1: Bon Appetit! | No one ever cooked quite like Darlene, aka Mom, aka Happy Granny......so we put this book together to celebrate all the wonderful home-cooked meals that she provided us with over the years.

3: Breads! | No matter how hard she tried, she always ended up burning the bread! Daddy would always joke with her that he liked it that way...nice and crunchy...and brown! | WE ALL LOVED DARLENE'S BURNED BREAD!

4: Salads | Darlene made a lot of salads. Daddy loved the avocado she would put in her salads.

5: Darlene's Potatoe Salad | Potatoe Salad - Kristi and Mark loved her potatoe salad!

6: SOUPS | Enchilada Soup

8: Granny made the best Corn Pones! Ryan loved them! GG

9: Ingredients Corn Meal Hot Water Oil Seasoning | Directions Mix Corn Meal, hot Water, scoop with spoon. Flatten with fingers. Fry in hot greese until ready. Great by itself or with any food. | Corn Pones .....aka Hot Water Corn Bread | Ryan's Favorite!

10: Darlene's favorite Mexican Food was Casa Ole' Enchiladas!

13: Au Jus' Sauce | Sauces | YUMMY WITH SANDWICHES.....

14: Seafood | Darlene cooked a lot of Seafood Dishes....Seafood Gumbo, Fried Shrimp, Fried Fish, Stuffed Fish, and many other types.....we loved them all :)

16: Gumbo & Crabs! | We all loved Darlene's Seafood Gumbo! This was one of Tony & Beth's favorite.... and Shelby would eat the heck out of the crabs when Granny cooked them! Granny would always comment on how many crabs Shelby could eat and that she picked them clean! | Darlene cooked the roux with flour, oil, and seasonings from scratch! It was the best! | Yummy! | Vance loved his mom's chicken & sausage gumbo....it was a family tradition for her to cook it every Christmas Eve.

18: Darlene's Dirty Rice! | The Best! A favorite by All!

19: Darlene made the best roast rice and gravy! We all loved it! Vance always looked forward to her roast, rice, and gravy every Sunday morning growing up! Darlene's secret was to cook the roast on the stove in a heavy pot, lots of onion, garlic, some salt and pepper. She would heavily brown the roast, add water , then cook down browning again, repeating the process until it had cooked a long time. It was the best! | Darlene's Roast, Rice, and Gravy

32: Granny made great hamburgers! All her grandkids loved them! This was Tylers Favorite! Granny would make a ton of hamburgers for Tyler when he stayed the night! | Hamburgers

46: BREAKFAST | Darlene loved cooking and eating breakfast! She would sometimes cook breakfast food for supper! She would always cook breakfast for her grandchildren when they stayed the night. Some of her favorites were bacon, eggs, "burnt toast", and pancakes! Madison said that "Granny was always trying to feed them"...lol. I remember Darlene even brought her plug-in hot plate to Key Largo so that she could cook us egg sandwiches in the room!

48: Desserts | Ingredients 1 1/4 c. graham cracker crumbs (about 16 crackers) 2 tbsp. sugar 1/4 c. butter, melted 1 can lemon ready-to-spread frosting 1 c. sm. curd cream cottage cheese 1 c. dairy sour cream | Directions Heat oven to 350 degrees. Mix graham cracker crumbs and sugar in bowl. Add butter; mix thoroughly. Reserve 3 tablespoons for topping. Press remaining mixture firmly and evenly on bottom of square 9x9x2 inch pan. Bake 10 minutes. Cool. In small mixer bowl, combine frosting, cottage cheese and sour cream. Beat on high speed until blended, about 1 minute. Pour into crumb-lined pan; sprinkle with reserved crumbs. Freeze overnight. If desired, garnish with strawberries, peaches, small bunches of seedless green grapes or other fruit. 9 to 12 servings. | Chocolate Pie | Daddy's Favorite!

67: Darlene loved to cook and made so many wonderful meals for her family. These are just some of her recipe's, as most of her recipe's were from memory. We all love and miss her, and will always cherish our time with her.
