BC: This book is made in memory of our baby Callen Michael Smith. Life is a gift! We have to cherish every moment God gives us with our family even if it's only a little while. Even if its only 20 minutes.

1: This Cookbook is inspired by all of the talented cooks in the family and the history they carry. To my Grandmother and Grandma. I always looked forward to Sunday dinner at your houses. You made the work seem effortless. I strive to be as wonderful and giving as both of you!

2: Dedicated to my mom and dad, Jimmy and Pam Gresham. Thanks for all the morning coffee, pancakes, biscuits and gravy, bacon, eggs, and wonderful times at the breakfast table! | Overnight Raisin-Nut Oatmeal | 1/4 c. Splenda brown sugar, packed 1 T. butter buds 1/4 tsp. salt 1.2 tsp cinnamon 1 c. quick-cooking oats. uncooked | 1 c. apple, cored peeled, minced 1/2 c. raisins 1/2 chopped nuts 4 -1/2 c. milk | Place ingredients into a greased slow cooker; mix well. Set on low heat overnight, about 8 to 9 hours; spoon into bowls and serve. Serves 4 | This is the best oatmeal I have ever had! | Jimmy Don and Pamela Kay met on a ski trip through dad's best friend / Pam's cousin Carroll Gosnell. It was love at second sight, they married at Good Shepard Lutheran Church June 25, 1976. After JD accidentally filled their get away van with diesel, getting verbally abused by the rice throwers they switched to the Celica and were off to a hotel to wait a night till. "Daddy" fixed their van. Then they were off on their enchanted honeymoon, Lake Whitney. What is more romantic than sleeping in a van! | Pam Watson Gresham

3: Sugar Toast | 4 pieces of bread 1 TBSP Butter melted | 4 TBSP sugar | Brush the butter on the toast. Spread a thick coat of sugar on each piece of toast. Toast in the toaster oven or oven till slightly browned. You eat the middles and grandpa eats the crust! | Grandma always made this simply wonderful toast for breakfast when Jimmy and I came over! What a treat! | Cressie Watson Gresham | Preheat oven 325. Grease 3 qt casserole dish or 13 x 9 baking dish. Sprinkle Jack cheese in bottom on baking dish. Spoon chilies over cheese and top with cheddar cheese. Combine eggs, sour cream, chili powder and salt in a large bowl; whisk until foamy. Pour over cheese mixture. Bake uncovered 50 min or until test done. | 1/2 ts. chili powder 1 tsp salt Sauce 1 c salsa 1 (8 oz) can tomato sauce 1 tsp. chicken bouillon granules | 2 c. shredded Monterey Jack cheese 2 (4oz) can chopped green chillies (undrained 1 c. shredded sharp Cheddar cheese 12 eggs 2 c. light sour cream | Huevos Rancheros Casserole | Sauce: Heat salsa, tomatoes sauce and bouillon granules over med heat. Serve with Casserole. Serves 12. | Robin Price

4: Hearty Omlet | 6 eggs, beaten 1/4 green pepper, chopped 1/4 c. ham or cooked sausage chopped 1/8 c. hot sauce (optional) | Salt to taste pepper to taste 1/4 c. cheese | Pour eggs in a large greased med heat skillet. Let cook a couple min then start adding your goodies. After the eggs are mostly cooked flip the omlet in half and let cook till the eggs are cooked throughly. Serve! | Carly Gresham Smith | Julia's Breakfast Brunch Bake | 3 c. shredded cheddar cheese 3 c. shredded mozzarella cheese 1/3 c. green onions, sliced 1/2 c. sweet red peppers 2 TBSP minced parsley 1/2 c. mushrooms 2 c. diced fully cooked ham | 8 eggs 1 3/4 c. milk 1/2 c. flour 2 TBSP butter 1/2 tsp dried basil 1/2 tsp. salt 1/4 tsp. pepper | Combine cheese; place 3 c in a ungreased 9 x 13 x 2 baking dish; set aside. In a skillet sauté mushrooms, onions, and peppers in butter, drain. Place over cheese, top with ham and add the remaining cheese. In a bowl beat eggs, flour, milk, parsley, basil, salt, and pepper. Mix well and slowly pour over cheese. Bake at 350 for 35 to 40 minutes. Let stand 1o minutes before cutting. | Carly Gresham Smith | Dedicated to the sweet baby in my tummy who loves this recipe! | Love this one dish breakfast!

5: Top of the World Pancakes | 1 egg 4 TBSP oil 1/3 c, milk | 2/3 c. water 2 tsp. vanilla 2 c. buttermilk pancake mix | Whisk in a bowl eggs, oil, milk, water, and vanilla. In another bowl mix pancake mix, sugar and baking powder. Gradually add dry ingredients to liquid mixture and whisk together. Cook 1/4 c. mix on a medium heat griddle on both sides till slightly browned. | Cathy Smith Kiris | Granola | 2 c. rolled oats (not instant) 1 c. peanuts or tasted almonds 1/4 c. sesame seeds 1/2 c toasted sunflower seeds 1/2 c. coconut | 1/4 c. toasted wheat germ 1/2 c raisins 1/2 c dried fruit (apricots apple..ect) 1/4 c cooking oil (not olive) 1/2 c. honey | Mix oats, nuts and grains in lg bowl. Measure oil into the measuring cup and swirl it around before pouring into bowl. Then measure out the honey in same cup. The oil will help the honey exit the cup. Toss everything together until evenly coated and then pour out into a baking pan. Use a lg roasting pan. Bake at 300 for 30 min, turning with spatula every 10 min. Make sure everything is evenly golden brown. Return baked granola to mixing bowl, add raisins and fruit and stir. Return to roasting pan and cook 10 minutes. Stir gently several times as it cooks, so that it does not clump together. Enjoy! | Jimmy Gresham | Breakfast Casserole | 1 (8oz) pkg crescent rolls 1 lb sausage 12 oz cooked hash browns 8 oz shredded cheddar cheese | 4 TBSP sugar 1 tsp. baking powder | 6 eggs 1/2 c. milk 8 oz mozzarella | Place crescent rolls in bottom of a 9x13 pan. Cook sausage and drain. Place on top of rolls. Layer hashbrowns, cheddar cheese, beaten eggs, milk, and mozzarella cheese. Bake at 350 for 25 -30 min | Jacci Smith

6: This is dedicated to Michael's dad, Doyle Wayne Smith. He loved to make and try different popcorn seasonings. | Caramel Popcorn | 6 qt. popped popcorn (1/2 c. unpopped) 1 c. Margarine or butter melted 2 c. packed brown sugar | 1/2 c. corn syrup 1 tsp. salt 1 tsp. vanilla 1/2 tsp. baking soda | Bring all ingredients, except popcorn, vanilla, and soda, to a boil stirring constantly. Boil 5 min without stirring and remove from heat. Add vanilla and baking soda, stir well. Add to popped corn and stir until well coated. Bake in a 250-degree oven for 1 hour, stirring every 15 min. Let cool completely. Break up and store in an air tight container. | Doyle Smith | "Dad use to make this for us and it took me forever to track down a recipe that had the ingredients and steps I remember from when he made it" said Cathy Kiris | Doyle was born on December 12th, 1948 in Lake Charles. He was in in the army stationed in Germany and after that a hard working Linesmen for South Western Bell but when he spent time with his children, it was fun! Carol dreaded when he got an itch to head into the kitchen, make his popcorn, and a mess. Michael remembers a popcorn pan that was so dirty they took it out to the shop to see if the grinding wheel could help.

7: Beef Dip | 1/2 lb sausage 1 lb hamburger 1 med onion, chopped | 1 lb velveta 2 cans Cream Mushroom soup 1 sm. Jar Pace picante | Brown sausage, hamburger and onion together, drain. Place meat in crock pot and add remaining ingredients. Allow to melt, stir and serve with tortilla chips. | Cheesie Charlie | 16 oz tuna, drained and flaked 1 c. celery, chopped 1/4 c. sweet relsih | 2 c. grated cheese 1/2 c. mayo French Bread | Slice bread in half lengthwise and remove center of bread to make trough. Mix all ingredients and spread into bread. Bake 400 10-25 minutes till toasty. | Becky said this is her husband, Walter's favorite! | Becky Gresham Parker | Becky Gresham Parker | Becky Ann and Walter Matthew Parker were married on June 28, 1980 at Alvarado Church of Christ during a record setting heat wave. Walter was stung on his face by a wasp the day before their wedding and all the pictures you see are of the right profile. His left was nearly swollen shut. Jimmy Don' ushered with a cast on his foot. The reception was at Patsy and Bennett's house in their small, hot 2 car garage. They stayed their wedding night at the Ramada Inn and went to Corpus Christie for their honeymoon!

