2: 1 | Banana Bread 1 and 3/4 cup flour 1 and 1/2 cup sugar 1 tsp baking soda 1/2 tsp salt 2 eggs 2 bananas (or 1 banana, 1 apple) 1/2 cup vegetable oil 1/4 cup plus 1 tbsp buttermilk (milk & lemon juice) 1 tsp vanilla extract Pour batter into greased baking pan and bake at 325 for 80 minutes.
3: 2 | Ambrosia Salad 2 bananas 3 cups miniature marshmallows 2 cups chopped apples 1 can (8 oz) pineapple bits, drained 1 can (8 oz) mandarin oranges, drained 1 cup halved seedless grapes 1/4 cup dried coconut 1 cup Cool Whip Mix ingredients together in a bowl.
4: 3 | Pasta Salad 4 cups pasta 1 can black olives 1/2 cup pepperoni 1/2 cup Italian sausage 1/2 cup salami (optional) Cook pasta and sausage separately. Add pepperoni and olives with pasta and sausage. Add olive oil if necessary.
5: 4 | Apple/Carrot Raisin Salad 4-5 large carrots OR 2 large apples 3/4 cup to 1 and 1/2 cup raisins 2 tbsp sugar 1 tbsp lemon juice 2 spoonfuls of mayonnaise (low fat) Shred carrots or dice apple, mix in bowl with raisins, add sugar, lemon juice and mayo.
6: 5 | Taco Salad 1 head iceberg lettuce, chopped 1 can dark red kidney beans, drained 4 oz or less of cheddar cheese 1 can sliced black olives 1 lb ground meat, cooked and chilled 3/4 tsp chili powder 1 tomato Combine all the ingredients with your favorite salad dressing.
7: 6 | Chili 1 lb. ground meat 2 cans tomato soup 1 can kidney beans, drained 1 can diced tomatoes 1 tbsp chili powder Cook meat and drain grease. Add other ingredients. Stir and heat 5 minutes. Add cheese and cornbread to each serving.
8: 7 | Fagioli 2 cups pasta (any thick, short pasta) 1 can White Northern American beans 1 Knorr Bouillon cube (chicken or beef) 1-2 potatoes, cubed 1 can tomato paste Boil water, add cubed potatoes (15 mins) then pasta. Once cooked, add beans, Parmesan cheese, tomato paste, and Bouillon cube.
9: 8 | Chicken Fajitas 2-3 chicken breasts cut into strips 3/4 cup Italian dressing 2 tbsps fresh lemon juice 1 onion 1 green, red, and yellow pepper in strips After preparing food (chicken, onion, peppers), cook in skillet with Italian dressing and lemon juice, add toppings (tomato, cheese, sour cream) to cooked ingredients in a tortilla.
10: 9 | Indian Curry 1/2 cup chopped onion 1/4 cup butter/margarine 1/4 cup flour 1 can (14.5 oz) chicken broth 1 cup half-and-half cream 2-3 tsp curry powder 2 cups cubed cooked turkey/chicken Hot cooked rice Sauté onion in butter until tender. Add flour, stir in broth; bring to a boil until thickened. Reduce heat; add the cream and curry. Add the meat. Serve over rice.
11: 10 | Lemon Herb Salmon 2 tsp grated lemon peel 1/2 tsp salt 6 tbsp butter/margarine, melted 1 salmon fillet (3-4 pounds) Parsley and thyme seasoned to taste Dress fish, place skin side down in greased baking dish, drizzle remaining butter on. Bake at 350 for 20-25 minutes or until salmon flakes easily. (yields 8 servings)
12: 11 | Macaroni & Cheese 1 and 1/2 cups elbow noodles 1 slice American cheese 1 spoonful of margarine (optional) 1/8 cup milk Heat noodles in water until soft, drain water and remove from heat. Add cheese, milk, and margarine to noodles and mix until melted. Great side dish is tuna fish: drain 1 can of tuna, and in separate bowl mix in 2 spoonfuls of mayo and 1 spoonful of relish with the tuna.
