2: Breakfast Casserole (serves 25 - steamtable pan) 3 lbs. Ground Pork Sausage 1 1/2 cups Diced Onion 6 cups Cooked Rice 10 oz. Box Rice Krispies 3 cups Shredded Cheddar Cheese 6 (10 oz. each) Cans Cream of Celery Soup 15 Eggs 3 cups Mayonnaise Grease pan. Brown sausage and diced onion. Drain fat and set aside. Cook rice, cool, set aside. Shred cheese and set aside. Mix together the eggs, cream of celery soup, and mayonnaise. Layer into the greased pan in the following order: 1) Half inch layer of rice krispies 2) sausage and onion mixture 3) rice 4) Shredded cheddar cheese 5) Egg mixture Chill overnight. Bake at 350F for 1 hour or until browned and the center is firm. Let set 10 minutes before serving.
3: Magnificent Casserole (serves 8) 2 lbs. Lean Ground Beef 8 oz. Cream Cheese 1 tbs. Green Pepper (minced) 1/2 cup Sour Cream 1/2 cup Swiss Cheese (grated) 8 oz. Egg Noodles (package) 1 lb. Cottage Cheese 1/3 cup Green Onion (chopped) 2 cups Tomato Sauce In a large pan, cook noodles in boiling, salted water until tender. Drain and set aside. In a large bowl, mix together cream cheese, cottage cheese, and sour cream. Add onion and peppers. Set aside. Brown ground beef and drain any fat. Add tomato sauce to ground beef. Grease 9 x 13 inch cake pan or casserole dish, and arrange the following layers: Noodles, cheese mixture, meat mixture - then repeat. Top with grated Swiss cheese. Bake at 375F for minutes. *If freezing this casserole for later use, you may want to reduce or omit the amount of green pepper and onion used as they have a tendency to get stronger over a long period of time. *
4: One Dish Meal 2 lbs. ground chuck 1 large onion 3 tbs. oil 2 cans French cut beans 1 small can mushroom soup 1 small can cream of celery soup 1 large box Tater Tots Preheat oven to 350F. Sauté onion in oil. Add ground chuck and brown lightly. Place this in the bottom of a 13 x9 pan. Over this, green beans. Mix 2 cans of soup and pour over beans. Place Tater Tots on top and bake 30-35 minutes.
5: Banana Bread (2 loaves) 4 large bananas 3 eggs 1 1/2 cup sugar 3/4 cup shortening 3 cups flour 1 1/2 tsp. baking soda 1 tsp. salt 1/2 cup nuts Mix bananas in bowl until creamy. Add remaining ingredients in order given. Bake at 350F for 45 minutes.
6: Remarkable Fudge (makes about 5 dozen) 1 cup sugar 1 (14 1/2 oz.) can evaporated milk 1/2 cup margarine 12 oz. (2 cups) semi-sweet chocolate 1 pint marshmallow cream 1 tsp. vanilla 1 cup nuts Cook sugar, milk, and butter to soft ball (236F). Remove from heat. Add chocolate piece, marshmallow, vanilla, and nuts. Mix until chips are melted. Pour in a 13 x 9 x 2 pan.
7: Christmas Cut-Out Cookies 2 eggs 1 cup sugar 1 1/4 cup shortening 3 1/2cup flour 2 tbs. baking powder 1 tbs. baking soda 1 tbs. salt 1 cup sour cream or buttermilk 1/2 tsp. vanilla 1/2 tsp. lemon Bake at 375F for 10 minutes.