8: 1 (8oz) cream cheese 8 oz. sour cream 1/2 sharp cheddar cheese 1 sm. can ripe olives 1 T. minced onion | Cold Burritos | 1 sm. can chopped green chilies 1 sm. jar pimientos, chopped 1 T. garlic salt 12 lg flour tortillas | Mix together cream cheese and sour cream. Mix in remaining ingredients and spread on flour tortillas. Roll up and refrigerate. Chill at least 24 hour and slice. Makes a dozen large flour tortillas | Shirley Watson Holzschuh | Shrimp Mousse | 3 pkp unflavored gelatin 1 c cold water 3 3-oz pkg. cream cheese 1 10- oz can cream of shrimp soup 1 c. mayonnaise 15 drops tobacco cause | 1 1/2 c. cooked shrimp (cleaned) 1 c. celery, finely chopped 2 TBSP onion, grated 1 tsp. salt 3 TBSP lemon juice 1 TBSP Worcestershire sauce | Soften gelatin in cold water. Heat soup & cheese until cheese melts. Add gelatin; cool. Add remaining ingredients. Pour into greased 1 qt. fish mold. Refrigerate at least 24 hours. Serve with crackers! | Shirley Watson Holzschuh | We served this wonderful dish up at every wedding we catered! | This was our staple wedding reception food because it is so wonderful and "pretty". It was a treat to eat the ends yum! | Super Shrimp Dip | 1 8 oz. cream cheese 1 c. sour cream | 1/2 pkg Good Seasons Italian Mix 2 cans drained shrimp | Cream all but shrimp then add the shrimp. Serve with crackers! | Cheese Balls | 3 c. bisquick 1 lb sausage (not Jimmy Dean) | 1 tsp. salt 8 oz grated cheddar cheese | Mix all ingredients and make balls. Bake 375 for 12 min. | Becky Lampley Jones | Shirley Watson Holzschuh

9: Guacamole Dip | 4 avocados 1 tsp. salt or to taste 1/4 c. salsa | 2 TBSP lime juice or to taste a few Jalapeño slices | Mom makes the best! | Remove skin and see from avocados. Lightly mash or cut. Add remaining ingredients while mashing and mixing. Add salt, salsa and lime juice to taste if needed. Enjoy! | Pam Watson Gresham | Pizza Dip | 2 c. shredded mozzarella cheese 2 c. shredded cheddar cheese 1 c. mayonnaise 1/2 c. chopped onions 1/2 c. bell pepper | 1 can mushrooms, drained 1 can ripe olives chopped 1/2 can green stuffed olives, chopped, drained 1 8 oz pkg pepperoni chopped | Mix all ingredients together. Put in baking dish and bake at 350 for 20 to 30 min. Serve with crackers. | Robin Price | This is a great dip and its colorful also! A must make! | Kelly and Robin were friends all through College at Tarleton and after till one night Kelly surprised her with a kiss. Kelly proposed in the parking lot at Harrigans because he was too anxious to wait till they were inside. They married 5 months later on July 20, 1991 at the Westside Church of Christ in Cleburne. Someone seemed to have pinched the babies that day and the ring bearer had a bawling fit and so did Amy Parker. They honeymooned in Ouray Colorado and stayed in a wonderful guest house.

10: Black Bean Salsa | 2 can black beans (drain & rinse) 2 lg tomatoes 1 med purple onion, chopped 3/4 TBSP lime juice 1 TBSP red wine vinegar 1/2 tsp. pepper | 1 can corn, drained 1/8 c. fresh Parsley 2 TBSP olive oil 1 tsp. salt 1 avocado cut in chunks | Mix together! Serve with corn chips. | I think I could eat my weight of this yumminess! Aunt Jo (Wanda) makes it all the time, probably because I request it! | Wanda Gresham | David and Wanda Gresham were married August 1, 1980 at Southside Church of Christ in Mineral Wells.The wedding was beautiful but it was so hot that their cake started to melt and slide around during transport and Becky had to do a quick fix. They honeymooned at the Chisos Mountain Lodge in Big Ben. With record setting heat that year a desert didn't provide much relief. To try and avoid the heat, they would get up at the crack of dawn and hike.

11: Brochette | Skinny French bread 2 tomatoes olive oil | Fresh mozzarella Fresh Basil | Thinly slice the bread and brush olive oil on each slice. Toast till bread is crunchy. Thinly slice the mozzarella and tomato and place first the cheese then tomato on each piece of bread. Roll and thinnly slice the basil and top each with a small sprinkle. Bake again at 325 for 10 or until done. | Judy Holzschuh Droguett | Green Tomatoes Pickles | 7 lbs sliced green tomatoes 2 gal. water 3 c. pickling lime | 5 lb. sugar 3 pts. vinegar 1 box pickling spice | Let tomatoes stand in lime water 12 to 24 hours. Then rinse real good. (5 or 6 times) Let tomatoes stand over night in sugar and vinegar, Then boil with spices for one hour. Salt to taste and seal while hot. | Linnie "Short" Watson | How to Can Beet Pickles | Equal parts of sugar, vinegar, and water. Then cook in jar about 15 min. | Linnie "Short" Watson | You would not believe how awesome these are! | Corn Dip | 2 can of mexi- corn, drained 1 c. sour cream 1 bell pepper, chopped | 2 c. shredded mexi-cheese 1 c. mayo (not miracle whip) 2 or more jalapeños, chopped | Mix all ingredients together and serve with Fritos. | Leah Parker Tarwater

12: Arctic Freeze | Set aside: 5 bananas, sprinkle with 5 T. Lemon Juice Mix all together and freeze. May be used as dessert | Becky Lampley Jones | 1 1/2 c. cherries, drained 1 lg can pineapple, drained 1 1/2 c. pecans | 2(9oz.) Cool Whip 1 1/2 c. sugar 1 c. sour cream | Judy's Salad | Funeral Salad | 1 c. lemon or lime jello 1 tall can pineapple crushed 1/2 c nuts | 1 pint cottage cheese 24 marshmallows 2 c. whip cream | Bring 2 c. water to a boil add jello stir. Add pineapple boil 3 min. Set in fridge till it begins to set. Add and mix remaining ingredients | Such a morbid name for something so yummy! Do I have to wait for someone to die before I make it... | Margaret "Jack" Jacob Gosnell | Soup & Salad | 1 head Romaine lettuce 1 head Green leaf lettuce 2 c. sliced green olives (Sicilian is best 1 c. low-fat feta cheese (or crumbled goat cheese) | 1 tsp. kosher salt 1/2 tsp. pepper 2 TBSP extra virgin olive oil 1 TBSP balsamic vinegar | Chop all lettuce, add olives, and cheese. Salt, pepper to taste and just before serving add oil and vinegar. | Judy Holzschuh Droguett

13: Clark's Tortilla Soup | 4 c. shredded chicken breast 1 lg. can crushed tomatoes 1 lg. onion chopped 2 lg. boxes chicken broth (low sodium) 1 lg pkg corn tortillas 2 TBSP tomato paste 3 TBSP minced garlic 1 TBSP chili powder 1/4 c fresh cilantro | 2 tsp. cumin 2 bay leaves 1/4 cayenne pepper 4 avocado 3 celery stalks 2 can baby carrots 1 can corn cheddar/jack cheese shredded 3-4 c veg oil | "This is the best recipe of tortilla soup I found" Christi Clark | Salt and pepper chicken breast and bake in over at 350 for 15-25 min or until juices run clear. In crock pot add broth, celery, onion, shredded chicken breast cook for 1 hour. Add crushed tomatoes, paste, 4 diced corn tortillas and spices. Cook for additional 2-3 hours. The diced corn tortillas will thicken the soup slightly, which is the way my family likes it. Add corn and carrots until heated through. Cut remaining tortillas into little strips. Heat veggi oil and fry tortillas until lightly golden brown and salt to taste. Ladle soup into bowls and layer the soup, cheese, avocado, cilantro, then chips. Its a flavor explosion... Hope you love it! | Christi Clark | Gerardo's Favorite Pumpkin Soup | 1 med to lg pie pumpkin 1 lg potato 6 c. chicken stock 1/4. c butter | 2 TBSP olive oil 3 onion, chopped 2 yellow bell peppers, chopped | 1 tsp. dried thyme 2 c. fat free milk or half and half Salt and pepper to taste | Peel, seed, and cut pumpkin into lg chunks. Peel and quarter the potato. Place pumpkin and potato in lg soup pot and cover with chicken stock (enough to cover veggies) simmer until tender (about 25 min). Meanwhile, heat butter and olive oil in lg frying pan; add onions and yellow peppers and saute until softened. and lightly golden. Stir in thyme. Add onions and peppers to cooked pumpking and potatoes. Use hand held blender to puree mixture. Season with salt and pepper to taste. | Judy Holzschuh Droguett

14: Tomato Black Bean Soup | 2 tsp. olive oil 1 lg. onion, finely chopped 2 carrots, finely chopped 3 garlic cloves, minced 1 sm jalapeno, minced 4 c. fat free beef or chicken broth add chopped chicken breast | 1 (28oz) can crushed tomato Black pepper to taste 1 (15oz) can black beans 6 oz baby spinach, chopped 2 TBSP Lemon juice 1 c. corn 1/4 c. cilantro | Sauté the onion, carrots, celery, garlic & jalapeños in oil for 5 min until softened. Stir in tomatoes, broth & pepper to taste & heat through. Add the beans, spinach, corn & lemon juice & cook until spinach wilts. Stir in cilantro. (I like to put it on top) Can be served over rice. | Shirley Watson Holzschuh | Taco Soup | 1 lb ground beef 1 pkg taco seasoning 1 c ranch style beans 1 c . corn, drained | 1 c diced tomatoes 1/2 pkg ranch dressing mix grated cheese | Brown meat in dutch oven then drain. Add taco seasoning, stir in beans, corn and tomatoes. Add water to almost fill pot. Add 1/2 pkg. ranch dressing, cover, and simmer 30 min to 1 hour. Add cheese to bowl when serving. Serve with tortilla chips. | Becky Gresham Parker

