4: Ma | Chicken Barbecue Sauce | 1/2 c vinegar 1/2 c salad oil 1/4 c water 1 tsp. salt 1/4 c brown sugar 1-1 1/2 tsp. Tabasco sauce 1 1/2 tsp. dry mustard 1/4 tsp paprika | Worc. sauce Mix & heat to boil & then keep warm basting chicken every 10 min. | Salmon Loaf 3 cans (6 1/2 oz) salmon 2 beaten eggs 1/2 c milk 6 saltines 1 slice soft bread, torn 1/4 c dry bread crumbs butter, size of egg, melted Mix eggs, milk, butter & soak dry ingred. Remove bones & oil from salmon & mix in. Put in greased dish, set in pan of hot water & bake 45 min., uncovered, in 350* oven.
7: Aunt Lillian's Doughnuts 3 eggs, well beaten 1 c sugar 3 Tbsp. melted oleo 1 c sweetmilk 3 1/2 c flour 5 Tbsp. b.p. salt nutmeg vanilla Beat eggs, sugar &melted oleo well together. Add milk,flour, b.p,, salt, vanilla, and nutmeg. Fry in deep fat. Joan Oliver's French Doughnuts 1/2 c shortening 1/2 c water 1 egg 1/2 c milk 1 1/2 tsp. b.p. 1/2tsp. salt 1/4 tsp. nutmeg 1 1/2 c flour Mix in order given. Bake in muffin tins 2/3 full at 350*. Roll hot in 1 stick melter butter then 3/4 c sugar & 1 1/2 tsp. cinnamon.

9: Meatball Casserole | V8 juice or tomato sauce (2 c V8 or 1 can sauce & 1 can water Put a little juice in bottom of casserole & add small potatoes &sliced carrots. 1 lb. hamburg - crumbs, onions,egg, water, Worc. sauce, sprinkle of chili powder, salt & pepper - make meatballs Lay on top of vegetables in casserole dish. Add rest of sauce. Bake at375* for 2 hours.
11: Ma | Pork Chops with Spanish Rice | Ma Joyce Chen's Beef w/Green Peppers 1 lb. beef steak, shredded 4 Tbsp.soy sauce 1Tbsp. cornstarch 1 Tbsp. dry sherry 1Tbsp. sugar 1/4 tsp. MSG 1 c sliced onions 1 c sliced onions 2 med. green peppers 1/4 c cooking oil Mix beef & soy sauce,cornstarch, sherry, sugar, & MSG. Set aside. Cut peppers into chunks. Put 2 Tbsp. oil in hot skillet over high heat. Add salt first & then peppers, stirring constantly until they turn darker green. remove & spread out on plate. Add rest of oil & onions. Stir in beef mixture & turn constantly until beef is almost cooked. Add peppers & serve. 1/4 lb.snow peas may be used or 3-4 c sliced mushrooms.

16: Sweet and Sour Meatballs | Sweet and Sour Meatballs 2 lb. ground beef 1 c cornflake crumbs 2 eggs k 1/3 c parsley 2 Tbsp. soy sauce 1/3 c ketchup 1/4 tsp. pepper 1/2 tsp. garlic powder 2 Tbsp. minced onion Mix all ingred. and form into 1" balls. Place on cookie sheet. Sauce: 1 can cranberry sauce, 12 oz. chile sauce, 2 Tbsp. brown sugar, 1 Tbsp. lemon juice. Mix together and cook over med. heat. Pour over meatballs. Bake,uncovered, 30 min. Chicken Wings 18 whole wings 1/2 c honey 2 Tbsp. Worc. sauce 1/3 c soy sauce juice from 2 lemons minced clove of garlic Remove tips from chicken wings. Mix all ingred. and pour over chicken wings in baking pan. Bake at 350* for 1 hr.
