1: ~for Tara Robin~ Happy Cooking!
2: Deviled Eggs Put 12 eggs in pot and cover with water. Bring to rolling boil. Cover and remove from heat. After 20 minutes, drain and peel the eggs. Cut the eggs in half and remove yolks to a bowl. Mash with fork. Add about 1 tablespoon sweet relish, 1 teaspoon garlic powder, and salt and pepper to taste. Add enough mayonnaise to make the mixture smooth and creamy. Mixture should not be dry and crumbly. Stuff eggs and refrigerate. | Trio Spinach Dip Melt 8 ounces cream cheese and 8 ounces Monterey jack cheese in pot, stirring until melted. Add 1/3 cup Parmesan cheese, 1 can Ro-Tel tomatoes (undrained), 1/4 cup chopped purple onion, 1 10-ounce package frozen spinach (thawed in microwave and water squeezed out), and 2 tablespoons chopped jalapeños. Serve warm with tortilla chips or bread. | Veggie Dip 8 ounces cream cheese, softened 1/4 cup milk 1 package dry Italian salad dressing mix | Sausage Balls 2 cups biscuit mix (like Bisquik) 1 pound shredded cheese 1 pound bulk sausage (like Jimmy dean) Mix with hands and shape into balls. Bake at 350 degrees until brown and cooked through. Balls can be made ahead of time and frozen uncooked.

4: Baked Potatoes | Mum | Pinto Beans | Put 2 cups dried beans into the slow cooker and add water. Leave about 2 inches space at the top. Add 1 1/2 tablespoons salt. You can also season with bacon, ham hocks, sausage, chopped onions, etc. Turn cooker to HIGH and cook beans until they're tender and cooked through, about 5-6 hours. (You can also cook the beans on LOW, which would take about twice as long.) Two cups of dried beans will make about 6 cups of cooked beans. | Crock Pot
5: Baked Potatoes 1 Wrap each potato in foil. 2 Put potatoes in crock pot. 3 Cover and cook on High 4 hours or on Low for 8 hours. 4 Do not add water. 5 Cooking time depends on how big your potatoes are. 6 You can leave them in longer, and it won't hurt them.
6: Crock Pot Chicken Parmesan 1 envelope onion soup mix 1 1/2 c. milk 2 cans cream condensed chicken soup 6 boneless chicken breast halves 1/4 c. butter, cut in bits salt and pepper to taste 1/4 c. grated Parmesan cheese Combine onion soup mix, milk, and soup. Place chicken breasts in bottom of greased crock pot. Top with butter. Pour soup mixture over top. Sprinkle with salt, pepper, and Parmesan. Cover. Cook on LOW for 8-10 hours or on HIGH for 4-6 hours. Serve over cooked spaghetti.
7: Pot Roast | Layer chopped vegetables in crock pot (potatoes, carrots, onions, bell peppers, garlic). Season all sides of a chuck roast with salt and pepper. Place in crock pot on top of vegetables. Add 1/2 cup water. Cook on LOW 8-10 hours. | Add to chicken to create a new dish each time! *a jar of salsa *Italian dressing *cream of chicken soup *a package of dried onion soup mix
8: Mom | Cream of Wheat | 1 serving: 1 1/4 c. water or milk 3 tablespoons farina 2 servings: 2 cups water or milk 1/3 cup farina Cook until liquid is absorbed and mixture thickens. Add sugar and butter. (I usually match amount of sugar to measurement of farina in recipe.)

12: Add a boiled/deboned chicken to cornbread. Cut up 1/2 package celery and 2 bunches of green onions. Add to box of chicken broth and cook till tender. Pour into cornbread (broth and all). Salt and pepper to taste. Add more broth until the mixture is nice and moist. | Elaine's Cornbread Dressing Make a pan of cornbread. Crumble in a bowl. Add 1/2 package saltine crackers. Add 4 boiled eggs. | Dressing | Bake at 350 until lightly browned.
13: Cornbread 1 c. flour 1 c. cornmeal 2 T. sugar 3 t. baking powder pinch salt Grease pan, heat in oven, THEN pour in batter and bake at 350 for about 20 minutes. | 1 egg 1 cup milk 1/4 cup oil