15: Baked Potato Soup | 4 lg baked potatoes 2/3 c. butter 2/3 c. flour 6 c. milk, whole or 2% 3/4 tsp. salt | 1/2 tsp. pepper 4 green onions, chopped 12 sliced bacon, fried & crumbled 2 c. shredded cheddar cheese 1 c. sour cream | Cut potatoes in half, Scoop out pulp and put in small bowl. Melt butter in lg kettle, Add flour, Gradually stir milk. Continue to stir till smooth thick and bubbly. Stir in potato pulp, salt, pepper, and 3/4 of onion, bacon, and cheese. Cook until heated then stir in sour cream. Transfer to a slow cooker and set on low. Top with remaining onion, bacon, and cheese. | Cathy Smith Kiris | Chicken Tortilla Soup | 1 c . onion garlic olive oil 2 or 3 chicken breast 2 c. water 2 chicken bouillen cubes 1/2 tsp. onion powder | 1/2 tsp. celery salt 1 can rotel 1 can stewed tomatoes 1 pkg taco seasoning 1 can peas 1 can carrots | Sauté onions, garlic and olive oil. Boil the chicken and chop it. Add all ingredients to a pot and simmer for 30 min. Add cheese and tortilla chips. | Jacci Smith | Mark and Jacci were married on June 22, 2002 at Grace Lutheran Church in Arlington Texas. Since Jacci was a Disney fan, they honeymooned in Disney World. They also have two beautiful children, Ryan Andrew, and Lauren Elizabeth.

16: Name | In 4 qt sauce pan heat oil over med heat. Add onions cook for 5 min, until softened but not browned. Add garlic cook for 1 min longer. Don't brown. Add tomatoes, cumin, chili powder, and chile flakes. Simmer for 5 min. Add 2 cans of beans and 3 1/2 c. of broth and bring to a boil . Reduce and simmer. Meanwhile, place remaining 1 1/2 c beans and 1/2 c broth in food processor or blender. Add puree to stew. Add greens and heat just until wilted. Stir well and serve hot. | 1 TBSP olive oil 1 lg yellow or white onion, chopped 1 (28 oz) can fire roasted tomatoes 1 tsp ground cumin 1 tsp. chili powder | 1 TBSP garlic, chopped 1 tsp red chili flakes 3 cans black beans, rinsed and drained 4 c. fat free low sodium chicken broth 3 c. fresh baby spinach leaves | Black Bean Soup | Shirley Watson Holzschuh | Taco Soup | 2 lbs ground beef 2 pkg taco seasoning 1 can pinto beans 1 28 oz crushed or diced tomatoes | 1 chopped onion 1 can corn (I use small can) 1 15 oz tomato sauce 1 can of water | Brown meat and onions. Mix all ingredients together and simmer for 30 min to an hour. Serve with cheese and corn chips. (sour cream on the top of the cheese is really good.) | "A recipe I got from my mother in law. Its really good" says Leah. | Leah Parker Tarwater | December 2007 Chris Tarwater gave the unsuspecting Leah Parker a drink of water... and much more. It took Leah a whole movie to notice the gorgeous ring inside the wine glass and the words etched on the side "Will you marry me?" They were married May 17, 2008 at Chambers Creek Baptist Church in Grandview Texas. They honeymooned in Colorado Springs, Colorado.

17: Tomato Dumplings | 1 can tomato basil soup nutmeg Cinnamon | sugar bisquick | "Moma use to make this and I have tried and tried different recipes and this was as close as it came." says Vera. | Make dumplings using the bisquick. Bring the soup and ingredients to taste to a boil. Drop dumplings in and cook till done. | Freda Ambrich Jacob | Darren's Homemade Chili | 3 lbs ground beef 15 oz beef broth | 15 oz tomato sauce 6 oz tomato paste | 1st dump: 4 TBSP chili powder 1/2 TBSP garlic powder | 1 tsp cayenne pepper (opt) 1 tsp. salt | 2nd dump: 4 TBSP chili powder 2 TBSP brown sugar 1 tsp. black pepper | 1 tsp. white pepper 2 TBSP paprika 3 TBSP onion powder 1 beef bullion cube | Brown beef and drain grease. Add broth, tomato sauce, tomato paste, 2 c. water, and 1st dump. Bring to a boil and simmer covered for 45 min. Add 2nd dump and 1 c. ketsup. Simmer covered for 20 min. Add 2 T. flour if needs to thicken | High school sweethearts Darren and Stefanie married August, 2006 at Milsap Baptist church. Besides running out of grooms cake the reception held at the church was very nice! Darren and Stefanie honeymooned in Galveston Texas. They also have a sweet little boy, Gavin James.

18: Sides Dishes | Baked Squash Casserole | 5 lbs. yellow squash 1 c. diced bell pepper 1 c. diced onion 1 c. dived celery | 1/2 c. margarine 1 1/2 tsp. salt 2 TBSP. sugar 1/2 tsp. pepper | Slice squash and cook until tender and drain. Sauté pepper, onions, and celery in margarine until tender. Add seasonings; mix well. Put in casserole dish. | Topping: 2 c. bread crumbs | 2 TBSP melted margarine 1/2 tsp paprika | Mix and sprinkle on top. Bake at 375 for 20 min or until crumbs are brown. | Helen Jacob Watson | Dedicated to my Grandmother, Helen Watson, one of the best cooks I know! | Wedding day | My favorite side dish! Excited to have it! | Helen Freda Jacob born March 22, 1922, met and fell in love with a hard working ranch hand, Charles Earl Watson, born Feb 9, 1915. They married on March 8th, 1941. The pastor that was to marry them suddenly had an appendicitis attick and was hospitalized. That is how Helen and Earl came to be married in a hospital. Helen moved from Winters to Sterling City where she complained that the rattle snakes kept her awake at night!

19: Simple Broccoli Casserole | 10 oz. pkg. frozen broccoli, thawed 1 can cream of mushroom soup 6 oz pkg. stuffing mix, herb-flavored | 1 can cream of chicken soup 1/2 c oleo melted | Preheat oven to 350. MIx broccoli with soups well and pour into buttered casserole dish. Toss the stuffing mix with butter and stir into the broccoli and soups. Bake for 40-45 min. | Patsy Watson Price | Cajun Zucchini sticks | 3 lg zucchini, julienned 1 TBSP Cajun seasoning 1 c. fine dry bread crumbs or 1 pkg shake n bake | salt to taste pepper to taste 1/2 tsp garlic powder 6 sprays of spray butter | In a large bowl add julienned zucchini and 6 sprays of butter. Toss. Add seasonings and toss till all sticks are coated. Cover your baking sheet in foil, spray throughly, and spread sticks out in one layer. Bring vinegar, water, salt, and sugar to boil, pour over cucumbers. Put in a jar with a lid. Allow to stand in fridge a few days before eating. Then add cabbage onions and peppers. Cook 5 min. Then add 1 1/2 pints more vinegar with salt sugar, mustard. Cook till tender put in clean quart jars and seal while hot. | Linnie "Short" Watson | Quiche- Style Squash and Rice | 2 c. cubed winter squash 1 c. cottage cheese 2 eggs 1/2 c. milk | 1/4 tsp. ground nutmeg 2 c. cooked brown rice 1/4 c. chopped walnuts | Cook squash in small amount of boiling salt water for 10 min or till very tender. Stretch dough until paper thin and transparent. Let dry 30 min. Cut into stripes of desired widths.Drop into boiling salt water 1/2 lb or 3 cup noodles in two qt of water. 24: Mammu's Noodle Dish | 1 lb wide noodles 2 sticks 1 TBSP butter divided 2 pkg of salteen or club crackers | Cook noodles as directed on the pkg, drain and add 1 TBSP butter, mix and set aside. In a medium heated sauce pan melt 2 sticks of butter. Break up crackers into med pieces and add to sauce pan. Mix and cook until combined. (Carol Smith adds a few of the cooked crackers to the noodles) Place cooked noodles in greased casserole dish and add crackers on top. Bake at 325 for 20 min. | A family recipe that is a must have for the Smith's at Thanksgiving! | Dorthy Beth Holterman born on Oct 26, 1920 married Herbert Childs March 6th, 1946. It was a blessed reunion as the two had a short courtship just before Herbert enlisted in the war Nov 4th, 1940 as a Private in the US Army. On April 9, 1942 the Japanese at Batann captured his unit at Corregidor on the Philippine Islands "The Bataan Death March". He spent the next 42 months as a Prisoner of war. The Americans liberated them September 12, 1945. They raised 4 children, Gary John, Carol Beth "Teensie", Herbert Franklin "Skip", and Cathy Annette and had many grandchildren and great grandchildren. Dorthy loved her crafts especially macramé art designs and porcelain dolls. She joined the San Antonio Doll Club and was quite well known in the Texas "doll" circles. She had a quick wit and a great laugh. 25: Grilled Corn | Food is always the best when camping, especially when Dad is making on the grill! | Jimmy Don Gresham was born August 20th, 1954 in Wichata Falls and grew up in Ft. Worth, and Benbrook Texas. He graduated from Western Hills High School in in 1973. He almost decided to become a mechanic then the thought of grease under his finger nails for the rest of his life made him think twice. He then became a Benbrook Police Office. During his 29 year career he received many awards and recognitions for his services during that time including the very first Officer of the year award in 1981, again in 94, and a life saving award in 91. The same soft spot he has for dogs, he has for people and that made him a wonderful officer, man of God, and family man. Family always come first and he has never just said that, he models it. More than a wonderful husband, father, and "Paw paw" his family and children adore him. There is not much my dad can't do. A do it yourself to the core so he married just the right person. He and Pam always dreamed of a log house. When they finally had the time and means they just went right ahead, and built one themselves with the help of family and friends. They are pot an inspiration! | Corn still in the husk. Soak the corn in salt water for at least 1 to 2 hours. Now put the ears on the grill side by side. Cook for 30 to 40 minutes turning every 5 min. If the husks start to burn don't worry, just keep turning and finish cooking. Now peel the husk and feast! | Jimmy Don Gresham | Baked Potatoes on the Grill | Choose whatever size potatoes you want to eat. Wash the skin and pierce them in the middle. Place them in water and soak for 1 to 2 hours. Wrap each in foil. Place potatoes on a grill for 1 hour. If you are cooking over a camp fire turn the potatoes 1/4 to 1/2 turn every 5 min. If you are cooking on a gas grill turn 1/2 turn every 15 min. Now you can enjoy the best baked potato you ever ate. | Jimmy Don Gresham

