FC: The Winkelman Family Recipe Collection
1: When you leaf through this cookbook and look at the pictures, I hope it brings back some happy memories. Writing it certainly did for me. Not everybody enjoyed all the meals all the time but that's alright. There was enough to choose from and family meals are important. I would not have missed it for the world. I sure hope you'll try some of the recipes; maybe you can even improve on them. Love, Mom
2: ~ 1 cup margarine ~ 1 cup white sugar ~ 2 cups flour ~ 2 tsp baking powder ~ 1 egg yolk, beaten and mixed with about a tablespoon of water ~ 1 egg white, for top ~ cherries or almond slivers | Ingredients | Mix first four ingredients with pastry blender until fine crumbs. Add beaten egg yolk with water, mixing with fork until it sticks together. Then mix with your hands until smooth (only a few minutes). Press into 9x9 pan and top with the beaten egg white, using a brush or the back of a spoon. Add chopped cherries or almond slivers on top if you like. Bake in 300 F oven for about 45 minutes, until golden brown. | Boterkoek | Instructions
3: Jan Hagel | Ingredients | Instructions | ~ 2 cups flour ~ 1 cup margarine softened ~ 1/2 cup white sugar ~ 1/2 cup brown sugar ~ 1/2 tsp baking powder ~ 1 tsp cinnamon ~ pinch of salt ~ 1 beaten egg for topping ~ almond slivers or coarse sugar | Cream margarine and sugars together. Mix flour, cinnamon, baking powder and salt and then blend into margarine and sugar mixture. Blend well. Press mixture into ungreased cookie sheet with sides. Top with a well beaten egg and sprinkle with almond slivers or coarse sugar. Press down gently. Bake in 350 F oven 20-30 minutes, until golden brown. Cool slightly and cut into squares while still warm.
4: ~ 1 1/2 cups flour ~ 2 tsp quick rise yeast ~ 2/3 cup lukewarm milk ~ 1 egg ~ 1/2 tsp salt ~ 1/2 cup raisins ~ 1/4 cup candied lemon peel ~ 1 chopped apple ~ oil for deep frying ~ icing sugar | Ingredients | Dissolve yeast in about 1/4 cup of the lukewarm milk. Add flour, the remaining milk, egg and salt. Mix until satiny and elastic. Mix in raisins, candied lemon peel and chopped apple. Cover bowl and let rise in unheated oven for 1 hour. Heat oil until a cube of bread quickly turns light brown. Use two soup spoons to drop balls of batter into hot oil. When lightly brown on both sides, transfer to paper towel. Dust with icing sugar before serving. | Olie Bollen | Instructions
5: Appel Beignets | Ingredients | Instructions | ~ approx. 6 apples ~ 1 cup milk ~ 1 egg ~ 1 1/2 cups flour ~ 1 tsp baking powder ~ 1/2 tsp salt ~ oil for deep frying ~ icing sugar | Mix milk, egg, flour, baking powder and salt until smooth. Peel and core apples, slicing into 1/2 inch slices. With two forks, dip slices into batter, allowing excess to drip off. Drop into oil and fry until light brown on both sides. Dust with icing sugar before serving.
6: Ingredients | Instructions | Amandel Pers (Almond Filling for Speculaas) | ~ 1 cup ground almonds ~ 2/3 cup white sugar ~ 1 tsp lemon zest ~ 1 egg ~ 1/4 tsp salt | In blender, mix ground almonds and sugar until very fine. Add egg, salt and lemon zest to blender and mix well to form a paste. Transfer to a covered bowl and refrigerate for several days. Prepare in advance for Speculaas recipe on next page.
