1: This Cookbook is inspired by all of the talented cooks in the family.
2: Pampered Chef | Caramel Apple Tarts | 1. Chop 1/4 cup dry-roasted peanuts and set aside. Coarsely chop 2 large, peeled Granny Smith apples. Combine apples with 1/2 cup caramel sauce and 2 Tbs. all-purpose flour. Microwave on high 5-6 minutes or until bubbling. 2. On a lightly floured cutting board, unroll one pie crust at a time and cut out 12 disks using a biscuit cutter. Do the same to the second pie crust. Put the disks into mini-muffin pan wells. Ruffle edges. 3. Cur twelve unwrapped caramels in half and place one piece into each well. Spoon apple mixture evenly into each well; sprinkle with chopped peanuts. Bake in oven until edges of tartlets are golden brown. Drizzle with additional caramel sauce. | 400 | 14-16 min. | 24
4: Katie McGonigle | Sangria | 1. Mix 1/2 cup sugar, 1 bottle of red wine, 1/2 cup Curacao, 1/2 cup brandy, 2 cups orange juice. 2. Add 1 diced apple and one diced orange (small pieces) to liquid. 3. Chill 2-3 hours before serving.

6: Sweet Potato Queen's Margaritas | 12 oz. bottle Corona Extra (not light) 12 oz. can limeade concentrate 12 oz. 7 Up (not diet) 12 oz. tequila Mix together and chill. Don't turn nose up at beer and 7Up -tastes delicious!
8: Potato Salad 1. Peel and cook 4 cups of potatoes. 2. Combine the following ingredients in a large bowl: 1 cup mayo, 1 Tbs. cider vinegar, 1 tsp. salt, 1/2 tsp. celery seed, 2 tsp. prepared mustard, dash of pepper, 2 hard boiled eggs, 1 & 1/2 cups sliced celery, 1/2 cup chopped onion. 3. Add cooled potatoes to mixture and chill in refrigerator (overnight is better).

When cooking, go by your own taste." ~Laiko Bahrs | Cathie Nocella | Barbeque Spare Ribs Combine the following ingredients for 4 pounds of country style ribs: 1- 15 ounce can of tomato sauce 3/4 cup packed brown sugar 1/2 cup red wine vinegar 1 Tbs. salt 1 Tbs. celert seed 2 tsp. oregano 2 tsp. garlic salt 1 tsp. pepper | High | 3 min. | 4 lbs
10: 1 pound boneless, skinless, chicken breasts (about 4 breasts) 1 (1-pound) package sliced bacon 2/3 cup firmly packed brown sugar 2 tablespoons chili powder 1. Preheat oven to 350 degrees F. 2. Cut chicken breasts into 1-inch cubes. Cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a wooden pick. 3. Stir together brown sugar and chili powder. Dredge wrapped chicken in mixture. 4. Coat a rack and broiler pan with nonstick cooking spray. Place chicken wrap on rack in broiler pan. 5 .Bake 350 for 30 to 35 minutes or until bacon is crisp. | Bacon-Wrapped Chicken Bites
12: Risotto 1. Boil 1 & 1/2 cups chicken broth. 2. In a 10-inch skillet heat 1 Tbs. olive oil over medium heat. Cook 1 small onion (finely chopped) and 1 garlic clove until clear (3-4 minutes). 3. Add 1 cup Arborio rice (I have also used Orzo) and mix thoroughly. Add boiling chicken broth. 4. Cover, reduce heat and simmer for exactly 15 minutes; broth should be almost absorbed. 5. Remove lid and cook and stir rice until it looks creamy but not dry. 6. Add 1/3 cup parmesan cheese.