26: Dedicated to Shirley Holzschuh who makes over 100 of the best rolls every week for the St Paul kids! | Shirley's Hot Rolls | 1 1/2 c. milk 1/2 c. sugar 2 tsp. salt 4 tbsp. Crisco | 1/2 c. water 1 pkg. yeast 2 eggs 4 1/2 - 5c. flour | Scald milk; add sugar, salt and Crisco; let cool. Combine water and yeast. Combine the two mixtures in a mixer bowl add 2 eggs, beat well. Add to this the flour, beat on low speed until all flour is blended. Pour in greased bowl, let rise until double in size (about 40 min). Put dough on floured board. Knead 4 or 5 times. Make into rolls about the size of a small tennis ball, dip in melted butter. Line them up in the pan, let rise until double (about 25 min.). Bake at 350 12- 15 min or until brown. 27: Everything But the Kitchen Sink Sweet Bread (Bread machine) | Add to bread machine in order: | 1/2 c. warm water 1 c. warm milk 1 egg at room temp 3 c bread flour 3 TBSP brown sugar 3 TBSP white sugar | 1 tsp salt 1 tsp cinnamon 1 1/2 tsp active dry yeast 2 TBSP margarine, softened 4 TBSP semisweet chocolate coca powder | Choose the setting that allows for fruit or nuts and set on light.After 5 minutes or at the signal add: | 3/4 c mini semisweet chocolate chips 1/4 c chopped nuts | Remove loaf from pan to cool when finished! | 1/4 c toasted coconut 2/3 chopped maraschino cherries | Carly Gresham Smith | Mom bought a bread machine when I was younger and used it often. The smell made you wait with your nose to the machine listening for it to beep! Mom's favorite was raisin bread and gave it as gifts often!

28: Shirley's Famous Cinnamon Rolls | 2 TBSP. + 2 tsp. active dry yeast | 3/4 c. warm water | Dissolve yeast in water. Let stand for 4 to 5 min. | 6 c. flour 1/3 c. powder milk | 1/2 c. sugar 1 TBSP. salt | Put in mixing bowl using dough hook. Mix 2 min add: | 1/2 c. oil | Mix on low speed for approximately 2 min add: | 1 1/4 c. water | Mix on low speed 1 min. | Add dissolved yeast & mix on low speed for 10 min. Place dough in a bowl that has been sprayed with Pam. Let stand about 30 min in a warm area. Place dough on a lightly floured surface. Roll to size measuring 25 X 10". Lightly brush with melted margarine. Sprinkle cinnamon & sugar over dough. Roll & cut into 25, 1 " slices.(I use a tape measure to get them even.) Place in warm area & let rise about 20 min. Back at 325 for 17 min. Remove from over & glaze. | Glaze for Cinnamon Rolls | 2 c. powdered sugar | 1 stick melter butter | Mix together. | Shirley Watson Holzschuh | Shirley and Pam | Pam and Shirley "my sister" are 10 years apart and Pam said that Shirley basically raised her; they were inseparable from birth. 29: Banana Bread | 1 stick margarine 2 c. sugar 1/2 c. oil 4 eggs 3 1/2 c. flour | 1 tsp. soda 1 1/2 tsp. salt 1 tsp. cloves (ground) 6-7 bananas- mashed | Cream sugar, butter and oil. Add eggs then dry ingredents to butter mixture. Add bananas. Pour batter into 2 well greased and floured loaf pans. Bake at 325 for 45 minutes. | Shirley Watson Holzschuh | Applesauce Bread | 1 c. sugar 1 c. applesauce 1/3 c vegetable oil 1 tsp baking soda 1/2 tsp baking powder 1/2 tsp cinnamon | 2 eggs 3 tsp milk 2 c. flour 1/4 tsp salt 1/4 tsp nutmeg | Topping: 1/4 C brown sugar | 1 tsp cinnamon | In a large mixing bowl, throughly combine sugar, applesauce, oil, eggs, and milk. Sift together flour, soda, baking powder, cinnamon, salt, and nutmeg. Add to applesauce mixture and beat until well combined. Pour batter into well greased loaf pan. For topping combine brown sugar and cinnamon. Sprinkle evenly over batter. Smooth with fingers lightly. 30: Lemon Bread | 1/2 c. margarine 1 1/2 c sugar 3 eggs 2 1/4 c. four 1/4 tsp salt | 1/2 tsp soda 1/2 c. buttermilk ground 1 lemon no rind juice of 1 lemon 3/4 c. powdered sugar | Combine butter and sugar, creaming until light and fluffy; and eggs, beating well. Combine dry ingredients alternately to creamed mixture, beginning and ending with buttermilk. Stir just until all ingredients are moistened. Stir in whole ground lemon (pick out seeds and large chucks.) | Spoon batter into greased and floured 9x5x3 in loaf pan. Bake at 325 for 1 hour 15 min or until bread tests done. Cool 15 min and remove. | Combine lemon juice and powdered sugar; stir well. Punch holes in top of warm bread with toothpick; pour on glaze. Cool on wire rack | Date Nut Bread | 2 c. pitted dates 1 1/2 c pecans 3 tsp soda | 6 TBSP butter 2 c. boiling water | Combine all ingredients in a large bowl set aside. | 4 eggs 2 c. sugar | 2 tsp. vanilla 3 c. flour | Beat eggs. Add sugar, vanilla then flour beat well. Fold in your previous mixture well. 31: Momma's Bread | 1/4 c. sugar 1 1/2 tsp. salt 1/2 c. milk | 1/2 c. water 1 egg 1/4 c. Crisco | Mix these ingredients. | 1 pkg yeast dissolved in about 1/4 c. lukewarm water. Add to mixture then start adding flour. | 3 -3/12 c. flour... add gradually as you knead on floured surface. Dough should not break apart when you stretch it. | This recipe can be used immediately to make rolls or loafs of bread. We always make it a day before Thanksgiving and put it in airtight container in frige and beat it down the next morning/ We make dough balls and dip it in vegetable oil. Place pans in a warn place, dough should rise double the size. Bake at 425 for 10 min or until brown. One recipe makes about 20 rolls or 1 - 1 1/2 loafs. We usually make 4 recipes for our family, we like rolls!!! | This recipe came from Wanda's Grandmother! | Wanda Gresham | Gingerbread | 2 c. flour 2 tsp. baking powder 1/4 tsp. soda 2 tsp. cinnamon 1/2 tsp. salt | 1/2 c. shortening 1/2 c. sugar 1 egg, well beaten 2/3 c. molasses * 1/4 c. buttermilk | * Syrup is not good in this recipe, The pure old fashioned black strap molasses is best. Sift dry ingredients with spices. Cream shortening, sugar and eggs, until light and creamy. Add molasses and alternate the dry mixture and buttermilk and beat after each addition. Pour into a greased square pan 1/2 in deep or any desired pan and bake 350 1 1/4 hours. Serve with fruit or top with favorite icing or plain is real good | Linnie "Short" Watson

32: Sweet Potato Biscuits | 1 lg sweet potato or 1 1/4 lb yams 1 1/3 c. yellow cornmeal 1 tsp. baking powder 1/2 c (1 stick) chilled unsalted butter | 1/2 c. buttermilk 1/4 c grade b maple syrup 1/2 c. pecans, toasted and chopped | Skin potato and pierce with a fork. Preheat over to 425. Line baking sheet with parchment paper. Microwave potato until tender about 6 min per side. Half and scoop out 1 c. flesh. Cool, blend 1 1/3 c flour and next 3 ingredients in processor. Add putter (pulse) to course meal. Add potatoes, buttermilk and syrup. Blend add nuts by hand fulls and pulse to blend. Sprinkle dough with flour. Put into 8 1/2 in square, cut into 16 biscuits. Transfer to baking sheet and bake 18-22 min or until test done. | Lorraine Johnson Bretthouer | Shortly before James proposed to Lorraine in 1970 his mother bellowed across the house, yes for Lorraine to hear, and said, "You need to run now and run fast! You will be buying that girl furn, diamonds, and whigs for the rest of your life!" The irony of the whole thing was that she had furs, diamonds, and whigs shortly after the engagement. "We loved each other very much and until the day she died," said Lorraine. They have 2 children, Amy Lorraine and James August.

