1: This cookbook is inspired by and in loving memory of Valborg Stokes | Mormor | Mamma | Farmor | Mooma

2: Kroppkakor | Ingredients: 6 cups of pealed, mashed potatoes 3 teaspoons salt 9 large egg yolks 2-3 cups flour 1 lb pork, cut into small cubes 3 onions 3/4 teaspoon allspice 1 tablespoon salt Parsley Melted butter

3: Method: Combine mashed potatoes, 3 teaspoons salt and egg yolks. Knead in about 2-3 cups of flour to a nice texture. Fry pork, then add and fry just as much onions into the pork. Add allspice & 1 tablespoon salt. Flatten dough into fist-sized patties & wrap approximately 1 teaspoon of pork/ onion mixture within dough. Boil 10-15 minutes in salted, boiling water. Garnish with parsley & melted butter. Serves 14

4: Ingredients: 6 chicken breasts 1 can mushroom soup One 3 ounce can sliced mushrooms (or fresh) 1 cup sour cream 1/4 cup sherry or wine Paprika (sprinkled on top) Method: Place chicken in a baking dish & cover with the remaining ingredients. Bake at 350 degrees for 1 1/2-2 hours | Greta Svard Chicken

5: String Bean Casserole Ingredients: Fried onion rings-1 can 2 cans cream of mushroom soup 2 big bags cut string beans Slivered almonds Method: Steam green beans a little. Pour into casserole dish with mushroom soup & slivered almonds. Cover with onion rings. Bake at 350 for 20 minutes, or until bubbly.

6: Swedish Meatballs/Meatloaf | Ingredients: 1/2 cup breadcrumbs 2/3 cup milk 1 egg yolk 2 tablespoons minced onions 1 teaspoon salt 1/2 teaspoon pepper or allspice 1/8 teaspoon nutmeg 1 lb ground meat 2 tablespoon oleo to brown (don't add this for meatloaf) 3/4 cup water A dash of sugar

7: Method: Roll into small balls and saute. For Meatloaf: Grease bread pan. Spread mixture into pan & bake, covered: 2 pounds-325 for 1 1/2 hours 1 pound-325 for 1 hour Note: Double the recipe for a meatloaf

8: Cook some whole beets until tender. Put in cold water & slip off skins. Slice them & put in spiced vinegar. Simmer for 10 or 15 minutes. | Spiced Vinegar: 2 cups vinegar 1 cup sugar About 6 or 7 whole pieces of allspice 1 teaspoon salt About 5 whole cloves. | Pickled Beets

9: Swedish Brown Beans | Wash one pound of brown beans. Soak for 2 or 3 hours. Drain and cover with fresh water, add salt and cook until tender. Add 1 tablespoon of vinegar and sweeten with Karo syrup to taste. Cook until it thickens, stirring continuously to prevent burning. Be sure beans are soft Can be served with fried side pork.

10: Cut up small head of cabbage. Fry in frying pan with margarine and Karo syrup to taste and until limp and a little brown. Mix ground beef with onion and seasoning- salt, white pepper, celery salt. Mix together and add some milk and cornflake crumbs. Cooked rice can be added if desired. Layer dish by alternating cabbage and meat. | Lazy Man Koldomars

11: Cheesy Fish Bake | Ingredients: 1 can of celery soup 3/4 cup sharp cheddar cheese A little milk or sour cream | Method: Mix ingredients in a baking dish & add fish. (Usually Catfish) Bake at 350 for 40 minutes or until fish is done. Serve over rice.

