1: Low fat chocolate chip cookies | 1/4 cup butter,softened | 1/2 cup sugar 1/4 cup brown sugar 1 egg white 1 tsp vanilla extract 1 cup all-purpose flour 1/2 tsp baking soda 1/4 cup cocoa powder 1/3 cup miniature chocolate chips Preheat oven to 375 degrees.in a large bowl, beat butter and sugars together with an electric mixer until creamy. Add egg white and vanilla and mis until well blended
2: Chicken Caesar Salad | chicken breast halves 2 t. oil 1/2 head romaine lettuce 1/2 cup shredded Parmesan cheese 2-3 T butter garlic seasoning Caesar dressing as desired 1. slice the chicken and season with salt,pepper and other seasoning as desired. 2. fry chicken in the oil until completely cooked.
3: Poached Chicken Breast | 6 Boneless,Skinless chicken breasts as needed salt As needed Pepper 1 oz Butter 1 1/4 chicken stock 1 bay leaf 1 tsp Italian blend seasoning Roux 1 oz butter 1 oz flour 4 oz heavy cream | season chicken rub the cod pan of butter add stock bay leaf and Italian seasoning to cover chicken boil until chicken is done 8-10 min. remove from poaching reserve in warm place combing butter and flour add roux to the liquid. add cream strain sauce
4: Apple Crisp | 4 medium tart cooking apples, sliced (4 cups) 3/4 cup packed brown sugar 1/2 cup quick-cooking or old fashioned oats 1/3 up butter softened 3/4 teaspoon ground cinnamon 3/4 teaspoon ground nutmeg cream or ice cream if desired | 1. hear oven 375 2. Spread apples in pan. in medium bowl stir remaining ingredients except cream until well mixed sprinkle over apples. 3. Bake about 30 mins. until golden
5: Beef and broccoli lo mein with ramen noodles | 3/4 pound boneless beef steak 2 teaspoons soy sauce 2 teaspoons dry sherry 1 teaspoon cornstarch 2 packages ramen noodles 4 cups boiling water 3 cups broccoli flowerets 1 1/2 tablespoons oyster sauce 2 teaspoons cornstarch dissolved in t tsp water | slice beef in thin slices place in bowl in soy sauce steam broccoli in the microwave until barely tender in 2 mins. heat oil in large skillet or wok pour 2/3 cup of the broth from the noodles into measuring cup add oyster sauce to the measuring cup and stir
6: Easy pizza dough | 2 1/2 C flour 1 pkg. dry yeast 1 C warm water 2 tablespoons Vegetable oil preheat oven to 450 degrees Dissolve yeast in warm water,stirring until dissolved Add other ingredients and mix well. Knead dough for 3 mins if sticky and small amounts of flower Roll dough spread 1/2 pizza sauce topping bake at 450.
7: Brownies | 1 cup sugar 3/4 cup flour 3 tbsp. cocoa 3/4 tsp. salt 1/2 tsp baking powder 1/2 cup oil 2 eggs 1 tbsp. light corn syrup combine sugar.flour cocoa, salt and baking powder combine oil eggs corn syrup and vanilla Add oil mixture to dry ingredients spread in a 8x8 greased pan. bake 350 for 15-20 mins substitutions 4 eggs 1/4 cup oil 1/4 applesauce instead of 1/2 cup oil 1/2 cup applesauce instead of 1/2 cup oil 4 eggs instead of 2 whole eggs 1/2 cup baking substitute instead of 1/2 cup oil
8: Tex-mex taco salad | 1/2 cups prepared salsa 2 tablespoons reduced fat sour cream 1 small onion chopped 1 tsp garlic minced 8 ounces lean ground beef or turkey 1 large plum tomato diced 1/2 cup canned kidney beans rinsed 1 teaspoon ground cumin 1 teaspoon chili powder 1/8 teaspoon salt 2 tablespoons chopped fresh cilantro 4 cups shredded romaine lettuce 1/4 cup shredded sharp cheddar cheese | preparation 1. Combine salsa and sour cream in a large bowl. 2. add onion and garlic and cook, stirring often until softened 1 to 2 minutes. add beef and cook. stirring often until cooked through 3 to5 minutes. Add tomato beans cumin chili powder and salt cook stirring until the tomato being to break down about 2 min. remove from the hear stir in cilantro and 2 tablespoons of the salsa mixture. 3. Add lettuce to the remaining salsa mixture and toss to coat. Divide the lettuce between 2 plates top with the cooked meat and sprinkles with cheese.
