Love you, Jenni | Ceviche | 2 lbs cubed sea bass or shrimp * 1 red onion cut into strips 1 red pepper cut into strips * 2 tsp chopped parsley 4 tbs cooking oil * 1 celery stick finely chopped 1 tsp hot pepper sauce * 8 tbs lemon juice salt and pepper Steam the bass until color changes to white. (aprx 3 min) or cook shrimp. Set aside. In a glass bowl mix the lemon juice, parsley, oil, hot pepper sauce, onion, celery, salt and pepper Add the sea bass/shrimp which should still be firm and coat with the ingredients from the bowl Let stand in bowl for 1 hour Serve with popcorn and fresh bread | Mami and Melanie
5: Locro 4-6 servings 1/4 cup oil or butter 1/2 onion, minced 3 cloves garlic, minced 1 1/2 lb potatoes, peeled 4 cups water or stock 1 cup milk salt and pepper to taste 1 cup muenster or mozzarella cheese, shredded 1. Heat oil or butter over medium flame in a large pot. Add the onion and garlic and simmer until the onion is translucent. 2. Stir in the potatoes, water or stock, milk, salt and pepper, and bring to a boil. Reduce heat to low and simmer until potatoes are falling apart, 30-45 minutes. Mash the potatoes with the back of a spoon to thicken the soup, leaving it chunky. 3. Remove the soup from heat and stir in the cheese.. Adjust seasoning and stir immediately,. 7: Phylis Styron - Momma | Cubed Steak | *Philip's Birthday Meal Request | 4 pieces of cubed steak but in half Salt, Peeper, Powdered garlic - put each on the steaks Toss in flour Put enough oil in a skillet to fry, and heat the oil. Brown meat on each side on medium heat Take meat out of pan. Make Thick White Sauce (see recipe) and add a jar of Heinz Beef Gravy. Once gravy boils, add the meat. Cover and simmer on low to medium for at least an hour (longer for more tender steaks). Serve over yellow rice.

9: Potato Pie Makes 10 servings 1 lb potatoes 1 lb ground meat or turkey Handful of chopped white onion Pinch of each: salt, cumin, black pepper 1/2 tsp minced garlic 1 tsp oil 1/2 cup frozen peas and sliced carrots 1 egg, cooked and sliced 1 egg white Sliced mozzarella cheese Green olives Heat oven to 350. Peel potatoes and cook with a pinch of salt. Cook meat with oil, onion, garlic, cumin, and pepper. Add peas and carrots. Mash potatoes once fully cooked. Spray baking dish with non-stick spray and begin layering: potatoes, then a few slices of egg, then meat. Repeat layers. Finish with a layer of potatoes and cover with egg white. Bake for 30 minutes. Let cool then garnish with cheese and olives.
10: MOMMA'S | 6-7 oz ziti noodles (about 2 cups) 2 Tbs grated onion 1 tsp salt 1/4 tsp pepper 3 cups shredded cheddar cheese 2 cups Thin White Sauce (see recipe) 1 Tbs butter/margarine Heat oven to 375. Meanwhile boil noodles and drain. Place half the noodles in a 2 qt casserole sprayed with Pam. Sprinkle on half the onion, salt, pepper, and 1/2 the cheese. Repeat the layer. Pour white sauce over, dot with butter, cover with foil. Bake 30 minutes. Uncover and bake 15 more minutes. | & | By Phylis Styron
11: THIN WHITE SAUCE | Makes 1 cup 1 tsp butter of margarine 1 Tbs flour 1/4 tsp salt 1/8 tsp pepper 1 cup milk Melt butter in saucepan over low heat. Blend in flour, salt, and pepper. Stir constantly. Cook over low heat stirring until mixture is smooth and bubbly. Remove from heat. Stir in the milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. To make THICK WHITE SAUCE, increase flour to 1/4 cup. | Mom's mac n chz is a staple at Styron/Leonard family events. It's on her "to bring" list every Thanksgiving, Christmas, and Easter.
12: Elsa Ramos -Mami | Fanesca | Fanesca is a typical Easter dish. We have so many fond memories of Mami planning, preparing, and serving this famous dish. We would have people over and try to describe this to them... the closest was a vegetable peanut soup! -Jenni
13: Ingredients 1 pound salt cod 1 clove minced- garlic 1 bay leaf 1 cup cooked corn 2 cups cooked- zucchini 1 cup green beans 1 cup light cream 3 hardboiled eggs | 2 medium onions 1/4 t ground- cumin 1 cup rice cooked in milk and water 2 cups winter- squash 1 cup green peas 4 cups milk 4 T butter | 1/4 t oregano 1 1/2 cups- cooked cabbage 1 cup cooked- fava beans 1/2 cup peanuts 1 cup cheese salt pepper grated Parmesan | Directions Soak the cod in water to cover for 12 hours changing the water frequently Drain the fish and place into a saucepan with fresh water to cover Bring to a boil, lower the heat and simmer until the fish is tender Drain and put the stock aside Skin and de-bone the fish and cut into small pieces Chop all vegetables into small pieces Heat butter in a saucepan and sauté onions and garlic add seasonings and sauté Add 1 cup water to onions and garlic and bring to boil Add cooked rice and vegetables, fish, fish stock, milk and cream Let simmer for 5 minutes stirring occasionally Add the chopped cheese to taste. Let simmer until the soup is thick Garnish with hardboiled egg and Parmesan.