7: ~ 2 1/2 cups flour ~ 1 tsp baking powder ~ 1 tsp cinnamon ~ 1/2 tsp ground cloves ~ 1/4 tsp nutmeg ~ 1 cup brown sugar ~ 3/4 cup white sugar ~ 1 cup margarine ~ 1 egg ~ 1 beaten egg ~ almond slivers | Mix all ingredients together until it forms a ball. Cover dough and place in refrigerator overnight. Divide dough in half. Roll out to fit a 9x13 cookie sheet. Brush with beaten egg. Top with almond filling from previous page. Brush beaten egg over almond filling. Roll out remaining dough and place on top of first two layers. Gently press down top layer, brush with remaining egg and top with almond slivers. Bake in 350 F oven for 45-50 minutes, until golden brown. | Speculaas (Gevulde) | Ingredients | Instructions | * Important: The almond filling must be prepared in advance and the speculaas dough must be refrigerated overnight in order for this recipe to turn out right.
8: ~ 2/3 cup shortening ~ 2/3 cup margarine softened ~ 1 cup white sugar ~ 1 cup brown sugar (packed) ~ 2 eggs ~ 2 tsp vanilla ~ 3 cups flour ~ 1 tsp baking soda ~ 1 tsp salt ~ 1 375g bag of chocolate chips (approx. 1 1/2 cups) | Ingredients | Cream first six ingredients together, mixing well. Combine flour, baking soda and salt and add to creamed mixture. Add chocolate chips and mix well. Using a spoon, drop onto cookie sheet and bake in 375 F oven for 8-10 minutes until light, golden brown. | Chocolate Chip Cookies | Instructions
9: Gingersnaps | Ingredients | Instructions | ~ 3/4 cup margarine ~ 1 cup white sugar ~ 1 egg ~ 4 tbsp molasses ~ 2 cups flour ~ 1/4 tsp salt ~ 2 tsp baking powder ~ 2 tsp baking soda ~ 1 tsp cinnamon ~ 1 tsp ground cloves ~ 1 tsp ginger | Combine dry ingredients. In separate bowl beat margarine, sugar, egg and molasses together. Mix dry ingredients into margarine mixture. Roll into 1 inch balls and roll in white sugar. Bake in 350 F oven for 10 minutes.
10: ~ 2 cups raisins ~ 1 cup water ~ 3 1/2 cups flour ~ 1/2 tsp salt ~ 3 tsp cinnamon ~ 3/4 tsp nutmeg ~ 1 tsp baking soda ~ 1 cup shortening ~ 1 cup brown sugar ~ 1 cup white sugar (or less) ~ 3 eggs ~ 1 tsp vanilla | Ingredients | In a saucepan, combine raisins and water. Boil for five minutes and cool. Sift together flour, salt, cinnamon, nutmeg and baking soda. In another bowl, cream shortening and sugars, beating in eggs and vanilla. Stir in dry ingredients and fold in raisins and water. Drop batter by teaspoons onto greased cookie sheet. Bake in 350 F oven for 12-15 minutes. | Dad's Favorites (Raisin Cookies) | Instructions
11: White Fork Cookies | Ingredients | Instructions | ~ 1/2 cup margarine ~ 1/2 cup shortening ~ 1 cup brown sugar ~ 1 egg ~ 1 tsp vanilla ~ 2 cups flour ~ 1 tsp baking soda ~ 2 tsp cream of tartar ~ 1/2 tsp salt ~ maraschino cherries (cut in half) | Mix together and roll into 1 inch balls and place on cookie sheet. Press each ball down with a fork and add a half of a maraschino cherry to the top of each cookie. Bake at 350 F until golden brown, approximately 8 minutes.
