1: I hope the following recipes will bring back great memories. I will miss the phone calls from the grocery store asking how to make some of these. Love Mom

2: Blueberry Muffins | 2 cups flour 2/3 cups sugar 1 Tbls baking powder 1/4 tsp nutmeg 1/2 cup margarine (melted) 1/2 cup milk 2 eggs 1/2 tsp salt 1 1/2 cup blueberries (fresh or frozen) Mix flour, sugar, baking powder, salt & nutmeg. Add blueberries. Stir to coat evenly. In small bowl beat eggs with a fork. Beat in milk & butter. Add to blueberry mixture. Stir till well blended. Sprinkle with sugar & cinnamon. Bake at 400 for 15-20 minutes. Makes 12 muffins. | This recipe came from Carol Hawkins, a friend from church in Houston. | 400 15-20 min 12

3: Monkey Bread | 1 pkg. Rhoads dinner rolls (frozen) 1/2 pkg. butterscotch pudding (not instant) 1/2 cup brown sugar 1 stick margarine 1/2 cups chopped pecans Cinnamon & sugar Spray bundt pan with Pam. Put 18 frozen rolls in pan. Sprinkle with 1/2 package dry pudding, brown sugar, melted butter & nuts. Sprinkle with cinnamon & sugar. Cover with saran sprayed with Pam to prevent sticking. Cover with a dish towel. Let rise overnight. Before baking sprinkle again with cinnamon & sugar. Bake and when done turn upside down on plate. | 350 30 min 6-8

4: Taco Soup | 2 pounds ground beef or turkey 2 cups chopped onions 1 can black beans (undrained) 1 can red beans (undrained) 1 can corn (undrained) 3 cans chopped tomatoes 1 pack dry taco seasoning 1 pack dry Ranch dressing 1 can Rotelle tomatoes Brown meat & onions. Drain liquid. Return to a large pot & add all other ingredients. Simmer for about 1 hour. If soup is too thick, add water or chicken broth. | 1 hour | Lots | This is from Tita

5: Creamy Swiss Onion Soup | 4 Tbls butter or margarine 3 large onions, quartered & thinly sliced 1 1/2 cups chicken broth 1/4 cup flour 1 3/4 cups milk, divided 1 1/2 cups (6 oz) shredded Swiss cheese Salt & Pepper to taste In a pot, saute onions in butter until lightly browned, about 12 minutes. Stir in chicken broth; bring to a boil. Reduce heat; cover & simmer 15 minutes. Combine flour & 1/2cup milk till smooth; gradually stir into onion mixture. Stir in remaining milk. Bring to a boil; boil 2 minutes, stirring till thick. Reduce heat to low; stir in cheese & salt & pepper.

6: *Pomegranate Cosmopolitans* | 2 cups vodka 1 cup Triple Sec 2 cups pomegranate juice (Pom) 1/2 cups fresh lime juice | Mix all together and chill. Serve with an ice cube.

7: Margaritas in a Bag 1 12 oz can limeade 1 12 oz can tequila 1/2 12 oz can triple sec 3-4 12 oz cans water Mix all and freeze overnight in a large Ziplock bag (double bag) or in a large container. To make immediately, mix all but the water and pour half the mixture in a blender full of ice. Blend till slushy.

8: Chicken Ball | 1 8 oz cream cheese 2 cans chicken 2 Tbls mayonnaise 3/4 tsp onion flakes 1/4 tsp worcestershire sauce Chopped walnuts or pecans Let cream cheese soften. Mix in mayo, chicken, worcestershire & onion flakes. Shape into a ball. Chill then roll in nuts. Serve with crackers.

9: Taco Dip | 1 can refried beans 3 avocados mashed with lemon 1 8 oz sour cream mixed with 1/2 package taco seasoning 1 can sliced black olives 3-4 green onions sliced 1 large tomato chopped 1 1/2-2 cups grated cheese Layer in a large shallow plate or a 9x13 pan in the order given. | We often served this for dinner. We would divide it into fourths with toothpicks & leave the tomatoes off of Stephanie's fourth.

10: Banana Bread | 1 stick butter 1 1/4 cup sugar 2 eggs beaten 1/4 cup sour cream 1 1/2 cups flour 1 tsp baking soda 1 tsp vanilla 1 cup mashed bananas 1 cup nuts (optional) Beat butter & sugar. Add eggs, sour cream, flour, baking soda, vanilla & bananas. Mix well. Bake at 350 for 45 minutes or till center is done. | 350 | 45 min | This came from Margie Stutzman, my best friend in Naperville.

11: Cheese Biscuits | Cheese Biscuits | 2 cups Bisquick 2/3 cup milk 1 cup grated cheese Mix all well. Put on floured surface & pat to 1 inch thickness. Cut biscuits with biscuit cutter (small one). Dip both sides in cooking oil. Bake. | 400 | 10 min | These bite size biscuits are best eaten fresh out of the oven.

