1: WHAT IS A MOTHER It takes a Mother's LOVE to make a house a home, A place to be remembered, no matter where we roam... It takes a Mother's PATIENCE to bring a child up right, And her COURAGE and her CHEERFULNESS to make a dark day bright...It takes a Mother's THOUGHTFULNESS to mend the heart's deep hurts," And her SKILL and her ENDURANCE to mend little socks and shirts... It takes a Mother's KINDNESS to forgive us when we err, To sympathize in trouble and bow her head in prayer...It takes a Mother's WISDOM to recognize our needs And to give us reassurance by her loving words and deeds... It takes a Mother's ENDLESS FAITH, her CONFIDENCE and TRUST To guide us through the pitfalls of selfishness and lust... And that is why in all this world there could not be another Who could fulfill God's purpose as completely as a MOTHER!

2: . | Chess Pie 3 eggs 1 1/2 cups sugar 6 Tablespoons buttermilk 1 stick of melted butter 1 teaspoon vanilla Beat eggs, add sugar, then add buttermilk and vanilla. Hot oven for 10 minutes Then 250 degrees for 45 minutes.

3: Lemon Meringue Pie 5 Tablespoons cornstarch 1 cup sugar pinch of salt 1 1/4 cups hot water 3 egg yolks Grated rind & juice of 1 lemon Heaping Tablespoon butter For filling - mix cornstarch, sugar and salt thoroughly in pan.. Pour in hot water and cook over high heat, stirring constantly for six minutes or until mixture is thick and translucent.. Remove from stove and add beaten egg yolks. Return to stove and cook at low heat, stirring constantly for six mins.. Take off stove; add lemon juice, rind and butter. Cool filling before pouring into baked pastry shell. Top with meringue..

4: Chocolate Pie 2 1-oz. squares unsweetened chocolate 1 tablespoon butter 6 tablespoons flour 1 cup sugar 1/4 teaspoon salt 1 1/2 cups hot water 1 cup evaporated milk 3 well beaten egg yolks 1 teaspoon vanilla 1 ( 8-inch) baked pastry shell Melt chocolate over hot, not boiling water in top of double boiler. Add butter, flour, sugar and salt. Blend. Gradually stir in hot water. Stir in milk. Cook until mixture is thick and smooth.

5: (Chocolate Pie continued) Stir small amount of hot chocolate mixture into egg yolks; stir into remaining hot chocolate mixture, Cook 2 to 3 minutes. Cool. Add vanilla. pour filling into the cooled baked pastry shell. Spread with meringue: Beat egg whites until foamy. Add the 6 tablespoons sugar, 1 tablespoon at a time, and continue beating until mixture forms peaks. Spread over cooled filling. Bake at 350 degrees 12 to 15 minutes. Cool several hours before cutting.

6: Lizzies 1 1/2 cups brown sugar 1 stick butter 4 whole eggs 1 1/2 tsp. vanilla 1/2 cup bourbon 3 Tbsp. sweet milk 3 cups sifted flour 3 tsp. soda sifted in flour 1 tsp. salt 1 tsp. cinnamon 1 tsp. nutmeg 1 tsp. cloves 1 1/4 lb. chopped nuts 1 lb. pineaspple 1 lb. red cherries 1 lb. white raisins sprinkle fruit with extra flour Mix batter as for cake and pour over fruit. Bake 30 mins. at 275 on greased cookie sheet

7: Lemon Filling 2 tablespoons butter 3/4 cup sugar 1 egg 3 tablespoons flour 1 cup lemon & orange juice mixed Melt butter, add sugar and flour, then gradually add juice. Cook until the mixture thickens. and let cool.

8: Cheese Straws 4 cups flour (sifted) 3 sticks butter ( 1 oleo & 2 Butters) 1 lb. extra sharp cheese grated 2 teaspoons salt 1 teaspoon to 1 1/2tsp. red pepper let butter and cheese get room temperature (very soft) Mix butter and cheese together with mixer. Pour in flour mixed with salt and pepper. a little at a time. you may have to work with hands. Place mixture in the cookie press. Bake at 325 degrees for 20 minutes or until done. ungreased cookie sheet

9: Squash Casserole 1 cup squash cooked Add 1/2 cup milk and 1 egg to cooled squash mixture. 1 pack Ritz crackers crushed Melt one stick of butter and mix with crackers. Put some cracker mixture in squash and save half for the top. Microwave 4 mins., then turn and cook 4 more mins. Put cheese on top during last 4 mins.

10: Sadies' Baked Custard Mix 1 1/4 cups sugar and 4 eggs. Add 2 1/2 cups scalded regular milk Add 1 large can Pet Milk Add 1 tsp. vanilla Sprinkle nutmeg on top. Pour into custard cups Place the custard cups in a pan of hot water and bake at 300 degrees for 25 minutes

11: Garlic Cheese Grits 2 cups water salt 1 cup quick grits 1 roll garlic cheese 1/2 cup butter 2 eggs, separated salt and pepper to taste worcestershire sauce dash of tabasco sauce Cook grits in boiling water. Add butter, garlic cheese, Then add beaten egg yolks and then fold in beaten egg whites. Add seasonings. Pour into a large casserole and bake at 350 for 30 minutes.

12: Creamed Cauliflower Cook cauliflower florets in boiling salted water for about 20 minutes. Drain in colander. Melt 1 stick of butter and add 3 tbsp. flour, mix well and gradually add 1 1/2 cups of milk, stirring until smooth. Cook -stirring until thick. Add salt, pepper and cheese. Pour over florets. Bake in 350 degree oven until bubbly-

13: Caramel Icing Bring to a boil in one pan 2 cups sugar l cup milk Caramelize 1/2 cup sugar in another pan. Combine the two and stir hard...Then let cook to softball stage. Add 1 stick of butter and 1 tsp. vanilla. Cool-then beat.