12: ~ 2 cups flour ~ 2/3 cup white sugar ~ 1 tbsp baking powder ~ 1/2 tsp salt ~ 1/2 tsp nutmeg ~ 1 1/2 cups blueberries (frozen or fresh) ~ 2 eggs slightly beaten ~ 1/2 cup milk ~ 1/2 cup margarine ~ 1/4 cup sliced almonds ~ 2 tbsp white sugar | Ingredients | Mix dry ingredients together in bowl. In another bowl slightly beat the eggs and then add the milk and melted margarine. Add to dry ingredients and stir until just mixed. Fold in blueberries. Transfer to muffin tin and sprinkle top of each muffin with sugar and almonds. Bake in 375 F oven for about 20 minutes. | Blueberry Muffins | Instructions
13: Lemon Raspberry Streusel Muffins | Ingredients | Instructions | ~ 2 cups flour ~ 1/2 cup white sugar ~ 2 tsp. baking powder ~ 1/2 tsp baking soda ~ 1/2 tsp salt ~ 2 eggs, slightly beaten ~ 1 cup lemon yogurt ~ 1/2 cup vegetable oil ~ 1 tsp grated lemon peel ~ 1 cup raspberries (frozen or fresh) ~ 1/3 cup sugar ~ 1/4 cup flour ~ 2 tbsp margarine | Combine first five ingredients in a large bowl. In another bowl combine eggs, yogurt and oil and add to dry mixture, stirring until just mixed. Fold in lemon peel and raspberries. Mix sugar, flour and margarine to form topping. Transfer batter to muffin tin and top with topping mixture. Bake 375 F oven for 20-22 minutes.
14: ~ 1 cup mashed bananas ~ 1 cup sugar ~ 1/4 cup oil ~ 1/2 cup sour cream ~ 2 eggs ~ 1 1/2 cup flour ~ 1 tsp baking soda ~ 1 tsp baking powder ~ 1/2 tsp salt | Ingredients | Beat together bananas, sugar, oil, sour cream and eggs. In another bowl, mix flour, baking soda, baking powder and salt. Combine wet into dry ingredients. Transfer to greased and floured loaf pan and bake in 325 F oven for 1 hour. | Banana Bread | Instructions
15: Cranberry Bread | Ingredients | Instructions | ~ 2 cups flour ~ 1 cup sugar ~ 1 1/2 tsp baking powder ~ 1 tsp salt ~ 1/2 tsp baking soda ~ 1/4 cup margarine ~ 1 beaten egg ~ 1 tsp grated orange rind ~ 3/4 cup orange juice ~ 1 1/2 cups raisins ~ 1 1/2 cups cranberries | Sift together first five ingredients. Cut in margarine with pastry cutter. Add egg, orange rind and juice all at once and mix until just combined. Fold in raisins and cranberries. Bake in 350 F oven for about 70 minutes.
16: ~ 1 cup brown sugar ~ 1/2 cup margarine ~ 1 cup flour ~ 1 tsp baking powder ~ 1 tsp vanilla ~ 1 egg ~ 1 cup brown sugar ~ 1/4 cup margarine ~ 1/4 cup milk ~ 1 cup icing sugar | Ingredients | Melt margarine and brown sugar together in saucepan. Remove from heat and cool completely. Add remaining ingredients. Bake in an 8x8 pan in 350 F oven for 25 minutes. Frosting: Bring brown sugar and margarine to a boil. Add milk and boil gently for 3 minutes. Cool and beat in icing sugar. Spread over cooled base. | Brown Sugar Fudge Squares | Instructions
17: Marshmallow Squares | Ingredients | Instructions | ~ 1 375 g. pkg chocolate chips ~ 1 cup icing sugar ~ 1/2 cup margarine ~ 1 beaten egg ~ 1 tsp salt ~ 3-4 cups mini marshmallows ~ graham crackers | Line bottom of 9x9 pan with graham crackers, cutting to fit if necessary. In saucepan, combine chocolate chips, icing sugar, margarine, egg and salt. Heat on low until completely melted, stirring continuously. Remove from heat. Add marshmallows and stir until completely covered and transfer mixture to graham cracker base. Cool before cutting.