12: (Recipe Title Here) | 2 cups orange juice 1/2 cup sugar Large can crushed pineapple (undrained) 4 mashed bananas About 1/2 jar maraschino cherries chopped Combine all in a big bowl & stir till sugar dissolves. Put in muffin pans lined with muffin papers & freeze.Remove from pan & store in zip lock bag in freezer. Take out 15 minutes before serving. 24 | Frozen Fruit Salad | Memaw use to serve this all the time. Martin called it "bullet" salad. He still calls it that to this day.

13: Orange Fluff | 1 small box orange Jello 8 oz. small curd cottage cheese 8 oz. cool whip 1 small can crushed pineapple drained 1 small can mandarin oranges drained Can add some mini marshmallows Mix all together. Put in the refrigerator for a few hours before serving. 8 | This salad is very easy to make and one most kids like.

14: Tangy Chicken | 1 whole chicken 1/4 cup lemon juice 1/4 cup melted butter 1/2 tsp thyme 1 clove garlic minced 2 tsp salt 1/4 cup cider vinegar 1/2 tsp pepper Place chicken in a baking dish. Mix all ingredients & pour over chicken. Bake for 45 minutes covered & 45 minutes uncovered. | 350 | 1 1/2 hour | 8 | This is one of Jonathan's favorites. Goes great with mashed potatoes!

15: Mexican Casserole | 1 1/2 diced cooked chicken or canned 2 cups cooked rice 1 can cream of chicken soup 1 can black beans (drained) 1 can white corn (drained) 2 cups Mexican Blend Cheese grated 1 can diced green chilies (drained) 1 cup salsa Fresh Cilantro (optional) Salt, pepper, garlic to taste.Mix together & bake covered. | 350 | 30 min 8

16: East-West Flank Steak | 1/2 cup vegetable oil 1/4 cup soy sauce 2 Tbls brown sugar 4 green onions chopped 1 Tbls grated fresh ginger 1 tsp crushed red pepper 2 Tbls lime juice 1 tsp black pepper 2 garlic cloves chopped$ 1 (2-pound) flank steak Mix all and pour over steak in shallow dish or zip lock bag, Cover & chill 8 hours turning occasionally. Grill for 10 minutes or less on each side. Cut thin across grain. | Stephanie would not have eaten this as a kid since she was not a big beef eater.

17: Lasagna | 6 to 8 lasagna noodles cooked or no cook kind 2 pounds ground beef 1 large jar spaghetti sauce 1 cup sour cream 1 cup small curd cottage cheese 2-3 cups Mozzarella cheese Brown ground beef & drain. Mix sour cream & cottage cheese. In a greased 9x13 pan, layer half noodles, half meat, all sour cream mixture, & half the cheese. Continue layers ending with cheese. Cover with foil and bake at 350 for 30-45 minutes. Remove foil the last 10 minutes.

18: Vegetables | Spinach Casserole 3 packs frozen chopped spinach 8 oz cream cheese softened 1 can cream of chicken soup 1 can Durkey Onions Cook spinach & drain well. Mix warm spinach & cream cheese. Add soup. Bake 20 minutes at 350. Add onions last 5 minutes.

19: 2 (10 oz) packs frozen corn 8 oz whipping cream (not whipped) 8 oz milk 1 tsp salt 4 Tbls flour 7 tsp sugar pinch of cayenne pepper 3 Tbls melted butter Combine all ingredients except butter & flour. Bring to a boil. Simmer 5 minutes. Blend butter & flour. Remove corn from heat, add flour-butter mixture. Stir till thick. | Creamed Corn | Jonathan asked if the corn was made with cream & I said yes. "Real cream?" he asked. I said yes. Then he asked "Like the cream you put on your legs?" He was thinking Vaseline Intensive Care cream. The color of the corn is the same.

20: Chocolate Caramel Brownies | Chocolate Caramel Brownies 1 box German Chocolate Cake Mix 1 14 oz bag caramels 5 1/3 can evaporated milk (2/3 cup) 3/4 cup melted margarine (not butter) 1 1/2 cups chopped pecans 1 cup chocolate chips Mix cake mix with 1/3 cup evaporated milk, margarine, & 1/2 cup pecans. Pat 1/2 of mixture in a greased 9X 13 pan. Bake at 350 for 6-10 minutes. Melt caramels & 1/3 cup evaporated milk. Pour over baked mixture, sprinkle chips & nuts on top. Pat rest of cake mix on top. (Roll into balls) Bake for 15 more minutes. Cool before cutting. Store in refrigerator. | A family favorite.

21: Swedish Apple Pie | 4-5 apples peeled, cored, & sliced 1 1/4 sticks butter 1 cup flour 1 Tbls cinnamon 1 cup sugar 1 Tbls sugar 1 egg 1 Tbls cinnamon Chopped pecans Place sliced apples in a greased pie pan. Sprinkle apples with cinnamon & sugar. Melt butter, add sugar, flour, & egg. Stir till mixed. Pour over apples, covering all the top layer. Sprinkle nuts on top. Bake at 350 for 30-45 minutes or till top is golden. Can make ahead and freeze. Cover with saran and freeze BEFORE baking. Can bake frozen but will take close to an hour, or thaw before cooking then cook as directed above. | This is Martin's favorite and a holiday must.
