1: The following pages are a collection of pictures, recipes, and, in some cases, short stories from members of the Henry Family. Some of the material has been handed down from generation to generation by way of surviving members of the family. Every effort has been made to capture the recipes as they were written or given to me. I have included misspellings, abbreviations, corrections and etc. I want you to enjoy reading this book, looking at the pictures, laughing and remembering. Also, guess what?! You can even try the recipes. If the recipe doesn't include pan size, temperature, or cooking time, your guess is as good as mine. A few of these recipes are included in the person's original handwriting, on the back of a card, envelope or scrap of paper. Others, I have retyped. 4: Chicken Spaghetti 1 hen or chicken 1 package spaghetti 1 can mushrooms 1 large can tomatoes 1 green pepper 1 onion 1 cup chopped celery 1 small jar pimento 1 lb. cheese Boil chicken. Use small amount of broth to saute pepper, onion, and celery. Cook spaghetti in remaining broth. Add tomatoes, mushrooms, pimento, and deboned chicken together and cook for a few minutes. Layer of chicken mixture, layer of cheese, etc. in baking dish. Cook 30 minutes at 425 degrees with layer of cheese on top. | Aunt Etta | Jam Cake 3 eggs (1 when scarce) 2 cups jam (your choice) 1/2 cup butter or margarine 1 cup buttermilk 1 t. soda 2 T. cocoa (darker cake) 1 t. allspice 1 cup nuts (pecans?) 1 cup raisins, if desired vanilla to taste Flour to make desired consistency. Cream or chocolate filling. | Aunt Nannie
5: Mac & Cheese 4 cups macaroni 3 lbs. of cheddar cheese and 2 lbs. of soft American box cheese Cook mac in salted water but do not cook clean done. It's going back in the oven. Take baking dish and grease. Layer the mac and then the cheddar and the soft cheese on top of the cheddar. Do this until everything is gone. Then cover everything with milk. Don't stir. 350 degrees until it's bubbly and getting brown on the top. I have made this recipe and Elna's on the following page for all the family dinners for the past 25 years. Taught my daughters-in-law how to make the mac and cheese. Now I don't have to make them. They do. | Virginia Harrell Reef

7: Chicken and Dressing Southern Style 1 chicken or Several pkg of dark meat chicken. Boil these - then skin & pick off of the bone. Set aside- get a package of biscuits - give Omar 2, you eat 1 and put rest in the dressing. 1 Jiffy pkg of corn meal-make a skillet of cornbread. Crumb 2 biscuits and the cornbread in a large pan-next, chop onion-lots of onion-celery-3 ribs-toast onion & celery in a skillet with butter-do not overcook. Mix onion & celery with cornbread & biscuits mix. Next get 3 cans of cream soup. 1) cream of chicken 2) cream of celery 3) cream of onion soup. I use Campbells. The other kind has too much starch in them. Next mix all this together with broth from chicken. I don't like sage so I never use it. You could put some in. Take 2-9x9 Pyrex dishes and grease them & divide the mixture into the two dishes. Have the broth floating on the top. Seal with foil. Put one in the oven and the other in the freezer for later. Bake and mix as it cooks at 350 degrees. It takes quite a while to bake done. I forgot. You mix the chicken in with the mixture. Elna Harrell's recipe

9: Penny's Pecan Pie Pie Crust for 9" pie 1 cup light corn syrup 1/2 t. salt 1 cup firmly packed dark brown sugar 1 t. vanilla 3 eggs slightly beaten 1 cup pecan halves 1/3 cup butter, melted Bake at 350 degrees for 45-50 minutes | Apple Dumplings 2 Granny Smith apples 2 cans crescent rolls 12 oz. Mountain Dew (soda pop) 2 sticks butter (I use 1 butter and 1 oleo) 1 1/4 cups sugar 1 t. vanilla Spray a 9 x 13 inch pan with Pam. Peel and core apples, cut into 8 pieces each. Spread each crescent roll slightly and wrap one piece of apple in it. Place into the prepared pan. Melt butter and add the sugar and vanilla; mix well. Pour Mountain Dew over dumplings in pan and then spoon sugar and butter mixture over all. Topping: 1/4 cup sugar 3/4 t. cinnamon Mix together and sprinkle over dumplings. Bake uncovered for 40 minutes at 350 degrees. | Penny Henry

11: ______________________ | --------------------------------------------------------------- | 1 cup sour milk very scant 1/2 tsp. soda 1/2 tsp. baking powder flour to make batter thin enough to drop from spoon, but not pour. Fry in just enough lard to keep from sticking. | Silver Dollar Flapjacks
12: My Uncle Ross was quite a character. When he and my dad were young they used to ride the motorcycle and actually change seats in mid-trip going about 80 mph down the highway. He owned a store where you could buy lemon cookies 3 for a penny. He sold everything from Levis to frozen chicken backs, and had a Coca-Cola bottle display with bottles from every state. | William Ross Henry Jr. | Lineage: William Ross Henry, Sr.