18: ~ 1/2 cup margarine ~ 1 1/2 cups icing sugar ~ 1 egg yolk ~ dash salt ~ 1/2 tsp vanilla ~ 1 stiffly beaten egg white ~ 3/4 cup coconut ~ 1/4 cup red cherries, chopped ~ 1/4 cup green cherries, chopped ~ 1/2 cup walnuts, chopped ~ graham crackers Butter Icing ~ 1/4 cup margarine ~ 2 tbsp light cream ~ 1 1/2 cups icing sugar | Ingredients | Line bottom of 9x9 pan with graham crackers, cutting to fit if necessary. Beat together first five ingredients. Fold in beaten egg white. Add coconut, cherries and walnuts. Spread over graham cracker base. Top with another layer of graham crackers, again, cutting to fit if necessary. Spread butter icing over graham cracker top layer. | No Bake Coconut Squares | Instructions
19: Apricot Squares | Ingredients | Instructions | ~ 2/3 cup dried apricots, chopped ~ 2/3 cup water ~ 1/2 cup margarine ~ 1/4 cup white sugar ~ 1 1/2 cups flour (reserving 1/2 cup) ~ 1/4 tsp baking powder ~ 1/4 tsp salt ~ 2 eggs well beaten ~ 3/4 cup brown sugar ~ 1/2 tsp vanilla ~ 1/2 cup fine coconut Lemon Butter Icing ~ 1/4 cup margarine ~ 2 tbsp light cream ~ 1 tbsp lemon juice ~ 1 1/2 cups icing sugar | Simmer water and apricots in a small saucepan for 15 minutes. Cool slightly. Cream margarine and add sugar and flour, mixing until crumbly. Press mixture into an 8x8 pan. Bake in 350 F oven for 20 minutes. In the meantime, mix reserved flour, baking powder, salt, beaten eggs and brown sugar together. Add vanilla, coconut and apricot mixture. Mix together and spread over base and return to oven for 30 minutes. Let cool completely and frost with lemon butter icing.
20: ~ 1/2 cup margarine ~ 1 cup flour ~ 2 tbsp water ~ 1 cup water ~ 1/2 cup margarine ~ 1 cup flour ~ 1 tsp almond extract ~ 3 eggs Icing ~ 1 1/2 cups icing sugar ~ 1 tsp vanilla ~ 2 tbsp margarine ~ 2-3 tbsp water ~ chopped walnuts | Ingredients | Cut first three ingredients together with a pastry cutter. Divide into 2 portions, rolling each portion out into a 12" by 3" sheet. Place side by side on a cookie sheet. Bring water and margarine to a rolling boil. Remove from heat. Add flour, almond extract and beat until it forms a ball. Add eggs, one at a time, beating until smooth and glossy. Divide and spread over pastry base. Bake in 350 F oven for 1 hour. Do not open oven during this time. Cool completely. Prepare icing and spread over baked strudel and sprinkle with walnuts. | Strudel | Instructions | * Important: This recipe can only be baked on a dry day.
21: Danish Pastry | Ingredients | Instructions | ~ 2 1/2 cups flour ~ 1 tsp salt ~ 1 cup shortening ~ 1 egg yolk ~ 1 cup Special K or Corn Flakes ~ 8 cups sliced apples, peeled and cored ~ 3/4 cup white sugar ~ 1 tsp cinnamon ~ 1/2 cup raisins ~ 1 tbsp lemon juice ~ 1 beaten egg white Icing ~ 1 cup icing sugar ~ 4 tsp milk | Combine flour and salt and cut in shortening. Beat egg yolk in measuring cup and then add enough milk to make 2/3 cup. Stir into flour mixture. Divide in half and roll each half out on floured surface to fit a 9x13 pan. Put one layer of dough in pan and cover with the cereal. Layer apple slices over cereal and sprinkle raisins and lemon juice evenly over apples. Sprinkle sugar and cinnamon over top. Place second layer of dough on top and press sides gently together. Brush with beaten egg white and cut a few slits in the top. Bake in 375 F oven for about 50 minutes, until golden brown. Combine icing sugar and milk and drizzle on top of pastry while still warm.
22: Ingredients | Instructions | ~ 2 cups graham cracker crumbs ~ 1/2 cup margarine, melted ~ 2 tbsp sugar ~ 1 pkg dream whip, prepared ~ 1 pkg light cream cheese ~ 1 1/2 cups icing sugar ~ 1 can cherry pie filling | Cheesecake | Mix graham crumbs, melted margarine and sugar together and press into 9x9 square pan. Beat cream cheese until fluffy. Add icing sugar and beat well. Fold in prepared dream whip. Spread cheese mixture over graham base and refrigerate until ready to serve. Spread cherry pie filling over base when ready to serve, leaving one corner cherry-free (just the sauce) for Caitlin.
