BC: If we could just slow down enough To consider what’s true and real And always try to understand The way other people feel. And be less quick to anger And show appreciation more And love the people in our lives Like we’ve never loved before. If we treat each other with respect And more often wear a smile, Remembering that this special dash Might only last a little while. So when your eulogy is being read With your life’s actions to rehash Would you be proud of the things they say About how you spent your dash? | I read of a man who stood to speak At the funeral of a friend. He referred to the dates on her tombstone From the beginning to the end. He noted that first came the date of her birth And spoke of the following date with tears, But he said what mattered most of all Was the dash between those years. For that dash represents all the time That she spent alive on earth And now only those who loved her Know what that little line is worth. For it matters not, how much we own, The cars, the house, the cash, What matters is how we live and love And how we spend our dash. So think about this long and hard; Are there things you’d like to change? For you never know how much time is left That can still be rearranged.

4: Doris' French Dressing 1/2 cup oil 1/4 cup vinegar 1 clove garlic salt, pepper lemon juice Serve over lettuce topped with crumbled bacon and chopped egg. | 2 eggs 2 tbs flour 3/4 c. sugar 20 oz crushed pineapple 5 slices bread, cubed Beat eggs, add sugar and flour, add pineapple. Bake at 325 for 15 min. brown 6 tbs butter, cover casserole with butter and bread. Bake 30 min at 350. | Bread Stuffing onion 3-4 celery stalks 1 stick of butter 1 loaf stale bread, cubed 3 cups milk 1 beaten egg parsley When vegetables are soft, add milk & egg. Heat slowly. Mix with bread, cover with foil, and bake at 350 1 hour. | Baked Pineapple
6: Irene's Vegetable Soup 8 potatoes, diced 5 lbs shinn meat & bones (beef) 28 oz (2 cans) whole peeler tomatoes 6 oz tomato paste 3 large yellow onions whole celery stalk 1 lb baby lima beans 1/2 lb navy beans 2 bags carrots 3 cups green beans 2 cabbages 1 can creamed corn 2 16 oz cans of peas 1 can whole kernel corn 1 tsp sugar, salt, & pepper Add meat and bones to half full pot of water, peeler tomatoes, tomato paste, and onions. Bring to a boil and simmer covered. Cook 2 hours then add celery. Add carrots after 3 hours total time. Add green beans after 3 hrs 45 min, then add sugar and both cabbages. Add potatoes when cabbage is done. Add beans, creamed corn, and corn, then boil and simmer. After half hour add peas and keep at low boil. After 20 minutes take out bones and fat.
7: Swingin Wings Bake wings at 450 with salt & pepper for 30 min, then drain fat. Add garlic salt, pepper, parsley, a little old bay, parmesan cheese, and 1 stick of butter. Drop to 400; continue to add the above and turning until done. | Sweet & Sour Spare Ribs 3 lbs ribs 2 cups onion slices 2 cloves minced garlic 1 tb fat 1/2 cup vinegar 1/2 cup water 1 bottle chili sauce 2 tbs lemon juice 2 tbs worcestershire sauce 3 tbs brown sugar 1 1/2 tsp salt 1 tsp dry mustard Bake ribs at 450 for 30 min. Simmer all sauce ingredients for 10-15 min, Brush ribs with sauce. Reduce oven to 350 and bake uncovered 1 hour or until done.
8: 2 cups brown sugar 1/2 cup milk 1/2 stick butter Cook over low heat. Stir in middle! Form into a soft ball. Cool for 15-20 minutes. Add 1 tsp vanilla. Beat with mixer, slow until smooth. | Caramel Icing | Peach Pie 1 cup sugar 5 cups peaches 1/4 cup flour 1/2 tsp cinnamon Bake at 425 for 35-40 min.
9: Mom Green's Rice Pudding 15 tbs Carolina long grain rice 15 tbs sugar (sweet to taste) 1/4 tsp almond flavoring 1 tbs vanilla 2 tbs butter 1/4 tsp salt 2 large cans evaporated milk 1 qt milk Must stir and watch or it will boil over. Simmer 30-40 minutes. | Peanut Butter Balls 3 cups peanut butter 2 sticks margarine 1.5 boxes powdered sugar 1 stick paraffin 12 oz chocolate Mix pb, margarine, & sugar. Roll into balls. Chill at least 1 hr. Melt chocolate with wax. Dip balls into mixture and chill. | Butter Cream Easter Eggs 1/2 lb semi sweet chocolate 1/2 slab wax 1/2 cup butter 1 tsp vanilla 1 tsp salt 1/2 cup condensed milk 6 cups powdered sugar Mix all ingredients except chocolate & wax. Cover & chill overnight. Melt chocolate & wax in double boiler. Shape eggs, dip into chocolate mixture, and chill.
