S: Mom's Recipes
1: This cookbook is a collection of Mom's recipes, so that you may always remember and enjoy her wonderful cooking!
2: Sauce 1/4 cup oil 1 medium onion chopped 1 clove minced garlic 2-6oz. cans tomato paste 4-6oz. cans water 2 tbs. minced parsley 2 tsp. salt 1 tsp. red pepper 1 tsp. dry basil Small bay leaf Brown onion and garlic in oil. Add everything else. Stir and simmer for at least 30 minutes. If you double this, do not double the red pepper. | Spaghetti & Meatballs | Meatballs 1 lb. ground meat 1/2 cup bread crumbs 1 egg (beat with fork) 1 clove garlic 1/2 tsp oregano Salt & pepper Mix everything together. Make into meatballs. Brown in a little oil or in microwave. Cook at least 15 minutes in sauce.
3: 1 lb. of steak cut in strips 1/2 tsp salt 2 onions chopped 1 cup beef broth 3 tbs. soy sauce 1 clove minced garlic 2 green peppers- cut in strips 2 tbs. corn starch or 4 tbs. flour 1/4 cup water | Brown steak and salt in a little oil. Add onion and brown it. Stir in broth, soy sauce and garlic. Simmer 1 hour. Add green pepper and simmer 5 minutes. Mix water with corn starch or flour. Add to mixture and cook until thickened. Serve over rice or Chinese noodles. | Pepper Steak
4: 4 tbs. margarine 1/2 cup flour 3/4 tsp salt 1/4 tsp pepper 1 1/2 cups milk 1 cup chicken broth | 1 1/2 cups diced chicken 1 can cream of chicken soup 1 jar mushrooms 1 small jar pimento 1/2 green pepper (diced) | Microwave green pepper in a little water. Set aside. Melt margarine. Add flour, salt and pepper. Add milk and broth. Cook, stirring with whisk until thick and smooth. Add everything else. Cook until hot. | Chicken a la King | Ingredients | Directions
5: 1 Tbs. Oil 2 lbs. Chicken breast 1 Cup red pepper- chunks 2 Tbs. Chopped green onion 1 clove minced garlic 3/4 cup orange juice 1 tsp. dried mustard 1/4 tsp. salt 1/8 tsp. pepper 2 tsp. cornstarch in 2 Tbs. Water 1/2 Cup orange slices- bite size pieces fresh parsley | Orange Chicken | Brown chicken & remove. Add red pepper, onion, garlic & cook until tender. Add chicken, o.j., mustard, & salt and pepper. Bring to a boil Reduce heat and simmer for 20 minutes (or longer) Remove chicken Add cornstarch to liquid & orange sections and pour on chicken
6: Mom | Pork Chops and Scalloped Potatoes | 1 On the potatoes, place dabs of butter; flour, canned milk, salt & pepper 2. Layer pork chops and potatoes – pork chops on the bottom 3. Cook covered at least 1 hours | 375 | 1 1/2 hr
7: Hamburger Stroganoff | Ingredients | 1 lb. ground meat 1 clove minced garlic dash basil salt 1tbs flour - thicken 2 tbs ketchup 2 tsp worcestershire sauce 1 tbs cooking wine 1 can mushroom soup 1/2 cup sour cream | Directions | 1. In a skillet, cook ground meat, garlic, basil, butter, and onion. 2. add flour to thicken 3. Mix in ketchup, worcestershire sauce, wine, mushroom soup, and sour cream
8: Lasagna | Ingredients 1 lb ground beef 1 clove minced garlic 1 tbs minced onion 1/2 tbs basil 2 cans tomato sauce 2 tbs sugar 1 tsp salt 2 tbs parsley flakes 1 tsp oregano 1 cup parmesan cheese 3 cups cottage cheese (or 1 1/2 cups ea. cottage cheese & ricotta) mozzarella cheese slices 9 Lasagna noodles, cooked | Directions 1. Saute mushrooms 2. Brown the beef, garlic, & onion 3. To the meat, add the basil, tomato sauce, sugar, salt, parsley, & cooked mushrooms 4. In a separate bowl, mix together oregano, parmesan cheese, and cottage cheese 5. In an ungreased 13x9 baking pan spread a thin layer of meat sauce. Cover with noodles, cheese mixture, and meat sauce, Repeat layer and top with parmesan cheese.