23: Ingredients | Instructions | ~ 1 1/2 cups white sugar ~ 2 cups water ~ 2 heaping tbsp shortening ~ 1 lb raisins ~ 1 tsp cinnamon ~ 1/2 tsp cloves ~ 1/2 tsp nutmeg ~ 1 tsp vanilla ~ 1 heaping tsp baking soda ~ 1 tsp salt ~ 1 egg ~ 3 cups flour | In a saucepan combine the first six ingredients and bring to a boil. Simmer for five minutes, remove from heat and cool well. When cool, add vanilla, baking soda, salt, egg and flour. Mix well. Transfer to a greased and floured tube pan and bake in 300 F oven for 1 hour. | Raisin Cake
24: ~ 1 cup margarine ~ 2 cups white sugar ~ 3 eggs ~ 3 1/2 cups flour ~ 1 1/2 tsp baking powder ~ 1 tsp salt ~ 1 tsp vanilla ~ 1 cup milk ~ 1 lb gumdrops, cut in half ~ 1 cup raisins ~ 1 can (398 ml) crushed pineapple ~ 2 tsp lemon juice | Ingredients | Cream margarine and sugar and add eggs, one at a time, beating well after each addition. Add vanilla. Flour the fruit with 1/2 cup of the measured flour. Mix together remaining flour, baking powder and salt. Add mixture to creamed margarine mixture and add milk. Mix well. Add fruit and lemon juice and blend until just combined. Bake in a 325 F oven for 70 minutes. | Gumdrop Cake | Instructions
25: Cranberry Cake | Ingredients | Instructions | ~ 2 tbsp margarine ~ 1 cup sugar ~ 1 tsp vanilla ~ 2 cups flour ~ 3 tsp baking powder ~ 1/2 tsp salt ~ 1 cup milk ~ 2 cups cranberries ~ 1/2 cup margarine ~ 1 cup sugar ~ 1/2 cup evaporated milk | Mix together first eight ingredients. Transfer to a 9x9 pan and bake in 400 F oven for 35 minutes. Heat margarine, sugar and milk in saucepan. Pour over warm, baked cake. Serve warm.
26: ~ 1 20 oz can fruit cocktail ~ 2 eggs ~ 1 cup white sugar ~ 2 cups flour ~ 2 tsp baking soda ~ 1 tsp salt ~ 1/2 cup evaporated milk ~ 1/2 cup white sugar ~ 1 tsp vanilla ~ 1/2 cup chopped nuts ~ 1/2 cup margarine ~ whipped cream or topping | Ingredients | Drain fruit cocktail, saving 1 cup of the liquid. Put fruit and liquid in a bowl. Mix in eggs with a wooden spoon. Sift together sugar, flour, baking soda and salt. Add dry ingredients to cocktail mixture. Bake in a glass 9x12 pan in a 350 F oven for 1 hour. Combine evaporated milk, sugar, vanilla, nuts and margarine in a saucepan and heat until margarine melts. Pour mixture over cake when it comes out of the oven. Top with whipped topping when ready to serve. | Fruit Cocktail Cake | Instructions
27: Jiffy Cinnamon Rolls | Ingredients | Instructions | ~ 2 cups flour ~ 2 tbsp sugar ~ 4 tsp baking powder ~ 1/2 tsp salt ~ 1/4 cup cold margarine ~ 1/4 cup cold milk ~ 1/3 cup margarine ~ 1 cup packed brown sugar ~ 3 tsp cinnamon ~ 1/3 cup chopped raisins ~ 1 cup icing sugar ~ enough milk to make a thin glaze | Mix flour, sugar, baking powder and salt. Cut in cold margarine with a pastry cutter. Make a well in the middle and pour in milk. Mix together with a wooden spoon. Turn out onto lightly floured surface and knead 8-10 times. Roll in a rectangle about 12 inches long and 8 inches wide. Cream together remaining ingredients and spread mixture onto rolled out dough. Roll up along long edge and cut into 12 1" slices. Putting cut side down, place circles into 9x12 pan. Bake in 400 F oven for 20-25 minutes. Cool and drizzle with glaze.
