S: Grammy's Favorite Recipes

BC: Great Creations From Sharon Helzer

1: Chocolate Gravy | 1/2 C. Sugar 3 1/2 Tbsp. Cocoa 2 Tsp. Flour 1 1/2 C. Milk 2 Tsp. Butter | In medium saucepan, stir together sugar, cocoa and flour. Use fork to remove lumps, add milk and whisk over medium heat until thickened slightly. Stir in and butter until smooth. Serve over warm biscuits that have been split. Best served with bacon.

2: Homemade Buttermilk Biscuits 2 C. of Flour-sifted 2 or 3 Tsp. of Baking Powder 1 C. of Buttermilk 3 Tsp. of Crisco or butter, melted 1 tsp. Salt 1/2 Tsp. Soda Mis together, knead lightly until mixed well, pat out on a flour covered wax paper and cut biscuits. Cook at 425% for 20 min. in pie plate coated with melted butter. (Do not over knead, so they will be light and fluffy.)

4: 1 pkg of Cream Cheese 1 C. real Mayonnaise 1 Sm. can of Crab meat 3/4 C. of Artichokes in water 3/4 drops of Tabasco 1 C. frozem Spinach, squeezed 2 Tbsp. of Garlic, chopped 1/2 C. of grated Parmesan 1/8 C. Parmesan for topping Drain and chop all vegetables. Mix all ingredients and put in casserole dish that has been sprayed with Pam. Cover with 1/8 C. of Parmesan and bake at 350 degrees until hot and bubbly. Serve wtih Tortilla Chips or Bread chunks! | ROYAL CRAB DIP | Enjoy!!!

7: Watermelon and Feta Cheese Salad | Watermelon wedges or scoops Leafy Greens Red Onion Plum Tomatoes Feta Cheese Chunks Balsamic Reduction Syrup Toasted Walnuts Reduction: 3/4 C. balsamic vinegar and 3 Tbsp. white sugar, simmered and cooled. Drizzle over entire salad in ribbons! Enjoy!!! | Summer Salad!

9: Serious Shrimp Gumbo | 1 Lg. box of Beef stock 1 can of Beef Consumme' 1 to 2 Anaheim Pepper 1/2 Lg. Yellow Onion 3 to 4 Green Onions chopped 1/2 C. of Celery 1/2 C. of Fresh or Frozen Okra 2 or 3 Garlic Cloves 1/4 C. of Thick Worchestershire Sauce Tabasco to Taste 2 drops of Smoke Sauce 1/3 C. Flour 1 Tsp. of Creole Seasoning 1 Med. can of Diced Tomatoes 20 Raw Lrg. Shrimp 1/2 Stick of real Butter 1 Tbsp. of Blackening Seasoning Salt & Pepper to taste 3 to 4 Links of Chicken or Andouille 8 to 10 Crawfish or crabmeat (opt'l) Sausage, diced | Put flour in the bottom of stew pan and prepare to stir over med. to high flame for 10 to 12 min. You are looking for a good frown to the flour. (for Rue) When Flour is medium brown add butter, and all vegetables (except for Okra) at this time. It will resemble a paste if too thick add 2 Tbsp. of stock. Cook this about 4 to 5 min until the onions become translucent. Add rest of wet ingredients and seasonings. Cook until blended well and starts to thicken, add Shrimp and Sausage. Cook for 10 minutes and taste for any needed seasonings. Spoon i n bowls over cooked rice.

10: Tilapa in Orange sauce

11: 2 Tilapa or other Fit Fish Filets 3/4 c. of Orange Juice 2 Tbsp. of orange zest Wheat bread crumbs 2 cloves of Garlic 1 sprig of Rosemary Salt and Pepper Olive oil Place fish in coated baking dish.Sprinkle fish with olive oil, season with herbs, garlic salt and pepper. Cook at 350 for 10 min and pour orange juice over top. When sauce becomes thicker about 7 to 8 min top with bread crumbs and cook for 5 min more. Remove let stand 5 min and serve with Wild rice.

Drizzle with Olive oil, salt and pepper and cook in preheated oven for 15 min. add asparagus and cook 10 more minutes and remove! Serve immediately. 400 25 4

15: Chocolate Suicide Cake | 1 Chocolate Devils Food Cake Mix 1 4 oz pkg. of Chocolate Pudding Mix | Cooking from the Heart!

16: Big Chewy Chocolate Chip Cookies | 1 C. of all purpose Flour 1 C. whole wheat Flour 1/2 Tsp. baking Soda 1/2 Tsp. Salt 3/4 C. unsalted Butter, melted 3/4 C. brown Sugar 1/2 C. white Sugar 1 Tsp. Vanilla 1 egg 1 egg yolk 1/8 c. milk 3/4 C. of Oatmeal 2 C. Semi Sweet Chocolate Chips 3/4 C. Pecans pieces | Preheat oven to 325 degrees F. Line baking sheet with Parchment paper. Sift together the dry ingredients. Set aside. Cream together the melted butter, sugars until well blended. Beat the vanilla, egg, egg yolk until light and creamy. Add mikl and mix in the sifted ingredients until just blended. Stir in Chocolate Chips and Pecans with wooden spoon. Drop cookie dough by large tbsp. about 2 inches apart. Bake for 12 to 15 minutes or until the edges are lightly toasted. Cook on baking sheets for a few minutes until transferred to wire racks to cool!

19: TRIPLE COCONUT PIE | 1 -9 INCH PIE CRUST: 1 C. plus 2 Tbsp. all Purpose Flour 1/2 C. sweetened shredded coconut 1/2 C. cold unsaltled butter, cubed 2 Tsp. Sugar 1/4 Tsp. Salt 1/3 C. approx. 1/3 C. of ice water Pastry Cream: 2 C. Milk 2 C. Sweetened Coconut 1 Tsp. vanilla extract 2 Large eggs 1/2 C. plus 2 Tbsp. sugar 3 Tbsp. all purpose flour 1/2 C. unsalted butter, softened Topping: 2 1/2 C. heavy Whipping cream, chilled 1/3 C. Sugar 1 Tsp. pure vanilla extract 2 Oz. unsweetened, large shred coconut Chunks of white chocolate, curls Place pie crust in pan and chill 1 hour before baking. Bake at 400 for 20 to 25 minutes until golden. Cool. Cook Pastry cream in saucepan until it thickens. Cool and pour in crust. Toast coconut in a 350 degree oven turning twice. For topping whip the cream, add sugar and vanilla. Whip until thick and top cooled pie. Top with toasted coconut shreds and chocolate curls. Refrigerate until served.

20: Peach Bellini 2 ripe peaches, seeded and diced 1 Tbsp. freshly squeezed Lemon juice 3 shot glasses of Peach Schnapps 1 bottle chilled Prosecco (or sparkling wine) Place the peaches, lemon juice, in the bowl of a food processor and blend until smooth. Press the mixture through a sieve and discard the peach solids in the sieve. Add the Schnapps, Place 2 Tbsp. of the peach puree into each champagne glass and fill with cold Prosecco. Add crushed ice to peach mixture for frozen Bellini, then add Prosecco!
