22: Breakfast | Meal in a Muffin 1 egg slightly beaten 1 c milk 1/4 c oil 1/4 c brown sugar 1 c cottage cheese 1 c shredded carrot or zucchini 1/2 c raisins 1/2 c chopped nuts 1 cup flour 1 c whole wheat flour 2 tsp baking powder dash of salt Mix together egg, milk and brown sugar. Stir in cottage cheese, carrot, raisins and nuts. Combine dry ingredients and stir in just until flour is moistened. Batter should be lumpy. soon into greased muffins cups. Bake for 25 - 30 minutes at 375. Makes 12 muffins.
23: Regular 2 c flour 4 tbsp Baking Powder 4 tbsp sugar 1 tsp salt 2 eggs 2 c milk 4 tbsp oil Mix ingredients together in order listed. Drop by 1/3 c onto hot griddle. Flip when bubbles have burst and edges are dry. Buttermilk 2 1/2 c flour 4 tbsp baking powder 2 tbsp sugar 1 tsp salt 1 tsp baking soda 2 eggs 2 c milk 4 tbsp oil Prepare the same as regular pancakes | Pancakes
24: Waffles | 2 egg yolks 2 c milk 2 c flour 1tbsp baking powder 1/2 tsp salt 1/3 c oil 2 egg whites (stiffly beaten) Mix all ingredients except egg whites together, once combined gently fold in egg whites. Pour 1/3 c batter over hot waffle iron. Cook until steam stops.
25: French Toast | 3 eggs beaten 3 tbsp milk 1 tsp vanilla ground cinnamon 6 slices of bread | Mix together eggs, milk and vanilla. Dip bread into egg mixture one side at a time. Place in preheated (med heat) and greased pan on the stove. Sprinkle with cinnamon to taste. Flip when golden brown. Serve warm with syrup, peanut butter, jelly or powdered sugar.
26: Dinner | 1 onion chopped 2 tbsp oil 1 lb ground beef 1 tsp salt 1/2 tsp chili powder 1/2 tsp tabasco sauce 1/4 tsp black pepper dash of red pepper flake 1 can mushroom 1 can stewed tomatoes 1 can tomato sauce Simmer onion in oil until slightly softened, fry ground beef, add seasoning to beef when cooked. Add mushrooms, tomatoes and tomato sauce, simmer for 45 minutes. | Spaghetti Sauce
27: BBQ Spare Ribs 3 -4 lbs ribs 1 lemon 1 lg onion 1 c ketchup 1/3 c worcestershire sauce 1 tsp chili powder 2 dashes tabasco sauce 2 c water Place ribs in a shallow pan, place slices of onion and lemon on each piece. roast at 450 for 30 min. Combine remaining ingredients, bring to a boil, pour over ribs, continue baking at 350 until tender (about 1 hour) Baste with sauce every 15 min. If sauce gets too thick, add water.
28: Roast Beef Roll or Shake meat in a few tbsp flour, 1 tsp salt and 1 tsp pepper. Place on rack over a shallow pan. 29: Hamburger Hotdish | 2 lb hamburger 4 or 5 potatoes 6 carrots 1 onion 2 c vegetable beef soup 2 c cream of chicken soup salt and pepper Brown Hamburger and add other ingredients. Bake at 350 for an hour.
30: Double Feature Pork Chops 6 pack Pork Chops 1/2" thick salt and pepper 1 can (8 1/2 oz) applesauce 1 c sliced onion 1 c ketchup 1/4 c water 1 tbsp soy sauce 1/4 tsp sage Season meat with salt and pepper. Brown in skillet, combine applesauce, onion, ketchup, water, soy sauce and sage. Pour over meat, cover and simmer 45 minutes or until meat is tender.
31: Pepper Steak 1 lb round steak 1 1/4 c water 1/4 c soy sauce 1 c cut up onion 1 c cut up green pepper 1 c cauliflower 1 c sliced fresh mushroom 1 c cut up celery 1 -2 diced tomatoes 2 tbsp corn starch Cut round steak into bite size cubes and brown in skillet. Add water and soy sauce and cover, simmer for 1/2 hour or until tender. Add onion, green pepper, cauliflower, celery and mushroom, cover and simmer for 5 - 10 minutes, vegetables should still be a little firm. While vegetables are simmering make a cornstarch paste. Stir paste into skillet. A little more water may be needed. Put tomatoes over the mixture during the last few minutes of cooking time. Serve over hot rice.
