13: Ravioli meat sauce 2 tablspoons olive oil 1 medium sized onion, finely chopped 4 cloves garlic, minced or pressed 1 can (1 lb) tomato paste 3 cans (8 oz each) tomato sauce 1/2 cup dry red wine 2 teaspoons salt 1 tablespoon sugar 1/2 teaspoons pepper 1/4 teaspoon ground red pepper - cayenne - Optional dash of cinnamon 1 teaspoon each dry rosemary, oregano leaves and dry basil 1 bay leaf 2 pounds browned and drained lean ground beef or 2 pounds lean boneless pork shoulder cut in 1/4 inch cubes 1/4 pound slicedmushrooms,Optional Heat olive oil in a 6 to 8 quart kettle over medium heat. Add onion and garlic. Cook until tender. Add salt, sugar, pepper, red pepper, rosemary, oregano, cinnamon and basil. Stir then add tomato paste,tomato sauce, red wine and meat/pork. Bring to boil, reduce heat, cover and simmer for 1 1/2 hours. Add mushrooms and simmer uncovered for about 10 minutes more. Remove bay leaf.
