7: 1 pkg cream cheese 1 can crab meat, drained 2 Tbsp flour 3 scallions, minced 1/4 tsp onion powder 1 egg, beaten oil for deep fryer Wonton Wrappers 1. Finely mince the scallions. Combine with cream cheese, crab meat, and flour. 2. Beat the egg in a small bowl 3. Place tbsp of crab mixture in the center of each wonton and brush edges with egg mixture. Fold over to form a triangle, then press edges together to seal. Bring the two side edge corners of the triangle to the middle and press these together to form a ring. 5. Heat oil in a large pan and fry wontons until golden, then remove with a slotted spoon and drain on paper towels | Drosophila Wontons
8: Cabbage Rolls | 1 Cabbage head 2 pounds of ground beef 2 teaspoons of salt 1/2 teaspoon of pepper 1 cup of uncooked regular rice 2 cans of tomato sauce (save 1/2 can) 1 can of tomato paste Add cabbage head to a pot of boiling water. Boil until leaves start to soften (after 3 min.) Then start cutting each individual leaf while in boiling water. Place each leaf in a paper towel to dry, until all leaves are removed. Combine all other ingredients in a large mixing bowl. Scoop 1/4 cup of filling at stem end of each cabbage leaf, then folding in sides, start rolling the cabbage leaf. Use remaining tomato sauce to cover the top of cabbage roll. Place in steamer for about two hours. keep applying water to steamer. When done, add cabbage roll to a casserole dish and add some of the tomato water over cabbage rolls. 12: Chile Con Carne Cocida Ingredients 3 lbs. country style pork ribs 1/2 cup red chili powder 2 tbsp flour 3 Lg cloves of garlic (peeled and minced) Water 1 tsp Salt Directions Combine ribs and garlic in a pot with enough water. Bring water to a boil then reduce heat to medium temperature and let simmer until meat falls off the bone Remove from heat, remove ribs and garlic from pan and allow to cool. (save the meat juice) Combine meat juice and flour over low heat and whisk out any flour lumps or until juice is like gravy and remove from heat. Break apart meat and remove most of the fat and all the bones. Combine meat, garlic and chili powder with already prepared gravy and add water to desired thickness and simmer over low heat for approximately 20 min.. | Uncle Mel's Recipes
13: Chile Caribe- Can be used for tamales Ingredients Red Chili Pods (1 gallon size bag) 3 Large Garlic cloves (Peeled) water to desired thickness Salt Directions Remove stem and seeds from chili pods Split and toast chili pods in oven (careful not to burn) Combine chili pods and garlic with warm water in blender and blend to desired thickness. add salt to taste. | Green Chili with pork Ingredients 1 quart size plastic bag of chili or 1 pound frozen green chili 2 large pieces of garlic (Peeled) 1 pound ground or cubed pork Directions Brown pork in frying pan with cooking oil. add 2 tbsp flour to pork over low heat to brown flour than remove from heat. Chop chili and tomato and add to meat. Add warm water (to desired thickness) and chopped garlic and bring to boil. 19: Pie Dough 2 cups of Crisco or lard 1 cup of sugar 1/4 teaspoon of salt 7 cups of flour Directions: Mix all dry ingredients, add lard, eggs and vanilla. slowly add water (you don't want dough too sticky) divide dough into 2 balls, roll-out first dough ball (thin) and place unto a cookie sheet (grease cookie sheet), and add fruit filling. Then roll out second dough ball and place o top of fruit filling. Take a fork and press dough against edges. Then take the fork and make multiple piercing on top of pie. Sprinkle with a sugar/cinnamon mixture. . 