3: Buckeye Recipe This recipe involves the 2 best foods ever -- PB & chocolate! 1/4 c. (2 oz.) cream cheese, softened 1 1/2 c. peanut butter 1 c. graham cracker crumbs (about 14 crackers) 3 c. confectioners’ (powdered) sugar 10 T (1 1/4 sticks) unsalted butter, melted and cooled 12 oz dark chocolate, coarsely chopped Filling: With an electric mixer, beat cream cheese and PB until combined. Add graham cracker crumbs and beat for 10 seconds. Add sugar and butter, and mix on the lowest speed until it stops floating off, then increase speed until all are combined. Scrape down bowl, then mix again. The mixture will be quite sturdy and a little dry. Set aside. Coating: Melt chocolate in microwave in 30 then 10 second increments, stirring before you start it again until it is completely smooth. Let it cool to tepid (about 100 degrees) Assemble: Line a sheet pan with parchment paper. Scoop about one tablespoon worth of filling and use hands to form it into a ball. Place ball on prepared sheet and repeat with rest of filling. Using a fork or large skewer, dip each ball into chocolate and roll about so that almost entire candy is coated, leaving a small circle uncoated. Chill buckeyes until set (30 mins).