17: Nang's Pork Chops Brown pork chops in frying pan. transfer to baking dish. slice onion and green pepper over pork chops. In frying pan, combine 1/2 c water, 1/4 c ketchup, 1/4 c brown sugar, & 2 Tbsp. lemon juice. Bring to boil and pour over pork chops. Cover baking pan with foil. bake in 375* for20 min., uncover and bake 20 min. longer. | Nang's Custard 3 eggs 3 c milk 1/2 c sugar 1 tsp. vanilla 1/2 tsp. nutmeg dash salt Beat all together. Pour into custard cups. Bake at 350* for 1/2 hour in pan of hot water.
18: Christmas Treats | Peanut Butter Balls 1 c conf. sugar 1 c peanut butter 1 c graham cracker crumbs Knead these ingred. together. Make into small balls. Melt together 6 oz. choc. chips & 11/2" x 2" square of paraffin. Use toothpick to dip balls in choc. Place on wax paper. Coconut Needhams 3/4 c mashed potatoes 1/2 tsp. salt 2 lb. conf. sugar 1 stick butter 1/2 lb. flaked coconut 2 tsp. vanilla Using double boiler, melt butter. Add mashed potato, coconut, & vanilla. Mix well & turn into buttered jelly roll pan. Spread evenly. When hard, cut into small squares and dip in chocolate. Chocolate dip:: 12 oz. pkg. choc. chips, 4 sqs. unsweetened choc., 1/2 cake paraffin. Melt wax in double boiler,add chocolate.
21: Homemade Chocolates 2 lbs. conf. sugar 1/2lb.butter 1 can sweetened cond. milk 1 Tbsp.light Karo syrup Beat butter and milk. Gradually add sugar. End up by hand. Divide, flavor with extracts, & color (if desired). Shape into small balls & chill. Melt 2 pkgs. choc. chips & add 4 squares baking choc. & almost a whole cake of wax in double boiler. Dip. Ma's Date Nut Bars 3 c dates 1/4 c sugar 1 1/2 c water Mix together in saucepan & cook over low heat ,stirring constantly until thickened (about 10 min.). Cool. 3/4 c soft shortening (part butter) 1 c brown sugar Mix together thoroughly and stir in: 1 3/4 c flour, 1/2 tsp. baking soda, & 1 tsp. salt. Stir in 1 1/2 c oats. Mix thoroughly. Place 1/2 of oat mixture in greased and floured 13x9"pan. Press and flatten. Spread cooled filling on top. cover w/remaining oat mixture, patting lightly.Bake until lightly browned (25-30min.) in 400* oven. Cut into bars while warm & remove from pan.
22: Joan Oliver | Banana Bread | 2 eggs 2 c flour 1 c sugar 3 lg. ripe bananas 1/2 c shortening 1 tsp. soda 1/2tsp salt 1 tsp. vanilla Cream shortening and sugar, add eggs and mix well. Stir in bananas and add dry ingredients. Bake at 325* for 1 hr.
23: Millard Jordan's White Bread Phase 1: 1 yeast (dry) in 3/4 c lukewarm water for20min. Phase 2: 3/4 c melted shortening in mixing pan. Add3/4 c lukewarm water, 1 Tbsp salt,1/2 c sugar. Mix & then add flour till not quite sticky (about 4 lbs.) Knead till wrist starts aching on table with flour. Put in greased bowl. Raise in w warm place until double (about 2 hrs.).Punch down. Raise again. Shape into loaves. Bake at 350* for 45. min. Lemon Bread Cream1/2 c oleo & 1 c sugar. add 2 eggs. Mix together 1 1/2c flour, 1 tsp b.p., 1 tsp. salt and add to sugar & egg mixture. Stir in 1/2 c nuts, grated rind of 1 lemon and 1/2 c milk. Stir up & pour in loaf pan and let set \ 15 min.. Bake at 350* till done. Mix juice of 1 lemon & 1/4 c conf. sugar. Pour over hot bead. cool and store 24 hrs. before serving.
25: Canadian Molasses Cake 1 egg 1/2 c shortening 1 c molasses 1/2 c sugar 2 1/2 c flour 2 tsp. soda 1 tsp. salt 1 Tbsp. spices 1 c water,boiling (cinnamon, cloves, nutmeg) Beat sugar & shortening, beat in egg. Add molasses & dry ingred. Add boiling water last. Bakeat 350* for45 min.