20: Bizcochitos | (A traditional Northern New Mexico cookie) | Ingredients: 4 cups lard (2 pounds) (shortening not recommended) 3 1/4 cups sugar 4 eggs 1 cup milk 2 T. anise seed (crushed) 2 t. anise extract 2 t. vanilla extract Sift together: 15 cups flour 2 T. baking powder 2 t. salt Combine dip mixture: 2 cups sugar with 1/3 cup cinnamon (or to taste) Preparation Procedure:: Using electric mixer: Cream lard on high speed until it resembles stiff egg whites, Add sugar and cream again, Using low speed, beat in eggs, Using low speed, add milk, anise, and extracts Gradually add dry ingredients to wet until dough can be rolled on a lightly floured surface and easily lifted from work area. Roll to about 1/4 inch thickness or less. cut into shapes. Dip one side and place dipped side up on cookie sheet. Bake at 390 degrees for 9 minutes. | The only thing we have to fear is fear itself... 23: My grandma's tortilla recipe has never been written until now. Ingredients: Flour (harina), Salt (Sal), baking powder(Espauda), lard (Manteca) and warm water (agua tibia) Directions: In a big bowl put in about 3 cups of Harina (flour) (remember the recipe isn't exact you might want to add more if your Masa (dough) is sticky. add Sal (salt)-(try 1 tsp on your first try..- adjust it next time you make tortillas.). Add Espauda (baking powder). This makes them fluffy and makes those bubbles we like... adding to much may make a sopapilla (one big bubble) to measure this I use the tips of my finger and grab the baking powder like a bird would do with it's beak. I add about 2 or three beaks. (it's about 1 teaspoon or so, I think). Mix all dry ingredients with your CLEAN hands. Add Manteca (lard). I use my hand to measure. I put about 2 plops (2 Tbsp) of lard (as large as the size of a golf ball). Lard seems to make it less sticky and more elastic (These days I use vegetable oil). With your hand squish the lard and the dry ingredients till it's completely mixed. Add agua tibia (1 cup -warm water). You should be standing by the running water at the sink or have a large amount of water at your side. Mix your dough with your hands as you add the warm water. Your masa should be soft and not sticky. Cover your masa with plastic and let it rest (5-10 min) (i just let it sit there - it dries a little -but I don't care) Heat your comal (flat cast iron lid- or griddle)-grease comal You have to adjust heat to Medium -HOT. Back to Masa - divide dough into 7 balls. Use a rolling pin and roll into a circle. Place on comal (when it bubbles flip the tortilla. (While waiting to flip, roll out the next tortilla) Then stack the finished tortillas in a dish towel to cool. (you can put them in a zip-lock plastic bag -so they don't get hard) | My Great - Grandma's Tortilla's Mom's version of the story!

25: Sour Cream Coffee Cake | Cake 1 c margarine 2 c sugar 2 eggs well beaten 1 T vanilla 1 c powdered sugar Cream margarine and sugar. Add eggs and vanilla. Fold in sour cream. Sift together flour and baking powder. Add to 1st mixture. Pour 1/3 batter into greased bundt pan or tube pan. Sprinkle with 1/2 of the following Mixture: Pecans, cinnamon and powder sugar. Pour in 1/3 batter and sprinkle the rest of the nut mixture. Pour the rest of the batter on top. Bake in 325 degree oven for 1 hour and 20 minutes. Remove from oven and cool 10 minutes. 