14: Kanelbullar | Cream together a small yeast cake, 1/2 cup sugar & 1/2 cup shortening (margarine). Add 2 slightly beaten eggs, 1/2 teaspoon salt, 1 cup warm (not hot) milk & 4 cups of flour. Mix together and let rise about 1 1/2 hours or until double in bulk. Place on floured board & divide into 2 portions. Roll each portion out like pie & cut each into 8 shaped wedges. Add a little cinnamon & sugar & roll each wedge starting from wide side to form a roll shape. Place on greased cookie sheet & let rise again. Bake at 350 until light brown | Swedish Rolls

15: Almondskopar | Ingredients: 1 cup butter 1 cup sugar 3 eggs 1 tsp.almond extract 2 tsp. baking powder Enough flour to roll out thick Method: Bake in 3 small rolls. Cut while warm. Dry or toast in slow oven.

16: Swedish Pancakes | Beat 7 eggs & sugar until fluffy. Add milk and flour until batter is thin but has some feel. Pour in pan to make a thin pancake. Use margarine to coat pan. Serve with whipped cream & strawberries.

18: Seafoam Salad | Ingredients: 1 package limeJello water 1 can pears 6 oz. cream cheese 1 small container whipping cream | Method: Cook Jello in total 1 1/2 cups liquid (composed of pear juice from can and water). Mash pears & add to warm Jello. Beat cream cheese until soft. Mix in whipping cream. Add cheese/cream mixture to pear/Jello mixture. Pour into a serving dish and chill.

19: Fruit Salad | 1 package of mixed dry fruit (apples, apricots, prunes, etc). Boil fruit and add sugar for taste. Add tapioca seeds for thickening.

20: Ingredients: 6 egg yolks, beaten 2 cups sugar 3/4 cup cream of wheat 1/4 cup plain bread crumbs 2 tablespoons baking powder 1 cup chopped nuts 6 egg whites, beaten stiff & folded into mixture 1 quart heavy cream fresh raspberries | Farina Tarta

21: Method | Combine all of the ingredients above (except heavy cream & raspberries). Alternate a layer of the crumbly mixture with a layer of whipped cream. Top with fresh raspberries.

22: Lazy Pepparkakor Ingredients: 1 cup brown sugar 1 teaspoon cinnamon 1 egg 1 teaspoon cloves 3/4 cup shortening 1 teaspoon ginger 4 tablespoons molasses 1/2 teaspoon salt 2 teaspoon baking soda 2 1/4 cup flour | Method: Shape into balls. Dip a bottom of a glass in sugar & press out circle. Bake at 350 for 12-13 minutes.

23: Rhubarb Cream Pie | Ingredients: 1 1/2 cup sugar 3 tablespoons flour 1/2 teaspoon nutmeg 1 tablespoon butter 2 well-beaten eggs 3 cups cut rhubarb 1 recipe plain pastry Method: Blend sugar, flour, nutmeg & butter. Add eggs & beat until smooth. Pour over rhubarb in 9" pastry-lined pan. Top with pastry cut in fancy shapes. Bake at 450 degrees for 10 minutes, then at 350 degrees for 30 minutes.

24: Ingredients: 3/4 cup butter 1 cup sugar 1 tablespoon Karo syrup 1/3 heaping cup chopped almonds 2 1/4 cup flour 1/2 teaspoon baking soda 1/2 teaspoon bakers ammonia or powder Method: Heat oven to 375 degrees. Whip butter, sugar, Karo syrup. Fold in almonds, flour, baking soda & baking powder.Cool cookie mixture in refrigerator, then slice into 1/4 inch thick cookies. Bake on a greased cookie sheet for 8-10 minutes or until golden brown. | Bondkakor

25: Almond Squares | Ingredients: 1 cup butter 2 1/2 cups flour 1 teaspoon almond extract 1 cup sugar 1 egg Mix together butter and sugar. Add egg,, then add flour and extract. Press dough into a 9 x 13 pan. Spread filling mixture over pressed dough. Bake 12-14 minutes at 400 degrees. Filling: 1/2 cup butter 2 eggs beaten 1/2 cup almond paste 1/4 cup sugar Cream together butter and sugar. Crumble almond paste into mixture. Add eggs. Mixture will look crumbly. Frost with an icing when cooled.