13: Dough for fried pies | Raisin Pie 1 1/2 cups seedless raisins 1 1/2 cups boiling water 2 tablespoons flour 1/2 cup sugar 1 tablespoon butter rind and juice of one lemon Cook raisins in boiling water until tender. Mix flour, sugar, and butter and add to raisins. Continue to cook and stir until thick. Add lemon rind and juice. Cool slightly and bake between 2 crusts.

15: Hungarian Goulash 3T oil 1 large onion 1lb. ground chuck 1 can tomatoes 1 small can tomato sauce pepper, paprika, oregano to taste Saute onions in oil. Add meat and brown. Add other ingredients and cook slowly for an hour. Potatoes or macaroni may be added. I usually add pinto beans, too. | Pecan Pralines 2 1/2 cups granulated sugar 1 small can evaporated milk 4 T butter Drop or two of vanilla 2 1/2 cups shelled pecans Cook sugar and milk until it drops making a soft ball in a cup of cold water(232 degrees on candy thermometer). Remove and cool slightly. Add butter and vanilla. Stir slightly and add pecans. Before hardens, drop on wax paper with teaspoon. | Eileen said,"Mother always made these (pralines) at Christmas time for Daddy to take to work. 16: eileen mitchell apricot chicken 2 lbs. chicken tenders/breasts 1 bottle russian dressing 1 pkg. onion soup mix 1 jar apricot preserves brown chicken and set aside. Mix dressing, soup mix and preserves. place chicken in baking dish and pour mixture over, covering completely. bake one hour at 350. uncover and bake 15 more minutes. | Eileen Mitchell chili cheese frito salad 3 (14oz.) cans of corn, drained 1/4 red pepper, diced 1/4 green pepper, diced 1/4 red onion, diced 1 cup grated cheddar cheese 1 1/4 cup mayonnaise 1 (9 1/4 oz) bag chili cheese Fritos combine first 6 ingredients. refrigerate. just before serving add fritos. enjoy. not good as leftovers. | eileen mitchell | Lineage: William Ross Henry, Sr.
17: Family Chili with Beans one alarm 2-lbs lean ground beef (90/10) 1-large yellow onion diced 1-can diced tomatoes 1-can Rotel tomatoes 4-small cans tomato paste 4-cans dark red kidney beans 3-cloves garlic diced 2-T white sugar 1-cup cheddar cheese 1-small jalapeno pepper diced and seeded 1-generous dash Tabasco 1-qt water (more or less to taste) salt/pepper to taste in stock pot crumble meat and saute in 2-T olive oil. Add onions and saute until translucent. Add remaining ingredients except cheese (more or less water to get desired consistency). we like ours soupy for dunking bread or crackers. simmer for two hours. Serve in bowls topped with cheddar cheese. Pair with iced tea, cold beer, or your favorite beverage. | lima bean soup 1 lb. large lima beans 1 c. carrots thinly sliced 1 med. onion diced 1 c. thinly sliced celery 1 ham hock 2 med. garlic cloves diced 2 bay leaves 3 chicken bouillon cubes salt/pepper to taste sort and soak beans overnight in water. combine with all other ingredients in large pot with 2 qts water. simmer until beans are soft. remove ham hock, clean meat from bone and return meat to soup. remove bay leaves. serve with sour dough bread and a good wine. yummy! | beverly hettle | Lineage: William Ross Henry, Sr.