Mix the following ingredients with 1 pound ground lamb (I have also used ground pork): 1/2 cup bread crumbs, 1/4 cup chopped flat-leaf parsley, 1 large egg, 1/2 cup pecorino romano cheese, 2 Tbs. milk, 1/4 cup chopped sun-dried tomatoes, 3/4 tsp. salt, & 3/4 tsp. pepper. 2. Once mixed, form into 5-6 patties. Wrap each patty in one slice of prosciutto. 3. Heat 1/4 cup olive oil in a sauce pan. | medium heat | 6-8 minutes per side | 5-6
14: Sugared Pecans 1 egg white 1 cup sugar 1 Tbs. water 3/4 tsp. salt 1 tsp. vanilla 1/2 tsp. cinnamon 16-24 ounces pecan halves | 1. Preheat oven to 250 degrees. Spray baking sheet with non-stick cooking spray. 2. In a mixing bowl, whip together the egg white, water, and vanilla until frothy. In a separate bowl, mix together sugar, salt, and cinnamon. 3. Add pecans to egg whites; stir well to coat the nuts evenly. Slowly stir in sugar mixture; mix well until nuts are coated in sugar. Spread nuts evenly onto prepared baking sheet. 4. Bake for 1 hour stirring every 15 minutes.. Store in an airtight container.
15: Jennifer Nocella | Spicy Pecans | 1. Combine and stir the following in a mixing bowl: 2 Tbs. maple syrup, 1 Tbs. Kosher salt, 1 tsp. cayenne pepper, 1 tsp. crushed red pepper flakes, & 1 tsp. chili powder. 2. Coat 4 cups of pecan halves with this mixture. 3. Spread out on a cookie sheet sprayed with non-stick spray and then bake. | 350 | 20 min | 8-10
16: Thanksgiving Stuffing | 8 oz mushrooms 1/2 cup chopped onions 1/2 cup butter or margarine 8 cups dried bread cubes 1/2 tsp. salt 1/2 tsp pepper 1 tsp poultry seasoning 1 tsp ground sage 1/4 cup – 1/2 cup water or chicken broth 1 egg mixed with water * Cook onion and mushrooms in butter (or margarine). * Combine with bread and seasonings. * Toss with enough liquid to moisten. * Stuff in turkey.
17: Carrots & Snow Peas 3/4 cup water 2 cups sliced carrots 8 oz. snow peas 3 Tbs. butter 1/2 tsp. corn starch 2 Tbs. honey Cook carrots in water until crispy but tender. Add snow peas - cook 1-2 minutes. Drain excess water. In a separate dish melt butter and stir in cornstarch. Add carrots, snow peas, and honey and mix until heated through.
18: Heinz 57 Meatloaf | 1-1/2 pounds ground beef 1 slightly beaten egg 1/2 cup Italian bread crumbs 1/4 cup finely chopped onion 1/3 cup milk 1/4 cup Heinz 57 sauce 3/4 tsp salt 1/8 tsp pepper Combine and gently mix ingredients. Shape into loaf in shallow baking pan. Coat top with additional Heinze 57 sauce. Bale at 350 degrees for 1 hour.
19: Frugal Gourmet BBQ Shrimp | 3 slices of bacon, chopped 1/2 pound margarine 2 Tbs. Dijon mustard 1-1/2 chili powder 1/4 tsp basil 1/4 tsp thyme 1 tsp pepper or less 1/2 tsp oregano 2 cloves garlic, crushed 2 Tbs Crab Boil 1/2 tsp Tabasco (optional) 1-1/2 pounds shrimp 1. Peel and de-vein shrimp. Preheat oven to 375 degrees. 2. In a small pan fry bacon until clear. Add all other ingredients, except shrimp. 3. Place shrimp in a baking dish or pan. Pour bacon sauce over shrimp and stir until coated. 4. Bake uncovered for 20 minutes, stirring twice.
21: Green Beans with Water Chestnuts | 5 pounds green beans 3/4 cup margarine 4 green onions 2 cans water chestnuts 1-1/2 tsp salt 3/4 tsp pepper 1-1/2 Tbs soy sauce 1/4 cup sesame seeds Combine everything in a pan, except green beans, water chestnuts, and sesame seeds. Add water chestnuts at last minute. Add mixture to cooked green beans. Sprinkle sesame seeds on top.
22: NJ Crumb Cake Cake Topping 1/2 cup margarine or butter 1/2 cup butter or margarine 1 cup sugar 1 cup sugar 2 large eggs 2 cups biscuit mix 3/4 cup milk 2 tsp cinnamon 2 cups flour 2 teaspoon baking powder 1 teaspoon vanilla 1 1/2 tsp cinnamon 1/2 tsp nutmeg 1. Cream butter and sugar. 2. Beat eggs and milk; mix with butter. 3. In another bowel combine flour, baking powder; then add butter mixture. 4. Stir in vanilla. 5. Pour batter into greased 9x13 pan. 6. For crumb topping: cut butter into sugar, biscuit mix, and cinnamon. 7. Sprinkle over batter in pan. 8. Bake 350F for 30 minutes or until done.
23: Gooey Butter Cake | Cake 1 box yellow cake mix 1 egg 1 stick butter, melted Filling 1-8oz. box of cream cheese 2 eggs 1 tsp vanilla 1 stick butter 1-16oz box confectioners sugar Preheat oven to 350 degrees. Combine cake ingredients together and mix well. Pat lightly in greased glass 9 by 13 inch baking pan. Start filling by beating cream cheese until smooth. Add in eggs and vanilla. Blend in butter and gradually add sugar, mixing well. Spread over cake mixture. Bake 45-50 minutes. The center will be a little gooey.
24: Crust for Apple Pie 2 cups flour 1 tsp salt 2/3 cup shortening or applesauce 5-7 Tbsp ice water Combine flour and salt. Cut shortening (use fork) into mixture till course crumbles. Sprinkle water 1 Tbsp at a time while tossing and mixing lightly with fork; add until mixture just moist enough to form ball when pressed together. Makes 2 dough balls; flatten to 1/2 inch thick 11" circles on lightly floured surface.
25: Name | Perfect Apple Pie | 6 cups thinly sliced peeled apples (1 lb = 3 cups) 2/3 cup sugar 2 Tbs all-purpose flour 3/4 tsp cinnamon 1/4 tsp salt 1/8 tsp nutmeg 1 Tbs lemon juice Heat oven to 425 F. Combine all ingredients into a large bowl and toss. Line pie dish with crust; fill with mixture; top with crust and cut slits in top. Bake 40-45 minutes or until crust golden brown and apples tender.