15: Fat Lady Salad 1 can cherry pie filling 1 can sweetened condensed milk 1 small can crushed pineapple (drained) 1/2 cup chopped nuts 1/2 t. vanilla 1 large tub Cool Whip Mix and chill. | Chicken Salad | cooked chicken salt & pepper sweet relish boiled eggs chopped celery chopped apple chopped onion (or onion powder) cashews mayo (enough to make it moist)
16: Mexican Cornbread Cook one onion, chopped, and 1 pound ground beef until done. Drain. Add one can cream style corn. Stir in cornbread batter (either a package mix or use recipe below) and grated cheese. Chopped jalapeños are optional. Pour in greased casserole dish and bake at 350 degrees for 45 minutes. 17: King Ranch Chicken | Cooked chicken (rotisserie, boiled, etc.) Onions, chopped and sautéed in butter 2 cans condensed cream soups (chicken, mushroom, or a combo of both) 1 can Ro-Tel tomatoes grated cheese crushed Doritos Pour into greased casserole dish and bake at 350 degrees for 30 minutes or until hot and bubbly.
18: Chicken Creole | 4 boneless skinless chicken breasts, cut into cubes 1 t. salt pepper 1 T. oil 1 cup finely chopped onion 1/2 cup finely chopped celery 1/2 cup diced bell pepper 2 garlic cloves, minced 1 14-1/2 oz. can diced tomatoes 1/2 cup water 1 1/2 t. paprika Salt and pepper the chicken. In a large skillet brown chicken in oil. Remove and set aside. In same skillet, saute the onion, celery, bell pepper, and garlic until tender. Stir in tomatoes, water, paprika, and bring to boil. Reduce heat; cover and simmer for 10 minutes. Add chicken back in. Simmer uncovered for 10-15 minutes or until chicken is done and tender. Serve over rice.
19: Cowboy Stew 1 lb. ground beef 1 chopped onion chopped celery minced garlic 3 tablespoons chili powder chopped bell pepper 1 can ranch style beans potatoes, peeled and cubed 1 can corn 1 can tomatoes 3 cups water Brown ground beef and onions; drain. Add rest of ingredients and cook until potatoes are done, about 30 minutes. | Taco Soup 2-3 cans Mexican style tomatoes 1-2 can kidney beans 1 can corn 1 pkg taco seasoning cooked shredded chicken Cook until heated through. Serve with cheese and sour cream.
20: Lasagna Layer 1: Cook lasagna noodles in boiling water until done. Drain. Layer 2: Mix 1 package cottage cheese and 2 eggs. Layer 3: Shredded mozzarella cheese Layer 4: Brown 1 lb ground beef, 1 chopped onion and 1 clove garlic. Add 1 can tomatoes, 1 small can tomato sauce and 1 can tomato paste. Do each layer twice in greased casserole dish. Bake at 350 until heated through, about 45 minutes. Cut into squares and serve. | (honey mustard chicken)
21: Chicken Spaghetti | In large pot, boil cut-up chicken in water. Remove chicken and debone. Cook a package of spaghetti in the same water. Drain but reserve one cup for the casserole. In a skillet sauté 1 chopped onion and 1 chopped bell pepper in 1/2 cup butter until soft. Mix spaghetti, 1 pound cubed Velveeta cheese, cooked veggies, chicken, and 1 cup broth in greased casserole dish. Bake at 350 until hot and bubbly.
22: Vegetables | Corn Casserole 1 box Jiffy cornbread mix 1 egg 1 stick butter, melted 1 cup sour cream 1 can whole corn 1 can cream corn Mix, top with grated cheese, and bake at 350 until done, about 20 minutes.
23: the Johnson clan | Green Rice | Cook 1 c. raw rice with 2 c. water as usual. Saute 1/2 cup chopped celery and 1/2 chopped onion in 2 T. butter until tender. Cook one box frozen broccoli as directed. Mix one can cream soup (broccoli, chicken, mushroom, etc.) with 1/2 cup milk and 1/2 pound cubed Velveeta. Add to rice, veggies, broccoli and pour into greased casserole dish. Bake at 350 for 30 minutes or until heated through and cheese is melted. | 350 | 30 min | For baked beans, you mix together 1 large can pork 'n' beans, 1 cup bbq sauce, some chopped bacon, 1/2 cup chopped bell pepper, 1 chopped onion, and 1/2 cup brown sugar. Bake at 350 for one hour. ~Mom
24: Che | Cherry Cheese Pie 1 graham cracker crust 1 8-oz package cream cheese, softened 1 14-ounce can sweetened condensed milk 1/3 c. lemon juice 1 t. vanilla Mix, pour into crust, and refrigerate. Top with canned cherry pie filling.
25: Egg Custard | 4 eggs 1/2 t. salt 1 c. water 1/2 c. sugar 1 t. vanilla 1 12-ounce can evaporated milk Mix and pour into baking dish. Sprinkle with a little cinnamon. Bake at 325 for 45 minutes to an hour. For Custard Pie, add 1/4 c. sugar and 1/2 c milk. Mix and pour into unbaked pie crust. Note: Put cookie sheet on bottom rack to catch spillovers. Put unbaked crust on top rack, with the rack in. Pour filling into crust with small cup. Pulling the rack in and out will spill the filling. Don't put the crust on the baking sheet because the sheet with warp during cooking and spill the filling.
26: Pecan Pie 1 cup corn syrup 1 cup sugar 3 eggs 1 t. vanilla 2 T. melted butter dash salt 1 cup pecans Mix and pour into unbaked pie crust. Bake at 300 for 1 hour. | Pumpkin Pie | 1 can sweetened condensed milk 1 16-oz can pumpkin 2 eggs 2 t. cinnamon 1/2 t. salt Mix and pour into unbaked pie crust. Bake 35-40 minutes at 350 degrees.
27: Name | 4-Layer Dessert | 1st layer: 1/2 cup butter 1 1/2 cup pecans, chopped fine 1/2 cup flour 2 T. powdered sugar Mix and press in 13x9 pan. Bake at 350 for 10 minutes and let cool. 2nd layer: 1 cup powdered sugar 8 oz. cream cheese, softened 1 cup Cool Whip 3rd layer: 2 small pkg. instant chocolate pudding 3 cups milk 4th layer: remainder of Cool Whip from large tup Refrigerate until set. | Cow Pies 2 c. sugar 1/2 c. milk 1/4 c. cocoa 1/2 c. butter Cook until it starts to boil. Remove from heat. 1/2 c. peanut butter 1 t. vanilla pinch salt 3 c. quick cooking oats Mix together and add to first mixture. Drop onto waxed paper.
28: Alfredo Sauce | 8 ounces cream cheese 3/4 cup Parmesan cheese 1/2 cup butter 1/2 cup milk Melt butter and add rest of ingredients. The trick is to continuously stir to cook the Parmesan cheese down so that it blends and isn't granular. A whisk works great for this. Cook together until the ingredients are blended. | Misc
29: Dear Tara, I discovered a copycat recipe for Raising Cane's sauce! Mix 1/2 c. mayo, 1/4 c. ketchup, 1/2 t. garlic salt, and 1/4 t. black pepper. Now you can make this when you fry chicken fingers!