33: Cornmeal Pie | Ethel Grace West Watson, my great grandmother, was born 1896 in Milan Country Texas. She had 5 brothers and sisters, twin brothers, Martin and Marvin, Preston (who ran a junk yard in Santa Ana), Clifton (a caretaker in a cemetery in Colman), and Maud, who lived in Rockdale. Her dad, "Papa" or Grandpa West was a Baptist preacher and worked for the railroad. He loved to make yard decorations, violins, and woodworking. Grandmother West Florence, a born and raised Texas girl, loved to read romance novels, "modern romance" magazine and work in the yard. Ethel West married Ollie Bolten Watson in 1914. Ollie was a farmer, a house builder, and the best grandfather. Pam and Shirley remember that his feet and hands were always moving. They had two children, Charles Earl Watson, and Gladys Watson. Ethel had a deep passion for gardening and her yard, like Helen's, was always beautiful. She was also a wonderful cook. "At 10:00 no matter what we were doing, we would stop, and she would make me toast in the oven and have a cup of coffee, of course, mine was pure cream. Her biscuits were unbelievable ." Says her granddaughter Shirley Holzschuh. | I unbaked pie shell 1 c. butter 3 c sugar 3 eggs 8 TBSP. cornmeal, | 3 TBSP. flour 1 c. milk 1 tsp. vanilla 1 c. chopped pecans | MIx ingredients and boil for a few minutes (4). Remove from heat and add pecans. Pour into unbaked pie shell and bake until set. Bake at 375 for about 40 min. Makes 2 pies. | Everything Ethel made was wonderful and had sugar in it! | Ethel West Watson | Cornbread | 1 TBSP shortening 1 1/2 c. cornmeal 3 TBSP flour | 1 tsp. salt 1 tsp baking soda 2 c. buttermilk | 1 egg 2 TBSP bacon grease 2 TBSP butter 1/3 c. sugar | Preheat over 450 and place shortening in 10 in. cast iron skillet, and preheat in oven. In lg bowl sift together dry ingredients; add the buttermilk, egg, butter, and bacon grease, and mix just until the dry ingredients are moistened. Pour into the hot skillit and bake for 20 to 25 min or until brown. Serve warm with butter | Ethel West Watson

34: Tex Mex Tortilla Lasagna | 2 c. plain tomato sauce 1 tsp. chili powder 1 tsp. cumin seeds 1 tsp. dried oregano 1 jalapeño, seeded & chopped 6 corn tortillas 1 c. lg curd lowfat cottage cheese | 1 c. diced or shredded cooked white meat 1 onion, chopped 1. c. stewed tomatoes, with liquid 1 green bell pepper, sliced in rings 1/2 c. shredded part skim mozzarella 1/4 c. crushed tortilla chips for garnish | Combine tomato sauce, chili, cumin, oregano, garlic, and jalapeño pepper. Set aside . In the bottom of a nonstick baking pan sprayed with cooking spray arrange 3 tortillas. Add a little tomato sauce. Spread part cheese in a layer and add another layer of tortillas. Top with chicken. Add remaining sauce. onions, and stewed tomatoes. Top with bell pepper rings. Cover and bake at 350 for 1 hour. Uncover. Sprinkle with mozzarella and crushed tortilla chips, if desired and bake 10 min longer. Let cool 10 min before serving. | One dish Chicken and Broccoli | Shirley Watson Holzschuh | Place in skillet: 4 boneless, skinless chicken breast 1 can cream of chicken soup 1 c. water 1/4 tsp. paprika | 1 T. diet margarine 1/4 t. pepper 1 1/2 c uncooked instant brown rice 2 c. broccoli | Cook chicken in pan about 10 min or until done. Remove from skillet. Stir in soup, water, pepper, and paprika until boiling. Reduce heat to medium add rice and broccoli. Return chicken to skillet and sprinkle additional pepper and paprika over. 35: Homemade Pizza | Dough: 1 pkg. yeast 1 c. warm water 1 tsp. sugar | 1 tsp. salt 2 tbsp. oil 2 1/2 c. flour | Mix all in mixer. Let set 5 min. Pat out on greased pizza pan. Bake at 400 until light brown, 10- 12 min. | Sauce: 1 can tomato sauce 2 tsp. pizza seasoning pinch of salt | 1 tsp. oregano 1 tsp. basil | Bring sauce ingredients to a boil. Let simmer for about 20 min. Spread sauce on top of crust, sprinkle on mozzarella cheese then any other yummy things you can think of. Bake for about 10 more min or until cheese is melted and brownish | Shirley Watson Holzschuh | Salmon Patties | 1 can Salmon 1 lemon juiced 1/4 c. onion finely chopped | 10 crackers 1/4 tsp salt 1/4 tsp. pepper 1/4 stick butter | Combine Salmon, lemon juice from your lemon, onions, 1/4 cracker crumbs, salt and pepper. Mix and make into 4 patties patting on the remaining crackers crumbs. Melt butter in a skillet. When its sizzling add the patties and cook on both sides untill brown. 36: Aunt Shirley's Chicken Enchilada's | Whole chicken 1 onion, cut into quarters 2 cloves garlic | Sauce: 6 c. liquid | Put about 1/2 c. sauce in bottom of 9 x 12 pan. Soak flour tortillas in sauce for about 2 min or so then place in pan. Add a handful of chicken and top with about 1/8 cup cheddar cheese and roll up. Fill pan then put enough of the sauce over the half way fill the pan. top with grated cheese and cook in a 325 over for 20 minutes. Hot sauce is yummy with it! | These are the best! I always request them for Christmas | 1/2 c. celery, chopped or 1/4 tsp celery seed 2 TBSP chili powder 1 tsp. pepper | Combine all ingredients in water and boil about 30 min. Strain saving liquid. If there were leftovers we got to enjoy it cold on our lunch stop to the Christmas tree farm! | 1 day prior to cooking dry out 8 slices of bread then tear into smallish piece. Bake 1 recipe of corn bread and tear into smallish pieces | Cornbread | 2 c. cornmeal 1/2 c. flour 2 eggs 1/2 c. oil | 4 TBSP sugar 2 tsp. baking powder 1 tsp. salt 1 c. milk | Mix and bake at 375 for 15 min or until done. | Sauté: 1 stick butter | 2. c. small diced onion 1 c. small diced celery | Combine, bread, cornbread crumbled, 1lb of raw sausage, prior cooked seasoned deboned chicken, about 2 c. diced chicken, 4 raw eggs, 1 tsp. poultry seasoning 1/8 tsp sage (if desired, Shirley doesn't) pepper and salt to taste., chicken broth (enough to make it juicy but not runny.) Hand mix just until combine. 38: Chicken/ Artichoke Casserole | 4 c. cooked chicken, chunked 2 can 8.5 oz artichoke hearts (marinated or plain) 1 c. margarine melted 1/2 c. flour 1/4 tsp cheyanne pepper 1 tsp. salt | 1 clove garlic 3 1/2 c. milk 1 c. cheddar cheese, shredded 1 c. gruyere cheese (or grated swiss) 8 oz mushrooms 1 c. bread crumbs 2 TBSP butter, melted | Grease pan, layer chicken & artichoke. Add melted butter and flour together, make a paste and add seasonings and milk. Cook over med heat till smooth. Add cheese and stir till melted. Add mushrooms then pour over chicken. Combine bread crumbs and 2 TBSP butter and sprinkle over top. Bake at 350 for 20- 30 min till brown, hot and bubbly. | Wanda Gresham | Amy's Chicken Enchiladas | 1 pkg corn tortillas 1 sm bag cheddar cheese vegetable oil | 2 - 3 cans mild or hot enchilada sauce 2 can canned chicken chili powder to taste | Heat up 2 TBSP of vegetable oil in med size skillet. One at a time when skillet is hot, place tortillas in oil until tortilla starts to bubble. Place aside on paper towel or plate. Pour can of enchilada sauce in med bowl. Coat each tortilla with enchilada sauce, fill with cheese, chicken, and a sprinkle of chili powder. Place enchiladas in a lg casserole and cover with cheese and remaining enchilada sauce. Bake 20 to 30 min or until cheese is melted! | This was the first meal I (Amy) made when I moved into my apartment. I just sorta made them up as I went along with the things I had. 39: Grandma Jacob's Roast Beef Spread | Grandma would take the roast (probably 20 or 30 pounds) to the smoke house in Winters Texas on Saturday. On Sunday we would have a huge dinner (this was in the middle of the day) all made by Grandma or her Girls. There would be at least 20 to 30 people gathered both immediate family and extended family. At that time people visited on Sunday's, didn't watch TV (didn't have one) and there was no shopping on Sunday. The men would eat first, then the children with fill their plates and go sit in a different room and then the women would eat while the men went outside to discuss the events of the time. The children had a great time eating and then go outside and play games like anne over, kick the can, or flying the airplane by Grandpa's shop. Then when it was time for Supper, Grandma would get out the hand grinder and screw it onto the cabinet and grind the leftover meat along with dill pickles (home made of course), chopped eggs, (gathered that morning)a little chopped onion, mayonnaise, salt and pepper to taste which we ate on store bought bread (a treat). With this we would have tomatoes, pickles, fresh onions, and what ever left over vegetables from dinner. If it was summer time we would make home made ice cream. Grandpa would go to the ice house in Winters and get a large block of ice and we would chop it ourselves for the freezer. We always took turns turning the ice cream crank; it was a very desirable job. It is impossible to describe what a special time that was just being together having fun. | Shirley Watson Holzschuh

