BC: Recipes worth the calories. HAPPY MOTHER'S DAY!

1: Please enjoy these yummy recipes from Jonah and Callie.

2: Breakfast Casserole | 6 flour tortillas-cut into long strips,4 cans diced green chillies-drained,1 lb mild Italian sausage-cooked, 8oz.shredded Monterey Jack cheese, 10 eggs, 1/2 c. milk, 1/2 tsp. salt, 1/2 tsp. garlic salt, 1/2 tsp. onion salt, 1/2 tsp. pepper, 1/2 tsp cumin, 2 sliced tomatoes **Grease 13x9 baking dish, layer half of tortilla strips,then chillies, sausage, cheese and repeat. In a bowl mix eggs, milk and seasonings and pour over cheese.Bake at 350 for 50 min. layer tomaotes on top, cook add'l 15 min. | **Leave out chillies if you do not like it spicy

4: " I love my Gigi!" | Staci Rowland | Hashbrown Casserole | 2 lbs hashbrowns-defrosted, 1/2 c melted butter,1 tsp. salt, 1/4 tsp pepper, 1/2 c chopped onion, 1 can cream of chicken soup, 1 c milk, 1 c sour cream, 2 c shredded cheddar cheese, **optional-1/2 c cream cheese. Topping-2 c crushed Ritz crackers & 1/2 c melted butter.Mix all ingredients together 9x13 dish , add topping | 350 | 45 min | 8

6: Cheese Crostinis | 24 slices French bread, 2 Tbl olive oil, 4oz cream cheese, 3.5-4oz Goat cheese, 1 garlic clove, Italian seasoning (to taste), Jar marinara sauce. Cook bread with oil brushed on each piece for 10 min. Mix cheeses, garlic and seasoning, spread over bread. Warm marinara sauce in microwave then add on top.

9: "When baking, follow directions. When cooking, go by your own taste." ~Laiko Bahrs | Staci Rowland | Salmon Dip | 8 oz smoked salmon, 1/2 tsp garlic powder 1/4 tsp pepper, 1/2 c sour cream, 1/2 c mayonnaise **Mix and chill for 2 hours, then serve.

10: 1 Pkg Frozen Spinach-thawed 1 lb Velveeta Cheese 4 oz. Cream Cheese 1 Can Mild Rotel 8 Slices of Bacon-crumbled Microwave approximately 10 min. stirring every 2 min. and serve. | Cheesy Spinach & Bacon Dip

13: "There is no love sincerer than the love of food." ~George Bernard Shaw | BBQ CHICKEN BREAST OR THIGHS **1 1/2 LBS Chicken Breast or 2 lbs thighs RUB- 2 Tbl brown sugar, 2 tsp garlic powder, 2 tsp chili powder, 1 tsp paprika, 1/2 tsp salt SAUCE- 1/4 c ketchup, 1 Tbl brown sugar, 1 Tbl red wine vinegar, 1 Tbl dijon mustard. Pam cooking spray **Combine rub ingredients in 1 bowl, combine sauce ingredients in another bowl. Cover chicken in the rub mix all over, spray with Pam cooking spray and place on grill on medium heat approximately 12 min. After 12 min spread on the sauce mix while on grill and cook as long as needed.

14: "Try this one Ganny" | Seafood Gumbo 1/4 c oil, 6 Tbl flour, 2 c chopped onions, 1 c chopped green bell peppers, 1 c diced celery, 3 large garlic cloves, 4 c chicken broth, 1 Tbl chicken base, 3 c water, 2 bay leaves, 1 1/2 tsp thyme, 1 tsp basil, 1/3 c parsley, 1 tsp lemon pepper, 1/2 tsp cayenne pepper, 2 Tbl soy sauce, 1 (14oz) can diced tomatoes with garlic,basil, & oregano, 4 c sliced sausage, 4 c okra, 1/2 lb crabmeat, 1 1/2 lbs shrimp, 3 c scallops. **In a large pot combine oil & flour and cook over medium heat stirring constantly until browned. Add onion, pepper, celery, garlic. Cook 5 minutes, add broth, base , stir and add all ingredients EXCEPT seafood. Cook 1 1/2 hrs, then add rest and cook 15 min.

15: "We go crazy over mama's frozen chicken nuggets!" | Jalopeno Grits | 1 c grits, 1/2 c butter, 1 roll jalapeno cheese, 2 cloves garlic, 2 beaten eggs, 1/2 lb Velveeta cheese, 1 (4 oz.) can diced green chili peppers. **Cook grits as directed, add cheese & butter, cook until melted. Add the rest and cook on 350 for 45 minutes. | "We love Staci's home cookin!"