13: 12 | Mexican Lasagna 1 package of tortillas 2 cans of Bush’s chili beans 1 lb cooked ground meat Mexican cheese Cook meat and drain grease. Mix in beans. In a 9x9 oven-safe pan, start ripping tortillas to spread along the bottom of the pan. When one layer is made, add layer of bean and meat. Repeat tortilla and mix combo. Cover the top with cheese. Heat in oven at 350 until cheese has melted (~10 minutes). Top each serving with condiments (sour cream, tomato, lettuce, black olives, salsa)
14: 13 | Tostadas Hard round taco shells 1 diced tomato 1 cup chopped lettuce 1 can refried beans Cheese (Mexican or cheddar) Sour cream Grilled chicken cubes or ground beef Prepare meat if including, heat beans then spread over taco shell and add other ingredients on top.
15: 14 | Brownies 3/4 cup baking cocoa 1/2 tsp baking soda 2/3 cup margarine, melted 1/2 cup boiling water 2 cup sugar 2 eggs 1 and 1/3 cup flour 1 tsp vanilla extract 1/4 tsp salt 2 cups (12 oz) semisweet chocolate chunks In a large bowl, combine cocoa and baking soda; blend in 1/3 cup melted margarine, add boiling water, stir until well blended. Stir in sugar, eggs and the remaining margarine. Add flour, vanilla, salt. Stir in chocolate chunks. Pour into a greased 13x9x2 baking pan. Bake at 350 for 35-40 minutes. Cool.
16: 15 | Chocolate Chip Cookies 2 and 1/2 cups flour 1 tsp baking soda 3/4 cup margarine, melted & cooled 1 and 1/2 cup brown sugar 1 egg 2 tsp vanilla extract 1 cup semisweet chocolate chips Combine melted margarine and brown sugar. Stir in egg and vanilla extract. Add flour and baking soda. Stir in chocolate chips. Drop balls of dough onto a cookie sheet. Bake at 350 for 9-11 minutes.
17: 16 | Oatmeal Chocolate Chip Cake 1 and 3/4 cup boiling water 1 cup uncooked oatmeal 1 cup packed brown sugar 1 cup sugar 1/2 cup butter/margarine, softened 3 eggs 1 and 3/4 cup flour 1 tsp baking soda 1 tsp baking cocoa 1/4 tsp salt 1 package (12 oz) chocolate chips In mixing bowl, pour water over oatmeal, allow to stand 10 minutes. Add sugars and butter; mix. Add eggs, flour, soda, cocoa, and salt. Stir in half the chocolate chips. Pour into greased 13x9x2 pan. Sprinkle top of cake with chips. Bake at 350 for 40 minutes.
18: 17 | Pumpkin Bar 1 package (16 oz) pound cake mix 3 eggs 2 tbsp melted butter 4 tsps pumpkin pie spice 1 package (8 oz) cream cheese, softened 1 can (14 oz) sweetened condensed milk 1 can (16 oz) pumpkin 1 tsp cinnamon 1/2 tsp salt Combine mix, 1 egg, butter, 2 tsp pumpkin pie spice and beat on low until mixture is crumbly; press into 13x9 baking pan. In separate bowl, beat cream cheese until fluffy, add milk, 2 eggs, pumpkin, remaining pie spice, cinnamon and salt; mix until blended. Pour into crust. Bake at 350 for 35-45 minutes or until set. Cool then refrigerate. Top with cool whip and nutmeg mix.
19: 18 | Seven Layer Bar 1/2 cup butter/margarine 1 and 1/3 cup flaked coconut 1 (6 oz) package butterscotch chips 1.5 cups crushed graham crackers 1 (14 oz) can sweetened condensed milk 1 (6 oz) package semisweet chocolate chips Melt butter in pan in preheating oven to 350, mix in graham cracker and spread along bottom of 13x9x2 pan. Layer in chocolate, butterscotch, and coconut, then pour milk evenly over all. Bake at 350 for 30 minutes.
20: 19 | Summer Berry Pie 1 and 1/2 cups sugar 6 tbsp cornstarch 3 cups cold water 1 pkg (6 oz) berry gelatin 2 cups fresh blueberries 2 cups sliced fresh strawberries 2 cups fresh raspberries 2 graham cracker crusts (9 in) In saucepan, combine sugar, cornstarch, and water until smooth; bring to a boil; cook and stir for 2 minutes (until thick); remove from heat and stir in gelatin until dissolved; refrigerate for 15-20 minutes or until mixture begins to thicken; stir in the berries; pour into crusts and chill until set; serve with Cool Whip. (yields 2 pies)
