2: Appetizers

4: Creamy Dill Cucumber Sandwiches 1-*8 oz pkg cream cheese (softened) 1- (0.7 oz) pkg dry Italian-style salad dressing mix half cup mayo 1 French Baguette, cut into half inch thick circles 1 cucumber sliced thin Ii use English seedless cucumber) 2 tsp dried dill weed In a medium bowl, mix together cream cheese, dressing mix and mayo. Spread a thin layer of cream cheese mixture on a slice of bread and top with a slice of cucumber Sprinkle with dill. Repeat with remaining ingredients.

5: Smoked Mozzarella Fonduta 1 loaf Italian Bread, sliced 1 cup sour cream 1 tsp thyme half tsp crushed red pepper fourth tsp cayenne pepper 3 cups shredded mozzarella 3 cups shredded provolone 3 T grated Parmesan 3 T grated Romano cheese 8 T fresh diced tomatoes fresh chopped parsley Arrange sliced bread on baking sheet and cover with foil. set aside until ready Preheat oven to 450 Combine sour cream, thyme, red pepper, cayenne pepper, 4 cheeses In a large bowl mix thoroughly Family style- spray 8X10 casserole dish with pan spray use spatula and place mixture in dish Use a large spoon, spread cheese mixture to create an even surface. Place casserole dish on center rack in oven After 5 mins. place baking sheet with bread(still covered) on top rack in oven bake 5 mins. Remove bread and Fonduta from oven If wish garnish casserole with diced tomatoes and parsley in center of fonduta. Arrange bread slices around dish and serve immediately.

9: Maryland Crab Cake (GG) 1 lb crab meat 1 cup bread crumbs 1 egg dash of hot sauce 2 T mayonnaise salt-pepper 1 half tsp dry mustard 1 eighth paprika 1 tsp lemon juice Mix together and shape into cakes (refrigerate for an hour) Heat about 2 tablespoons of vegetable oil in a non-stick frying pan. Sauteé until golden brown on each side. This will only take about 3-5 minutes per side.

10: Cabbage Rolls (Patti's)- GG 1 one half lb. ground chuck (lean) 1 egg half cup raw rice (uncooked) 1 one half tsp onion powder (not salt) couple dashes garlic powder (to taste) 1 tsp. salt (maybe a little more pepper) mix all together drop 1 large head of cabbage into boiling water cook until outer leaves start to soften. remove from water. drain. pull soft leaves off. may have to do the second time to get as many leaves as you need. Make balls of the meat mixture. lay on core end of the leaf. and roll. folding up sides of leaves as you roll. lay seam side down. Put 1 large can sauerkraut in heavy cooker, or baking pan, or casserole dish. Place rolls on top. Pour 1 small can crushed tomatoes over all. Bake at least 1 and half hours. Pour some water on top as they bake. about 350 or 375 oven

18: Tuscan Pork Roast 5-8 garlic cloves, peeled 1 T dried rosemary 1 T olive oil 1/2 t salt 1 boneless pork loin roast (3-4 lbs) *In a blender, combine garlic, rosemary,oil oil, &salt. Blend until mixture turns to paste. Rub over the roast, cover,& let stand 30 mins. *Place on greased baking rack,fat side up, in a roasting pan. *Bake uncovered at 325 for 2-2 1/2 hr or until meat thermometer read 160-170. Let stand 15 mins.

19: Roasted Lemon Chicken 1 whole broiler chicken (3 1/2 lbs) 1 1/2 tsp salt free lemon pepper seasoning. 1/2 tsp onion powder 1/2 tsp garlic powder 1/2 tsp seasoned salt 1/2 tsp dried thyme 1 med lemon, halved 2 fresh rosemary sprigs *Loosen skin around chicken breast, leg, thigh *Combine the seasonings. Rub half under skin *Cut 1/2 of the lemon into quarter & place in the cavity along with rosemary. *Skewer openings, tie drumsticks together with kitchen string. *Place chicken breast side up on rack in a roasting pan. *Squeeze the remaining lemon over chicken. Rub remaining season mixture over chicken. *Bake uncovered at 375 for 1-1 1/2 hr or until the juice runs clear and temp. 180. cover loosely with foil if browning too quickly. Cover and let stand for 15 min. *Remove & discard skin, lemon, and herbs from cavity before carving.

20: Mike's Chicken Fajitas *2 lbs of chicken breasts *3/8 cup light brown sugar *1/4 cup chunky salsa *1 T pepper * 1 tsp. mustard *3 T Worcestershire sauce 1/2 cup of Ketchup * 3-4 T of salt (to taste) *Dice chicken into 1” square pieces, brown in skillet with just enough vegetable oil to prevent sticking. Mix remaining ingredients in a bowl; add to chicken. Simmer 10-20 minutes until desired brownness’/blackness is reached. Eat on soft tacos with desired fajita condiments.

25: Peanut Butter Surprise (serves 8-10) (Crust) 1 stick Margarine 2 cups Graham Cracker Crumbs half cup Sugar *mix the 3 together and press into 9 X 13 pan 1 cup powdered sugar 1- 8oz package cream cheese 1 and half cups Cool Whip *Mix sugar and cream cheese- fold in cool whip and spread onto crust 3 cups milk 2 small Vanilla Instant Puddings one forth cup Peanut Butter *mix milk and pudding, then to taste approx. one forth cup of peanut butter mix again and spread on cool whip mixture. when set, spread more cool whip on the top mix approx. 1 T peanut butter and half cup powdered sugar. crumble together with fingers &sprinkle on top

28: Lemon Sugar Cookies 1/2 c. butter softened 1/2 c. butter flavored crisco shortening sticks 1 c. sugar 1 egg 1 T milk 2 tsp lemon extract 2 1/2 c. all purpose flour 1 tsp salt 1/2 tsp baking soda *In a bowl cream butter, shortening, & sugar. * Add Eggs, milk, and extract. *Combine flour, salt, & baking soda. gradually add to cream mixture. *Shape into 1" balls or drop by tsp 2" apart on ungreased cookie sheet. *Bake 350, 9 min. or until edges lightly brown.
