1: Introduction | Katherine Julia Soppe was born on August 21st, 1927 at home in the town of Templeton, Iowa. She is the youngest of Anton and Mary Soppe's 13 children. Katie married Louis Buelt on July 16th, 1953. Together they welcomed 7 children; Kenneth, Doris, Sandy, Randy, Joseph, Donald and Ann. On September 29th (Ann's 3rd birthday) the family moved to Central Wisconsin and have lived there ever since. Katie now has nine grandchildren and two great-grandchildren. Now retired, Katie enjoys spending her time playing cards, going to church, baking, and visiting with family and friend's.

2: Grandmas Helpful Hints | When using a glass baking dish turn down the oven temperature 25 degrees. | I use my Potato Masher to make pie crust. | Basic Grill * I make 5oz hamburgers (Ice Cream Scoop) I put between two pieces of wax paper and use a bean can to press down * Brats I cook them in can of beer and onion for 20 minutes then rinse with water and ready to grill.

6: Entrées | Ingredients Left Over Roast Egg Noodles Gravy r | Directions Make a roast cut in cubes. Make egg noodle recipe. In a pot bring noodles to a boil and then let simmer until tender. Drain noodles collect the water in a pan. Make gravy from the roast (left over is fine) combine noodles, gravy and meat. If you don't have enough gravy use the remaining water from the noodles. Heat in a pot and serve. | Beef and Noodles

7: Beer Batter Fish | Ingredients 1 Egg 1 Can Beer 1 Cup Flour 1 Tablespoon Sugar 1 Teaspoon Baking Powder Fish | Directions Beat eggs, add beer, then dry ingredients to mixture. Dip fish in the batter and fry.

8: Ingredients Potatoes Carrots Peas Green Beans Onion Celery | Directions Mix cut vegetables and chicken together and place in a pot. Boil until done. Drain half of the water out and add gravy; add flour to thicken. Place in baking dish and add biscuits on top. Bake at 400 degrees for 15 minutes | Chicken and Biscuits

9: Chili | Ingredients 1 Pound Hamburger 1/2 Medium Onion chopped 1 Can Bush's Chili Beans 1 Quart of Tomatoes 1 Tablespoon Chili Powder | Directions Brown Hamburger and onion. In a pot add chili beans, tomatoes, browned hamburger and chili powder; simmer on stove top until boil then serve.

10: Drunken Chicken | Ingredients 1 Whole Chicken- Cut up 2 Cups Hot Water 1 12 oz Can Tomato Paste 1/4 Teaspoon Oregano 1/4 Teaspoon Allspice 2 Teaspoons Salt 1/2 Chopped Onion 2 Teaspoons Wine Flour | Directions Cut up chicken, roll in flour and bake at 350 for 1 hour. Combine remaining ingredients and pour into a baking dish; add chicken and bake at 300 for 1 hour.

11: Baked Ham | Ingredients 1 Ham Whole cloves | Directions Place thawed ham in a baking dish. Poke cloves into the fat of the ham and bake 15 minutes for every pound.

12: Ham and Scalped Potatoes | Ingredients 3-4 Medium Potatoes Cream Sauce -1/4 Cup Ole or Butter -1/4 Cup Flour -2 Cups Milk Ham Onion | Directions Peal and slice potatoes. In a pot bring the potatoes to a boil and then remove and pour off water. Make cream sauce in a pot. Heat ole until it melts then add the flour, and stir until it starts to crumble then add a little bit of the milk followed by the remaining milk. In a baking dish add the potatoes, ham and sauce mix. Bake at 350 for 1 hour

13: Lasagna | Ingredients 2 Pounds Hamburger 1 Can of Tomato Sauce 1 Quart of Tomato Onion 1 Package of Lasagna Noodles (oven ready) Cheddar cheese Mozzarella Cheese | Directions Heat oven to 375. Prepare a 9x13 pan. In a skillet, brown the hamburger and onion. Then add the spaghetti sauce to the skillet. In 9x13 pan pour some tomato sauce on the bottom. Place a layer of noodles, spoon evenly meat sauce, and cheddar cheese. Repeat. Usually get 3-4 layers. Cover with Aluminum foil. Bake at 350 for 1hour, check the noodles and add mozzarella cheese bake for additional 10 minutes or until the cheese is melted.

