4: Lots of love from Lori & Mike | Artichoke Dip 1 can artichoke hearts 1/2 head of garlic (or to taste) 1 cup mayonnaise 1 cup fresh parmesan cheese Mix ingredients together Bake at 350, 15 minutes, in an oven proof bowl. Serve with chips or crackers xo | Los Vegas, 2010

6: POISSON de PARIS a la VAL! | Mix together: 1 part butter 1 part grated parmesan 1 part mayonnaise dash of worcestershire sauce Spread on a piece of white fish such as sole or cod. Wrap loosely in foil and bake in a 350 oven for about 20 minutes or until it flakes easily... Yum!! Love Val, Nigel, Vickie & Doug

9: BUTTERNUT SQUASH SOUP 24 large shrimp 1 tbl.finely grated peeled fresh ginger & 1 clove garlic 2/3 cup chopped shallot & 3 whole star anise 2 tbl. unsalted butter and 2 cups water 1 3/4 lbs.butternut squash, peeled, seeded and cut into 1/2 inch pieces 4 cups chicken broth and 1/4 t salt and 1 tbl. vegetable oil Toss shrimp with ginger in a bowl & marinate, chilled, 30 min.-no longer! While shrimp is marinating, cook shallot, garlic & anise in butter in a saucepan over moderate heat,stirring until shallot is softened-about 5 min. Add squash,stock,water and simmer until squash is tender.Remove star anise and then puree soup in 2 batches in blender until smooth. Transfer to pan and keep warm & covered. Sprinkle shrimp with salt, heat oil in skillet over medium heat, saute shrimp, stirring until heated through - about 3 minutes. Bring soup to a simmer, season with salt, pepper & cilantro sprigs!
10: Love Bruce, Ede, Duncan, Lynn & Brian | GREEK BARBEQUED CHICKEN Boneless. skinless chicken breasts or thighs (we like the thighs best!) Marinate in: 1/4 - 1/3 cup lemon juice Olive Oil - about half as much as the lemon juice Salt & Pepper to taste Oregano & Basil - about 1/2 tsp Garlic - about a clove per person, chopped finely Cook over low to medium heat on the barbeque, and serve with Greek Salad and rice, or pita bread with tzatziki!
11: Brian & Lynn's 19th. - 2010 | Duncan's first day at the casino - 2010 | Tzatziki 1 cup plain yogurt drained in a cheesecloth lined sieve to reduce water content 1/3 cup long english cucumber, grated and pressed with paper towel in sieve to remove water 1 clove garlic, finely chopped 1/2 tbsp lemon juice (or more to taste) Salt & pepper to taste
13: GREEK SALAD 4 vine tomatoes, coarsely diced 1 long english cucumber, coarsely diced 1/4 sweet onion, finely diced 1/2 red, yellow or orange pepper, finely diced diced feta cheese DRESSING: 1/8 c vinegar 1/4 c lemon juice & olive oil 1/2 t basil & oregano salt & pepper More then enough dressing for 4! | Salad!
14: Pizza! | Use english muffins, pita pockets or naan bread for the crust. Spread pizza sauce or tomato paste sprinkled with basil & garlic, over the crust. Top with meats, veggies and grated cheese. Try mozzarella, asiago, romano and/or feta cheese! Bake in a 350 degree oven for about 10 - 15 minutes and ... ENJOY!

16: Beer Can Chicken | 1 whole chicken 2 tbls olive oil 2 tbls salt & pepper 3 tbls of your favorite spice rub 1 can beer Spice Rub: 1 tsp each of dry mustard, onion powder, paprika, salt 1/2 tsp each of garlic, coriander, cumin and black pepper & combine... | Love Ty, Carlos & Stoli!
17: The Chicken: Rinse inside and out and pat dry with paper towels Rub chicken with oil and then with salt, pepper and the Spice Rub Open beer can, empty (drink!) half the beer and place the can on a solid surface Place bird cavity over beer can... | Heat bbq to medium Cook over medium heat for about 1/1.5 hours or until the internal temp is 165. Let it sit for 10 minutes before serving!

19: POWER SALAD! | 2 cups halved cherry tomatoes 1 cup each of yellow & orange diced bell peppers 100 grams each of diced mozza and feta cheese 1 cup chickpeas 2 shallots finely chopped 1/4 cup fresh basil 1/4 cup olive oil Salt & Pepper to taste! Place tomatoes, peppers,cheese, chickpeas, shallots & basil in a salad bowl and toss gently. Whisk together lemon juice * olive oil and mix gently into salad Serve with bread of your choice and enjoy!
20: SOUVLAKI | Can be made with beef, chicken or lamb. Skewer meat with whole mushrooms, large pieces of onion & green, red or orange peppers Place in a 9 x 13 baking pan Combine together: 1 c chicken/beef/vegetable bouillon 2 T soya sauce 1 t worcestershire sauce salt & pepper 3 cloves garlic 1 t each of basil & oregano Cook for 1 hour at 350 turning frequently. Serve with roasted lemon potatoes, rice pilaf, greek salad, tzatziki & pita bread!

22: CHICKEN BREASTS SUPREME! 6 chicken breasts, boned & skinned 3 cups sour cream Juice of 1 lemon 1/2 tsp of Worcestershire & celery salt 3/4 tsp paprika 1 clove crushed garlic 1/4 tsp salt pinch of pepper 3 1/2 cups fine, dry, bread crumbs 3/4 cup of butter DAY BEFORE: Debone, skin chicken pieces, and if desired, cut in half to make 12 Combine sour cream, lemon juice, Worcestershire, celery salt, paprika, garlic, salt & pepper in a large bowl. Add chicken, coat each piece well, & refrigerate over night NEXT MORNING: Remove chicken breasts, leaving a good coating of mixture on each. Coat with breadcrumbs. Place on a shallow, greased baking sheet. Melt butter,spoon over chicken, bake uncovered at 350 for 25 minutes. Delicious the next day: cold, re-heated, or to make "MCchicken Sandwiches" ! | Love Brian & Faye

27: Granny Shepherd's Banana Loaf | Preheat oven to 350 degrees Cream 1/2 cup butter & add 1 cup brown sugar & 2 beaten eggs Sift together: 1 1/2 c flour, 1/4 t salt, 1 t baking powder Add alternately to butter mixture: dry ingredients and 1/3 cup of milk Dissolve 1 t baking soda into 4 ripe, mashed bananas Fold bananas into mixture. Cook for 45 min.- 1 hour xo
28: 4 cups of flour 1 cup brown sugar 1 lbs of butter Mix these 3 ingredients well with hands. Add 4 egg yolks (keeping egg whites for topping), mix with a knife, then with hands. Place in a 9x13 pan and pat lightly. Beat egg whites until thick, add 1 c. of brown sugar slowly until thick. Spread this mixture on top of bottom layer, and add sliced almonds! 31: FUDGE! 1 2/3 c sugar 2/3 c evaporated milk 16 ounce bag of semisweet chocolate chips 1 1/2 c mini marshmallows dash of salt and nutmeg 4T butter Lightly oil sauce pan and combine sugar & milk in it Cook over medium heat, stirring constantly until sugar is dissolved Bring to a boil for 5 minutes, stirring constantly Remove from heat, add marshmallows & chocolate chips Stir until mixture is thick and not glossy Add salt & nutmeg Put into an 8x8 pan Refrigerate until hard Cut into squares and serve!
