2: Baked Brie 8 oz. Brie cheese wheel 1 sheet of puff pastry (Pepperidge Farm) 1 egg white, slightly beaten Let the pastry come to room temperature in package (15-20min). Wrap brie with pastry & lay edges down on a pan. Brush with egg white. Bake at 400 for 20-25min. Serve with lingonberries & butter crackers. Chocolate Fondue 1 1/2 cups chocolate chips 1/2 cup heavy cream 1 tsp. vanilla Place in small crock pot on low for 1 hour. Stir occasionally..
3: Chex Mix 9 cups Chex cereal (3 corn, 3 rice, 3 wheat) 1 cup pretzels, 1 cup garlic bagel chips 2 tbsp Worcestershire sauce, 1/2 tsp. onion powder 6 tbsp butter, 1 1/2 tsp seasoned salt, 3/4 tsp. garlic powder Melt butter, mix with seasonings & toss over remaining ingredients. Chex Muddy Buddies 9 cups Chex cereal, 1 cup chocolate chips, 1/2 cup peanut-butter 1/4 cup butter, 1 tsp vanilla, 2 cups powdered sugar Melt & stir chocolate, peanut-butter, butter & vanilla. Pour over cereal. Place powdered sugar in gallon-size zip-lock bag, add coated cereal into the bag & shake. Spread on pan to cool.
4: Taco Seasoning Mix 1 1/4 tsp chili powder 1/2 tsp sea salt 1/2 tsp black or white pepper 1/4 tsp paprika 1/8 tsp garlic powder 1/8 tsp onion powder 1/8 tsp oregano, dried 1/8 tsp red pepper flakes, crushed | Caprese Salad 1 pint grape or cherry tomatoes or 2 large tomatoes (sliced) 8 oz fresh mozzarella pearls or ball (sliced), 1/2 oz fresh basil leaves 1 tbsp extra virgin olive oil, sea salt & pepper to taste Chop basil leaves, mix together & serve. | Guacamole 1 avacado white pepper, pinch sea salt, pinch/to taste 1 tbsp lime juice Mix together.
5: Tropical Coffee Cake 1 c sugar, 1/2 c vegetable oil, 2 eggs, 1 c sour cream 1 1/2 c flour, 2 tsp baking powder, 1/2 tsp salt 8 oz pineapple, crushed Topping: 1/2 c coconut, flaked, 3 tbsp sugar, 1/2 tsp cinnamon Cream together sugar, oil, eggs & sour cream. Add flour, powder, salt & pineapple. Pour into greased & floured 9x9 pan. Add topping. Bake at 350 for 40min. | Cinnamon Roll Oatmeal 1 c milk, 1 c water, 1/8 tsp salt, 1 tsp vanilla, 3/4 tsp cinnamon 1 c oatmeal, brown sugar to taste Bring milk, water & salt to low boil. Add oats & reduce heat for 5-8min.. Remove from heat, add vanilla, cinnamon & brown sugar.
6: "There is no love sincerer than the love of food." ~George Bernard Shaw | Very Banana Bread | Very Banana Bread 2 eggs, beaten, 3/4 c brown sugar, 1/2 c butter, 2 c flour 1 tsp baking soda, 1/4 tsp salt, 2 1/3 c bananas (mashed) Cream together eggs, sugar & butter. Add flour, b. soda, salt, & bananas. Pour into greased & floured loaf pan. Bake at 350 for 1 hour.
7: Oven Pancake with Fruit 1/3 c flour, 1 tsp sugar, 1/4 tsp salt, 1/3 c milk, 2 eggs Topping: 1/2 c vanilla yogurt, 2 c fresh or frozen(thawed) fruit (choose one) peaches, strawberries, etc. Granola (Nut Clusters -Nature's Valley) Heat oven to 400. Grease a round pan (sich as pie pan, spring form) & place in over to pre-heat. Blend together & pour into hot pan. Return to oven to bake for 15-20min. Blend together yogurt & fruit in food processor. Remove pancake from pan, top with fruit/yogurt & granola. | Baked French Toast 6 eggs, 1 1/2 c half&half, 6 tbsp maple syrup, 1 1/2 tsp vanilla, 2 tbsp sugar 1 tsp cinnamon, 1/8 tsp salt, 4 c bread (cubed), 2 tbsp butter (melted) Grease muffin pan. Toss butter with bread & place in muffin pan. Combine remaining ingredients & pour over bread. Bake at 350 for 20min. Serve with more maple syrup & whip cream.
