FC: Grandma Coonce's Recipes

1: Valentine Salad 1 Can of cherry pie filling 1 Can on pineapple tidbits drained 1 Can of sweetened condensed milk 1 container of cool whip Mix all ingredants together and enjoy

2: Coconut Pie 1 Cup of coconut flakes 1 Cup of evaporated milk 1 Pinch of salt 3 Eggs 1 Cup of sugar 1/2 Stick of butter 1 Pinch of flour Cream butter and sugar together until fluffy. Add eggs one at a time and make sure they are mixed in well Then add milk, salt, flour, and coconut. Mix together and pour into deep dish pie shell. Bake at 350 for 55 minutes.

3: Pecan Pie 3 Eggs slightly beaten 1 Cup of light or dark corn syrup 1Cup of sugar 2 Tablespoons of butter 1 Teaspoon of vanilla 1 1/2 Cups of pecans 1 Pie shell In Large bowl stir together first 5 ingredients until well blended. Stir in nuts. Pour into pie shell. Bake at 350 for 50 to 55 minutes.

4: Cream Cheese Cookies 1 Package of cream cheese 1 Stick of butter 1 Cup of flour 9 Tablespoons of sugar 1 Small package of walnut halves Combine all ingredients but the walnuts. Drop mixture by spoonfuls onto greased cookie sheet. Bake at 350 for 10 minutes. Press 1 walnut half into each cookie while still hot.

5: Pound Cake 6 Eggs 2 Sticks of butter 1/2 Pint of whipping cream 3 Cups of flour 1 Teaspoon of vanilla extract 1 Teaspoon of lemon extract 3 Cups of sugar Mix all ingredients together. Bake at 325 for 1 1/2 hours.

6: Sugar Cookies 3/4 Cup of butter flavored crisco 1 Cup of sugar 2 Eggs 1/2 Teaspoons of flavoring (vanilla or lemon) 2 1/2 Cups of sifted flour 1 Teaspoon of baking powder 1 Teaspoon of salt Mix all ingredients together and drop by spoonfuls onto ungreased cookie sheet. Bake at 400 degrees for 6-8 minutes. Makes 2 dozen cookies.

7: Snowball Cookies 2 Sticks of butter 4 Tablespoons of powder sugar 2 Cups of sifted flour 1 Tablespoon of water 1 Cup of crushed pecans Mix all ingredients together. Roll into balls and place on ungreased cookie sheet. Bake at 275 degrees for 30 minutes. Let cookies cool then roll in powder sugar.

8: Blondies 1/2 Stick of butter 1 Cup of brown sugar 1 Egg 3/4 Cup of flour 1 Teaspoon of salt 1/2 Teaspoon of vanilla 1/2 Cup chopped walnuts 1 Teaspoon of baking Powder Melt butter and mix an mix all ingredients together. Bake at 350 degrees for 20-25 Minutes.

9: Chocolate Fudge 3 Cups of sugar 2/3 Cup of hershey's cocoa powder 1/8 Teaspoon of salt 1 1/2 Cups of evaporated milk 1/4 Cup of vanilla Line 8 or 9 inch pan with foil, butter foil. In large sauce pan stir together first 3 ingredients, stir in milk with wooden spoon. Stir constantly until mixture comes to a full rolling boil. Boil without stirring to 234 degrees. Remove from heat. Add butter and vanilla. Do not stir and cool at room temp. To 110 degrees. Beat with wooden spoon until fudge thickens and starts to loose some of its gloss. Quickly pour into prepared pan. Let cool and cut into pieces

10: Peanut Butter Cookies 1/2 Cup of crisco 1/2 Cup of peanut butter 1/2 Cup of sugar 1 Egg 1 1/4 Cup of flour 1/2 Teaspoon of baking powder 3/4 Teaspoon of baking soda 1/4 Teaspoon of salt Mix all ingredients together and cool in refrigerator for 1 hour. Roll into 1 inch balls place on ungreased cookie sheet. Make criss cross pattern in balls by pressing with fork. Bake at 375 degrees for 10-12 minutes.

11: Divinity Fudge 3 Cups of Sugar 1 Cup of light corn syrup 1/2 Cup of water 1/4 Teaspoon of salt 1 Teaspoon of vanilla 2 Egg whites 1 Cup of nuts In sauce pan combine sugar, corn syrup, and salt. Cook to 260 degrees. Meanwhile beat egg whites to stiff peaks. Gradually pour syrup over egg whites. Beat mixture for 5 minutes with electric mixer. Drop mixture by spoonful onto wax paper.