40: Pizza Casserole | 1 lb smoked sausage, cut sm chunks 1 can (26 oz) spaghetti sauce | 3 c. uncooked shell pasta pepperoni slices 1 c. mozzarella cheese | Cook smoked sausage pieces in large skillet until browned. Add spaghetti sauce and 2 1/2 c. water, bring to a boil. Stir in pasta. Reduce to med heat and simmer 10-12 min until pasta in tender. Stir in half of cheese and 6 chopped pepperoni slices. Remove from heat and top with remaining cheese and pep slices. | Karol Price Woodard | David and Karol Woodard met through Karol's match maker minsters wife and also went to A&M together. They married August 20, 1983 at Granbury Church of Christ . Jimmy and Carly, the ring bearer and flower girl were adorable in there yellow and white. They honeymooned in San Antonio and were back the next day to sign up for classes. | Pot Roast | 1 pkg brown gravy mix 1 pkg Italian Dressing mix 1 pkg Ranch Dressing mix | 2 c. water Roast | Mix all dry ingredients with water and pour over roast. Shape into 8 patties. Grill burgers over med heat or cook in non stick skillet 4 to 6 min per side or until cooked through. Top each burger evenly with sauce and cheese. Cook 1 min longer or until cheese is melted. Stir in chicken, season with salt & pepper. Arrange tortillas on a work surface & spoon 1/2 c. sauce on each, rollup & place seam side down in pan. 42: Smoked Chicken Salad | 2 rotisery chickens deboned 1 1/2 c. celery, chopped | 1 c. sweet pickle relish 1 c. miracle whip | Place chicken pices in large blender. When its chopped add remaining ingredients. Mix and enjoy. | When I asked Grandma for her chicken salad recipe grandpa said" you can't make her smoked chicken salad recipe without my smoked chicken!" This reminded me of Jim and Cressie's marriage. A perfect match, one compliments the other. Jim and Cressie knew each other along time but one weekend when Cressie went with Jim and his sister, Margie to the Wichita Mountains. She thought "I sure do like him." At the end of the weekend Cressie went back to Stephenville to sign up for college classes. Margie call Cressie up that evening and said, "Snookie do you Love Jim?" she responded "Yes I do," Margie said, "Well, he loves you too and I would like for y'all to get together. I am coming to get you." Cressie and her mother went right away and bought the 2nd or 3rd dress she tried on for the up coming wedding. The wedding dress was light blue. Margie came as instructed and picked Cressie up and brought her back to Wichita Falls. Jim and Cressie went on 2 or 3 dates that week and got their blood test and marriage license. They were married that Saturday August 29th, 1953 at Margie's with Margie and her husband, Sonny, his wife, and child, and Patsy present. They honeymooned that week at Margies house. The morning after they were married Cressie heard someone crawling into their room. Patsy and Margie peeked over their bed and greeted them good morning.

43: Pita Pizza Supreme | 4 Pita's 1 sm can pizza sauce garlic powder 1 red and green pepper 1 pkg mozzarella | 1 sm can mushrooms 1 pkg Canadian bacon 1 pkg pepperoni 1 sm can black olives 1 sm can pineapples | Supper yummy healthy loaded pizza! | Preheat over to 350. Place your pitas on a baking stone and sauce them. Sprinkle with garlic powder then cheese. Add all your toppings. Sprinkle again with garlic powder then top with a bit of cheese. Bake for about 15 min or until brown. | Pam and Jimmy Gresham | 78 Years to Perfection Ribs | Baby back ribs Angelos rib rub | Adkins seasoning | Mix 1/2 Angelos rub and 1/2 adkins seasoning. Enough to cover generously whatever amount of ribs you have. Check ribs and when they start pulling away from the bone take up and wrap it in foil till ready to eat. | Sitting out on the patio Grandpa told us it took him 78 years to perfect his rib recipe. They are awesome!! | Jim Gresham | James Henry Gresham "Jim" was born in Wichita Falls and has 2 brothers Sonny and Curtis "Curt" and 1 crazy sister, Margie. His mother died when he was 4 and some time later his father remarried a raving beauty, Luria Mae. Unfortunately she wasn't a nice step mother but she did teach the children table manners and they were complimented on it frequently Some might say that Grandpa had a hard childhood, but it only made him into the wonderful, husband, father, grandpa, and great grandpa that he is today. We are blessed to know you!

44: Impress Your "Chick" Chicken | 4 Chicken Breast 1 Lemon 1 bottle Italian Dressing | 16 oz Wide Egg Noodles 16 oz jar of Low fat Alfredo Lemon Pepper | Prep Work: Marinade the 4 chicken breast in 1/2 bottle of Italian dressing. (Best done in lg ziploc bag) for at least 1 hour preferable over night. Tell the girl it was overnight so it looks like you put some thought into it. Slice the Lemon into 8 slices. 4 for grilling and 4 for the presentation. | Time to Cook: Start to Pre-heat the BBQ grill. At the same time, start boiling water for the noodles. Once the grill is warm, start the chicken breast. You will flip these guys once every 3 min for a total of six min each side. About 12 min total. Start by sprinkling a dash of lemon pepper on each side then brush on extra Italian dressing to the top of the chicken each time you flip the chicken. Place one lemon on the top of each chicken. Some for flavoring but it looks good and this is all about impressing your chick. Once you start the chicken, run in and start the noodles. Cook for 8 min. remember to reduce the heat. Now don't forget to flip your chicken. Don't over cook or dry them out. Now the noodles are done so remove from heat and drain. Flip chicken again. When you have 2 minutes left in your cooking process start to warm the Alfredo sauce in a sm sauce pan. Stir as it warm because it loves to burn fast. Stir continuously until it starts to bubble. Put aside and go get your chicken | Presentation: Grab two plates an place a bed of noodles on each. Smother each with some now warm Alfredo sauce. Place one chicken on top of the Alfredo sauce and noodle. Place on new lemon slice on top of each chicken. (this gives them a nice lemon flavor for real this time. ) Serve with Caesar Salad and Fresh French bread... To truly impress your chick, make sure you have cheesecake for dessert. (With strawberry slices and chocolate drizzle. Oh yeah, you made enough for 4 people, but it was dinner for two. You went through all this work so you deserve the awesome leftovers. 45: Pot Roast | 1 big roast 5 carrots, thickly sliced 10 new potatoes, cubed Rosemary or fav spice | 1 onion quartered 1 can cream of mushroom Salt & pepper | Salt and pepper the roast then sear on all sides. Put all ingredients in a crock pot and fill almost to the top with water. Salt, pepper, and your favorite seasoning to taste. Cook on high until meat falls apart at least 6 hours. Serve with rice! | Michael and Mark Smith | This was a great college meal! | Michael Wayne Smith and his twin brother Mark Andrew Smith were born in Lake Charles Louisiana April 25, 1973 2 months early. Like their great grandfather before them, they were highly intelligent and just had to know how everything worked. If they weren't shown they figured it out themselves. Some would call that behavior a mess. Alway pushing to know more they were into woodworking at the age of 5 and got their first power tool at the age of 7 or 8. In addition to playing track and football in highschool both boys have a stack of best in state meadles for projects they made. Both graduated from Tarleton with their undergrad, Michael with his BS in Industrial technology with a minor in Computer Information System, and Mark with is BS in Industrial Technology Education and minor in Education. Both went on to get their Masters Michael at Dallas Baptist University with his MBA and Mark at Bal State Muncie Indinia with Technology education. This would seem only exceptional in its own right except when you realize they are both legally blind. Over coming the odds is not just a once in a life time event, but something they have always done and do every day! Lucky are the ladies who have the privilge to be their wifes! 46: Lively Vegetable Fettuccine | 12 oz. Fettuccine pasta 2 TBSP EV olive oil 2 qt. chicken broth 1 sm. onion, thinly sliced 2 cloves garlic, minced 2 med carrots, peeled & Julienned 2 med zucchini, julienned Salt and pepper to taste | 1 sm yellow & red bell pepper, seeded & diced 1/2 rotisserie chicken, pulled from bone A generous handful of basil leaves, rolled and chopped 1 c. grated Pecorine cheese | Bring a large pot of chicken broth to boil, add pasta cook on med heat to just shy of done. Meanwhile, heat olive oil & garlic over med heat till sizzling. Add onions & let them heat a couple of minutes. Now one by one add remaining veggies mixing & stirring between each one. Season vegges with salt and pepper & cook until tender. Just before draining pasta, add 1 c of the starchy chicken broth cooking liquid to the veggies & stir. Drain pasta & add it to veggies, tossing and combining. Stir in chicken , basil & the cheese, salt and pepper to taste! Stir in meat and brown. Stir in flour, salt, pepper, and mushrooms. Cook 5 min. Stir in soup. Simmer uncovered 10 min. Stir in sour cream. In lg bowl stir together the bread crumbs, parsley, sun-dried tomatoes, garlic, eggs, milk, feta, salt, and pepper. Add turkey and gently stir. Add to loaf pan. Cook at 350, about 45 min. Let rest for 5 min. | Judy Holzschuh Droguett | Shirley Ann Watson, born Feb 18th 1945 in Winters Texas, married Samuel Harold Holzschuh Dec 29th 1962. Sam was born August 11, 1941 in Beaver Pennsylvania They were married at Faith Lutheran Church and had a reception at "Ruth and Clyde's" house given by Aunt Jack and Ruth. Their honeymoon was driving to Winters and Colman introducing Sam to all the family. Sam and Shirley met at the Airmens club because Sam was a fireman in the Airforce. They had 3 children Judith Adale, Samuel Harold, who died as an infant, and Timothy Charles. They lived in Salina Kansas in 1967 and stayed for a year and that was LONG enough for Shirley, she's a Texas girl. Shirley started working at St. Paul in 1974 and still does. She is strong woman who loves and trust God no matter what Shirley is such a giving, loving, aunt, sister, mother, grandmother, and boss!