14: North Carolina Hot Dogs 1 bag angel hair shredded cabbage 1 medium onion finely chopped 1 Tbsp yellow mustard mayonnaise (enough to make cabbage wet) 1/2 to 1 tsp sugar to taste 1/2 to 1 tsp vinegar salt and pepper to taste Mix well. 1 large can of Hormel Chili, no beans. Warm chili while cooking wieners. Fry or boil wieners. Put cooked wieners in buns. Top with slaw, then chili. Add shredded cheese. Wrap each dog in wax paper and let sit for a few minutes before serving. | For 8-10 dogs

16: CORN | Tia Gordy's Torta de Choclo | Makes 10 servings Ingredients 1 can whole sweet corn 1 can cream style sweet corn 1 pkg corn muffin mix 8 oz sour cream 1 egg | Heat oven to 400 Dump all ingredients in a bowl and mix Spray baking dish with non-stick cooking spray Add mix and cover with aluminum foil Bake 30 minutes covered Remove foil and bake 30 minutes uncovered. Let cool and serve.
17: Humitas | Ingredients 3 cups fresh grated corn meal 3 Tbs butter 2 Tbs grated cheese 1/2 tsp salt 1/2 tsp flour 2 eggs 9 corn husks Remove Kernels from the ear and grind into a corn meal. Melt butter in frying pan. Mix melted butter, corn meal, cheese, salt flour and eggs. Mix with wooden spoon. Wash the corn husks. Place a spoonful of mixture in the center of each husk. Fold husk over the mixture. Place in a pot and steam for 45 minutes.
18: BLACK-EYED PEA SALAD | by theresa and gary west | Serve on New Year's Day with collard greens to ring in luck and prosperity! | 2 cans black-eyed peas, rinsed and drained finely chopped celery chopped tomato chili powder, salt, pepper to taste mayonnaise Combine all ingredients., mixing lightly to keep beans whole.. Chill in fridge for at least 30 minutes. Stir before serving.
19: Mom's Potato Salad | by Phylis Styron love, MOM | 2 lbs small red potatos (about 6-10) 1/4 cup finely chopped onions 1 tsp salt 1/8 tsp pepper 1/4 cup Italian Salad Dressing 1/2 cup mayonnaise 2 hard cooked eggs | 4-6 servings | Wash potatoes. Add potatoes to 1 inch salted water (1/2 tsp salt to 1 cup water), or enough water to cover the top of potatoes. Heat to boiling, reduce heat to low rumble and cover. Cook 30-35 minutes or until tender. Drain. Let potatoes cool then peel. Cut potatoes into cubes. Combine in bowl with onion. Sprinkle salt and pepper. Mix with Italian Dressing. Cover and refrigerate at least 2-4 hours. Just before serving, add eggs and mayonnaise. Toss until potatoes are well coated. | Philip - The family LOVES your version of this with skin-on potatoes. Way to take over Mommas recipe! Pretty soon we'll have to rename it "Philip's Potato Salad!" - Dana
20: Empanadas | DOUGH: 2 cups flour , 2 tbsp lard, 1 egg, 1/2 cup milk, 2 tsp baking powder,1/2 tsp salt. MEAT MIXTURE: 2 large onions, 1 lb beef, 2 eggs, pepper, cumin, salt and red pepper to taste, raisins and olives. PASTRY: Sift the dry ingredients, add the cold lard. Beat the egg, add to the milk then add both to the flour and lard. Roll out into small quantities and fill. FILLING: Cube the onion and meat. Heat 3 Tbsp of lard and add 1 Tbsp of paprika. Remove from fire. Let stand a minute. Pour colored lard over the onion and meat, adding salt, pepper, and cumin. Let cool completely and put into the pastry. Add pieces of hard boiled egg, raisins and olives, Brush with milk or melted butter, then bake in a hot oven for 20 minutes at 400-450.
21: Empanadas and Mami went together. She never actually wrote a recipe down, but this one has all the elements that scream MAMI - cumin, raisins, onions. I will never forget all the times she made them for friends, sold them with Dad during their short stint with their home business, "The Empanada Factory, and made them for church events. -Jenni
22: Aunt Loretta's Heath Bar Crunch Cake | 1 box german chocolate cake mix 1 can Eagle Brand condensed milk 1 jar caramel syrup 1 8oz container of Cool Whip 3 to 4 Heath Bars broken into small pieces. Bake german chocolate cake according to box directions in a 9x13 baking pan or dish. Once baked, while hot, make several holes in the cake. Pour condensed milk and caramel sauce over the hot cake. Let cake completely cool. Top with cool whip then Heath Bar pieces. Store in the fridge.
23: P | I | N | E | BY Dana Styron Merritt | BARK | Christmas Favorites | 1 bag chocolate chips 2 cans condensed milk 1 box crushed graham crackers 1 tsp vanilla Preheat oven to 350. Mix all ingredients. Spread into greased 8x8 pan. Bake at 350 for 15 minutes. | Mom's Graham Cracker Chews | 2 sticks butter 1 cup light brown sugar 1 sleeve saltines 1 12 oz bag chocolate chips Preheat oven to 400. Place saltines on a disposable cookie sheet Boil butter and sugar for 3 minutes stirring constantly. Pour mixture over crackers. Immediately top with chocolate chips. Spread evenly with a spatula as the chips begin melting over the warmed mixture. Refrigerate until hardens. Break into pieces and serve.
