Thank you all for helping make my 90th birthday celebration such a huge success. I loved every minute of it, watching each of you, while exploding with such pride and love. We need lots of this as we age, Even more perfect would have been to have Gramps/Dad with us. He would never have wanted the party to end – especially enjoying the addition and thrill of having more men in our party. This was such a happy time for me that I am ready to go for “91”, with all of you of course! So once again, thank you for being there. Thank you for your generous help with my walking, getting up and down comfortably and for your love. Always my love, Gramma | To all my wonderful family and your friends. . .

Gramma It was so great celebrating your 90th birthday with you! I even had a fun time losing to you in Chinese checkers (you were lucky!), and I challenge you to a rematch! Love, Kim | Hey Gramma Eckhout! It was so great being in your wonderful part of the country to spend time with you and the rest of the family for such a monumental occasion. Every chance I get to spend with you, your daughters and grandkids is filled with fun and great memories. And it's so encouraging to see a smile on your face whenever I would glance your way. Keep up the positive attitude, and can't wait to see you again soon! Love, James

Happy Birthday Pat, What a wonderful family you started and so nice of you to stick around so we may enjoy the love you spread at each gathering whether it is a small dinner or Grand 90th Birthday. Love Steve | Mom, YOU DID IT!!! You made it to the next decade and I couldn’t be happier. I continue to learn from you as my goal has always been to be “just like my mommy”. You are such an inspiration to all of us, your humor, wisdom, kindness are just a few of your gifts. I love you Mom Lori

Pat Being there for your 90th birthday was one of the best times we have ever had as a family! I'm sure you were as proud of all your grandchildren as we parents were when we watched them interact and get along with each other. They all have grown and matured into such capable and good young adults! You have quite an excellent family tree and I am very glad to be a part of it! Greg | Grandma Pat Getting to celebrate with you on your 90th birthday was so special! You are an amazing woman and it is a gift to see all you've done and how many people you have touched throughout your life. You are an inspiration to us all and I can only hope that when I turn 90, I can say with certainty that I faced life head-on with as much grace, joy, spirit, and love as my Grandma did. I love you. Lindsey

Gramma, I hope you had a wonderful 90th Birthday. I am so happy that I was able to spend it with you. Can’t wait for the 91st! Love you, Brad!

Mom: Happy 90th birthday! I am so glad that we all were able to be there for your special day. It means the world to me to be surrounded by family. You are the one who taught us how important family is. You are the one that says you need to laugh. You have the spirit and "we can do it" attitude. Looking back at all the photos I scanned, at least half the pictures are you laughing. One memory I would like to share. In ninth grade, we were at Mission Bay trying to seesaw on the inner tube. You swam over to us and proceeded to get on that inner tube and show us up. Were there other parents playing with their kids like that even at your age? No, but you always did, even now. No matter what your age was and is, you were/are there in the middle with the rest of us. How many times did Dad tell us we are too loud? LOTS! With that, Happy Birthday. I love you very much! Terri.

Gramma, Thank you sooooo much for being the loving, caring gramma we all need. You are the BEST, and I love you VERY MUCH. Mason | Gramma, Hope you had a fabulous birthday! It was so fun spending time with you and getting to see everyone together. Love you lots! Kelsey

Lori's Lemon Cake with Lemon Filling and Lemon Butter Frosting Ingredients 2 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon salt 1/2 cup butter 1 1/4 cups white sugar 3 eggs 1 teaspoon vanilla extract 1 cup milk 1 tablespoon grated lemon zest 1/2 cup fresh lemon juice 1 tablespoon cornstarch 6 tablespoons butter 3/4 cup white sugar 4 egg yolks, beaten 4 cups confectioners' sugar 1/2 cup butter, softened 2 tablespoons fresh lemon juice 1 teaspoon grated lemon zest 2 tablespoons milk Directions 1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 inch round pans. Mix together the flour, baking powder and salt. Set aside. 2.In a large bowl, cream together the butter and sugar until light and fluffy, about 5 minutes. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. 3.Pour batter into prepared pans. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool in pans on wire racks for 10 minutes. Then invert onto wire racks to cool completely. 4.To make filling: In medium saucepan, mix together 1 tablespoon lemon zest, 1/2 cup lemon juice and 1 tablespoon cornstarch until smooth. Mix in 6 tablespoons butter and 3/4 cup sugar, and bring mixture to boil over medium heat. Boil for one minute, stirring constantly. In small bowl, with a wire whisk, beat egg yolks until smooth. Whisk in a small amount of the hot lemon mixture. Pour the egg mixture into the sauce pan, beating the hot lemon mixture rapidly. Reduce heat to low; cook, stirring constantly, 5 minutes, or until thick (not to boil). 5.Pour mixture into medium bowl. Press plastic wrap onto surface to keep skin from forming as it cools. Cool to room temperature. Refrigerate 3 hours. 6.To make frosting: In large bowl, beat confectioners' sugar, 1/2 cup butter, 2 tablespoons lemon juice and 1 teaspoon lemon zest until smooth. Beat in milk, and increase speed and continue to beat until light and fluffy. 7.To assemble: With long serrated knife, split each cake layer in half horizontally, making 4 layers. Place 1 layer, cut side up, on a serving plate. Spread with half of the lemon filling. Top with another layer, and spread with 1/2 cup frosting. Add third layer, and spread with remaining half of the lemon filling. Press on final cake layer, and frost top and sides of cake with remaining frosting. Refrigerate cake until serving time. | Aunt Lori made this extra tasty by adding mini white chocolate chips to the icing. | HELPFUL HINT:

Mom, What a wonderful time we had gathering together at the log cabin to celebrate your 90th birthday! Your energy and positive outlook on life are such an inspiration. 19: Maybe she won't notice? | I'm staying out of this one. | Now look, honey. On a plate they're as good as new. | Whoa . ..they are on the crunchy. | Are you serious?? Look at these. | It looks like a brick. | Oh no, Mom is going to be so upset! | Hmm. . . looks salvageable from here. | Ok. So what are we going to tell mom? | Upon closer inspection, salvaging is definitely out of the question. | I'm a trained mediator. I suggest starting with common talking points. | Tell her you modified the recipe. I do it all the time. | Ruined!. From now on I'm sticking with clam dip! | Awrgh!! Good idea.