48: Dorito Chicken Casserole | 1 whole cooked chicken 1 12 oz container sour cream 1 can of cream of chicken 1 can of cream of mushroom | 1 can Rotel 1-2 bags of Doritos (cheese ones) 1-2 big bags of shredded cheese (depending on if you love cheese.) | Crunch the Doritos in their bag. Mix cream of mushroom, chicken, and Rotel in a bowl. Shred chicken off the bone. Grease 9x11 cake pan and spray it. Layer the bottom with 1/2 the Doritos. Pour half of the liquid mixture on top then spread half of the chicken on top of that. Spread cheese across it all. Repeat this whole step again starting with the Doritos. Preheat over 350 and place casserole in for 30 -40 minutes. | Alicia Williams | Italian Meatloaf | 1 1/2 lb ground beef 1 egg 8 oz can tomato sauce 1 can Durkee Onion Rings | 1/2 tsp. salt 1/2 tsp. Italian seasoning 6 to 8 new potatoes 1 bag Birdseye frozen broccoli, corn & rep peppers thaw | Preheat oven to 375. Combine meat, eggs, and 1/2 tomato sauce, 1/2 can onion rings and seasoning. Shape into 3 loafs and put in greased 9x13 pan. Cut potatoes in half and arrange around the loafs. Cover with foil and bake 40 min. Pour bag of veggies on top of potatoes, pour remaining tomato sauce on meat and return to oven uncovered for 15 min. 49: Ruby's Spaghetti | 1 lb ground beef 1 med onion, chopped 1 can corn, drained 1 can whole peeled tomatoes Parmesan cheese | 1 sm can tomato sauce Spaghetti or Elbow macaroni cooked 1 c. grated cheese garlic powder | Brown meat and onions together, drain. Add all other ingredients adding garlic and Parmesan to taste. Bake or heat in microwave till hot. | Ruby Gresham | This creative recipe was made for Becky and family while in Big Ben by Ruby Gresham, Clark Gresham's wife, aka Poet Lauraet of Texas in 1972. A couple poems she wrote were tales that happened while camping there; Jim and his horse, Rover chasing Pancho Villa around Texas and Mexico and a roadrunner having dinner. | Jim and Old Rover | When Jim was young, his special pet Was an old nag called Rover. 50: Cranberry Goodies | 3/4. c flour 1/2 tsp. salt 16 oz. dates 2 eggs | 1/2 tsp. baking powder 2. c fresh cranberries 3 1/2 c. pecans 1 tsp. lemon extract | Mix first 6 ingredients together. Beat eggs and lemon extract until fluffy and pour over fruit. Mix well. Mixture will be thick. Spoon mixture into cupcake papers. Bake at 300 degrees for 45 to 50 minutes Pam Watson Gresham | Fresh Strawberry Pie | Crust: 1 1/2 c. flour 1/2 tsp. salt 2 T. Milk | 2 T. sugar 1/2 c. oil | Don't Roll this- Mix in pie pan. Mix above and spread in 9 or 10 in pan. Bake at 400 for 12 minutes or until lightly brown on bottom. | Filling: 1 qt fresh strawberries sliced in half, wash and cover with sugar. Let set for a couple of hours then drain ALL juice. | Combine: | 3/4 c. sugar 1. c water | 2 T. Karo syrup 2 T. cornstarch | Cook until clear and thick. Add 2 T. Jello. Pour into crust and top with whipped cream! | Helen Jacob Watson | Part of the Jacob girls life was working out in the fields. As a two year old you were expected to watch the babies. As a three year old you worked in the cotton fields ahead of "momma" picking the cotton and making little pills of it. Momma came behind you picking up the piles putting it in her sack When you got tied you rode in the sack. You got 10 cents per 100 lbs of cotton. Grandmother (Helen) use to talk about working till her hands bleed picking cotton. Helen got out of the fields and was the first to graduate high school. She worked as a librarian for years and loved it.