19: These cookies are fruitcake cookies that Mother made every Christmas. This recipe makes a lot of cookies and they are delicious. I make them every year. When Omar and I got together we were delighted to find out that we liked so many of the same things and Lizzies are favorite cookies of both of us. So are fried chicken livers, so we laughed at the fact that we love "Lizzies and Livers." This recipe can get a bit costly with all the individual ingredients so I have been using the fruitcake fruit that is mixed together in a package at the store. It's a bit cheaper that way. Sometimes I leave out the dates and use regular raisins. Tastes great! The food stains on this original recipe make me wish I could have made it a "scratch and sniff" page. | When my mom and dad married, my grandfather gave my mother a rolling pin and told her to use it any way she saw fit. We think he meant on my dad if necessary.
20: 1 cup butter 1 cup chopped pecans 2 c. sugar 1 can (4oz) coconut 5 eggs 4 cups sifted flour 1 T. vanilla 1/2 t. soda 1 (8 oz) pkg. chopped dates 1 t. salt 1 (1 lb.) pkg orange slice candy, chopped 3/4 c. buttermilk Cream butter and sugar until fluffy. Beat in eggs, one at a time. Add vanilla. Mix candy, dates, nuts and coconut with 1/4c. flour. Sift remaining dry ingredients; alternately fold into creamed mixture with buttermilk. Fold in fruit/nut mixture. Spoon into well-greased and floured 10" tube pan. Bake in slow oven (300) 2 1/2 hours. Remove cake from oven and pour on a syrup of 1 t. each grated orange and lemon peel, 1/4 c. each orange and lemon juice and 1/2 c. confectioners sugar. Cool cake on rack; then remove from pan. For improved flavor and ease in cutting, wrap cake in foil and refrigerate at least one day before serving. | Chocolate Pie Sift or mix together 1 c. sugar, 3 T. flour & 5 t. cocoa. In top of double boiler beat 3 eggs lightly, add 1 1/2 c. milk. 1 t. vanilla, pinch of salt and 1/2 block of butter. Add sugar, flour and cocoa. Cook mixture until firm. Don't stir all the time but frequently or it will burn. Should take about 15 minutes. Pour into cooked pie shell. Cool. put into refrigerator. Cover with Cool whip. | For really good southern fried chicken, soak chicken in buttermilk for 30 minutes to 24 hours before rolling in mixture of flour, baking powder, salt and pepper. You will not taste the buttermilk and you'll get a wonderful crust on the chicken. I always cook it in a cast iron skillet but it is just as good in a deep fryer. | "yikes!" | The cake was brought to Mom as a Christmas treat from Coach Jimmy Bates. When she asked him for the recipe he told her it was his mom's secret recipe. I think it took her a couple of years before he relented and actually asked his mom for the recipe. 21: Homemade Hot Rolls 2 c. lukewarm water 2 pkgs. dry yeast 1 T. salt 1/4 c. sugar Mix. Let stand until yeast dissolves. Add 2 cups flour, 1 egg, 1/4 c. melted shortening and 3 cups of flour. Mix together till all mixed well. Let rise till double. Will not be real thick. Flour board heavily. Knead dough until you can roll it. Roll about 1/2 inch thick. Cut with biscuit cutter. Place in well greased pan and let rise until double. Bake at 450 degrees till browned well. | Pancakes with Dad 1 c. all-purpose flour 1 T baking powder 2 T sugar 1 t. salt 1 large egg, beaten milk enough to make them as thick or as thin as you like. 1 top full of vanilla. Dad made my two 1st and then added more milk because he liked them thin. Mix 1st 4 ingredients, then add egg and milk. Beat it up good. Place enough mixture on a 350 degree greased skillet to make the size you want. When bubbles appear and begin bursting, flip to the other side. Note: approx. 