16: Asian Pork Tenderloin | 1/3 c Soy Sauce 1/4 c Sesame Oil 1/3 c Brown Sugar 2 Tbl Worcestershire Sauce 2 Tbl Lemon Juice 4 Garlic cloves crushed 1 Tbl dry mustard 1/2 tsp Pepper 1.5-2 lb pork tenderloin **Whisk together all ingredients. Place in zip top bag along with the pork and refrigerate 8 hours. Remove pork and discard marinade. Place pork in foil lined roasting pan and bake at 350 for 25 min. until done. | MARINATE ALL DAY!!

19: Squash Casserole | 1 1/2 lb fresh yellow squash-thinly sliced 1 medium fresh onion-finely chopped 2 medium carrots, coarsely shredded 1 Tbl water 1 ( 3.5 oz) stick of herb garlic butter 1 (18.5 oz) can chicken corn chowder 1 ( 8 oz) bag shredded sharp cheddar cheese-divided 1/4 tsp kosher salt 1/4 tsp pepper 2 c cornbread stuffing mix 2 Tbl pre-cooked bacon pieces ***Preheat oven to 400. Microwave squash, onions and water on high for 7-8 minutes, until tender. Drain squash VERY thoroughly in colander. Melt butter in microwave. Combine squash, chowder, carrots, 1 c cheese, salt and pepper until blended. Combine butter and stuffing mix. Place one-half of stuffing in bottom of 2-quart baking dish. Top with squash mixture. Stir remaining 1 c cheese and bacon into other half of stuffing and spread over squash layer. Bake 15-20 min or until topping is crisp and brown and bubbles around the edge.

21: Broiled Tilapia Parmesan | 1/2 c Parmesan cheese, 1/4 c butter-softened, 3 Tbl mayonnaise, 2 Tbl fresh lemon juice, 1/4 tsp dried basil, 1/4 tsp ground black pepper, 1/8 tsp onion powder, 2 lbs Tilapia fillets *** Preheat oven broiler. Grease broiling pan or line pan with foil. In a small bowl all ingredients well and set aside. Arrange fillets in a single layer on pan. Broil a few inches from the heat for 2-3 min. Flip fillets and broil a couple more minutes. Remove fillets and cover with mixture on the top side. Broil for 2 more minutes or until topping is browned and fish flakes easily with fork.

22: Zucchini Gratin 6 Tbl unsalted butter- plus extra for topping, 1 lb sliced yellow onions, 2 lbs zucchini-sliced 1/4 in. thick, 2 tsp kosher salt, 1 tsp black pepper, 1/4 tsp ground nutmeg, 2 Tbl flour, 1 c hot milk, 3/4 c bread crumbs, 3/4 c grated Gruyere *** Preheat oven to 400 degrees. Melt butter in large saute pan and cook onions on low for 20 min. Add zucchini, cook 10 min. Add salt, pepper & nutmeg, cook 5 min. Stir in flour and add hot milk and cover for few min. until it makes a sauce. Pour into 8x10 dish. Combine bread crumbs & Gruyere and sprinkle over mix. Dot with butter cut into small bits. Bake 20 min or until browned. | "I'm a taco guy myself" | Happy Mother's Day!

23: Broiled Shrimp & Rice w/ Salsa | 4-6 Large Shrimp skewers Marinade: Juice from 1 lime 1 packet taco mix 1/3 c safflower oil 1/3 c water *** Marinate shrimp overnight. Fire up grill & cook until tender or broil until tender. | Salsa: 16 oz jar salsa, 15 oz can black beans-drained,15 oz can corn-drained.Mix & serve salsa over rice. | MARINATE OVER NIGHT!!

25: Buckeyes | 1 1/2 c Peanut Butter, 1/2 c butter, 1 tsp vanilla extract, 1/2 tsp salt, 3-4 c powdered sugar, 1 ( 12 oz ) package semi-sweet chocolate chips, 2 Tbl Crisco All-Vegetable Shortening *** Combine PB , butter, vanilla and salt in large bowl. Beat with an electric mixer until blended. Add 2 c powdered sugar, beating until blended. Beat in add'l sugar until mix, when shaped into a ball, will stay on toothpick. Shape into 1-in. balls. Refrigerate. Melt chocolate chips and shortening until smooth. Insert toothpick in PB ball and dip 3/4 of ball into chocolate. Place on wax paper. Refrigerate until firm.
