6: Wontons | pack of chicken cutlets (cut into 32 - 1" squares) 3 tsp brown sugar 2 tsp salt 4 cloves of garlic 2 tsp corn starch 6 Tbsp oil 1 tsp soy sauce | 1. Marinate chicken squares in the sauce for two hours. 2. Place piece of chicken in center of wonton dough. 3. Dab marinated sauce around all the edges of the dough. Bring one corner of wonton to another to form a triangle. Bring two ends of triangle together to form a circle. 4. Fry each side for 2 minutes. If trying to freeze wontons, freeze them prior to the last step. | 4

7: MEAT TURNOVERS | Dice 3 stalks of celery 3 peppers diced 1 can of mushrooms 1 large onion 1 pack of Kineret square dough Sauce: Sautéed onions Mushrooms 1 Tbsp of dill weed Salt and pepper 1/2 cup of chicken soup mix with water 1/2 cup of soy/rice milk 2 Tbsp of flour Sautee the vegetables in a pan. Brown the meat in a separate pot. Combine the two mixtures. Add salt, pepper & onion powder to taste. Place meat mixture on dough squares. Bring one corner over to another to form a triangle. Bake at 350 for about 25 minutes (frozen may require a bit more time). | 5

9: Cream of Chicken Soup Chicken Soup 3 medium onions, sliced 2 Tbsp of flour Remove vegetables from chicken soup after it is done cooking. Fry onions in oil until translucent but not black. Add about 3/4 cup of the chicken soup and 2 Tbsp flour to a pot. Mix with hand blender. Mixture should be thick but still a liquid (you may need to add more soup or flour to reach this consistency). Pour mixture into the rest of the soup. , | 7

When cooking, go by your own taste." ~Laiko Bahrs | The Schweitzer Family | Crunchy asian cole-slaw | One bag of shredded cabbage Ramen noodles, sesame seeds & almonds toasted (place on cookie sheet 350 degrees for 5-7 minutes) Dressing: One cup oil, half cup red wine vinegar, 2 Tablespoons soy sauce, one quarter cup[ sugar. | 350 5-7 min 8+ | 9

12: SloppyJoes | 1 pound lean ground beef 1/4 cup chopped onion 1/4 cup chopped green bell peppers 1/2 tsp garlic powder 1 tsp prepared yellow mustard 3/4 cups ketchup 3 tsp brown sugar salt to taste ground black pepper to taste fresh buns or rolls Directions In a medium skillet over medium heat, brown beef, onion & green pepper. Drain off liquids. Stir in garlic powder, mustard, ketchup, brown sugar and mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper. | 10

14: Ingredients | Sweet & Sour Meatballs | Combine the meatball ingredients and roll into balls. Combine the sauce ingredients in a large saucepan. Bring to a boil and then reduce heat to simmer. Add meatballs to pan. Cover & cook 1.5 hours, shaking pot occasionally. | Meatballs: 2 pounds ground meat 1 egg 1/4 tsp pepper 1 small onion, chopped breadcrumbs 3 Tbsp water 2 Tbsp Heinz ketchup | Ingredients | Sauce: 2/3 cup Heinz ketchup 1/2 cup lemon juice 1 large onion, diced 2/3 cup sugar | 12

15: Family approved! | ** Adalia's tip ** Add 1 cup water to the sauce to prevent burning the meatballs.

17: Oven Baked Beef Short Ribs | 4 lbs short ribs of beef 4 Tbsps of flour 1 tsp salt 1/2 tsp pepper 4 Tbsps of olive oil 2 onions chopped 3 cloves garlic minced 1/2 cup parsley chopped 3 Tbsps brown sugar 3 Tbsps cider vinegar 1/2 tsp dry mustard 1/2 cup of heinz chili sauce or bbq sauce 2 tsp worcestershire sauce 1 1/2 cups beef broth 8-12 pearl onions peeled 8-12 baby carrots chopped DIRECTIONS: Combine flour, salt & pepper and rub into ribs. Brown them in a skillet in olive oil turning as they brown. Add onions garlic & parsley. When browned pour off all but small portion of the drippings remaining in the pan. Add rest of the ingredients except pearl onions and carrots. Bring sauce to a boil then cover the pan and transfer to an oven safe baking dish and place in the oven at 325. Bake for 90 min. Add pearl onions and carrots. Reduce heat to 250 and bake for another hour or until tender, basting occasionally. Tastes great when added to cholent. | 15

19: Kishka Stuffed Chicken | 6 chicken breasts 1 kishka 1/3 cup apricot jam 1 cup cornflake crumbs honey Directions: 1. Cut a piece of kishka and roll it into a log. Place in the center of each chicken breast. 2. Roll the cutlets around the kishka, tucking in the ends. 3. Brush each breast with apricot jam and dip in cornflake crumbs. Place seam side down in pan & then drizzle with honey. 4. Bake uncovered for 30 minutes at 350. Let stand for 10 minutes and then lightly drizzle more honey. | 17