32: Chicken Cacciatore in 20 Minutes 1 lb boneless chicken strips 1/2 c chopped onion 1 garlic clove minced 2 tbsp oil 1 can (28 oz) tomatoes 1 can (8 oz) tomato sauce 1 tsp salt 1/2 tsp oregano 1/2 tsp basil 1/8 tsp ground red pepper 1 c green pepper strips 1 1/2 c minute rice Brown chicken, onion and garlic in oil. Add tomatoes, tomato sauce, seasonings and green pepper. Bring to a boil. Stir in rice, cover and remove from heat. Let stand 5 minutes. Stir before serving. Makes 4 servings.
33: Zesty Meatloaf 1 1/2 lb hamburger 1 egg beaten 1 c soft bread crumbs 1/2 c milk 3-4 tbsp Heinz 57 sauce 1 tsp salt dash pepper Combine ingredients. Shape into a loaf - approximately 8x4x1 1/2. Place in a shallow pan. Bake at 350 for 1 hour.
34: Aster's Chow Mien Hot Dish 1 lb hamburger 1 med onion 1 can cream of mushroom soup 1 can chicken rice 1 can cream of celery 2 c chow mien noodles 1 c Chinese vegetables (drained) Brown hamburger and onion. Add remaining ingredients, leaving a few noodles to topping. Bake at 325 for 45 minutes. Use a 2 qt casserole dish.
35: Bean Salad 1 can green beans 1 can yellow beans 1 can lima beans 1 can kidney beans 1 can northern beans 3 medium onion, sliced 1 c celery, diced 1 green pepper, diced Drain vegetables | Boil: 1 c vinegar 1 c oil 1 c sugar 1/2 tsp pepper Cool and pour over vegetables
36: Marinated Vegetables 1 can peas 1 can white corn 1 can French green beans 1 jar diced pimentos 2 c finely diced celery 1 c finely diced green pepper 1 c finely diced onion 1 c cauliflower 1 c broccoli Drain all vegetables Marinade: 1 1/2 c apple cider vinegar 1 c corn oil 1 c sugar 1 tsp salt 1/2 tsp pepper 1 tsp celery salt 1 tsp dill weed 1/2 c white wine Mix all marinade ingredients EXCEPT white wine. Bring to a boil. Add white wine. Pour over vegetables and refrigerate over night.
37: Summer Garden Delight Salad 1 sm onion 2 cloves garlic 1 /2 green pepper 6-8 med tomatoes 1 cucumber peeled 2 ribs celery 3 mild banana peppers 2 hot banana peppers 1/8 tsp oregano 1/2 - 1 tsp salt 1/2 tsp pepper 1/4 c cooking oil Freshly dice the onions, garlic, and green pepper. Cube the tomatoes and cucumber. Dice the celery and peppers. Put in bowl, add remaining ingredients. Best if refrigerated 12 - 24 hours before serving. Serves 4-6.
38: Tuna Macaroni Salad 1 c mayo 2 tsp red wine vinegar dash pepper 4 oz macaroni - cooked 1 can tuna 1 c cooked peas 1 c sliced celery 1/2 c chopped onion 1/4 c snipped dill or 1 tbsp dried dill In a large bowl stir together mayo, red wine vinegar and pepper. Add remaining ingredients, toss to coat well. Cover and chill
39: Lite Luncheon Salad 2 c uncooked macaroni 2 c chopped tomatoes 1 can tuna 1/2 c chopped green pepper 6 tbsp Italian dressing 2 tbsp real lemon 1 - 2 tbsp horseradish 1/2 tsp garlic salt 2 tbsp chopped parsley 12 slices cheese lettuce Cook macaroni. In a large bowl combine all ingredients, except cheese and lettuce. Mix well. Cover and chill to blend flavors. Just before serving cut 8 slices of cheese into small pieces. Fold into salad. With remaining 4 slices, quarter them and set aside. Serve salad on lettuce, topped with cheese quarters.
40: Lemon Jello Salad 1 1/4 c hot water 1 pkg lemon Jello 1 can #2 pineapple - drained 1/2 c syrup from pineapple 1/4 c diced celery 1/2 c diced apple 2 tsp pickle relish dissolve Jello, add remaining ingredients. Pour into a Jello mold. Refrigerate until set.
41: She-Deviled Eggs 12 hard-boiled eggs 1 small onion grated or diced 1 (3 oz) jar For Real Bacon Bits 1/2 c mayo 2 dashes Tabasco Cut eggs length-wise. Mash yolks until crumbly. Add onion, 1/2 jar bacon bits and mix well. Add Tabasco and mayo. Add more mayo for desired consistency. Spoon mixture into white halves of the eggs and chill. Sprinkle remaining bacon bits on eggs before serving.
