16: Slow cooker Corned Beef & Cabbage 3 Lb Corned beef Brisket with Spice packet 2 carrots cut in 2"pieces 2 medium onions, chopped 1 small head green cabbage, cored & roughly copped 2 cups apple juice & 1 cup water Put the carrots and onions on the bottom of slow cooker, and put the corned beef on top. Arrange the chopped cabbage around the beef. Add apple juice, water & spice packet. Cook on low 6-8 hours until beef is tender Potatoes red baby potatoes sliced in half, 1/2 stick of butter, softened 1 tblsoon garlic 2 tblsonn fresh parsley S & P Bring a pot of salted water to a boil and add potatoes & cook until tender. Drain & return to pot. Add butter, garlic, parsley, S & P and gently stir so all potatoes are evenly coated Serve potatoes, cabbage & corned beef on a platter | St. Patrick's Day

20: Grandma's Easter Bread | 14 Eggs 5 Lb Flour 3 Lemons 2 cups sugar 1 tsp vanilla 1 box raisins (optional 1/2 lb butter , melted 3 envelopes of yeast 1 extra egg for egg wash Cut up lemons & remove pits. put cut pieces w/ skin into food processor or blender & puree--Set aside In separate bowl, mix yeast with 1/4 cup warm water & stir until there are no lumps. In a large bowl, beat eggs with melted butter, then beat in sugar & vanilla extract. Add lemon mixture & yeast mixture until all blended together.. slowly add flour in small amounts into wet mixture (add raisins now if you like). knead mixture until a mound of dough is formed, cover with a towel & let rise--about 5 hours. knead a second time & make one large loaf, cut into smaller sections and form smaller loaves. Cover with towels to rise again --about 3 hours. Brush loves with egg wash and bake at 325 about 1/2 hour or until golden brown One batch makes 8 or 9 medium loaves

45: 5 Artichokes 6 slices of bread w/ crust removed 12 cloves of garlic 1 cup Parmesan cheese 4 eggs parsley, garlic powder & black pepper to taste | Cut off tops and bottoms of artichoke so they can stand upright. Rinse and put in microwave for 2 minutes to soften so that leaves pull open easily.---set aside and make stuffing Soak bread in water and squeeze out with hands, put moist bread in a bowl. Add 6-8 cloves of crushed garlic, Parmesan cheese, parsley, garlic powder & black pepper---mix well. Then add in 4 beaten eggs and mix all together to make a moist paste. If mixture seems dry add some warm milk . Take artichokes and spread open leaves with thumbs and stuff each leaf beginning in the center and working your way out. Place artichokes in a saucepan so they fit snug and standing up. Add water to pan to cover the bottom leaves of artichokes. add remaining garlic cloves to water & drizzle with olive oil. 50: 2 lbs shrimp, peeled, deveined-tails left on salt & pepper olive oil 1 small onion, sliced thinly 1 whole bulb of garlic chopped 2 lemons juiced 1 cup veggie or chicken stock 4 TBs cold butter 3 Tbs chopped parsley 12-14 onces pasta | Season the shrimp thoroughly with salt & pepper. Heat a large saute' pan over medium-high heat. When the pan is hot, add enough oil to lightly coat the pan. Ass the shrimp and quickly saute' until just starting to turn pink, but not cooked through. Remove from pan 7 set aside. Add the onions an saute just until they begin to soften, about 3 minutes, add garlic & cook for 30 more seconds. At the same time, begin to boil pasta water Add the lemon juice and stock, simmer & reduce by 2/3rds (about 5 minutes). Add the shrimp back to the pan and swirl in the butter. simmer until pasta is done and drained. Drain pasta & put in a bowl with butter , cheese, S& P. Serve at the table with pasta in a separate bowl because you don't want the pasta to soak up all the delicious sauce....put together on your plate.... Magna !! | Shrimp Scampi
