BC: This book is dedicated to all of our family members and the amazing memories that we have made on our journey through life. Over the years we have spent together, food has always been something that we have shared. These recipes are to help us continue to build memories, while stuffing our faces.

FC: Katie's Cookbook

2: Chicken Fried Steak Dredge cube steaks with flour seasoned with salt,pepper, and a little garlic powder. Dip into beaten egg. Press bread crumbs or soda cracker crumbs into meat. Fry in about 1/2 inch of oil until golden brown.

3: Beef Stew Cut up stewing beef into bite size pieces. Cook beef and chopped onions on a skillet over medium heat until the beef is browned (may also cook and add diced bacon) Put the beef and onions in the slow cooker with 2 cups of beef broth, 1 cup of apple cider, diced potatoes, carrots, and celery. Season with bay leaf, rosemary, and pepper. Cover and cook on low for 7 to 9 hours. Combine 2 tablespoons flour with cold water to form a smooth mixture. Stir into the beef mixture, turn to high, and continue cooking for 15 minutes longer. Stir in parsley, if using.

4: Green Chili Burritos Cut a pork roast into large chunks and place in a slow cooker.Top with 4 (4oz) cans of green chilies, 1 chopped onion, 3 seeded and chopped jalapeños,3 sliced garlic cloves, chili powder, and cumin. Pour broth over all. Cover and cook on low for 8-9 hours.Remove beef; cool slightly. Shred with two forks. Cool cooking liquid slightly; skim fat.In a blender, cover and process cooking liquid in small batches until smooth. Return liquid and beef to slow cooker; heat through. Place beef mixture on each tortilla. Top with tomatoes, lettuce and cheese if desired. Fold in ends and sides.

5: Enchiladas Brown beef and onion in skillet. Add salt, pepper, enchilada sauce, tomato sauce, and chilies. Fry tortillas a few minutes and drain on paper towel. Alternate tortillas, sauce with meat, and cheese in layers in a casserole dish. Bake 20 minutes at 350 degrees. | Breakfast Burritos In separate skillets cook ground sausage, scrambled eggs, and hash-browns. (may add sautéed diced green onions and red peppers) Combine into one skillet and stir in salsa. Serve on tortilla shells Top off with cheese and sour cream

6: Meatloaf 1 1/2 lbs lean ground beef 2/3 cup dried bread crumbs 1 cup of milk and 2 eggs 1/4 cup chopped onion Season salt, pepper, sage Mix, put in a foil-lined bread pan Sauce: Mix 1/4 cup ketchup, 3 tbsp brown sugar, 1 tsp mustard Pour sauce over meatloaf Bake for 1 1/4 hrs at 350 | Salisbury Steak Mix together 1/3 cup condensed French onion soup with ground beef, bread crumbs, egg, salt and pepper.Shape into 6 oval patties.Brown both side and pour off excess fat. In a small bowl, blend 1 tbsp of flour and remaining soup until smooth. Mix in ketchup, water, Worcestershire sauce and mustard powder.Pour over meat in skillet. Cover, and cook for 20 minutes, stirring occasionally.

7: Scalloped potatoes Thinly slice 5 cups of potatoes and 1 1/2 cups of onions. Boil in water with salt for 5 minutes,drain and set aside in shallow casserole dish. Melt 3 tbsp of butter in saucepan, blend in 3 tbsp of flour, salt and pepper. Add 1 3/4 cup of milk and cook until thickened, stirring constantly. Pour onto veggies, stir, then bake uncovered at 400 for 35 minutes. Sprinkle on cheese and paprika and bake until melted.

8: Cherry Cheesecake | Fudge Place 3 cups of chocolate chips, 1 can of sweetened condensed milk, and 1/4 cup butter in large microwaveable bowl. Cook in microwave until chips are melted, stopping to stir once or twice. Stir in 1 cup of chopped walnuts, if desired. Pour into well-greased 8x8-inch glass baking dish. Refrigerate until set. | Ingredients 1 prepared graham cracker crust 1 package cream cheese, softened 1 can sweetened condensed milk 1/3 cup lemon juice 1 teaspoon vanilla extract 1 can cherry pie filling Place softened cream cheese in a mixing bowl; add condensed milk, lemon juice, and vanilla. Beat until well blended. Pour mixture into the pie crust. Chill for 5 hours. Pour cherry pie filling on top of pie. Serve.

9: Rocky Road Lightly grease a 9 x 5 inch baking pan. Line with waxed paper, then lightly grease paper. Put 1 1/3 cup of choc.chips into a bowl and microwave, stirring once, until melted. Stir in 2/3 cup of sweetened condensed milk and 1 tbsp of butter.Microwave until butter is melted. Stir in 1 1/2 tsp of vanilla,1 cup of marshmallows and 1/2 cup of chopped nuts. Spread evenly in prepared pan and chill about 4 hours | Graham Cracker Crust Combine 1 1/2 cups of crushed graham crackers and 1/4 cup of sugar; add 1/3 cup of melted butter and blend well. Press onto the bottom and up the sides of an ungreased 9-in. pie plate. Refrigerate for 30 minutes before filling.

12: Potato Salad 5 pounds of potatoes-cubed,cooked then cooled 10 Eggs-boiled,cooled,then chopped 1 large onion-chopped 1 jar of sweet pickles-drained then chopped 2 cups of Mayonnaise Mix together and refrigerate for at least an hour.