42: Onion Soup 2 tsp butter 2 c thinly sliced onion 1 tsp flour 1 1/2 c beef broth 4 slices French Bread - toasted 1/2 c grated Parmesan Cheese Brown onion in butter. Add flour and continue to cook. Stir in broth and bring to a boil. Reduce heat and simmer 15 minutes. Preheat Broiler. Divide soup between 2 oven proof bowls. Top each with 2 slices of bread. Sprinkle Parmesan Cheese and brown under Broiler. Serves 2.
43: Potato Soup 6 large potatoes - cubed 2 tbsp butter 1 med onion diced 2 med carrots 2 stalks celery 2 chicken bullion cubes 4 c water 1 1/2 tsp salt pepper 1 13oz can of evaporated milk put all ingredients , except milk, in slow cooker, cover and cook on low 10 -12 hours (high for 3 - 4 hours) Stir in milk 1/2 - 1 hour before serving. Fry 3 -6 strips of bacon, crumble and serve on soup with cheese.
44: Lazy Day Lasagna | 1 lb hamburger 1 can (29 oz) tomato sauce 1 1/2 tsp salt 1 1/2 tsp basil 1/4 tsp oregano 1/8 tsp garlic powder 1 /2 cup water 2 c cottage cheese 1/4 c Parmesan cheese 1 egg 1 tbsp parsley flakes 8 uncooked lasagna noodles 2 c shredded mozzarella cheese Crumble hamburger and place in a 1 1/2 qt microwave safe dish. Microwave 5-6 minutes. Stir in next 6 ingredients. Cover with lid and microwave 4-5 minutes. Combine next 4 ingredients, mix well. Pour 1 1/2 c sauce into 12x8 baking dish. Place 4 noodles over sauce. Top with 1/2 cottage cheese mixture, sprinkle with mozzarella. Put 1 c sauce over, repeat layer. Cover tightly with saran wrap. microwave 15 minutes on high, then 15-20 minutes at 50% power. Sprinkle with 2 tbsp Parmesan cheese. Microwave uncovered for 11 minutes then let stand 10 minutes before serving.
45: Mexican Enchiladas Tortilla: 1 c flour 1 /4 c corn meal 1/4 tsp salt 1 egg 1 1/2 c cold water Beat until smooth. Spoon 3 tbsp on hot griddle to make a 6" tortilla. Filling: 2 c grated cheese 1 c onion 1/2 tsp salt Enchilada Sauce: 2 tbsp minced onion 2 tbsp Crisco 1 tbsp flower 1 clove of garlic 2 tsp chili powder 1 #2 can of tomato - juice separated 1 tsp salt 1/4 tsp Tabasco Brown onion in Crisco, add flour and cook until it no longer smells like flour, then add rest of the ingredients. Use about 1/2 c juice from tomatoes. Simmer until thick. | Coat bottom of baking dish with sauce. Fill tortillas with filling and place in baking dish. Cover with rest of enchilada sauce. Bake at 375 until bubbly.
46: Beef Stock 4 lb beef bones 1/2 to 1 lb ground beef 5 qt water 1 lg onion 2 carrots 2 ribs of celery 1 turnip 1 bay leaf 3 sprigs parsley 6 peppercorns 1 tbsp salt | Put bones and ground beef into a 425 degree oven for 45 minutes until bones are browned. Put bones and meat in a large pot. add water and bring to a boil. Reduce to a simmer and skim off foamy solids. Add chopped up onion, carrots, celery, turnip, bay leaf, parsley, peppercorns and salt, cover and simmer for about 4 hours. Add water if needed. Remove meat and vegetables and line colander with a wet kitchen towel. Pour stock through towel into another pan. Pour strained stock into jars to freeze. Chill and skim off layer of fat before freezing what you don't use.
47: After Work Chicken 2 tbsp oil 4 boneless, skinless chicken breast halves salt and pepper to taste 1 med onion, chopped 2 small cloves of garlic 1/4 c cognac 1 (15g) can of whole tomatoes 1 tsp powdered thyme Heat oil and add chicken, salt and pepper and brown. Add onion, garlic and cognac. Cook until onions are clear. Add tomatoes and thyme. Simmer covered for 15 minutes, remove cover and cook 15 minutes more. Serve with parsley rice and salad.