14: Meat Balls | Ingredients 2 Pounds Hamburger 4 Tablespoons bread crumbs 2 Eggs Seasoning Salt 1 Teaspoon Worcester Sauce Onion | Directions Combine all ingredients and form into 1X1 balls. Fry in a pan and add either gravy or barbecue sauce

15: Meat Loaf | Ingredients 2 Pounds Hamburger 4 Tablespoons bread crumbs 2 Eggs Seasoning Salt 1 Teaspoon Worcester Sauce Onion | Directions Combine all ingredients and place in a bread pan. Bake at 350 for 1 1/4 Hours.

16: Mountain Oysters | Ingredients Pig Testicles Soda Crackers 1/2 Cup Beer 3 Eggs 1/4 Cup Milk | Directions Cut pig testicles into 1/2 inch thick pieces. Crush soda crackers and place in a bowl, in a separate bowl combine beer, eggs and milk. Dip pig nuts into batter and then into crushed soda crackers. Fry in hot oil.

17: Pizza for Two | Ingredients 1 Cup Hot Tap Water 1 Tablespoon Yeast 1/4 Teaspoon Salt 1 Teaspoon Oil 1 !/2 Cups Flour Pizza Sauce Sausage Pepperoni Cheese Mushroom | Directions Place yeast in hot tap water and let sit ten minutes. Combine salt and flour; add oil and yeast mixture. Knead on floured surface let raise for 1 hour or more and then roll out. Place on a pizza stone and add pizza sauce, cheese and desired toppings. Bake at 400 for 15-20 minutes.

18: Porcupine Balls | Ingredients 1-2 Pounds of Hamburger 1 Egg Salt & Pepper to taste 1/4-2 Cups Instant Rice 1 Can Tomato Sauce (or Tomato Juice) 1 Can Water | Directions Combine hamburger, egg and rice. Form into balls and place in a baking dish. Add tomato soup and water; salt and pepper to taste. (Can add green peppers and ketchup.) Bake at 350 for 1 hour

19: Roast Beef | Ingredients 4 Pound Beef or Pork Roast Seasoning Salt Bay Leaves Water | Directions Brown all sides of roast in a frying pan. then place in baking dish. Add water, sprinkle with seasoning salt and place bay leaves on top. Bake at 350 for 2 1/2 to 3 hours. *Can add potatoes, onions, and carrots in the water. To make gravy, use juices from the roast, beef bouillon and potato water. Boil in a medium sauce pan. Mix cold water and flour in a bowl and then add to medium sauce pan until thickened.

20: Sloppy Jo | Ingredients 3 Pounds Hamburger 1 Large Onion 1 Can of Original Manwich 1/4 Cup Sugar 1//2 Cup Ketchup | Directions Brown hamburger with onion in a frying pan. Put in an crock pot hamburger mix add remaining ingredients, and cook on medium for 1 hour

21: Tuna Noodle Casserole | Ingredients 1 Recipe Egg Noodles 1 Can of Cream of Mushroom Soup 1 Can of Milk Seasoning Salt to taste | Directions Make egg noodles and place in a medium mixing bowl with cream of mushroom soup. Drain tuna and add to noodle mixture. Add milk and seasoning to taste with seasoning salt. Place in a baking dish. Bake at 350 for 30-45 Minutes.

22: Reuben Sandwich | Ingredients Mayonnaise Ketchup Rye Bread Swiss Cheese Corn Beef Sauerkraut | Directions Mix mayonnaise and Ketchup together (about 50/50). Take 2 slices of Rye bread, put the dressing mix on the inside of the slices. Then the swiss cheese, next the corn beef and then some sauerkraut (use your hands to drain the juice off). Butter the other side and grill like a grill cheese and enjoy.