28: Ingredients | Instructions | Strip the kale leaves, removing tough stalks, and cut into pieces. Place in bottom of large pan. Top with peeled cut up potatoes and salt. Add about 1 inch of water to pan and place sausage coil on top of potatoes. Cover pan and simmer over medium heat until potatoes are tender (about 45 minutes). Cook bacon until crisp, saving drippings. Remove sausage. Mash potatoes and kale together, adding in bacon drippings and curry. Serve with gravy. | Kale Dinner | ~ 1 bunch of kale ~ 2 lbs potatoes ~ 1 smoked sausage coil ~ 6 slices bacon ~ 1 tsp curry powder ~ 1 tsp salt
29: Ingredients | Instructions | Layer ingredients into casserole dish as follows: 1. sliced potatoes 2. sliced onions 3. sliced carrots 4. peas with liquid 5. uncooked long grain rice 6. uncooked ground beef 7. uncooked bacon slices Mix tomato soup with one can of water and pour evenly over top layer. Bake in 325 F oven, covered for 1 hour. Remove lid and return to oven for 1 more hour, until vegetables are tender. | Seven Layer Dinner | ~ potatoes, peeled and sliced ~ 2 sliced onions ~ 3 sliced carrots ~ 1 can of peas, with juice ~ 1/4 cup uncooked long grain rice ~ 1 -1 1/2 lbs ground beef ~ 1 can tomato soup ~ sliced bacon
30: Ingredients | Instructions | Fry ground beef and onions until burger is no longer pink. Stir in curry powder and put in casserole dish. In same frying pan, heat beans and layer over cooked ground beef. In same frying pan, heat drained and rinsed sauerkraut. Layer over beans. Layer cooked mashed potatoes over sauerkraut and lay strips of uncooked bacon over potatoes. Bake in 350 F oven for about 1 hour, until heated through. | Sauerkraut Dinner | ~ 1 lb ground beef ~ 1 sliced onion ~ 1 tsp curry ~ 1 can beans in tomato sauce ~ 500 ml sauerkraut ~ cooked mashed potatoes ~ bacon slices
31: Ingredients | Instructions | Heat oil in frying pan and cook onions. Add ground beef and fry until browned. Add mushrooms, ketchup, curry, salt, pepper and gravy and heat through. Prepare macaroni noodles as directed on package, adding bouillon cube to water. In last five minutes of cooking time on noodles, add frozen mixed vegetables. Return to a boil and finish cooking pasta. Drain pasta and vegetables, add ground beef mixture and heat on low for 20-30 minutes, allowing flavours to blend. | Macaroni with Mixed Vegetables | ~ 1 tbsp oil ~ 1 lb ground beef ~ 1 large chopped onion ~ 1 can mushrooms, drained ~ 1/4 cup ketchup ~ 1 tsp curry powder ~ 2 cups frozen mixed vegetables ~ 1/2 package macaroni noodles ~ salt and pepper ~ 1 beef bouillon cube ~ 1 cup gravy (leftover or pkg)
32: Ingredients | Instructions | Cook bacon until crisp and set aside. Cook, drain and mash potatoes. Add hot milk and bacon fat drippings. Keep hot. Slice endive or spinach very fine (1/2 inch strips). In a large bowl mix greens, onion, curry, vinegar and sugar, stirring well. Just before serving, stir greens mixture into mashed potatoes. Serve with hamburger balls, gravy and bacon pieces. | Stampot | ~ 3 lbs potatoes ~ 1 tsp salt ~ 1 cup hot milk ~ 1/4 cup margarine ~ 1/4 lb bacon ~ hamburger gravy (see next page) ~ 1 head endive or 1 bag spinach ~ 1 small onion, finely chopped ~ 1/2 tsp curry ~ 1 1/2 tsp vinegar ~ 1 tsp sugar ~ pepper and salt to taste
