BC: This is your life Mum / Nana! To celebrate 90 years of a wonderful, vibrant and full life; we decided to capture the memorable moments, in picture-form. We hope you enjoy reflecting on your life while you flip through the pages that we have carefully pieced together to best illustrate the beautiful lady that you are. 41: BERWICK BRAE | Memories

42: NUT LOAF 1 cup chopped dates, 1 cup boiling water, 1 tablespoon golden syrup, 1 teaspoon bicarbonate of soda, 1 tablespoon butter, 1/2 cup sugar, 1 1/2 cups S.R. flour, 1 egg, 1/2 cup chopped walnuts. Put dates, water, golden syrup, soda, butter and sugar into a saucepan, bring to boil, cool, add egg, flour and walnuts. Place mixture into a greased and lined loaf tin. Bake in a moderate oven for 40 minutes. GINGER FLUFF SPONGE 4 eggs, 3/4 cup castor sugar, 1/2 cup cornflour, 2 tablespoons plain flour, 1 dessertspoon warmed golden syrup, 1 tablespoon cocoa, 2 teaspoons, cinnamon, 2 teaspoons ginger, 1/2 teaspoon bicarbonate of soda, 1/2 teaspoon cream of tartar. Separate eggs, beat egg whites until soft peaks then add sugar gradually, beat egg yolks. Add warmed golden syrup, and four times sifter dry ingredients, fold gently until all combined. Place equal quantities in two cake tins which have been greased and lined. Bake in a moderate over for about 20 to 25 mins. until cooked.

43: APPLE PIE 6 granny smith apples, peeled, quartered, placed into a saucepan with a little water, grated lemon rind of 1 lemon. Add sugar to taste. Cook apples until they are just starting to soften, but still firm. Cool before adding to pastry. Sweet shortcrust pastry: 125g butter or margarine, 125g castor sugar, 125g plain flour, 125g S.R. flour, 1 egg, 1/2 teaspoon vanilla extract. Cream butter and sugar, add egg, then flour. Knead lightly, cut pastry in half. Roll out pastry enough to fit a pie dish. Place cooled apples into pie dish and sprinkle with cinnamon. Roll out remaining pastry and place on top. Crimp edges and bake in a moderate oven for 30 minutes or until browned and cooked. SULTANA BISCUITS 125g butter/margarine, 1/2 cup sugar, 3/4 cup sultanas, 1 tablespoon of golden syrup, 1 cup S.R. flour, 3/4 cup crushed cornflakes, 3/4 cup coconut, 1 egg. Melt butter & golden syrup, cool, beat egg and add, then add to dry ingredients. Drop in teaspoonfuls on tray. Cook in a moderate oven until brown.

44: PIKELETS 1/2 cup sugar, 1 large egg or 2 small eggs, 1 cup milk, 1 teaspoon vanilla essence, about 1 cup of S.R. Flour. Beat sugar and egg together, add milk and vanilla essence, then add sifted S.R. Flour. If too thick add more milk. Let sit for 1/2 hour until bubbles rise to the surface. Place tablespoons full of mixture onto a greased fry pan. When bubbles show on the top of the pikelet, flip over and cook on the other side. DATE SCONES 1 cup of chopped dates, 2 tablespoons butter or margarine, 2 heaped tablespoons of sugar, 1 egg, 1 teaspoon vanilla essence, 1 cup of milk, 2 1/2 cups S.R. flour, pinch of salt. Sift S.R. flour and salt into a bowl, add butter or margarine, and sugar. Rub the mixture until butter resembles breadcrumbs, add chopped dates to mixture. Mix milk, egg and vanilla essence together, add to flour mixture and stir with a knife until combined, add more milk if mixture is too dry. Knead dough lightly and roll out into 3cm thickness. Cut into shapes, brush with milk and place on a floured tray. Cook in a hot oven 200 deg. for about 12 - 15 mins, until golden brown.

45: BASIC STEAMED PUDDING You will need a saucepan with a lid, 1.25/pudding basin. Serves 6. 1 1/2 cups S.R. flour (187g), 1/4 tsp. salt, 1 egg, 1/3 cup of shortening (83g), 1/3 cup castor sugar (83g) 1/3 cup milk (83mls) 1/2 teaspoon vanilla essence. Put large saucepan one-third full of water onto boil. Sift the flour and salt. Beat the egg in a bowl. Cream the butter and sugar, then add the egg gradually and mix well. Add the essence. Stir in the flour and the milk alternatively (1/2 at a time). Place in greased pudding basin. Cover basin and steam for 1 1/2 hours. Turn on to warm dish and serve suitable sauce or cream. Variations of steamed pudding: College: place 2 tablespoons of jam on the bottom of basin before putting in basic mixture. Chocolate: Sift 2 tablespoons cocoa with flour and add 2 tablespoons extra milk. Sultana, raisin or currant: add 3 tablespoons fruit after adding egg. Golden syrup: place 2 tablespoons of golden syrup on the bottom of basin before putting the basic mixture.