23: Bread Stuffing | Ingredients 4 Quart Dry Bread Crumbs 1 Tablespoon Sage 1 Teaspoon Salt 1 Tablespoon Poultry Seasoning Chicken Juice Onion Chopped 4 Eggs | Directions Cook Turkey neck, gizzards and tip of wings and onions (this is the chicken juice i use.) | I sometimes add 1 Box of Stove Top Stuffing for flavor.

24: Crispy French Fries | Ingredients Big Potatoes Oil | Directions Take big potatoes and cut them up just like a French fry. Put ice and water over them for 30 minutes. Pour ice and water off then take a bath towel and dry the fries. Heat you oil to 350 degrees and cook them until they turn light brown. Put in pan with paper towel. Put in the freezer until you would like them. Then fry.

25: Zucchini Patties | Ingredients 1 Cup BisQuick (Baking Mix) 1/8 Teaspoon Salt 2 Cup Shredded Zucchini 1 Tablespoon Butter 1/2 Cup Shredded Mozzarella or Cheddar Cheese 2 Eggs Beaten 2 Tablespoon Chopped Onion | Directions Combine BisQuick, cheese, salt, eggs, zucchini and onion in a mixing bowl. Blend well. Melt butter in a large skillet. Spoon heaping table of mixture into skillet. Fry for 3 to 5 min per side until golden brown.

26: Basic Omelet | Ingredients Ham Onion Cheddar Cheese Mushrooms 2 Eggs | Directions Cook ham and onion in a frying pan until the onion is done. Whip eggs and mushrooms, green peppers and whatever else you may like. Put in pan stir a little, when set flip and put cheese on then fold in half, | Breakfast

27: Biscuits and Gravy | Ingredients 1 Pound Sausage Onion Cream Gravy 1/2 Cup Ole or Butter 1/2 Cup Flour | Directions Brown sausage, and onion until done. Biscuits: Cream Gravy: Melt ole then add flour all at once use a whip and stir ole and flour till it crumbles then add 4 cups milk a little at a time and stir add chicken base 1 1/2 teaspoon, then add sausage to the gravy.

28: Buttermilk Pancakes | Ingredients 3 Eggs 1 Cup Buttermilk 1 Cup Flour 1 Tablespoon Sugar 1 Tablespoon Baking Powder 1 Tablespoon Baking Soda 1/4 Cup Ole | Directions In a bowl mix buttermilk and eggs. In another bowl mix flour, sugar, baking powder, and baking soda.Add to buttermilk and eggs. Mix well then add 1/4 Cup of melted Ole. Fry in a frying pan. Makes 4 to 6 Pancakes.

29: Cinnamon Buns | Ingredients 1 Basic Dough Recipe Cinnamon Sugar Melted Butter | Directions First, roll dough out to about 1/2 inch thickness by 9 inches long. Then, brush on melted butter. Next, mix sugar and cinnamon and sprinkle on dough. Spray with water, roll dough up, cut into 3/4" pieces and put in pan to raise. Bake at 350 for 20-25 minutes.

30: French Toast | Ingredients 4 Slices White Bread 3 Eggs 1 Tablespoon (Cinnamon Sugar) 1/4 Cup Milk | Directions Heat grill to medium heat, spray grill with cooking spray (Pam) Whip eggs, sugar, and milk. Then dip bread in the mixture and place on the grill.Brown each side and then enjoy.

31: Poached Eggs | Ingredients 1 Egg 1/2 Cup Water | Directions Use a small frying pan, heat to medium, then spray pan with cooking spray (Pam.) Bring 1/2 cup water to a boil then add egg. Add salt and pepper.Place lid for a few minutes if you prefer soft. *I put 1 slice toast on bottom and 1 slice on side".