21: Chicken in Dough | 1 cup of mayonnaise 1/4-1/2 cup of ketchup Garlic powder Pastrami 10 puff pastry dough squares 10 thinly sliced pieces of chicken cutlets Directions: Mix mayo, ketchup and garlic in bowl. While holding chicken cutlet in palm of hand, smear on dressing. Place a piece of pastrami on dressing. Roll up cutlet. Dip cutlet into dressing. Place chicken in dough. Bring four corner of dough together to meet at center. Pinch sides closed. Bake at 350 for 20 minutes covered and 40 minutes uncovered. | 19

23: Brisket (2nd cut) | Smear on meat: 1 Tbsp. paprika 1/2 tsp basil 1 tsp salt 1 tsp pepper 2 cloves of garlic 2 onions in rings Sauce: 1.5 cups of ketchup 1.5 cups of semi dry red wine 1.5 cup of boiling water Directions: smear first mixture on meat. Mix sauce together and pour over meat. Place cloves of garlic and onions under meat. Bake at 325 for 1 hour per 1 1/2 pound of meat. | 21

25: Gourmet Mac' n' cheese half a bag of pasta 1 cup of 1% milk 1/4 cup of low fat cream cheese 1 can of tomato Sauce 1 tub of 2% cottage cheese Grated cheese for flavour 1 tsp of Parsley Boil a pot of macaroni until soft. Place 1 cup of milk and 1/4 cup of cream cheese in another pot and bring to a boil. Add grated cheese into the pot and mix until blended and melted. When the macaroni is fully cooked drain and mix with cream sauce. Place onto dish and pour 1 ladle full of tomato sauce in the center of the plate. Top with 2-3 spoons of cottage cheese and sprinkle with parsley. | 23

26: Apple Kugel | Side Dishes

27: Malkey's Apple Kugel | 5 Cortland apples, peeled and sliced 1/2 cup sugar 1/2 cup oil 3/4 cup flour 1 egg 1 tsp baking powder 1 tsp vanilla extract sugar cinnamon Directions preheat oven to 350. Place sliced apples in an 8x8 oven safe dish & sprinkle with sugar and cinnamon. Mix the remaining ingredients and spread over the top. Bake for 1 hour and enjoy | 25

29: Vegetable Orzo | Mushrooms Green peppers onions craisins 1 cup orzo chicken soup powder salt and pepper | 1. Fry vegetables with crasins. Add 2 tsp. chicken soup powder to vegetables and set aside. 2. Toast orzo in oil in a large frying pan until golden. 3. Add 3 cups boiling chicken broth to the orzo and boil uncovered 10 minutes or until the liquid is mostly absorbed. 4. Combine orzo and vegetables. 5. Season to taste with salt & pepper, and/or more chicken soup powder. Serve hot or at room temperature. | 27

30: Doughless Knish Kugel | 1. Saute 2 onions diced in 3/4 cup oil. 2. Boil 8 potatoes until soft. 3. Mash potatoes very well. 4. Add sauteed onions to potatoes. 5. Mix thoroughly. 6. To the above mixture add: 4 eggs 2 cups flour 1/4 stick margarine 1 Tablespoon salt 1/8th teaspoon pepper Place in 9x 13 pan . | 7. Brush with beaten egg. 8. Bake at 375 degrees for 1 hour.

31: Homemade kishka 1/3 cup of oil 1/4 cup water 1 grated onion 1 cup flour 1 tsp paprika 1 1/2 tsp salt Mix all ingredients together thoroughly. Cut 2 large pieces of parchment paper. Scoop 1/2 of mixture onto each sheets and roll up. Place on top of cholent in pot and cook with cholent. | 29

33: Sesame Noodles | Ingredients 1 package spaghetti or linguine, cooked 6 cloves garlic, minced 6 Tablespoons sugar 6 Tablespoons oil 6 Tablespoons rice vinegar 6 Tablespoons soy sauce 2 Tablespoons sesame oil 1-2 teaspoons read pepper flakes 6 green onions, sliced 1 teaspoon sesame seeds, toasted In a saucepan over medium-high heat stir in garlic, sugar, oil, vinegar, soy sauce, sesame oil, and pepper. Bring to a boil, stirring constantly, until sugar dissolves. Pour sauce over cooked linguine, and toss to coat. Garnish with green onions and sesame seeds. | 31

35: 1 large onion sliced 2 lbs baby carrots 3 to 4 cloves garlic 2 to 3 Tbsps olive oil Kosher salt and black pepper to taste Preheat oven to 375. Spray a 9x13 inch glass baking dish with cooking spray. Place the onions, carrots and garlic in the baking dish. Drizzle with olive oil and sprinkle with salt and pepper to taste. Mix well. For best results the carrots should be in single layer in the dish. Roast uncovered 45-60 minutes or until golden, stirring occasionally. | Roasted Baby Carrots | 33

36: Butternut Squash Muffins | 4 butternut squash baby jars (stage 2) 2 cups of flour 1.5 cups of sugar 2 tsp cinnamon 2 tsp baking powder 1 tsp baking soda 2 eggs 3/4 cup of oil Crumb Topping: 1/2 cup of brown sugar 1/4 cup of oil 1/2 cup of flour 1 tsp of cinnamon Combine batter in mixer and pour it into 24 cupcake holders (sprayed with PAM). Crumble crumb topping mixture on top of muffins. Bake for about 25 minutes at 350 degrees. Don't over bake. | 34