48: Parsleyed Rice 1 c rice 2 c water salt 2 tbsp butter 3/4 c chopped fresh parsley Cook rice according to package directions. then stir in butter and parsley.
49: Shrimp Salad 1 (7 oz) pkg shells, cooked 1 (10 oz) pkg frozen peas (thawed and drained) 1 (10 oz) pkg frozen shrimp (thawed and drained) 1/2 c chopped green pepper 1/2 c sliced radishes 1/4 c chopped onion 1 (2 oz) jar diced pimento 1/2 c mayo 1 tbsp horseradish sauce 1 tsp salt Mix all ingredients together and chill before serving.
50: Taragon Grilled Chicken 1/4 c olive oil 1/4 c sherry or chicken broth 1 tbsp onion flake 1 clove garlic, minced 1 tsp salt 1/2 tarragon 1/8 tsp pepper 1 chicken cut up Combine ingredients. Arrange chicken skin down, thick edges out. Brush with half of mixture. Cook covered on high for 10 minutes turn chicken, brush with remaining mixture. cook covered 8 - 12 minutes. Can be finished on the grill
51: Country Pork Chops 3 c sliced potatoes 2 c milk 1 minced onion 4 pork chops salt and pepper grease pan and put in potatoes, salt and pepper. Add milk and sprinkle with onion. Lay pork chops ontop and sprinkle with salt and pepper. ake at 350 for 1 hour or until done.
52: Red Cabbage 1 med head of red cabbage 1 rounded tbsp Crisco 1/2 c vinegar 1/2 c water 1 tsp salt 1/3 c sugar Remove outer leaves of cabbage and inner stalk and finely shred. Add all ingredients and cook gently until tender. Then season to taste with salt, sugar and vinegar.
53: BBQ Spareribs | 3 - 4 lbs ribs 1 lemon 1 lg onion 1 c catchup 1/3 c Worcestershire 1 tsp chili powder 2 dashes Tabasco sauce 2 c water Place ribs in a shallow pan and place sliced onion and lemon on each piece. roast at 450 degrees for 30 minutes. Combine remaining ingredients and bring to a boil. Pour over ribs and continue baking at 350 degrees until tender (about 1 hr). Baste sauce every 15 minutes. If sauce gets too thick add water.
54: Summer Berry Pie 1 1/2 c raspberries 1 1/2 c strawberries 1 c blueberries 3/4 c sugar 3 tbsp cornstarch 1 1/2 c water 1 - 4 oz pkg strawberry Jello 1 - 9" baked pastry shell (cooled) 1 - 8 oz pkg cool whip Mix berries and pour into shell. Mix sugar, cornstarch in saucepan and stir in water. Cook on medium heat and boil for 1 minute. Remove from heat, stir in Jello until dissolved. Cool to room temp and pour over berries. Refrigerate for 3 hours top with cool whip and serve.
55: Carmelita's Pea Salad Large pkg frozen peas cooked for 1 minute and then set aside for 10 minutes to cool. Add pimentos and green onions to taste. 1 c cubed cheese. Dressing 2 c mayonnaise 2 tsp horseradish 1/2 tsp mustard 1/2 c lemon juice salt to taste Combine and pour over pea mixture.
56: Norwegian Meatballs | 1 lb hamburger 1/2 lb pork 1 egg 1 tbsp cornstarch 1 med onion minced 1/2 c milk salt and pepper 1/8 tsp nutmeg 1/8 tsp allspice 1/8 tsp ginger Mix ingredients well until very light. Form into small balls, brown in butter, simmer slowly until done adding a little water if necessary. Remover meatballs and make gravy. Then Add meatballs back in to pan.
57: Rum Ham | 1 fully cooked ham 1-2 tsp whole cloves 1 cup brown sugar 3 unpeeled sliced oranges 1 1/2 c white rum | wrap ham tightly in foil, Bake at 300 for 35 minutes per pound. 1 hour before done remove from foil, pour off fat from pan, place sliced oranges on bottom of pan, remove rind/skin, score the fat, stud with cloves, place ham back in pan, pack brown sugar on top. Return to oven and baste for 1 hour.
58: Chicken and Dumplings | 1 carrot 1 whole clove 1 small onion 2 or 3 peppercorns 1 stalk of celery 1-2 tsp of salt 1 - 5lb stewing chicken (cut up) | Put 5 c water in pan, add vegi's, bring to a boil, add chicken and cook 2 hrs, when tender bone chicken, cut to bite size, skim fat (save 3 -4 tbsp fat and 1 1/2 c broth for gravy) | Dumplings 2 c flour 4 tbsp baking powder 1/2 tsp salt 1 1/2 tbsp shortening 1/2 - 2/3 c milk | stir together dry ingredients, cut in shortening, stir in milk, adding just enough to gather the dough. drop by spoon full. Cover and cook 20 minutes.