2-3 minutes per side. | My dad used to get me up at 3 AM to eat pancakes. He would put the Ribbon Cane syrup out so it could warm up, and while it was doing that we would go to the garage and play ping pong. When he felt the syrup was ready, we'd go in and he would make pancakes. Story told by Donny Henry | Donald Henry
22: PIG PICKIN' CAKE | 1 pkg yellow cake mix 1- 11 oz can mandarin oranges (including juice) 3/4 c. oil 4 eggs 1- 8 oz cream cheese, softened 2 eggs beaten Mix all ingredients. Place in 3 round cake pans (greased & floured). Cook per temperatures on cake mix. Cool completely. FILLING: 1 large. container of Cool Whip 1 small box vanilla instant pudding 1- 10 oz. can crushed pineapple Mix all 3 ingredients. Refrigerate. Spread filling between layers and on top. Refrigerate until serving. PIG PICKIN' IN SOUTH CAROLINA Don says "Catch a pig. Dress it out and cook it, (in the skin), over a slow fire on the grill for about 6-8 hours. When it's time to eat, walk by the grill and "pick" off the meat you want to eat. Then enjoy the "Pig Picking Cake", South Carolina style." | Don Henry
23: Laura Henry Laura's Breakfast Casserole 1 lb. spicy bulk sausage 2 c. milk 1 t. salt 1 t. dry mustard 6 eggs 6 slices white bread, cubed 1 c. grated sharp cheese Saute sausage. Drain. Beat eggs together with milk, salt and mustard. Layer bread cubes, sausage and cheese in 9 x 13 dish. Pour egg mixture on top. Refrigerate overnight. 350 45 6-8 | Laura Henry Cheese Bread 6 eggs well beaten 1/2 lb. cheddar cheese 1 c. Romano cheese 1 t. baking powder 1 c. flour or cracker meal Mix together. Should be a little thicker than cake batter. Using cookie sheet, grease pan well. Bake at 350 for 20 minutes or until done. This is for wedding soup. | Italian Wedding Soup 5-6 bunches endive, washed several times, steam cooked. Be sure to squeeze out all the water. I wrap in towels and press again to be sure most of the water is out. Chop endive into small pieces. 2 large cans of chicken broth 3-4 chicken breasts, shred the meat Meatballs 1 lb. ground pork bread crumbs (grate stale Italian bread) Romano cheese (lots) garlic powder salt pepper 1 egg basil flakes Mix all and roll into little balls (less than teaspoon size). Fry them and set aside. Heat the soup, add the endive, shredded chicken, meat balls. Top with cheese from cheese bread recipe. Pass around extra Romano cheese. | Our little Italian Laura Henry

25: Fried Shrimp (serves 4) 2 eggs 1 c. milk 1 lb. large raw shrimp 1 c. flour 1 1/2 t. garlic salt 36 saltines, smashed vegetable oil for frying Beat eggs and add milk. Clean and de-vein shrimp. Split down the middle to butter-fly. Dip into flour seasoned with garlic salt. Then dip into egg/milk mixture, then in smashed crackers. Fry in hot oil until brown. Deb says, " This recipe came from the woman who started the first restaurant in Neiman Marcus." She thinks her name is Helen Corbit. Debbie finds these better than the ones they serve at Broccato's in Shreveport. Wow! | Lime Jello Salad 1 pkg. lime Jello dissolved in 1 1/4 c. boiling water 1 small can crushed pineapple, drained 3/4 c. Miracle Whip 1 c. miniature marshmallows 1 c. Cool Whip Dissolve Jello and let it set up for a while