26: Rochelle's Banana Bread | 1/2 cup of butter 1 cup of sugar 2 eggs 3 bananas (smashed) 2 cups of flour 1 tsp baking soda 1/4 cup of nuts Cream butter, sugar, eggs - mix in bananas, flour, baking soda, nuts. Bake at 350 degrees for 1 hour. | Cheese ball | 2 pkg (8 oz. each) Cream cheese 2 cups shredded cheddar cheese 1 tablespoon chopped red bell pepper 1 tablespoon chopped green onion 2 teaspoons Worchestershire sauce 1 teaspoon Lemon Juice Dash of tabasco sauce Dash of salt Chopped pecans Directions: Soften cream cheese to room temperature. Combine all ingredients, except pecans and mix well. (put plastic gloves and mix with your hands. Make a (ball) and roll in pecans. | 2 1/2 c flour 1 tsp baking powder 1/2 - 1 tsp salt 2 Tbsp olive oil or (for Regular tortillas you can use lard or shortening) 2/3 - 1 cup of warm water Mix the flour, salt, and baking powder with a whisk. Add olive oil and mix with your fingers. Add 1 cup of warm water and mix until a ball is formed. Cover with plastic wrap and let the dough rest for about 15 - 20 minutes. Divide dough into 7 balls and roll out one at a time - cook on a hot, greased comal (cast iron griddle) over medium-high heat. Turn the tortilla when brown blisters form on the first side. Stack the tortillas and serve warm | Olive Oil Tortillas
27: Cheese Cake | ` | Ingredients 1 2/3 c graham cracker crumbs 1/2 c butter, melted 5 packages of brick cream cheese, softened 1 1/4 c sugar Directions: Heat oven to 325 degrees, if using a silver 9 inch spring form pan (or to 300 degrees if using a dark nonstick pan). Mix crumbs and butter; press firmly onto bottom of pan. Beat cream cheese, sugar, flour and vanilla in large bowl with electric mixer on medium speed until well blended. Add sour cream; mix well. Add eggs, one at a time, mixing on low speed after each addition just until blended. Pour over crust. Bake 1 hour 10 minutes or until center is almost set. Take out of oven and Run knife around rim of pan to loosen cake; cool before removing of pan. refrigerate 4 hours or overnight. Top with cherry pie filling before serving. Tips: 1) Grease spring form pan, well 2) Place a pan of water right below cheese cake in oven | 3 Tbsp flour 1 Tbsp Vanilla 1 cup sour cream 4 eggs
28: Sweet potatoes 2 cans of sweet potatoes 3/4 c brown sugar 1 can of crushed pineapple 1 cup of pecans 1 bag of marshmallows Drain sweet potatoes and pineapple. In a medium size bowl, mash sweet potatoes, Mix in pineapple, brown sugar and nuts, cover with marshmallows and bake at 350 degrees for 20 minutes | Mashed potatoes 5 1bs of potatoes 1 can of carnation milk 1 stick of butter Salt/Pepper Directions: Peel Potatoes, cube, and boil until fork can go through then strain potatoes, cube butter, and mash. Add milk slowly while mashing. Salt/pepper to taste | Potato Salad 8 medium Potatoes (2 1/2 pounds) large mixing bowl. 4 hard-cooked eggs, coarsely chopped 1 cup thinly diced celery 1/2 cup of chopped onion 1/2 cup chopped sweet pickle or sweet pickle relish 1 1/4 cup of mayonnaise 1 Tablespoon prepared mustard 1/2 teaspoon paprika 1 In a large pot, cook potatoes in boiling salt water for 25 min. or until tender. Drain. cool slightly. Peel and cube; transfer to a large mixing bowl. 2. Add eggs, celery, onions, and relish to potatoes. 3. For dressing, in a mixing bowl combine mayonnaise, mustard, and salt. Add mayonnaise mixture to potatoes. Toss lightly to coat potato mixture. Cover and chill for 6 hours. Garnish with egg slice and sprinkle paprika. | The Potato Patch
29: Cherry Pineapple Delight 1 can (16 oz.) crushed pineapple 1 can (20oz.) cherry pie filling 1 pkg. yellow cake mix 1 c. chopped pecans 1/2 c. butter Grease a 9X13 inch pan. mix in the pineapple and juice, and cherry filling, spread evenly. add dry cake mix evenly over the fruit. Add slice butter and lay all over the top and then sprinkle pecans. Do not mix. Bake in a 350 degree oven 1 hour. | Cranberry Relish Ingredients: 2 cups cranberries (chop in food processor) 1 (20 ounce) can crushed pineapple, drained 1 tart apples -peeled & chopped 1 Orange (peel and chop) 1/2 c of granulated sugar 1/4 pecans chopped Directions: In a medium bowl, Mix cranberries, pineapple, apples, orange and sugar. 