59: Chili | 1 lg onion 1 green pepper 1 lb ground beef 1 can stewed tomatoes 1 can tomato sauce 1 1/2 tsp salt dash paprika dash cayenne pepper or Tabasco 3 whole cloves 1 bay leaf 1 - 2 tbsp chili powder 2 1/2 c kidney beans Brown onion, pepper and meat. Add tomatoes and seasonings. Simmer 2 hours. Add water if necessary. Add beans then serve.
60: 1 pkg Southwestern Philly Cooking Creme 2 cups bow tie pasta 2-3 chicken breasts cubed 1 small red pepper, diced 1 yellow summer squash, sliced 1 can corn (fresh can be substituted) Boil pasta. Cook chicken until browned and done. when chicken is almost done add the vegetables. Drain pasta. Return pasta to the pan, add chicken and vegetable mix and southwestern cooking creme. Mix thoroughly. Serve while warm. If it is too thick you can thin with chicken stock or cream. | Southwestern Chicken Pasta
61: Hill Billy Hotdish | 2 cups elbow noodles 1 lb hamburger 1 pkt onion soup mix 1 can tomato soup 1 can creamed corn 2 cups shredded american cheese 1 stick butter, cut into pieces Boil noodles, fry hamburger. Once fried add onion soup mix. In 9x13 pan mix soup, corn, butter, cheese. Add noodles and hamburger. Bake covered at 350 for 30-40 minutes or until melted and bubbly.
63: Rich Brownies 1 stick margarine 1 c white sugar 4 eggs well beaten 1 - #1 can Hersheys chocolate syrup 1 flour 1/2 c nuts 1 tsp vanilla Cream margarine and sugar. Add eggs and chocolate. Mix in flour, nuts and vanilla. Bake at 350 for 30 minutes in a 9 x 13 pan.
64: Chocolate Frosting | 6 tbsp butter 6 tbsp milk 1 1/2 c white sugar 1/2 c chocolate chips Combine butter, milk and sugar, bring to a boil for 30 seconds. Remove from heat, add chocolate chips, Beat until creamy and spread over brownies.
65: Victorian Applesauce Cake | Dry Ingredients 2 c sifted cake flour 1 1/2 c sugar 1 1/2 tsp baking soda 1 1/2 tsp salt 2 tbsp cocoa 2 tsp each: cloves, cinnamon, nutmeg, allspice 1/2 c shortening | Liquid Ingredients 1 1/2c unsweetened Applesauce 2 eggs beaten Fruits and Nuts 1 1/2 c raisins 3/4 c nuts chopped Topping 1/4 c nuts chopped 2 tbsp sugar | Sift flour, sugar, soda, salt, cocoa, into bowl. Cut in shortening. Add in applesauce and beat 200 strokes. Scrape sides of bowl. Add eggs and beat 25 strokes. Add raisins and nuts. Sprinkle topping on. Bake at 350 10x13 pan = 50-60 min. Tube Pan = 85-95 min. If all-purpose flour used, reduce flour by 2 tbsp
66: Devils Food Cake | 3 c flour 1/2 c cocoa 1 tsp salt 1 tsp baking soda 2 c sugar 3/4 c oil Sift together dry ingredients. Mix in wet ingredients until moistened. Bake at 350 for 35 - 40 minutes. | 2 tsp vinegar 1 tsp vanilla 2 c cold water
67: 7 Minute Frosting | 2 egg whites unbeaten 1 1/2c sugar 4 tbsp cold water or 1/3 c cold water 3 tbsp light corn syrup or 1/4 tsp cream of tarter 1/8 tsp salt 1 tsp vanilla Put first 5 ingredients in top of double boiler and mix place over rapidly boiling water and beat constantly with beaters until it holds peak. Approx 7 minutes. Remove from heat, add vanilla.
68: Hawaiian Cheesecake Bars | 2 c flour 1 c sugar 1 c margarine 2 - 8 oz pkg of cream cheese 4 tbsp sugar 4 tbsp milk 2 eggs 2 tsp vanilla 2 - 8 oz cans crushed pineapple - well drained 2 c flaked coconut 2 tbsp melted butter | Combine flour, 1 c sugar and margarine until particles are fine. Pat into ungreased 10x13 pan and bake at 350 about 15 min or until brown around edges. Cool slightly. Blend together cream cheese, 2 tbsp sugar, milk, and eggs. Fold in vanilla and pineapple. Spread on crust. Combine coconut, and melted butter. Sprinkle over filling. Bake at 350 for 15-20 minutes or until coconut is toasted.
