23: "When baking, follow directions. When cooking, go by your own taste." ~Laiko Bahrs | INGREDIENTS 1/2 Cup Light Mayo-2 Tsp. of Honey-1/2 Tsp. Poppy seed 4 Granny Smith Apples cored-quartered and thinly sliced-1Tbs. lemon juice-1 1/2 cup coarsely chopped cabbage-3/4 cup halved green grapes-1/2 cup thinly sliced celery. DRESSING In small bowl stir together mayo, honey and poppy seed-set aside. In a large bowl combine apples and lemon juice-toss to combine. Stir in cabbage grapes and celery. 31: CINNAMON FRENCH TOAST SOUFFLE | 1 Large loaf cinnamon bread to fit a 13x9 pan 12 ounces softened cream cheese 6 ounces softened butter 3/4 cup maple syrup divided 1/2 cup and 1/4 cup 10 eggs 3 cups half and half-cinnamon sugar-buttered maple syrup(50/50 mix of butter and 1/2 of the maple syrup-powdered sugar LOVEMOM! Place bread in well-buttered pan. Mix cream cheese, butter, plus 1/4 maple syrup until smooth. Spread on top of bread, leaving holes through which to pour egg mixture. Beat eggs, half and half and 1/2 cup maple syrup. Pour over bread and sprinkle with cinnamon sugar. Cover and refrigerate over night. Uncover and bake for 50-55 minutes at 350 degrees. Cut into squares and sprinkle with powdered sugar. Serves 8! LOVE MOM

37: VERY EASY RICE | Ingredients 1 Cup Uncle Ben's long grain rice (orange box)-3 Handfuls of fine egg noodles 3 Cups of water-4 Chicken bullion cubes-1 Stick of margarine Melt margarine----brown egg noodles in margarine Add bullion cubes to water----Heat water in the microwave until bullion cubes are soft or melted.(You may need to mash soft bullion cubes with a fork in the hot water until they dissolve. Add noodles and margarine to a casserole dish----add water/bullion----add cup of rice----cover----cook at 350 degrees for 35 minutes until liquid is dissolved----this can be made ahead and reheated in the microwave. This is easy to make and easy to double- everyone loves it! | CAREN BONNER

39: TURKEY CHILE 1 Lb. Chopped Turkey 1 Onion 1 Clove of garlic 1 Tsp. Chile Powder 1 1/2 Tsp. Oregano 2 Small cans Hunts Tomato Sauce(8Oz) 1 Green Pepper 1 Can Fresh Cut Diced Tomatos( 14.5 Oz) 1 Can Kidney Beans Fry Meat until Brown Add rest of ingredients Simmer for 1 1/2 Hours | JENN'S KITCHEN
40: SCALLION CRUSTED COD WITH MANGO SALSA | 4 Skinned Cod fillets,6-8 ounces(center cut) Kosher salt and freshly ground black pepper to taste-2 cups Panko crumbs-1/2 cup thinly sliced scallions-1 egg beaten with 1 Tbs. of water-2 Tbs. of grapeseed oil or canola oil-1 cup Spicey Mango Salsa-1/4 cup chopped cilantro Preheat oven to 400 degrees Season cod on both sides with salt & peeper. On a large plate, combine the Panko and scallions. Using a pastry brush, lightly brush the fillets with the egg wash and dredge in Panko crumbs on both sides Heat a large saute pan over medium heat. Add the oil and swirl to coat the pan. Add the cod and saute until the underside is brown(3-4 minutes)Gently turn the fillets and transfer the pan to the oven. Bake until the fish is cooked through(6-8 minutes) In a small bowl combine the salsa and cilantro and mix. Dollop the salsa on 4 plates. Place the cod on top of the salsa and serve.
41: JASON&KELLY | MANGO SALSA | 5 Large ripe mango's-2 medium red onions cut into 1/4 inch dice-2 Red jalapenos stemmed and minced- 1 Tbs. peeled and minced ginger-2 Tbs. traditional spicey,sambal(chile paste) or hot pepper sauce-1/3 cup fresh lime juice Kosher salt and freshly ground pepper to taste In a large, non-reactive bowl, combine the mangos, onions,jalepeno's, ginger, sambal and lime juice and blend gently. Season with salt and pepper. Use or refrigerate. Makes 6 cups-lasts 1-1 1/2 weeks refrigerated | RYAN&TATE

44: BLACKENED RIB EYE FROM SHAUN & KRISTI | 4 Rib Eye Steaks-approximately 1" thick Blackened Seasoning Butter or Olive Oil Blackened Seasoning 1 Tbs. Garlic Powder 1 Tbs. Black Pepper 1 Tbs. Dried Basil 1 Tbs. Cayenne Pepper 1 Tbs. Salt 1/2 Tbs. White Pepper 1/2 Tbs. Oregano 1/2 Tbs. Onion Powder Coat both sides of steak with seasoning. Drop butter or olive oil into hot skillet coating the bottom and cook for approximately 3-3 1/2 minutes on each side. Serve with desired vegetable or salad! | KRISTI & SHAUN

57: BREAD PUDDING FROM DEB! | 5 Cups Milk,6 eggs Beaten, 3/4 Cup Sugar, Dash of Salt 1 Teaspoon Vanilla,1/2 Cup Raisins, 7 Slices Canadian White Bread cut in quarters Preheat oven to 350 degrees-Mix milk, eggs, sugar, salt, vanilla & raisins-set aside. Line a 9x13 by 2 inch glass baking dish with quartered bread-overlapped slightly for a shingled effect. Pour custard mixture over the bread pushing the slices into the liguid to coat well. Sprinkle liberally with cinnamon. Place pan in a large baking dish filled with about 1 inch of water. Bake for 1 to 1 1/2 hours or until mixture sets and knife inserted in the center comes out clean. Serve warm with vanilla ice cream or whipped cream! Enjoy! | DEB

59: CHOCOLATE CHIP SOUR CREAM CAKE A FAMILY FAVORITE THOMAS &JAMES AGREE!) | INGREDIENTS 1 Bundt Pan 1 Package Yellow Cake Mix 1 Package Instant Vanilla Pudding 1 Cup Sour Cream or Plain Yogurt 1/2 Cup oil 4 Eggs 1/2 to 1 Cup Chocolate Chips(your preference) DIRECTIONS Mix cake with pudding. Blend sour cream(yogurt), oil and eggs. Add to dry mixture and beat for 2 minutes. Pour half the batter in a greased bundt pan, sprinkle with chips. Pour the rest of batter in pan. Pat down gently, cut through the mixture with a knife to remove air holes. Bake at 350 degrees for about 45 minutes to an hour-until the pick comes out clean. Cool before removing from pan. DELICIOUS! | CHEESE MACARONI-SERVES 6 While 1 box of Ziti is cooking in boiling water prepare: Melt 1 stick of butter, whisk in 4 3/4 Tbs. of flour, salt and pepper to taste. Cream until smooth, then add 2 1/4 cups of milk and about 1 Lb. of American Cheese. When mixture is well blended, add to cooked Ziti. You can eat it directly or put in the oven with brown onion rings. So fattening, SO GOOD!! | ANN HOLLERAN