8: Sour Cream Coffee Cake 1 c sugar, 1/2 c butter, 2 eggs, 1 tsp vanilla, 1 c sour cream 1 1/2 tsp baking powder, 1 tsp baking soda, 2 c flour Topping: 1/4 c brown sugar, 2 tbsp sugar, 2 tbsp butter, 1/2 c nuts Mix together & pour into 9x13 greased & floured pan, add topping. Bake at 375 for 35min. | Popovers 3 eggs, 1 c milk, 3 tbsp butter (melted), 1 c flour, 1/2 tsp salt Grease 8 (6oz) popover ramekins. Mix on low speed the eggs until frothy, add milk & butter. Slowly add flour & salt. Pour 1/3 c of batter into ramekins. Bake at 375 for 50min, then cut a slit into the tops of each popover to let steam out & then return to bake for 10 more minutes. Remove & Serve.
9: Thai Peanut Chicken with Noodles 4 boneless-chicken breasts (diced), 1 can coconut milk, 1 c celery (diced) 1 small can water chestnuts (diced), 1 can bamboo shoots 1/2 c peanut sauce (House of Tsang-Bangkok Padang) linguine noodles (boiled & prepared), 1 tbsp peanuts (crushed) Place chicken & coconut milk in pan and simmer on medium-low heat for 20min. Add remaining ingredients & simmer til tender. Serve over noodles. | 4 medium portobello mushroom caps, 2 tbsp olive oil 12 small sun-dried tomatoes, 2 tbsp balsamic vinegar 1/4 c parmesan cheese. Place mushroom top-side down on pan. Place 3 tomatoes on each. Drizzle with oil & vinegar. Sprinkle with cheese. Bake at 350 for 10min. | Portobello Mushrooms
10: 2 eggs (slightly beaten), 1 tbsp dijon/spicy brown mustard 1/2 c bisquick, 1 c bread crumbs, 1/4 tsp white pepper, 1/4 c chives 1/8 c shallots, 15 oz canned salmon or tuna (drained), 2 tbsp butter Dill Dip: 1/2 c mayonnaise, 1 tbsp dill weed, 3-4 tsp lemon juice Hamburger buns Mix together all ingredients except the butter. Shape into patties (4-6). In a pan, melt butter over medium heat. Add patties, cook 5-7 minutes on each side. Serve on buns with Dill Dip. | Salmon/Tuna Burgers | Ranch Roasted Potatoes 1 lb red potatoes (sliced), 1/4 c olive oil, 1 tbsp dry ranch powder Toss all together in a zip-lock bag. Bake at 400 for 45min. Stir every 15min.
11: Chicken & Broccoli Alfredo 1 lb boneless chicken breasts (diced), 2 tbsp butter, 1/2 c milk 1 can cream of mushroom soup, 1 c broccoli, 1/2 c parmesan cheese (grated) 1/4 tsp white pepper, 1/2 lb dry linguine Heat butter in pan, add chicken & cook. Add soup, milk, cheese, pepper. Boil linguine & add broccocli last 5 minutes while boiling noodles. Drain. Mix together & serve. | Herb Roasted Potatoes 1 lb red potatoes (diced), 2 garlic cloves (minced), 1/4 c olive oil, 1/2 tsp salt 1/4 tsp white pepper, 1 tsp rosemary (crushed), 1 tsp thyme leaves (crushed) Mix together & pour over potatoes. Bake at 400 for 45min. Stir Every 15min.
12: 3 Cheese Garden Pizza 1 pkg refrigerated pizza crust 1 tbsp extra virgin olive oil 2 cloves of garlic, minced 4 oz cheddar cheese, shredded 4 oz mozzarella cheese, shredded 1 oz parmesan cheese, shredded 1 tsp Italian seasoning 1/8 c onion, minced 2 Roma plum tomatoes 4 oz mushrooms, sliced Bake at 400 for 20min.
13: Shrimp Corn Chowder 2 tbsp butter, 2 leeks (white & light green parts chopped only) 1 fennel bulb (chopped), 2 tbsp flour, 8 oz clam juice, 3 c whole milk 1 lb potatoes (peeled & diced), 10 oz frozen corn, 2 tbsp parsley, 1/2 tsp salt 2 tbsp lemon juice, 3/4 lb medium shrimp (peeled & deveined), 1/4 tsp pepper Heat butter in large pan over medium heat. Add leeks, fennel, salt & pepper. Simmer for 5min, stir in flour. Add clam juice, milk & potatoes, bring to a boil. Simmer for 15min til tender. Add shrimp & corn & simmer for 5min. . Stir in lemon juice & parsley.. | Margarita Pizza 1 pkg refrigerated thin crust pizza dough, 4 oz fresh mozzarella, 2 tsp parsley 1/2 pint grape tomatoes, 2 tsp fresh basil, 1 tbsp extra virgin olive oil Spread dough over pan. Slice & toss remaining ingredients together and spread over dough. Bake at 400 for 20min.