10: Sweet Potato Casserole 3-4 cups mashed sweet potatoes 1/2 cup sugar 2 eggs, beaten 1/4 cup melted butter 1/2 cup milk 1 1/2 tsp vanilla Topping: 1 cup chopped walnuts 1/3 cup flour 1/2 cup brown sugar 2-3 tbs melted butter Bake at 350 for 35 min. | Tuna Fish Salad 1 can bumblebee solid white albacore in water 1 small onion, chopped 1 cup mayonnaise parsley flakes | Salmon Cakes 1 can salmon 1 cup mashed potatoes 1/2 cup cracker crumbs 1 egg Combine ingredients & form into cakes. Pan fry in oil. Use juice from salmon can to make a sauce.
11: Cream Puffs 1 cup water 1/2 cup butter 1/4 tsp salt 1 cup sifted all purpose flour 4 eggs, unbeaten Bring water, butter, & salt to a boil. Add flour all at once. Stir until mixture leaves sides of the pan and forms a compact ball. Remove from heat and continue beating to cool mixture slightly-about 2 minutes. Add eggs one at a time, beating after each one. When batter is smooth, place balls 2-3 inches apart on a greased baking sheet. Bake at 400 for 20-25 minutes. Remove from oven & slit them. Put back in oven at 325 for 10 minutes. Fill with vanilla pudding.
12: Potato Casserole 2 lb hash potatoes, defrosted 3/4 cup melted butter 1 tsp salt 1/4 tsp pepper 1/4 cup chopped onions 1 can cream of chicken 1 pt sour cream 2 cup grated sharp cheese 2 cup crushed corn flakes Combine potatoes, 1/2 cup butter, salt, pepper, soup, sour cream, and cheese. Put in 3 qt buttered dish. Combine remaining butter with corn flakes, and sprinkle on top. Bake at 350 1-1.5 hours. | Stuffed Potatoes Idaho Potatoes Wispride cheese sour cream butter salt pepper paprika Cook potatoes thoroughly. Cut oval in top, scoop out contents. Mix potato with above, stuff into shell, top with paprika. Bake roughly 30 min at 375.
13: Clam Chowder 2 bay leaves 1/4 tsp oregano 1/4 tsp rosemary 1/4 tsp marjoram 1/2 tsp basil 1/2 tsp thyme 1 clove minced garlic 4 tbs butter 2 cups diced onion 2 cups diced carrots 1 cup celery 6-8 medium red potatoes 8 6.5 oz cans chopped clams, juice reserved 2 bottles clam juice 2 qt half and half 6 tbs corn starch 1/2 cup water Over medium heat, combine butter, onions, celery, carrots, and garlic. Cook 10 min. Add all clam juice, and spices, and potatoes. Bring to a boil, reduce heat, and simmer 15 min. Add clams and half and half. Return to slow boil for 5 minutes. Mix cornstarch and water until smooth. Add slowly until it thickens. Reduce heat and simmer 15 min. Remove bay leaves.
14: Boil potatoes until tender. In a mixing bowl, combine celery, onion, mayo, and mustard. When potatoes are done, let cool then gently fold into other ingredients. Salt & pepper to taste, add mayo & mustard as needed. Top with paprika and sliced eggs. | 6 Potatoes, diced 1 stalk celery, diced 1 medium onion, diced 1 cup mayo yellow mustard, to taste salt pepper paprika hard boiled egg, sliced | Potato Salad
15: Mix dry ingredients, then work in shortening lightly with fingertips. Stir in water with a fork, adding enough water until dough is light and soft but not sticky. Turn dough onto a lightly floured board and pat down with hands. Roll lightly until dough is 1/4 inch thick. Cut into squares and drop into boiling stew. Cover with lid and boil 10-12 minutes without removing lid. | Dumplings | 2 tsp baking powder 2 cups flour 1 tsp salt 2 tbs shortening 2/3 cup water