37: HOT POTATO KUGEL | 1 onion 5 lb of Idaho potatoes (about 10-12) 4 eggs 2 tsp of salt 1/4 tsp pepper 1 cup of oil Directions: Grate potatoes & onions. Mix with eggs, oil, salt & pepper. Pour into 9x13 or 2- 9" round pans Bake at 350 for 1 1/2 hours. | 35

38: Molten Chocolate Brownies | 1/2 recipe of your favourite cookie dough 1 box Duncan Heinz Brownie mix ice cream chocolate sauce | 1. Prepare brownie mix as directed. 2. Press about a tablespoon of cookie dough onto the bottom of twelve muffin pans with paper liners. 3. Bake cookies at 350 for 13 minutes. Remove from oven. 4. Divide brownie batter evenly over cookie crust. 5. Bake at 425 for no more that 13 minutes. Remove promptly. 6. Serve warm with ice cream & chocolate sauce. | 36

41: Honey Cake In a small bowl combine 1 Tbsp. of vinegar with one cup of milk (we use soy milk to keep it parve). Let stand for 10 minutes. Mix together 1 cup oil, 1 and 1/2 cups sugar, 3 eggs, 1 tsp. vanilla, 2 cups flour, 3 tsp. baking powder, 1/2 tsp. baking soda and 1 tsp. cinnamon. Add in milk mixture. Put in a bundt pan and bake at 350 degrees for 40 minutes. Bring to a boil: 1/4 cup of honey, 1 Tbsp. water and 1 Tbsp. lemon juice. After cake has cooled for 10 minutes, poke holes around the cake and drizzle the sauce on the cake, making sure to get the sauce into the holes. | 39

42: Chocolate Fudge Cake | 2 oz semi sweet chocolate chopped 1 cup sugar 3 Tbsp butter/margarine 2 Tbsp of chocolate syrup 2 Tbsp oil 1 cup cocoa powder 1 cup flour 1 tsp baking powder 2 large eggs 1 egg white (from a large egg) 2 Tbsp soy milk 1 tsp vanilla extract 1 tsp coffee dissolved in 2 Tbsp of warm water Directions: Preheat oven to 350. Spray 9’’ springform pan with pam. Melt chocolate, sugar, margarine. syrup & oil together over stove top. In a medium bowl whisk cocoa, flour, & baking powder. In mixing bowl beat eggs, egg white, soy milk and vanilla extract. Mix until smooth. Add in chocolate mixture. Combine. With machine running add in cocoa mixture. Mix until smooth. Pour batter into springform pan and bake for 25 minutes. DO NOT OVERBAKE. DO NOT CHECK WITH TOOTHPICK. | 40

43: WARNING! This cake can make quite a mess and cost you a couple of pounds but....it is well worth it! Just get on the treadmill after eating!

44: Bubbie's Banana Muffins | Ingredients 3 cups all-purpose flour, 3 cups sugar, 2 teaspoons baking powder, 2 teaspoons baking soda, 1/2 cup orange juice, 4 eggs, 1/2 cup applesauce, 2 teaspoon vanilla extract, 2 cups mashed ripe bananas, 3/4 cup chocolate chips. | Directions In a mixing bowl combine the eggs, applesauce, sugar and vanilla. In a cup, dissolve 2 tsp of baking soda in 1/2 cup orange juice. Add this to egg mixture. Throw in 2 tsp baking powder. Alternate adding flour and mashed bananas to egg mixture. Fill greased or paper-lined muffin cups two-thirds full. Sprinkle chocolate chips on top of muffins. Bake at 350 degrees F for 15-20 minutes (or 45-50 minutes for a cake.) | 42

46: 2 cups sugar 1-3/4 cups all-purpose flour 3/4 cup cocoa 1-1/2 teaspoons baking powder 1-1/2 teaspoons baking soda 1 teaspoon salt 2 eggs 1 cup soy milk 1/2 cup vegetable oil 2 teaspoons vanilla 1 cup boiling water. Stir together sugar, flour, cocoa, baking powder, baking soda & salt. Add eggs, milk, oil & vanilla. Beat for 2 minutes. Stir in boiling water & pour into 9*13 pan. Bake for 35-40 minutes at 350. | Chocolate Cake | 44

47: The Jutcovich Family | All-Purpose Chocolate Icing | 1 cup of cocoa powder 1 tsp of coffee 1/4 cup of boiling water 4 Tbsp oil 2 cups of confectioners sugar Mix ingredients together. Add a drop of boiling water to create a thinner mixture that is easier to smear. Creams 2 9” round pans.

49: Peanut butter Ice Cream 1 half gallon parve vanilla ice cream (defrosted) 3/4 cup peanut butter 1/2 cup icing sugar 1 recipe brownies - baked, cooled & crumbled into small chunks Combine above ingredients. Gently mix in the brownie bits. Refreeze in disposable muffin tins. When serving pop out the ice cream by pushing the bottom of the tin inward. Serve with a drizzle of chocolate syrup. | 47