13: Coleslaw Grate 1 large cabbage,1 large onion, and 1 large carrot and set aside. In a saucepan,mix together 3/4 cup of brown sugar, 3/4 cup of white sugar, 1/2 cup of oil, 3/4 cup of vinegar, a tsp of salt and a tsp celery seed. Bring that to a boil and pour syrup over veggies immediately. Stir then cool over-night. | Homemade Fries Wash potatoes, dry and cut up into french fries slices. Heat veg.oil in frying pan. Add fries, cook until golden brown and crispy. Season with salt and pepper.

14: Arthur and Virginia Welker | Terri Welker | Homemade Biscuits Sift 2 cups of flour, 2 tsp of baking powder and 1/2 tsp of salt. Cut in 4 tablespoons of shortening or butter. (you can just use your hands to rub flour and butter together). Add 3/4 cup of milk gradually, stirring until soft dough is formed. Turn out on slightly floured board and lightly knead for 30 seconds, enough to shape. Roll 1/2 inch thick and cut with 2 inch floured biscuit cutter. Bake on ungreased sheet in a 400 degree oven for 12-15 minutes.

16: Pizza Thaw pre-made pizza dough. Pull and stretch out on greased deep-dish cookie sheet pan. Spread marinara or Alfredo sauce over the dough. Add toppings and cheese of your choice. Bake at 350 until crust is golden brown.

17: Lasagna Season ground beef with garlic powder and oregano. Brown the meat, drain and set aside. In a large sauce pan add 1 jar of spaghetti sauce,1 can of tomato sauce, and oregano; set aside. In a skillet heat olive oil and sauté 4 cloves of minced garlic and 1 diced onion for about 5 minutes. Mix with meat into the sauce and cook for 15 to 20 minutes. In a bowl mix 1 15 oz. container of ricotta cheese, 2 eggs,1/4 cup of milk, and 1 package of spinach. Set aside. Layer a 9x13 inch baking pan with just enough sauce to cover the bottom of the pan. Lay three lasagna noodles in the pan. Cover with sauce, then with ricotta mixture then sprinkle with mozzarella cheese; repeat layering. Finish with a layer of noodles and remaining sauce. Sprinkle with grated Parmesan cheese. Bake covered in a preheated oven at 375 degrees for 30 minutes. Uncover and bake for 15 minutes.

18: Homemade stuffing Sauté 1/2 cup of diced celery and 1/2 cup of diced onion in a 1/2 cup of butter and set aside. Bring 1 packet of onion soup mix and 1 cup of water to a boil. Simmer 5 minutes. Stir in 1 tsp of poultry seasoning,and the butter, celery and onion. Add this mixture to 8 cups of bread cubes; toss together.Let stand in a warm place, covered. Stir occasionally. If desired, stuff in bird or put in slow-cooker for 3 hours. | Green Bean Casserole Combine 1 can of mushroom soup, 1/4 cup milk and pepper in a baking dish; stir until blended. Stir in 2 cans of cut green beans and 2/3 cup French's fried onions. Bake at 350 for 30 minutes or until hot.Stir. Sprinkle with remaining 2/3 cup fried onions. Bake 5 more minutes or until onions are golden.

19: Candied Yams Scrub 6 yams and boil them for about 30 minutes until tender.Drain, peel, and cut in 2" thick rounds.Arrange yams in a 9x13 pan and set aside. In a pot mix 1 cup of brown sugar, 1/4 cup of butter, 1/4 cup of water (may also use apple juice or cranberry juice), and season with salt, cinnamon, cloves and nutmeg. Boil for 5 minutes.Pour syrup over the top of the yams. Cover and bake at 350 degrees for 30 minutes.

20: Bread Pudding Break about 6 slices of bread into small pieces into an 8 inch square baking pan. Drizzle 2 tbsp of melted butter or margarine over bread. If desired, sprinkle with raisins. In a mixing bowl, combine 4 beaten eggs,2 cups of milk, 3/4 cup of sugar,1 tsp of cinnamon, and 1 tsp of vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.Bake in the preheated oven at 350 for 45 minutes, or until the top springs back when lightly tapped.

21: Jello Cake Make white cake according to package directions. Cool cake 20 minutes. Using utility fork poke cake at 1/2 inch intervals. Make Jello using 1 cup boiling water and 1/2 cup cold water. Pour Jello slowly over cake covering all holes. Chill 3 - 4 hours. Spread with Cool Whip. | Carrot Cake Mix 1 cup of oil and 1 1/4 cup of honey. Add 4 large eggs one at a time, beating well after each addition. In separate bowl, sift together 2 cups of flour, 2 tsp of baking powder, 2 tsp of baking soda, 1 tsp of salt,and 1 heaping tbsp of cinnamon. Mix into oil and honey mixture. Fold in 3 cups of peeled grated carrots and 1 cup of chopped pecans or walnuts. Bake at 325 in two greased and floured 8x8 inch baking pans for 30 to 35 mins

22: Pigs n' Blanket Cut a slit the length of each hot dog. Place 1/2 of a slice of cheese in slit and around hot dog. Wrap crescent rolls around each cheese-filled hot dog Place on ungreased baking pan until pastry is golden brown. | Pancakes In a large bowl, sift together 1 1/2 cups of flour, 3 1/2 tsp baking powder, 1 salt and 1 tbsp of sugar. Make a well in the center and pour in the 1 1/4 cup of milk, 1 egg and 3 tbsp of melted butter; mix until smooth. Pour scoop on hot griddle and brown both sides.

23: Oven Fried Chicken Put 2 cups of flour in a zip-lock bag and season with any or all of salt, pepper, paprika, garlic powder, all-season, etc. Put one chicken in bag at a time and coat all. Heat oil in a frying pan and place in chicken. Fry all sides until skin is crispy. Transfer to foil-lined cookie sheet and put in oven until cooked through
