stalks, sliced 1/2 inch thick ( equals around 6 cups) 1 1/4 c sugar 1 lb strawberries, hulled & quartered (equals around 1 3/4 cups) 3 tbsp cornstarch 1 tsp pure vanilla extract 2 tbsp lemon juice (I don't usually use) For Topping : 1 stick butter, softened 1 1/2c light br sugar 1 1/2c all purpose flour 1 1/4 c quick rolled oats 3 tbsp canola oil 1 1/2tsp cinnamon 3/4 tsp salt Preheat oven to 375 degrees. In bowl, toss rhubarb with 3/4c sugar & let stand 15min, stirring occasionally. In another bowl, toss strawberries with remaining 1/2c sugar & let stand 10min stirring occasionally. Using a slotted spoon, transfer rhubarb to the strawberries & discard any rhubarb juice. Add cornstarch, lemon juice & vanilla. stir well & transfer into 9x13 in glass baking dish. Make the topping: Combine all Topping ingredients together using a pastry blender or your fingers until lg crumbs form. Sprinkle the topping evenly over the filling & bake 30min. Reduce oven temp to 325 & cont. baking 30min longer or until the fruit is bubbling & topping is golden brown. Let rest 20 min. | Strawberry Rhubarb Crisp Recipe

74: Whoopie Pies 1 c shortening 2 tsp baking soda 2 c sugar 1 c hot water 2 eggs 4 c all purpose flour 2 tsp vanilla 1 c unsweetened cocoa 1 c sour milk 1 tsp salt **to sour milk place 1 c of 1 or 2% milk with 1 tsp plain vinegar stir & let sit 10-15 min (will curdle slightly) Preheat oven to 400 degrees grease cookie sheet. In lg bowl cream together shortening, & sugar until fluffy. Beat in eggs, vanilla, & sour milk. Combine the flour, cocoa powder & salt & stir into creamed mixture. Add egg. Stir until well mixed. Add all dry ingredients. stir well. Roll into balls about the size of a quarter, place on greased cookie sheet. Press each ball into a circle with a fork. Bake at 350 degrees x 11 minutes (burn easily)

81: Holiday Memories Warm Even The Coldest Of Days | Heather's Ham Glaze for 8-10lb ham: 3/4c honey 1/2c lt brown sugar 1/4c lemon juice 1 tsp dry mustard 1/2 tsp ground cloves 1/2 tsp ground ginger 1/2tsp pepper 1/4tsp gr. nutmeg Combine in bowl. pour 1/4 of glaze over ham then turn ham over so uncoated side is up & pour 1/2 of glaze evenly over the top. Bake ham. 1/2 way through brush ham with remaining glaze. 10 minutes before done baste with juices from pan & baste again just before serving.

90: Heather's Butter Crunch 1 pkg saltines 1c chocolate chips 2 sticks butter 2/3c sugar Preheat oven to 450 degrees cover cookie sheet with foil (be sure to use a cookie sheet with edges/sides to it). Place saltines so they cover the bottom of the cookie sheet. In saucepan, melt the butter & sugar then spread evenly over crackers. Place in oven for 4-5min. While in the oven, melt 1c chocolate chips (melt in a pan over a pot of boiling water/double broiler). Remove crackers from oven & spread choc chips evenly over crackers. Refrigerate until cool. Break apart & enjoy!

Add sugar, eggs & vanilla, stir. Stir in flour. Grease 9inch pie plate & pour in. Bake 25 min. Cool completely. Pour milk into bowl with pudding. Beat with wire whisk x2min Let stand 2 min. Spread over pie bottom. Top with coolwhip & sprinkle with chocolate curls by using a potato peeler on a remaining chocolate square

92: Diana's Heavenly Hash 1 can crushed pineapple 2 c tiny marshmellows 1/4c well drained cherries save out 1/4c of pineapple juice & add to marshmellows in large bowl. Mix & let mixture sit for 1hr at room temperature. Whip together: 1 c heavy cream 2 - 3tbsp sugar 1 tsp vanilla extract or 1/4tsp almond extract after marshmellows have sat with pineapple juice for one hour fold in whip cream & cherries. May top with coconut if desired.