30: Pumpkin Roll | Cake: Powdered Sugar 3/4 cup all-purpose flour 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp ground cinnamon 1/4 tsp. ground cloves' 1/4 tsp. salt 3 large eggs 1 cup granulated sugar 2/3 cup of 100% pure pumpkin 1 Cup chopped walnuts For Cake Preheat oven to 375. Grease 15X10 inch jelly roll pan ( I use a cookie sheet) line with wax paper. grease and flour paper. Combine flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. beat eggs and sugar in large mixer bowl, beat in pumpkin. Stir in flour mixture. spread evenly into prepared pan. Sprinkle with nuts. Bake for 13-15 minutes or until top of cake springs back when touched (if sticky to touch, bake an additional 2 minutes). Remove from oven and sprinkle powdered sugar on cake, cover with dish towel, place a cutting board (size of cookie sheet) over dish towel and invert. Carefully peel off paper. Roll up cake and towel together starting with narrow end. Cool on wire rack. for filling: beat cream cheese, powdered sugar, butter and vanilla extract in a mixing bowl until smooth. Carefully unroll cake; remove towel. spread cream cheese mixture over cake. Re-roll cake. wrap in plastic wrap and refrigerate at least one hour. sprinkle with powdered sugar before serving, if desired. | Filling: 1 pkg. (8 oz.)cream cheese, softened 1 cup sifted powdered sugar 6 Tbsp. butter or margarine, softened 1 tsp. Vanilla extract Powdered sugar
31: Pinon Pine nuts | Oven. Wash Pinon in a strainer. Preheat your oven to 325. Spread wet pinon on a cookie sheet. Sprinkle salt on top. Start tasting test after 10 minutes. Pinon (nut inside shell) will change to translucent, then off white, then light brown. Once light brown, Pinon is ready. Microwave After washing and salting, place 1 cup of pinon in a paper bag and close bag. Cook for one minute. If pinon is not brown - you can always microwave a little longer. 32: Pinto Beans (Frijolitos Pintos) made in a CrockPot 1 cup beans 4 cups water 1 tbsp oil (Veg oil, Bacon drippings, lard, butter) 1 tbsp of salt Clean pinto beans on a clean surface by pick out any pieces of dirt or small rocks. Place clean beans in the strainer and Rinse under cold water. Next, add them to a crock pot with water, salt and oil. The water should be at least 1 inch below the top of the crock pot. Turn the crock pot on high and cook for 5 hours, stirring occasionally. The beans need plenty of water so you may need to add more water throughout the cooking process. Beans are done when they are soft. (for thicker juice use less water toward the end of the cooking cycle).
33: Pressure Cooker: Add beans, water, oil and salt to pressure cooker ( the water should be at least 1 1/2 inches below the top of the pressure cooker). Place pressure cooker on stove (medium-high heat) bring to a boil and then seal the cooker. Pressure cooker will start making a "ssssPPP" sound. When this happens lower heat and start timing. Caution: be careful not to put stove too high - the pressure cooker can explode and you will see and hear steam fighting it's way out (this happens t Auntie Carla all the time and it's dangerous!!) But if it happens to you and cooker hasn't exploded - run with a towel and throw over the pressure cooker and turn off beans) - Do this Quickly!!! Back to recipe - cook for about an hour. Then wait until there is no longer any steam coming form the vent before attempting to open. This can take up to 20 minutes, but you can speed it up by taking the pressure cooker with the lid on and run it under cold running water (in the sink) until you no longer hear the steam escaping -the lid will easily comes off. If the lid will not come off, continue to run cold water. If beans are not soft repeat process for an additional 30 min (don't forget to add more water - beans can burn quickly at this point)