before adding other ingredients. Put all together in mold and put in fridge until set. Take out of mold by rubbing a warm towel on the bottom of the mold just until it loosens. | Chicken Enchiladas 1 fryer 1 large onion diced 4 cloves of garlic, minced 1 large can mushrooms 1 large family size can of cream of mushroom soup 1 can diced green chilis 1 lb. Monterrey Jack cheese 1 8oz. tub sour cream 8-10 flour tortillas salt and pepper for taste Boil fryer with onion and garlic. De-bone. Strain and reserve 1 1/2 c. broth. Combine 1 cup of broth with chilies, 1/3 can of mushroom and the soup. Set aside. Combine chicken, rest of mushrooms, sour cream, 1/3 of the Jack cheese, salt and pepper. Take 1/2 cup of the reserved topping and place on bottom of 9 x 13 glass dish so the enchiladas won't burn. Take a good amount of the sour cream chicken and place it in the middle of a tortilla, roll, and place in the dish, seam side down. Finish up with all the chicken mixture and cover with the green chili sauce and top with the rest of the Jack cheese. Bake at 350 until brown and bubbly. Let rest 15 minutes before cutting. When I finally realized that dating was too much trouble, I called a friend and told her that dating was NOT my thing and I needed to find a man to settle down with and get married. She was so excited and told me that she was waiting for my call because she wanted to introduce me to a man she deemed worthy. I met Tom in June of 90 where shortly after we had our first dinner date with my friend and her husband. She made this recipe. After 21 years it is still our favorite dish. 27: I may live in Calif. but I was born and raised in the South and I'm Southern. Being Southern doesn't mean that I'm not well educated. I may say fixin' and ya'll and honey, bless a lot of hearts and I might even 'piddle around. I might refer to my grocery cart as a buggy, but that's OK, because I'm polite and say Ma'am and Sir. SOUTHERN BY THE GRACE OF GOD!!!!!A GRITS GIRL, RAISED IN THE SOUTH, THAT'S ME...WOULD NOT CHANGE IT. So here's some of my favorite recipes. Hope you enjoy them. 28: GUMBO | My grandfather, Billy Henry, loved Chex Mix. I fixed him a container every Christmas. He was a very special person to me, and I loved him dearly. | Chex Party Mix 6 T butter 2 T Worcestershire sauce 1 1/2 t. seasoned salt 3/4 t. garlic powder 1/2 t. onion powder 2 2/3 cups Wheat Chex 2 2/3 Corn Chex 2 2/3 Rice Chex 1 c. garlic flavored bagel chips Melt butter in open roasting pan in preheated 250 degree oven. Stir in seasonings. Gradually add all other ingredients. Stir to coat evenly. Bake 1 hour, stirring every 15 minutes. Spread on paper towels to cool. Store in airtight container. | If you're from the South you have to have a GUMBO recipe. Here's mine. It's easy and you can add Andouille sausage, fish, and other things to it. Without the shrimp it freezes really well. We keep containers on hand most of the time.
29: KEVAN USED TO EAT THESE BEFORE EACH BASEBALL GAME. ROBERT PREFERRED ROLLER COASTERS BY CHEF BOYARDEE. BOTH BOYS LOVED BASEBALL | Omar and I made these pies the night before this went to press. We used Pillsbury pie crusts as a short cut and found that they will not fry with that pie crust. BUT they will bake and are yummy. The recipe crust will fry and tastes more like a biscuit, and the other pie crusts are flakier and more delicate. Also, the recipe makes a LOT of filling so double your crust and keep some pies in the freezer.