9: Baked Beans 1. Cook 1 lb beans in non-salted water 2. Combine with 1 can tomato soup 3. Add 1/4 cup brown sugar and molasses 4. Just before baking, add one halved onion and top with bacon strips. 5. Bake at 350 for 1 hour | Sloppy Joes Ingredient List: -Ground meat -Salt & Pepper -Onion -Mustard -Brown sugar -Ketchup -Celery & pepper (optional) | Batter for Deep Frying 1 cup flour 1 tsp baking powder to 1 tsp salt 1 egg 1 cup milk 1/4 cup salad oil Mix all together and dip fish or vegetables in. Fry in oil on top of stove.
10: Potato, Egg, & Mushroom Casserole, Au Gratin | Ingredients 1/4 - 1/2 lb sliced mushrooms 2 tbs. butter 1 cup milk 1 cup grated cheddar or jack cheese 1 tsp salt pepper to taste 3 medium potatoes, cooked, peeled, and sliced 3 hard-boiled eggs, sliced Sesame seeds Directions 1. Saute mushrooms in butter for 5 minutes 2. Stir in flour 3. Gradually stir in milk, then cook and stir until thickened 4. Add cheese, salt, and pepper 5. Layer half of the potatoes in buttered casserole dish, then eggs and sauce. Repeat 6. Sprinkle with sesame seeds 7. Bake, uncovered - 350 degrees for 20 minutes
11: Beef Burgundy | Ingredients 2 lbs. Stew meat 2 cans golden mushroom soup 1 pkg. Onion soup mix 16 oz. Can mushroom 1/2 Cup dry red wine Directions Put meat in bottom of casserole. Mix rest together and put on top of meat. Bake at 300 degrees for at least 3 hours. Covered. Serve on rice or noodles | Directions 1. Cook noodles and drain 2. Mix all ingredients together and top with two slices of cheese 3. Bake in a casserole dish for 30-45 minutes at 350 | Tuna Noodle Casserole | Ingredients 1 lb noodles 1 can tuna 1 can cream of mushroom 1/2 can milk 1 small Velveeta, cubed 1 box frozen peas
12: 1 Cup bread crumbs 1 Cup milk 2 lbs. Ground meat & onion soup mix & little parsley 1 Cup fine chopped onion 2 Eggs beaten 1 1/2 tsp. Salt (omit if using soup mix) 1/4 tsp. Pepper | 1 tsp. Nutmeg 1/2 Cup butter 1/4 Cup flour 3 Beef bouillon cubes 3 Cups hot water 1 1/2 Cup milk 1 1/2 Cup half & half 1 tsp. instant coffee | Swedish Meatballs | Soften crumbs in milk. Add beef, onion, eggs & seasonings. Make balls & fry in butter. Take out meatballs. Blend in flour to butter, dissolve cubes in water. Add to flour mix, add milk, cream & coffee. Stir constantly for 3 minutes. Add meatballs and simmer 15 minutes. | Serves 12
13: "There is no love sincerer than the love of food." ~George Bernard Shaw | Mom | Potato Pancakes | 3 cups diced potatoes 1/4 cup milk 2 eggs 3 tablespoons flour 1 tsp salt 1/4 tsp baking powder Mix all ingredients in a blender on grate for 10 seconds. Heat in a frying pan.
14: Beef Goulash | 8 oz noodles, cooked & drained 3 tbs oil 1 lb boneless beef chuck, cubed 2 cups thinly sliced onions 1 tbs flour 1 tbs paprika | 1 can (16 oz) tomato puree 1/2 cup water 1 tsp salt 1 tsp sugar 1/8 tsp pepper 1 bay leaf 2 tbs butter | 1. Heat oil in deep saucepan or Dutch oven. Add beef cubes & onions. 2. Sprinkle with flour and cook until lightly browned. 3. Stir in paprika and cook for 3 minutes. 4. Add tomato puree, water, salt, sugar, pepper & bay leaf. 5. Cover and simmer about 1 hour or until meat is tender. 6. Serve with noodles. Cook according to package and toss with butter
15: 3 lbs. Potatoes, cooked 8 oz. cream cheese 1/4 cup oleo 1/4 cup sour cream 1/2 cup milk 2 eggs lightly beaten 1/4 chopped onion 1 tsp. salt dash pepper | Mash potatoes (little bit) when hot. Add cream cheese and oleo; beat until melted. Mix in sour cream (spoon). Add milk, onion, salt & pepper to eggs. Add to potatoes and beat until light and fluffy. Place in greased pan. Bake at 350 degrees for 45 minutes uncovered. Make 1 day ahead and refrigerate | Pam's Mashed Potatoes
16: 2 heads iceberg lettuce 1 package spinach 2 boxes frozen peas (thawed) 1 large cauliflower 1 large onion (vidalia or red) lb bacon or bacon bits 1 package Hidden Valley Italian 1 jar Spin Blend | 1. Layer in order above 2. Sprinkle with dressing 3. Frost with Spin Blend 4. Refrigerate before serving | 24 Hour Salad
17: Broccoli Salad | Ingredients 2 large bunches broccoli 1 chopped red onion 1 lb bacon, cooked & crumbled 12 ounces shredded cheddar cheese 1 cup mayonnaise 1/2 cup sugar 2-3 tbs white wine vinegar Directions 1. Combine broccoli, onion, bacon, and cheese 2. Mix together mayonnaise, sugar, and vinegar and mix in with other ingredients. Best if refrigerated several hours before serving.