69: Banana Bran Bread | 2 c flour 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1 1/2 c mashed banana 1 1/2 c bran cereal 1/2 c margarine or butter 3/4 c sugar 2 eggs 1/2 c chopped nuts | Stir together flour, baking powder, baking soda and salt. Combine Banana and cereal in a separate bowl and let stand 2 minutes. In a large bowl, beat margarine and sugar, add eggs and cereal mixture. Stir in flour mixture and nuts. Spread in greased 9x5x3 loaf pan. Bake at 350 about 1 hour or until done. Let cool 10 minutes before removing from pan.

71: Old Fashion Double Chocolate Cream Pie | 2 pkg (4 serving size) Jello chocolate pudding 3 1/2 c milk 1/2 c chocolate ships or 3 sq Bakers semi-sweet chocolate 2 tbsp butter or margarine 1 baked pie shell, cooled | Combine pudding filling mix, milk, chips and butter in a saucepan. Cook and stir over medium heat until mixture comes to a full bubbling boil. remove from heat. Cool 5 minutes, stirring twice. Pour into shell and chill 3 hours. Garnish with Thick Cool Whip and sprinkle with grated chocolate.

73: Lard Pastry Pie Crust | 3 c flour 1/2 tsp salt 3/4 tbsp sugar 1/8 tsp baking soda 1 c lard 1 egg 2 tbsp lemon juice 3 tbsp ice water Sift together flour, salt, sugar and baking soda. Cut in lard until it makes small peas. In a separate bowl beat together egg, lemon juice and water. Add egg mixture to flour mixture a little at a time until pastry holds together. Turn onto a floured table and knead into a ball. Use immediately or wrap and refrigerate until ready to use, up to 12 days. Makes 2 - 2 crust pies or 4 - 1 crust pies.
74: Mom's Spice Cake 1 c brown sugar 1/2 c Karo Dark Corn Syrup 1 c Oil 1 c buttermilk 2 eggs beaten 2 1/2 c flour 2 tsp baking soda 1 tsp cinnamon 1/2 tsp nutmeg 1/2 tsp cloves Mix sugar, karo syrup, oil, buttermilk until well blended. Add eggs, blend well. In separate bowl mix dry ingredients. Slowly add dry ingredients to wet until all dry ingredients are incorporated. Bake at 350 until cake pulls away from edge of pan. Top with whipped cream and nuts.
75: Apple Crisp 6 c thinly sliced apples 1/3 c sugar 1 tsp cinnamon 1/2 tsp salt 2 tbsp melted margarine 3/4 c sugar 1/2 c flour 1/3 c margarine Mix together first 5 ingredients, put into 8" square pan, set aside. Combine sugar and flour. Cut in margarine until crumbly. Sprinkle over apples. Bake at 375 for about 45 minutes. Serve warm with whip cream or ice cream.
76: Lemon Meringue Pie 1 pkg (4 oz) Lemon Pudding & Pie Filling 3/4 c sugar 1 3/4 c water 3 eggs separated 1 tbsp lemon juice 1/2 tsp grated lemon rind 1/4 tsp cream of tartar 1 Keebler Ready Pie Crust Combine pie filling mix, 1/2 c sugar, 1/4 c water in pan, blend in egg yolks and remaining water. cook over medium heat stirring often, until mixture comes to a boil (full bubbling). Remove from heat, stir in juice and rind. Cool for 5 minutes. Stir twice. Place crust on a baking sheet and pour in filling. Beat egg whites and cream of tartar until foamy. Gradually beat in remaining sugar, 1 tbsp at a time. Continue beating until stiff peaks form. Spread over pie. Carefully sealing to the crust. Bake until light brown. 5-6 minutes. Cool at least 4 hours.
77: Raspberry Upside Down Cake 1 pkg white cake mix (not pudding type) 3 c fresh raspberries 1 c sugar 1 1/2 c whipping cream Grease and flour 2 - 9" cake pans. Prepare cake mix only reduce water to 1 cup. Pour into pans, sprinkle berries over batter. Sprinkle with sugar and pour cream on top. Bake at 350 for 1 hour. Immediately invert onto serving platter and serve warm.