8: Dolly's Apple Pie 1 pie crust 6-7 apples peeled and sliced 1 cup sugar 1 tbs. flour 2-3 tbs. cinnamon Dash of nutmeg 1 tbs. butter Lemon Juice Preheat oven to 350F. Peel and slice apples. Sprinkle with lemon juice as needed. Add ingredients to apples. Mix well. Pour in pie crust. Brush melted butter over pie crust. | A Recipe From Dolly
9: Rosie's Apple Pie | A Recipe From Rosie | 1 pie crust Filling 4-5 apples peeled and sliced 1/2 cup granulated sugar 1/4 cup cup packed brown sugar 1 to 2 teaspoons ground cinnamon 1/4 cup cold butter, cut into small pieces Topping 1 cup packed brown sugar 1/2 cup butter, softened 1/4 cup shortening 1 3/4 cup flour 1 1/2 cup quick-cooking oats 1 teaspoon salt 1/2 teaspoon baking soda Preheat oven to 400F. For topping, mix brown sugar, butter and shortening in large bowl. Stir in flour, the oats, salt and baking soda. For filling, mix ingredients and stir in apples as they are peeled and sliced. Pour in pie crust, add topping. There will be topping left over. Bake for 50 minutes or until golden brown.
10: Lemon Squares Bottom Layer: 1/2 cup butter (softened) 1 cup flour 1/2 cup powder sugar Press in bottom of 8 inch square pan. Bake 10 minutes at 350F. Top Layer: 1 cup sugar 2 tbs. flour 1/2 tsp. baking powder 2 eggs (beaten) 3 tbs. lemon juice Pour over bottom layer. Bake 25 minutes at 350F. Sprinkle with powder sugar while still warm.
11: world's best mom | Pineapple Upside-Down Cake 1/4 cup butter 1 cup packed brown sugar '1 can (20 oz.) sliced pineapple in juice, drained and juice reserved 1 jar (6 oz.) maraschino cherries, drained 1 package yellow cake mix Oil and eggs as directed on cake mix Preheat oven to 350F. Melt butter in 13x9 inch pan in oven. Sprinkle brown sugar over butter. Arrange pineapple slices and cherries over top; press gently. Add enough water to pineapple juice to measure 1 1/4 cups. Make cake batter as directed on package - except use pineapple juice mixture instead of the water. Pour batter over pineapple and cherries.Bake 40-45 minutes or until a toothpick inserted in the center comes out clean. Immediately turn pan upside down onto a heatproof serving plate; leave pan over cake 1 minute. Serve.
12: Mom's Jello Mix 1 pkg. pistachio pudding (or any flavor) 1 large can chopped pineapple 1 container cool whip
13: Honey-Glazed Pecans 1 cup pecan halves 3/4 cup water 1/4 cup plus 1 tbs. honey 3 tbs. sugar 1 cup vegetable oil Combine pecans, water, and honey in saucepan.Bring to a boil 5 minutes. Quickly drain and return to pan. Place over medium heat and immediately sprinkle pecans with sugar. Remove from heat and toss pecans to coat well with sugar. Arrange in single layer on waxed paper. Dry at least 15 minutes. Add oil and heat over medium-high heat to 375F. Deep fry pecans in hot oil, stirring until light brown and sugar begins to caramelize, about 2 minutes. Using slotted spoon, quickly transfer to waxed paper. Cool and serve.
14: Puppy Chow 1 big box of Chex Cereal 1 stick butter, melted 3/4 cup peanut butter 1 12oz bag semi-sweet choc. chips 2-3 cups powdered sugar Mix butter with chex, then softened peanut butter, then melted chocolate. Shake powdered sugar with ingredients 1/2 cup at a time.
15: Favorite Layer Bars 1 1/2 cups graham cracker crumbs 1/4 cup sugar 1/3 cup cream cheese, softened 1/2 cup sugar 1 egg 3/4 cup flaked coconut 3/4 cup chopped nuts 1 6-oz. pkg. semi-sweet chocolate pieces Combine crumbs, sugar, and butter. Press into bottom of 13x9 inch baking pan. Bake at 350F for 5 minutes. Combine cream cheese, sugar, and egg. Mix until well blended. Spread over crust. Sprinkle with remaining ingredients, press lightly into surface. Bake at 350F for 25-30 minutes. Cool and cut into bars