51: In a 9 X 13in baking dish put 1/2 stick oleo and 1/2 c brown sugar. Melt. Over this, put a large can of fruit peaches or pie filling (including juice). Cover with: | Helen's Cake | 1 stick oleo 1 c. flour 1 c. sugar | 1 tsp. baking powder 1 egg | Mix until crumbly and cover above mixture in pan. Bake for 30 minutes at 300 degrees. Sprinkle nuts over and serve with whipped cream . Serves 16 to 18 | Helen Jacob Watson | Peanut Butter Blossoms | 1 c. margarine 1 c. sugar 1c. brown sugar, packed 2 eggs | 1 tsp. vanilla 1 c. peanut butter 2 - 2 1/2 c. flour 1/2 tsp. salt | Cream margarine, sugar, eggs, and vanilla. Stir in peanut butter. Sift dry ingredients and stir into the mixture. Roll into small balls. Bake on ungreased cookie sheet for 8 min at 350. Press Hershey Kiss in the center of the cookie just out of the oven. Cream margarine and shortening with sugar. Add egg yolks, one at a time, beating well after each addition. Add buttermilk alternately with flour to creamed mixture. Stir in vanilla. Beat egg whites until stiff. Fold in egg whites, then gently fold in pecans and coconut. Divide cake mixture between 3 (9 in) greased, floured layer pans. Bake in a preheated 325 over for 25 min or until cake tests done. Frost cooled cake with cream cheese frosting. Cream cheese frosting: Have ingredients at room temp. Cream cheese and margarine well and add vanilla. 64: Cream Cheese Braids | 1 (8 oz) carton sour cream, scalded 1/2 c. sugar 1/2 c. butter or margarine, melted 1 tsp. salt | 2 pkg. dry yeast 1/2 c. warm water 2 eggs. beaten 4. c. all-purpose flour | Combine scaled sour cream, sugar, butter and salt; mix well and let cool to lukewarm. Dissolve yeast in warm water in a large mixing bowl, stir in sour cream mixture, then eggs. Gradually stir in flour( dough will be soft). Cover tightly and chill overnight. Divide dough into 4 equal portions. Turn each portion out on a heavily floured surface and knead 4 or 5 times. Roll each into a 12x8 in rectangle. Spread thin layer of margarine then add filling over each rectangle, leaving a 1/2 in wide margarine around edge. Carefully roll-up jelly roll fashion, beginning on long side. Firmly pinch edge and ends to seal. Carefully place rolls, seam side down, on greased baking sheets. | Make 6 equally spaced x-shaped cuts across top of each loaf. Cover and let rise in a warm place free from drafts. until doubled in bulk (about 1 hour). Bake at 375 degrees for 15-20 min. Spread loaves with glaze while warm. Measure all into bowl and blend with mixer. She is a very selfless giving mother and grandmother who loves her family. | Weight Watchers Key Lime Pie | 1 reduced fat pie crust 1 sm pkg sugar-free lime jello 1/4 c. boiling water | 1 (8oz) fat free whipped topping 2 (6oz) key lime pie yogurt | In lg bowl dissolve jello in boiling water. Stir in yogurt with wire whisk. Fold in whipped topping and spread in crust. Refrigerate for at least 2 hours. | Pam Watson Gresham | This is my favorite sugar free dessert and mom makes it ofr us often | Pamela Watson was born April 2, 1955 and raised in Lake Worth, Texas. After marring Jimmy Don she began working for St. Paul Lutheran church and has worked there off and on for 27 years. 86: Bread Pudding | "My grandmother made this for Jim and I the first time we went over there after being married," said Cressie Gresham. | Virginia Elisabeth Watson and Charles Wylie were Cressie's grandparents. They lived in Stephenville and were farmers. They had 6 children, Thomas Collen, Ben, Dean, Empris, Rosella, and Edna. They raised hogs and vegetables. Cressie remembers the stories her Grandpa told then of when he was a teenager living in Stephenville. He and his uncle had to hitale it back home one day because the Indians were chasing them and of a mother who hid her children under the house so the Indians wouldn't find them. Unfortunately they found her and she didn't survive. | Sugar Free Pumpkin Dessert | 1 box yellow sugar-free cake mix 1 egg 1 stick melted margarine 1/2 c. splenda blended 1/2 c. brown splenda Blended | 1/2 t. cinnamon 1/4 tsp. salt 1 lg can pumpkin 3 eggs beated 2/3 c. evaporated milk | Remove one cup of cake mix from box and set aside. Add remaining cake mix, margarine, and 1 egg, mix well. Spread into an ungreased 9x13. In a lg bowl, mix the remaining ingredients. Pour over cake mixture in pan. | Topping | 1/2 c. splenda blend 1/2 c. chopped nuts | 1/4 c. margarine, room temp 1 c. cake mix | Mix well and crumble over top of pumpkin. Bake at 350 for 45-50 min. | Becky Gresham Parker | Use bread that is several days old, torn onto small pieces, put into dish, and add raisins, about 1 c. 87: Wedding punch | Best punch I have ever tasted. We served it at every wedding we catered . | 1 12 oz can frozen orange juice 1 12 oz can frozen cranberry juice 1 6 oz can frozen lemonade | 2 qts ginger ale 1 qt club soda 1/2 cup sugar | Mix juices and sugar together. Put in punch bowl and add ginger ale and club soda. Float and ice ring to keep cold. Needs to stand about 1 hour before serving. (grape and pink lemonade maybe be used also) (Sugar can be decreased to 1/3 or we don't use it at all. | Shirley Watson Holzschuh | Hot Chocolate Mix | 8 qt pkg. Carnation Non-Fat Dry milk 16 oz. powdered coffee creamer 1 lb. box powdered sugar | 1 lb. box Nestles Quick 6 TBSP. cocoa | Mix well & store in a tightly covered container. To serve: Use 12 spoonful's of mix per cup of hot water for a cup of hot chocolate. | Shirley Watson Holzschuh | Orange Julius | 1/3 c. orange juice concentrate 1/2 c. water 1/2 c. milk | 1/2 tsp. vanilla 5 or 6 cups of ice | One of my favorite drinks, so simple, so good! | Mix in a blender set on high speed for 1 min. | I, Carly Jo Gresham Smith and my twin brother Jimmy Charles were born on March 24, 1979 in Ft. 88: Sauces | Teriyaki Sauce | 5 sm. scallions, sliced 1/2 c. low-sodium soy sauce 1.3 c. sherry 3 T. honey 3 cloves garlic, minced 1/2 tsp. ginger 3/4 c. unsweetened pineapple juice 1/4 c. fresh lime or lemon juice | Marinate 4 to 24 hours. Great on chicken breast | Shirley Watson Holzschuh | Fruit Salad Dressing | In blender combine: 1/4 c. frozen orange juice, undiluted 1/2 c. plain low-fat yogurt | 1/4 c. raisins 1 sm. apple, peeled, chopped | Blend will and chill. Serve with fresh fruit. Serves 8 | Shirley Watson Holzschuh | Caramel Sauce | 1 1/4 c. sugar 1 c. hot water 1 TBSP butter | Caramelize 1/4 c. sugar by heating until melted and a light brown. Add water to dissolve sugar. Add the remaining sugar and butter, and heat until sugar in dissolved. | Helen Jacob Watson | Snookie Patsy Hot Sauce | Patsy Price and Cressie Gresham | 8 tomatos 2 onions 1 tsp. pepper 1 TBSP salt 4 or 5 hot peppers 1 tsp. garlic powder | 1 tsp. celery salt 1/2 c. vinegar 1 tsp. red pepper 1/2 tsp. Worcestershire sauce 1/4 tsp. oregano | Put all ingredients in bender with onions on top. Blend. Pour in pan & simmer till thicken a little. Put in jars & seal

89: Apple Syrup | 2- 1/4 c. apple juice or apple cider, divided. 1/4 c. brown sugar, packed | 1 tsp. cinnamon 1/2 tsp ground cloves 2 TBSP cornstarch | Mom makes this to dress up pancakes! | Place 2 c. apple juice, brown sugar, cinnamon, and cloves in a saucepan; set aside.Add cornstarch and remaining apple juice to a container with a tight fitting lid; shake until well blended. Pour into saucepan; bring to a boil. stirring until thickened. Makes about 2 1/2 cups. | Mexican Hot Sauce | 1 tsp. black peppers 8 tomatoes 2 med onions 5 jalapeños peppers 1 tsp salt | 1 tsp. garlic powder 1/4 tsp oregano 1/2 tsp Worcestershire sauce 1 tsp celery salt 1/2 c apple cider vinegar 1 tsp red pepper | Put all ingredients in blender adding onions last. Blend to desired consistency. Pour into saucepan, bring to a boil reduce back and simmer until sauce thickens, about 30 min. | Helen Jacob Watson | Pam Watson Gresham | Marcie's Hot Sauce | 3 gallons of tomatoes, blanched, peeled & pureed 25 or more jalapeños, diced 18 cloves of garlic, minced | 7 lg onions, diced 1/2 bunch cilantro, minced Tomato past to thicken if needed salt** | salt to add to jars when sauce in in jars ready to seal. (1/2 tsp to each pint) | Cook down tomatoes, peppers, onion, cilantro and garlic. Add tomato paste if needed to thicken mixture. Pour into sterilized jars, add salt, use a kitchen knife to remove any air bubbles. Put sterilized lid on and tighten. Put in boiling bath for 10 min. Remove and lids will pop when sealed. If lids do not seal, but in the refrigerator | Wanda Gresham

90: Jimmy's Hot Sauce | 8 tomatoes 1/2 onion 1 or 2 stalks celery 3 TBSP cilantro chopped 2 garlic cloves, crushed 2 jalapeños | 8 serranos 6 chilies 2 TBSP vinegar 1/2 tsp salt 1/2 tsp comino 1 tsp. oregano | Use less peppers fir milder sauce. Dunk tomatoes in boiling water for a minute to loosen skin. Remove skins. Food process vegetables, starting with onions, celery & peppers. Add rest of ingredients & simmer for 15 min. You can either can it or serve it. | Love it when he his tomatoes ripen in his garden and he makes his hot sauce! | Jimmy Gresham | Jimmy and Amy Gresham were married Friday May 7th, 2004 at St. Paul Lutheran Church. It was a beautiful day and wedding as Amy walked in to Cannon D played by the Dorthy Shaw bell choir. They had their reception at the T & P train station down town. They honeymooned in Tahiti and thankfully Amy got to sit next to Jimmy on the plane ride there after she broke into tears and began to explain that this was their honeymoon.

91: Salsa | 1 lg can whole peeled tomatoes 1 tsp. garlic powder 1/2 white onion 1 jalapeno | 1 poblano pepper handful of cilantro 1 tsp. sugar | Blend to desired consistency, Cook on low for 10 -15 min. | Leah Parker Tarwater | Jacci's Salsa | 4 jalapenos 1/2 white onion 2 or 3 handfuls of cilantro | 2 reg, size can of tomatoes salt & pepper Garlic | Cut jalapeños in half and take the seeds out if you don't want the spicy and cook for 15 -20 min on about 350. Chop and puree everything in the blender season to your taste, add more tomatoes or jalapeños. | Jacci Smith | Cream Anglaise | 1 c. heavy cream 2 tsp. vanilla | 4 egg yolks 1/3 c. sugar | In a small, heavy saucepan, heat cream and vanilla until bubbles form at the edges. While cream is heating, whisk together egg yolk and sugar till smooth. Slowly pour 1/2 c. of hot milk mixture, whisking constantly . Gradually add egg yolk mixture back into remaining milk mixture, whisking constantly. Continue to cook, stirring constantly, until the mixture coats the back of the spoon. | Carly Gresham Smith | A fancy name for "vanilla sauce," this is wonderful served on top of desserts or as a sauce at the bottom. Yum!