18: Taco Salad | 1 Head lettuce 3 tomatoes, diced 8 green onions, chopped 1 lb ground chuck - cooked & drained (cook with a dash of tabasco) 10 oz shredded cheddar cheese 1 large can kidney beans, drained chili powder to taste 1 bag Doritos, broken 1 chopped green pepper 1 small bottle of regular French dressing or Russian (add right before serving)
19: After meat is browned, add 1 can chile beans (undrained), 1 can each white and dark kidney beans (drained), 1/2 bag frozen corn, and 1 can stewed tomatoes. Mix. Add 1 large can tomato sauce and simmer for one hour. Serve over fritos. | Mom's Chile | In a large pot, brown 1 1/2 lbs ground beef. While browning, add chili powder, salt, pepper, minced onion (all to taste), and a couple crushed red pepper flakes.
20: Reuben Dip | Mix the following ingredients in a small | 3 oz sliced corned beef – diced 1/4 cup chop drained sauerkraut 2-3 tbs. milk (add 3 tbs. afterward) | 1 3oz cream cheese | 1/4 cup sour cream | Dry Beef Dip 8 oz pkg cream cheese 1 cup sour cream 1 pkg dry onion soup mix 1 cup green pepper, chopped 1 jar (2.5 oz) Armor dry beef, cut up Combine all ingredients; Heat at 350 for 20 minutes just before serving. Serve warm or hot with crackers. | 1/2 cup grated Swiss cheese | saucepan until hot. Serve with rye crackers.
21: Ingredients 1 cup cottage cheese 1 8 oz package of cream cheese shredded lettuce shredded cheddar cheese 2 chopped onions 2 chopped tomatoes Sliced black olives | Directions 1. Whip the cottage and cream cheese until soft and spread on platter 2. Sprinkle on the lettuce, cheddar cheese, onion, tomato, and olives 3. Top with mild taco sauce before serving | Taco Dip
22: 1 10oz frozen chopped spinach – thawed, drained, & squeezed 1 pint sour cream 1 pint real mayonnaise 1 envelope Knorr’s vegetable soup 1 tsp minced onion | Cheese Dip | Cucumbers on Party Rye | 3-4 small cucumbers, sliced 1 package cream cheese 1 packet Good seasons Italian dressing Paprika Combine cream cheese and seasoning packet and spread on rye bread. Top with one slice cucumber and a dash of paprika. | Spinach Dip | 1 jar cheese whiz cup beer package Lipton onion soup mix Heat & serve.