32: Soup, Salad and Bread | Ingredients Onions Carrots Celery Dark Chicken Meat Chicken Bouillon 1 Egg Noodle Recipe | Directions Boil onions, carrots, celery and chicken until the chicken is done. Take chicken out and de-bone. Cut into bite sized pieces and put back into the pot. Add egg noodles and chicken bouillon and enjoy. | Chicken Noodle Soup

33: Broccoli Soup | Ingredients Get recipe from gram! Dad said it was really good! :) 1-16 oz Broccoli 1 Medium Onion 1/4 Cup Butter or Margarine 3 Potatoes Cup up 3 Tbsp. Flour 1 Cup Milk | Directions Cook until the potatoes are done. Add flour and milk to soup. You may need to add more milk. I use a blender. add chicken base to taste. If you desire cheese you need o add it now.

34: Ingredients 3 Medium Potatoes Cubbed ham Onion Chopped Celery 3 Cups of Milk 1/3 Cup Flour Chicken Base Salt & Pepper | Directions Slice potatoes in small chunks.Fill a pot with water. Bring potatoes add onion, and chopped celery to a boil and cook until the potatoes are done. Add salt and pepper. (do you save the water? if not how much?) In a small dish mix 1 cup milk and 1/3 cup flour. Then add to soup and stir. Add additional 2 cups of milk, chicken base, and ham. | Potato Soup | Helpful hint: If you have a ham bone add that into the potatoes when boiling. Otherwise just cut up ham or bacon and add to the soup.

35: Small Dumplings | Ingredients 3 Eggs 1 1/2 Cup Flour 1 Teaspoon Baking Powder | Directions Beat the eggs in a bowl then add flour and baking powder. Use a medium fork to stir into small lumps. Cook in soup and enjoy!

36: Ingredients 5 Cup Water 1 Larger Can Cut up Tomatoes 1 Cup Chopped Onion 1 Cup Chopped Carrots 1 Cup Chopped Celery 1/3 Cup Barley 1/4 Cup Ketchup 1 Tablespoon Beef Base 2 Tablespoon Beef Base 2 Teaspoon Crushed Basil 1 Bay Leaf Salt & Pepper to Taste | Directions Brown the beef. Drain off fat. Add remaining ingredients and bring to a boil. Cover and simmer for 1 hour or until veggies are done. You may add potatoes if you desire. | Beef Soup

37: Onion Soup | Ingredients 2 Onions 3 Slices of Toast 3 Cups of Water Chicken Base | Directions Cut onions up in slices then put some margarine or butter in a pot and cook until onions are done. Then add 3 cups of water and boil. After done boiling add chicken base. Make 3 slices of toast. Cut toast into cubes. You may add cheese if you desire.

38: Ingredients 2 Eggs 3 Tablespoons Milk 2 Cups of flour | Directions Beat eggs in a bowl then add flour one cup at a time to make a ball. Then roll out the dough and place on a baking rack until dry. Cut to desired length and width and place in soup or boiling water to cook. | Egg Noodles

39: Beef Stew | Ingredients Beef Cubes Potatoes-Cut up Carrots- Cut up Celery Cut Up Onion Diced Beans & Peas | Directions Brown meat add the rest let cook or put in oven till done. Add some flour mixed with water to thicken.

40: Ingredients 1 Can Red Beans Drained 1 Can Green Beans Drained 1 Can Yellow Beans Drained 8 Oz. Italian Dressing 1 Medium Onion Chopped 2-3 Green Peppers 1 Tablespoon Sugar | Directions Combine all ingredients. Cover & refrigerate for 3 hours. Stir occasionally. Instead of the Italian dressing you can use: 3/4 Cup Sugar 1/2 Cup Vinegar 1/2 Teaspoon Salt 1/4 Cup Salad Oil 1/4 Teaspoon Pepper | Three Bean Salad | Salad

41: 24 Hour Salad | Ingredients 2 Eggs 4 Tablespoons Vinegar 4 Tablespoons Sugar 1 Cup Whipping Cream 2 Cups Fruit Cocktail 2 Cups Marshmallows 2 Oranges Cut Up 2 Cups Diced Pineapple Cherries | Directions Beat eggs, add vinegar and sugar. Cook until thick, then add butter and cool. Add fruit and place in the refrigerator for 24 hours. Add cherries. ***HOW MUCH BUTTER?