33: Ingredients | Instructions | Meatballs | ~ 1 1/2 lbs lean ground beef ~ 1/2 cup margarine ~ 2 slices white bread with crust ~ 1 egg ~ 1 small chopped onion ~ 3 tbsp ketchup ~ 1/2 tsp salt ~ 1/4 tsp pepper ~ 1/4 cup milk ~ 1/4 cup flour | Mix egg, ketchup, milk, pepper and salt. Pour over slices of bread and mix well with a fork. Add bread mixture and chopped onion to ground beef, using your hands to mix well. Melt margarine in frying pan. Form ground beef mixture into balls roughly 3 inches in diameter and flatten slightly. Roll in flour and fry in margarine until nicely browned on both sides. Add leftover flour into about 1 cup of water and pour over meatballs. Cover and simmer about 20 minutes. | Variation: Wrap a strip of bacon around each meatball, securing with a toothpick. Do not add flour and water to pan; instead, fry until meatballs are fully cooked. Remove meat from pan and finish making gravy with flour/water mixture. Add meatballs back to pan and simmer in gravy for five minutes more.
34: Ingredients | Instructions | Fry sliced onions in margarine until lightly browned. Add flour and stir until browned. Add liquid to pan and stir until thickened. Add all remaining ingredients but the beef and simmer for 20 minutes. Remove bay leaf, add meat and heat through. In frying pan, melt margarine and saute celery and onions until soft (about five minutes). Add drained mushrooms and remove from heat. Beat egg, adding in salt, pepper and poultry seasoning. Pour mixture over bread cubes, stirring to coat. Add sauteed vegetables. Using chicken broth, add enough liquid to make bread stick together, taking care not to make too moist. Mix well. 37: Grammy's Soup | Ingredients | Instructions | ~ 2 litres water ~ 1 pgk Honig or Knorr vegetable soup ~ 1 cup vermicelli, 1 inch pieces ~ 1/2 chopped onion ~ 1/2 tsp pepper ~ 1 cup fresh chopped vegetables ~ 2 beef bouillon cubes ~ 1 bay leaf (whole) ~ small pkg ground beef | Place 2 litres of cold water in large pan, adding all ingredients but the ground beef. Bring to a simmer and let simmer for about 45 minutes. Roll 1 inch meatballs in your hands and drop into simmering soup. Allow beef to cook for about 10 minutes. When the meatballs float to the top of the soup, it's done. Variations: Substitute chicken bouillon cubes and cooked, chopped chicken. Add small can of tomato sauce Add chopped, stewed tomatoes with herbs Add 1 small leek, thinly sliced.
38: Rhubarb Punch | ~ 1 can white grape frozen concentrate ~ 1 can raspberry frozen concentrate (Welch's the best) ~ 1 package of frozen raspberries in syrup Put frozen concentrate into punch bowl and add water as directed on cans. Add 2 litres of 7up or Sprite and package of frozen raspberries | Punch | Grape Punch
39: Mushroom Rolls | Ingredients | Instructions | ~ 1/2 cup chopped onion ~ 1/2 lb chopped mushrooms ~ 1/4 cup margarine ~ 8 oz cream cheese ~ 1/2 tsp Worcestershire sauce ~ 1/2 tsp salt ~ 1/8 tsp pepper ~ 1/8 tsp garlic powder ~ loaf of white sandwich bread ~ melted margarine for brushing | Put onion, mushrooms and margarine into frying pan. Saute until soft and onions are clear. Add cream cheese in chunks. Add next four ingredients and stir until cheese melts. Let stand until completely cool. Remove crust from bread. Roll each slice with a rolling pin. Spread mushroom mixture on each slice and roll up like a jellyroll. Brush with melted margarine. Place on tray and freeze. To serve: cut each roll into 3 pieces. Bake on ungreased baking sheet at 400 F for 10--15 minutes until toasted and hot.