30: Spicy Red Beans and Rice I make a lot of it...play with the measurements if you like. 4 packs Louisiana hot sausage, sliced 3 green bell peppers, diced, seeds removed 2 red bell peppers, diced, seeds removed 1 large onion, diced 2 lbs. of 4-6% ground beef (browned) 32 oz. beef or chicken stock 12 oz. water 8-10 cloves garlic Garlic pepper Chili powder Crushed red pepper Medium bottle of Tabasco Sriracha (Hot chili sauce) Rice 4 cans kidney beans Dice onion, bell peppers and put in a large stock pot with some olive oil. Cook for about 7-8 minutes. Add stock, water and garlic. Add 5-6 shakes of garlic pepper, cayenne, chili powder and 3 shakes of crushed red pepper. Add sausage. Add half a bottle of Tabasco...yes, half of it. Add a 2 second squirt of Sriracha. Drain kidney beans and add to the pot. Simmer for about 30 minutes. Brown the beef and drain. Add to the pot and add the rest of Tabasco and 5-6 more shakes of garlic pepper. Simmer for another 20 minutes. Make rice and serve it 1 of 2 ways...Serve the rice hot and add the red beans on top or let them cool and add the rice to the pot...if you add the rice to the pot hot, it will overcook the rice. Good luck and enjoy! | Chicken Enchilada Casserole 2 # chicken breasts 10 gold corn tortillas 1 # Monterey Jack cheese Small can sliced olives Bushel of cilantro 1/2 t. garlic pepper 1 large can green enchilada sauce 2 t. olive oil Cut up chicken into bite size pieces. Fry chicken in olive oil, garlic pepper, and chopped cilantro. Dip tortillas in green sauce. Put down in fives...tortillas, 1/3 cheese, 1/2 olives, then tortillas, rest of cheese and olives. Drizzle some on top if left over. Bake for 45 minutes at 350. Let rest 10 minutes before cutting. | Granny's Breakfast Scramble 2 large Russett potatoes 1/2 pkg. thick cut bacon 6 jumbo eggs Cut bacon into 1" squares. Cook until crisp. Set aside. Chop potatoes coarsely. Cook in bacon grease until golden brown. Slightly beat eggs. Add garlic pepper and salt and pepper to taste. Add 1 T. cold water to eggs. 31: Frawg's Green Bean Salad 2 cans whole green beans, drained and rinsed 1 red bell pepper, diced 1/2 white onion, coarsely chopped 1 16 oz. block Pepper Jack cheese, cubed 10-15 cherry tomatoes, halved 2 T balsamic vinegar 2 T Original Apple Mustard 2 t. Tadpole's Tuscan Rub 1-2 t. olive oil Combine all ingredients, stir to coat, and chill to serve. 6-8 servings. Meatloaf 1/2 c milk 2 white bread slices 1 1/2 lbs. ground beef 2 eggs 1 small onion, peeled 1 1/2 t. Apple Hickory Wood Smoked Sea Salt 1/2 t. pepper 12 ounces diced tomatoes, drained 2 T Hot N' Horsey Apple Mustard 2 T Original Apple BBQ Place the milk and bread in a large mixing bowl, and let stand until the milk is absorbed. With 2 forks, break the bread into crumbs. Add the beef and mix. Make a hollow in the center of the meat and break the eggs into it. Beat the eggs a little; grate the onion into the eggs. Add salt, pepper, BBQ and mustard. Mix all together. Shape into a round cake, cover with tomatoes and place in the slow cooker. Pour extra BBQ on top. Cover and cook on low for 5-7 hours. 32: Toni's Stuffed Cabbage Approximately: 1 1/2 lbs. ground pork, ground twice 1 finely chopped or grated onion 1 cup cooked rice basil-salt-pepper 1/4 cup chopped garlic 1 cup grated Romano cheese 2 eggs (Mix Well) Sauce: olive oil 3-4 cloves garlic 1 can tomato puree and 3/4 can water 1 can tomato paste and 2 cans of water basil (dried) lots salt and pepper Fry the garlic in the olive oil. Add the puree and the water. Add the paste and water, salt, pepper and dried basil. Cabbage, bacon, Romano cheese Microwave 1 medium head of cabbage covered with plastic wrap-take off each layer of cabbage as it becomes tender and fill with meat mixture and fold. Pour sauce in the bottom of a heavy baking pan and then layer the cabbage rolls, more sauce, Romano cheese., bacon strips across the top of the layer. Then do another layer ending with bacon, sauce and cheese.