23: Name | Spinach Balls | Ingredients 1 box frozen chopped spinach (cook, drain, & squeeze) 2 1/2 cups stuffing mix 1 onion, finely chopped 1/3 cup Parmesan cheese 1/2 cup melted butter or margerine 4 eggs, beat with a fork 1/2 tsp garlic salt 1/2 tsp accent 1/4 tsp thyme dash of pepper | Directions 1. Mix all ingredients and refrigerate for 1/2 hour 2. Shape into balls 3. Bake on an ungreased sheet at 350 for 15-20 minutes
24: Strudel dough 4 cups flour (sift before measuring) 1 tsp salt 1 stick softened oleo 2 egg yolks 1 cup cold water 2 tbs white vinegar Mix flour & salt. Cut in butter. Mix egg, water & vinegar into flour mixture with hands. Refrigerate for one hour covered with a wet towel. Roll out dough – spread with 2/3 cups Crisco. Fold in thirds one way and in thirds the other way. Place in flowered bowl and refrigerate one hour. Repeat this process 2 more times. (Note: when re-rolling dough, place folded side on bottom and roll toward the open end) | Grandma Vonderau's Cheese Strudel
25: Grandma Vonderau's Cheese Studel | 2nd Day Cut dough (folded into 4 pieces. Roll each piece into a rectangular piece. Dough makes 4 streudels. Sprinkle (makes enough for 4 strudels.) Mix the following ingredients and sprinkle 1/2 of the mixture over and 1/2 under the strudel filling 1 cup sugar 1/4 cup flour 1/2 tsp cinnamon Cheese Filling (makes enough for 1.5 strudels) 2 8oz packages of cream cheese 1/2 cup sugar 1 tbs grated lemon rind 2 egg whites (unbeaten) Mix the cream cheese, sugar & lemon until fluffy. Add egg and beat well. Cherry/Apple Filling: - Alternative Filling (makes enough for 4 strudels) Mix together the following ingredients: 1 cup sugar 1/4 cup flour 1 tsp. cinnamon 4 cans sour cherries OR 6-8 cups sliced apples. Bake at 350 for 20-30 minutes
26: 1 cup butter or Crisco 1/2 cup sifted 10x sugar 2 1/4 cup sifted flour 1/2 tsp salt 1 tsp vanilla 3/4 cup chopped nuts | 1. Cream the butter & sugar 2. Stir in flour, salt, vanilla & nuts. Blend well. 3. Mold into 2 dozen one inch balls. 4. Place on greased cookie sheet. Bake 375 for 12 minutes. Roll in additional 10x sugar immediately after baking. | Snow Balls | Nut Balls Mkes 4 dozen 1 cup butter; 1/4 cup sugar; 2 cups ground nuts; 2 cups sifted flour; Cream the butter and the remaining ingredients. Bake on an ungreased cookie sheet at 300 degrees for 45 minutes. | Christmas Cookies
27: 1. Beat shortening, peanut butter, brown sugar, and 1/2 cup sugar 2. Add and beat the eggs, milk & vanilla 3. Combine flour baking soda & salt and mix into peanut butter mixture 4. Shape into balls and roll in remaining sugar 5. Bake on an ungreased cookie sheet for 8 minutes at 375 6. Remove from oven and press down kisses until cookie cracks. 7. Bake 2 minutes more | Peanut Butter Cookies with Kisses | 1/2 cup shortening 1/2 cup peanut butter 1/2 cup brown sugar 3/4 cup sugar, divided 1 egg 2 tbs milk 1 tsp vanilla 1 3/4 cup flour 1 tsp baking soda 1/2 tsp salt Hershey kisses
28: Cream 1 1/2 cups butter. Gradually add 1 1/4 cups sugar, 1 tbsp grated lemon rind (optional), 2 eggs, slightly beaten. Stir in 4 cups sifted all purpose flour. Mix well. Chill dough and roll 1/4 inch thick. Cut with cooky cutter. Combine 1 egg white with tbs sugar and brush tops of cookies. Decorate with green sugar and silver dragees. Bake 15 – 20 minutes at 350 degrees | Christmas Butter Cookies | 1 lb soft margarine; 1 cup sugar; 2 tsp vanilla; 3 cups flour; 1 1/2 cups crushed chips; 1 cup chopped walnuts Cream margarine. Add sugar and beat. Add vanilla and beat. Beat in flour. Fold in chips and nuts. With spoon, drop on ungreased cookie sheet. Bake for 10 minutes at 350 degrees. Cool and sprinkle with powdered sugar. | Potato Chip Cookies
29: Mom | Apple Crisp | 4 cups sliced apples; 1/2 tsp cinnamon; 1 tsp | 350 | Until browned | 1 cup sugar; 3/4 cups flour; 1/4 tsp salt; | 1/2 cup butter | Lay apples in shallow greased casserole. | Sprinkle with cinnamon. Add water & lemon. | Mix remaining ingredients together and spread | on top of the apples. Bake uncovered. | grated lemon rind (or a splash of lemon juice); | Shell's Frosting | 8 tbs margarine; 8 tbs Crisco; 1 cup sugar; 3 tbs flour; 2/3 cup milk; 1 tsp vanilla | Beat margarine, Crisco & sugar for 10 minutes. Add in 1/3 of the remaining ingredients at a time and beat alternately. For chocolate, add 1 envelope of instant cocoa