42: Ingredients 1 Small Cauliflower Cut up 1/4 Cup Chopped Onion 1 Small Broccoli Cut up 8 Slices Bacon-Cooked and Crumbled 8 oz. Shredded Cheddar Cheese 1 Cup Mayo 1/3 Cup Sugar 2 Tablespoon Vinegar | Directions Mix together mayo, sugar, and vinegar. Add vegetables and bacon; serve. | Broccoli & Cauliflower Salad

43: Cole Slaw | Ingredients 1/2 Head Medium Cabbage Whole Container of Miracle Whip 1/4 Cup Sugar Thin with Milk | Directions Finely chop cabbage and add Miracle Whip and sugar. Thin with milk.

44: Ingredients 1 Can Fruit Cocktail- Drained 2/3 Cup Minute Rice 2 Teaspoon Lemon Juice 8 3/4 oz Crushed Pineapple- Drained 1 Cup Whipped Cream 1 1/2 Cup Mini Marshmallow | Directions Drain pineapple and save juice. In saucepan cook rice with 2/3 cup water and the juice, tsp. salt. Stir to moisten rice, bring quickly to boil, cover and boil. Cover & simmer for 5 min, remove from heat and let stand 5 minutes. Remove from heat and let stand 5 min, add pineapple & lemon juice. Cool and stir in marshmallows and fruit cocktail and fold in whipped cream. | Glorified Rice Salad

45: Fresh Cranberry Salad | Ingredients 2 Cups Cranberries 1 Red Apple 1 Big Orange | Directions Grind ingredients up and put in bowl add some sugar to taste.

46: Ingredients Tomatoes Broccoli Cauliflower Onion Italian Dressing 3 Tablespoons Vegetable Oil 2 Tablespoons Sugar 1 Tablespoon Vinegar | Directions Cut vegetables in chunks and add dressing, vegetable oil, sugar, and vinegar. | Fresh Vegetable Salad

47: Potato Salad | Ingredients 10 Medium Potatoes 10 Eggs 1 Big Onion 1 1/2 to 2 cups Miracle Whip 1/4 Cup Sugar 1 Tablespoon Mustard Milk to thin | Directions Boil potatoes two days before and place in refrigerator. Cook eggs in water with vinegar until boiling. Let sit in hot water for twenty minutes. Cool in cold water. Shred potatoes, eggs, and onion into a large mixing bowl and season with salt and pepper. In separate bowl mix together miracle whip, sugar, mustard, and milk until creamy. Mix the two mixtures together chill and then serve.

48: Ingredients 4 Baked Potatoes 1 Cup Sour Cream 1/4 Cup Chives 1 Cup Cheddar Cheese 1/4 Cup Ole Salt & Pepper to taste | Directions Scoop out potatoes and mix with the remaining ingredients. Bake at 350 degrees for 30 minutes. . | Twice Baked Potatoes

49: Baking Powder Biscuits | Ingredients 5 Cups Flour 1 Stick Ole (Cold) 1 Tablespoon Yeast 1/4 Cup Water 1 Teaspoon Baking Soda 3 Table spoons Sugar 3 Tablespoon Baking Powder 2 Cups Butter Milk | Directions Mix together flour, baking powder, baking soda, sugar, and ole. Put a hole in the middle of the mixture and add yeast, water and buttermilk (mix 1/2 first then add the rest). Knead and roll out on floured surface and cut out. Bake at 400 degrees for 15-20 minutes | Bread

50: Ingredients 2 Tablespoons Yeast 1/2 Cup Warm Water 1 Tablespoon Sugar 2 Cups Water 2 Teaspoons Salt 1/2 Cup Oil 1/2 Cup Sugar 2 Eggs 7-8 Cups Flour | Directions Combine yeast, 1/2 cup warm water and 1 tablespoon sugar. Stir with fork and let stand for ten minutes. Combine remaining water, salt, oil, sugar, 2 cups of flour and eggs. Add yeast mixture and enough flour (5-6 cups) to make elastic, place in pan and let raise for 30-45 minutes. Then bake at 350 degrees for 20-30 minutes | Basic Dough | Bun recipe: Just cut into circles and place on baking sheet.