14: Waldorf Pasta Salad 2 1/2 c dry rotini pasta, 1 c turkey (cooked, diced) 1 large apple (peeled, diced), 1/2 c celery (diced) 1/2 c walnuts (chopped), 1/2 c mayonnaise 1/4 c lemon yogurt Cook pasta & rinse with cold water. Mix together turkey, apple, celery & walnuts. Sitr together mayonnaise & yogurt. Toss all together, chill & serve. | Taco Salad 1 lb ground beef, browned with 1 pkg taco seasoning. 1 c cheddar cheese (shredded), 1 c tomatoes (diced) 1 c lettuce (chopped), 8oz French dressing, 1 pkg Doritos 1/2 c black olives (diced) Toss all together & serve.
15: Kung Pao Chicken with Noodles 1/3 c canned chicken broth, 1/3 c soy sauce, 1/3 c dry sherry 2 tbsp cornstarch, 2 boneless chicken breasts (diced), 12 oz linguine 1 1/2 tbsp oriental sesame oil, 2 tsp garlic (minced), 2 tsp ginger (minced) 1/2 tsp red pepper (dried & crushed), 2 c snow peas, 1/4 c chives 1/2 c peanuts (roasted) | Cook & drain noodles.. Toss chicken in 1 tbsp cornstarch. Heat sesame oil in pan on high. Add garlic, ginger, red pepper. Add chicken & saute for 2min. (til cooked). Remove chicken from pan. Add snow peas & chives to pan. Return chicken to the pan. Add chicken broth, soy sauce & sherry to pan. Add peanuts. Serve over noodles.
16: Chicken Carbonara 7 oz spaghetti noodles (dry), 8 slices of bacon, 1/2 c chives/shallots 1 garlic clove (minced), 2 c chicken (cooked & diced) 1/2 c parmesan cheese (grated), 1/2 c heavy cream Cook & drain noodles. Cook bacon, remove bacon from pan, reserve 1 tbsp drippings in the pan. Add chives/shallots & garlic. Stir in noodles, chicken, cheese & heavy cream. Heat for 5min. Toss with bacon & serve. | 2 lb hash browns (thawed), 2 c swiss cheese (shredded), 1/2 tsp salt 1 pint heavy cream, 8 tbsp butter (melted), 1/2 tsp pepper. Place hash browns in greased 9x13 pan. Cover with cheese. . Stir cream, butter, salt & pepper together & pour over cheese. Bake 375 for 1 1/2 hours. | Swiss Potato Bake
17: "Pay Day" Salted Peanut Chews Crust: 1 pkg yellow cake mix, 1/3 c butter, softened, 1 egg, 3 c marshmallows Topping: 2/3 c corn syrup, 1/4 c butter, 2 tsp vanilla 10 oz peanut-butter chips, 2 c rice krispie cereal, 2 c salted peanuts Mix together cake mix, butter & egg. Press into bottom of ungreased 9x13 pan. Bake at 350 for 15-20min. Remove & sprinkle with marshmallows.. Return to oven for 1-2 min. Cool. In a separate pan, heat on low the syrup. butter, vanilla & peanut-butter chips til smooth. Remove from heat & stir in cereal & peanuts. Spread over marshmallows.
18: No Fail Sugar Cookies | 1 c butter (softened), 1 c sugar, 2 eggs, 1/2 tsp vanilla 3 c flour, 1/2 tsp baking powder, 1/2 tsp baking soda Mix well & chill for 1 hr. Bake at 375 for 10min. Powdered Sugar Icing 1 1/4 tbsp flour, 1/2 tsp sugar, 1/4 c whole milk 1/4 c butter, 3/4 c powdered sugar, 1/4 tsp vanilla Boil flour, sugar & milk until thickened. Remove from heat & chill. Stir in butter, powdered sugar & vanilla.
19: Pecan Sandies 1 c butter, softened, 1 c vegetable oil, 1 c sugar 1 c powdered sugar, 2 eggs, 1 tsp vanilla, 4 c flour 1 tsp baking soda, 1 tsp cream of tartar, 1 tsp salt 2 c chopped pecans, 1/2 c sugar as decoration Cream together butter, oil & sugars until smooth. Beat in eggs, then vanilla. Stir in flour, baking soda, cream of tartar & salt. Add pecans. Roll dough into 1" balls. & roll in remaining sugar. Bake at 375 for 10min. | White Chocolate Mocha Sauce 3/4 c heavy cream, 2 tbsp espresso. Mix & simmer. Stir in 10 oz white chocolate chips. Pour over desserts or ice cream.