9: Baked apple pancakes. | 3 large granny smith apples peeled cored and cut into 8 wedges each 1/2 cup milk 1 egg 2 tbsp. oil 1/2 tsp vanilla 1 cup flour 5 tbsp powdered sugar 3/4 tsp baking powder 1/4 tsp. salt 3 tbsp butter 1/4 tsp cinnamon | Place rack in center of oven and preheat to 425 In a medium bowl beat milk egg oil and vanilla until well blended stir in flour 3 tbsp sugar baking powder and salt stir until blended. In a 10" oven proof non stick skillet melt butter over a medium heat add apples 2 tbsp sugar and cinnamon cook Turing often 5-7 minutes until apples slices are browned but still hold their shape. Spread slices in an even layer in skillet stir batter and pour over hot apples Place skillet in oven and bake 13 to 15 minutes until the batter is cooked and puffs.
10: Cajun chicken pasta 3/4 rotini cooked 2 tablespoons butter 2 skinless boneless chicken breast halves 3 cloves garlic minced 1 bunch green onion chopped 2 tablespoons Cajun seasoning 1 teaspoon freshly ground black pepper 1 teaspoon ground re pepper 8 ounces heavy cream 1 green bell pepper julienned 1 red bell pepper julienned 8 ounces fresh mushrooms quartered 1/2 cup Parmesan cheese. cook rotini to package directions drain set aside melt butter add chicken stirring frequently until browned about 6 to 8 minutes add garlic onions Cajun or creole seasoning and ground black and red peppers. add bell peppers and mushrooms stir to combine. cover and cook for 5 minutes uncover stir in cream and let simmer another 2 minutes stir in Parmesan cheese remove sauce from heat stir in cooked pasta an serve immediately.
11: Italian frittata 1/4 lb. fresh mushrooms 2 green onions minced 1 1/2 tbsp butter 6 eggs 3 tbsp fresh parsley chopped 1/2 tsp basil dried and crumbled 1/4 cup grated Parmesan cheese salt and pepper to taste. Pan large skillet with oven safe handle broil 1. sauté mushrooms and onions in butter over medium heat until tender crisp preheat broiler beat eggs in medium bowl add parsley basil salt and pepper and half the cheese to the eggs. mix well. pour egg mixture over vegetables in skillet cook over medium heat with out stirring until edges are lightly browned sprinkle with remaining cheese broil until top is golden brown cut into wedges and serve hot.
12: Almond Cookies | 1/2 cup butter 1/2 cup sugar 1/2 tsp almond 1 egg 1 1/4 cups flour 1/2 tsp baking soda pinch salt red food coloring 1. Cream butter with sugar until light and fluffy 2.add egg and mix well add almonds extract 3.sift dry ingredients together add to creamed mixture and mix will. 4.Shape into one inch balls. place on ungreased cookie sheet. Flatten slight by pressing center of cookie with thumb dip end of toothpick to food coloring and touch top of cookie or place Spanish peanuts in center of each cookie.bake in preheated oven at 350 degrees for 10 mins.
13: 1 1/2 cup peanut butter shopping list 1 stick butter-softened shopping list 1 cup sugar shopping list 1 cup brown sugar shopping list --cream these ingredients together and add shopping list 3 eggs shopping list ---one at a time mix thoroughly after each, then add- shopping list 2 tsp baking soda shopping list 1 tsp corn syrup shopping list 2 tsp vanilla shopping list --mix to combine and add shopping list 3/4 c miniature chocolate chips shopping list 3/4 c mini m&m's shopping list 4 1/2 cup instant oatmeal (don't add too much or they will be dry) | Scoop onto greased sheet pan and bake at 350 degrees for approximately 12 minutes. Can bake longer for a crisper cookie but they are better chewy in my opinion. | Monster cookies
14: 2 cups Bisquick 2/3 cup milk 1/2 cup shredded Cheddar cheese 1/2 cup butter or margarine, melted 1/4 teaspoon garlic powder 1.Preheat the oven to 450 degrees. 2 Mix Bisquick, milk and cheese until a soft dough forms. Drop the mixture by spoonfuls onto ungreased cookie sheet. Bake the mixture for 8 to 10 minutes or until golden. 3 Melt the butter and stir in the garlic. 4 Brush the butter/garlic mixture over warm buns before removing them from the cookie sheet. | Chadder bisquits
15: enchiladas | 3 tablespoons vegetable oil 1 1/2 pounds skinless boneless chicken breast Salt and pepper 2 teaspoons cumin powder 2 teaspoons garlic powder 1 teaspoon Mexican Spice Blend 1 red onion, chopped 2 cloves garlic, minced 1 cup frozen corn, thawed 5 canned whole green chiles, seeded and coarsely chopped 4 canned chipotle chiles, seeded and minced 1 (28-ounce) can stewed tomatoes 1/2 teaspoon all-purpose flour 16 corn tortillas 1 1/2 cups enchilada sauce, canned 1 cup shredded Cheddar and Jack cheeses Garnish: chopped cilantro leaves, chopped scallions, sour cream, chopped tomatoes