51: Goo Rolls | Ingredients 1 Recipe Cinnamon Buns Cream Sugar | Directions Whisk cream and sugar. Pour over cinnamon buns. Bake at 350 for 20-25 minutes.

52: Ingredients 1 Recipe Cinnamon Buns 1 Teaspoon Salt 1/2 Teaspoon Ole 1/2 Cup Brown Sugar 1 Tablespoons Honey 2/3 Cup Chopped Pecans | Directions Combine 1teaspoon salt, 1/2 Teaspoon ole, 1/2 cup brown sugar, 2 teaspoons honey and 2/3 cup chopped pecans. Pour over cinnamon rolls. Bake at 350 for 20-25 minutes. | Pecan Rolls

53: Mash Potato Rolls | Ingredients 1/2 Cup Mashed Potato (With Milk & Butter) 1 Package Yeast (1 Tablespoon) 1/4 Cup Warm Water 1 3/4 Cup Warm Milk 1/4 Cup Butter or Ole 1/4 Cup Oil 1/4 C Sugar 1 Egg 1 1.2 Teaspoon Salt 1 Teaspoon Baking Powder 1/2 Teaspoon Baking Soda 6 Cups Flour Salt | Directions Warm milk and add butter, oil, potatoes, sugar, egg, and salt mix well. Then add 1 cup flour, powder, and soda mix. Add the remaining flour to form a soft dough. Put flour on the surface, and knead the dough until smooth. Put in a grease bowl, spray with Pam and let raise for 1 1/2 hours. Then punch down and then cut the dough into rolls. Place rolls on pan about 2 inches apart. Let raise until double about 20 minutes. Bake at 375 for 15-18 minutes or until golden brown, then brush with ole or butter on top.

96: Blood Sausage | Ingredients Blood From Hog's Neck Hog Head Salt and Pepper Flour to Thicken | Directions When you slaughter a hog, take a pot to catch the blood from the neck. If there are clots, let it cool. Place contents from pot in a blender to smooth; then strain. Boil hog head in large sauce pan until meat is cooked. Make sure to take the eyes and brain out before cooking. Let the head cool then take the meat from the head and cut it up. Add meat to hog blood, add salt and pepper, and flour to thicken. Pout mixture into cloth bag. Sew the cloth bag shut with needle and string. Boil it in the same water you boiled the hog head in for 1 to 1 1/2 hours.

Make a brine of two cups canning salt to one gallon of water. Pour brine over cucumbers until covered. Let stand for one week, stirring every day. On the eighth day drain and fill with boiling water with 1 tablespoon of alum. Let stand for one day. On the tenth day drain and cut into chunks. Make a syrup of five cups vinegar, eight cups sugar, one stick of cinnamon and two tablespoons pickles spice. Bring syrup to a boil and pour over cucumbers. Let stand for four days. On the fourteenth day put cucumbers and brine in jars and boil in hot water bath to seal (about ten minutes). Grandma makes an extra 1/2 batch of brine so there is enough to fill the jars.

103: Caned Pumpkin | Ingredients Baking Pumpkin Mason Jar | Directions Clean the Pumpkin off, take a hammer and a big knife; cut pumpkin in half. Take seeds out and cut off the shell of the pumpkin. Then Cut up in small chunks and place in a pot and cook for 20 minutes. Then poor off water, into a strainer. Mash then place in jars and place jars in canner cook 10 lbs for 25 minutes..

104: Cream Cucumbers | Ingredients 4 Big Cucumbers (Sliced) 1 Medium Onion (Sliced) 1 1/2 Teaspoon Canning Salt 1 1/2 Tablespoon Sugar Mayonnaise Milk 1 Tablespoon Vinegar | Directions Soak Cucumbers and onions in canning salt for 1 1/2 hours. Drain and then add mayonnaise, vinegar, sugar and milk to taste.