20: "Girl Scout" Peanut-Butter Sandwich Cookies 1'2 c butter (softened), 1/2 c peanut-butter, 1/2 c sugar, 1/2 brown sugar 1 tsp vanilla, 1 egg, 3/4 c flour, 1/2 tsp baking soda, 1/4 tsp baking powder 1/2 tsp salt, 1 c oatmeal Filling: 3 tbsp butter (softened), 1/2 c peanut-butter (smooth) 2 1/2 tbsp heavy whipping cream, 1 c powdered sugar | Cream together butter, peanut-butter, sugars & vanilla. Add egg. Stir in flour, baking soda, baking powder & salt. Add oatmeal. Roll dough into balls and bake at 350 for 10min. Mix together filling. Spread onto cookies & top with another cookie.
21: Apple Pie 4 c apples (sliced), 1 c sugar, 3 tbsp flour, 1/2 tsp cinnamon, 1/2 tsp nutmeg 3 tbsp butter, 2 tbsp milk, 2 pie crusts, room temperature (Pillsbury) Roll out one pie crust into an ungreased pie pan. Fill with apples. Mix sugar, flour, cinnamon & nutmeg. Sprinkle over apples. Dice butter & drizzle milk over the apples. Cover with the 2nd pie crust. Cut several slits in the top & sprinkle with sugar. Cover crust edges with tin foil. Bake at 400 for 15min. Then reduce to 350 & continue baking for 45min longer.
22: Caramel Rice Krispie Bars 1 can sweetened condensed milk, 1 bag caramels (unwrapped), 6 tbsp butter 2 tsp vanilla, 2 pkg mini-marshmallows, 12 c rice krispies cereal Heat sweetened condensed milk & caramels together til smooth & set aside. In pan, melt butter & marshmallows, add vanilla. Stir in rice krispies. Divide in half. Press half into bottom of 9x13 pan. Pour caramel mix over rice krispies. Press remaining rice krispies over caramel mix. Cool. | Chocolate Covered Strawberries 1 c chocolate chips, 1 tbsp shortening, wax paper, 2 lb strawberries. Wash & dry strawberries. Heat & stir chocolate & shortening. Dip & cool on paper.
23: Chocolate Scotcheroos 1 c light corn syrup, 1 c sugar, 1 c peanut-butter, 1 c butterscotch baking chips 6 c rice krispie cereal, 1 pkg semi-sweet chocolate chips Stir corn syrup & sugar over medium heat til it boils. Remove from heat. Stir in peanut-butter & butterscotch chips. Add cereal & press into 9x13 pan. Melt chocolate chips on low and spread over cereal. | Lemon Bars Crust: 1/2 c butter, 1 c flour, 1/4 c powdered sugar Filling: 2 eggs, 1 c sugar, 2 tbsp flour, 1/2 tsp baking powder, 2 tbsp lemon juice Mix crust together & press into a 8x8 pan. Bake at 350 for 15min. Mix together filling and pour over crust & continue baking for 25min.
24: "Neiman Marccus" Chocolate Chip Cookies 2 c butter (softened), 2 c sugar, 2 c brown sugar, 4 eggs 2 tsp vanilla, 4 c flour, 5 c oat flour, 1 tsp salt 2 tsp baking powder, 2 tsp baking soda, 2 pkg chocolate chips Cream together butter & sugars. Add eggs & vanilla. Add remaining ingredients. Bake at 350 for 13min. Also, roll into balls and freezes well. to bake at another time. | Baked Custard 2 eggs, 2 c whole milk, 1/3 c sugar, 1/2 tsp vanilla 1/8 tsp cinnamon, 1/8 tsp nutmeg Beat all together, pour in small baking dish. Bake at 350 for 50min.
25: 3 Milk Cake 3/4 c butter (softened), 2 1/2 c sugar, 9 egg yokes, 9 egg whites 1 tsp vanilla, 2 c flour, 1 1/2 tsp baking powder, 1 tsp cream of tartar 1 c whole milk, 4 c heavy whipping cream, 5 oz evaporated milk 14 oz sweetened condensed milk Cream together butter & 1 1/2 c sugar. Add egg yokes & vanilla. Add flour & baking powder. Add whole milk. In a separate bowl beat egg whites & cream of tartar until stiff peaks form. Fold egg whites into batter. Bake at 350 for 30min. In a separate bowl, stir together 2 c heavy cream, evaporated milk & sweetened condensed milk. After cake has cooled pour mixture very slowly over cake until it won't absorb anymore (about 1/4 maybe left over). Refrigerate cake overnight. In a separate bowl beat 2 c heavy cream & 1 c sugar until whipped & spread over cake. Serve chilled.