12: Peanut Brittle 2 Cups of sugar 1/2 Cup of water 1 Cup of corn syrup 2 Cup of raw peanuts Dash of salt 1 Heaping spoonful of baking soda 1 Teaspoon of vanilla Combine sugar, water, and corn syrup. Boil to hard boil stage. Remove from heat add raw peanuts and salt. Return to stove and boil until mixture is a golden brown. Take from fire add baking soda and vanilla mix together and poor on greased cookie sheet. Once candy is cooled break into pieces.

13: Pumpkin Pie 1 Unbaked pie shell 1 Can of pumpkin 1 Can of sweetened condensed milk 1 Egg 1/2 Teaspoon salt 1/2 Teaspoon nutmeg 1/2 Teaspoon ginger 1/2 Teaspoon cinnamon Mix all ingredients together and pour into pie shell. Bake at 375 degrees for 50-55 minutes.

14: Lemon Bars 1 1/2cups of unsifted flour 1/2 Cup powder sugar 3/4 Cup cold margarine 4 Eggs lightly beaten 1 1/2 Cup of sugar 1 Teaspoon of baking powder 1/2 Cup of lemon juice from concentrate Additional powder sugar. Combine flour, sugar, and butter until mixture is crumbly. Press mixture in lightly greased pan and cook at 350 degrees for 15 minutes. Combine rest of the ingredients and 3 tablespoons of flour. Pour mixture onto crust and bake for 20-25 minutes. Let bars cool and sprinkle with powder sugar.

15: Apple Pecan Bars 4 Eggs beaten 3 1/3 Cups of sugar 6 Teaspoon of baking powder 3/4 Teaspoon of salt 12 Tablespoon of flour 4 Apples Mix dry ingredients and sift together. Peel and grate apples. Mix all ingredients together and bake at 350 for 35 minutes. For toping combine 1 package of cream cheese, 1 cup of whipped topping, and 1 cup of powder sugar. When bars are cool top with topping.

16: Cherry Pie 1 Cup of sugar 3 Teaspoons of corn starch 1/4 Teaspoon of salt 3/4 Cup of cherry juice 1 1/2 Teaspoons of lemon juice 1/4 Teaspoon of almond extract 1/3 Teaspoon of red food coloring 3 Tablespoons of butter 3 Cups of drained tart red cherries 2 Pie crust In pan place 1/4 cup of sugar, corn starch. and salt. Add cherry juice and cook until thick. Add remaining sugar and cook until glossy. Then add lemon juice, butter, and cherries. Pour into one pie crust and cover with the other pie crust. Make slits in top and bake at 350 degrees for 20 minutes.

17: Egg Custard Pie 1 Stick of butter 1 Cup of sugar Pinch of salt 3 Eggs 2 Cup of evaporated milk 1 Teaspoon of vanilla Cream butter, sugar, and salt together. Add eggs one at a time and mix well after each one. Add milk and vanilla and blend well. Pour into pie crust and bake at 350 degrees for 25 minutes.

18: Peach Cobbler 1 1/2 Sticks of butter 3/4 Cup of sugar 1 Cup of flour 1 Cup of evaporated milk 2 Eggs Large can of peaches drained Melt 1/2 stick of butter and pour into bottom of 13x9 inch pan. Spread out peaches evenly in bottom of pan on top of butter. Mix rest of the ingredients together and pour over peaches. Bake at 350 degrees for 30 minutes or until top is golden brown.

19: Banana Bread 3 Cup of sugar 1 Cup Shortening 3 Eggs 2 Teaspoons of vanilla 4 Cups of flour 1 1/2 Teaspoons of baking soda 1 1/2 Teaspoons of baking powder 1/2 Cup of sour milk 6 Very ripe bananas Mix ingredients together and pour into 3 greased loaf pans. Bake at 300 degrees for 1 hour and 25 minutes.

20: Butter Icing 2 1/2 Teaspoon of soft butter 1 1/2 Cups of powder sugar 1/2 Tablespoon of cream 3/4 Teaspoon of vanilla Blend butter and sugar together add cream and vanilla and blend mixture until it is smooth.

21: Chocolate Icing 1 Tablespoon of butter 1 Square of bakers chocolate 1 1/2 Tablespoons or warm water 1 Cup of powder sugar Melt butter and chocolate over low heat. Add water and powder sugar and blend until it is smooth

22: Japanese Fruit Cake 8 Egg whites 2 Cups of sugar 1 Cup of butter 4 Cups of Flour 1/2 Cup of evaporated milk 2 Tablespoon of baking powder 1 Cup of Raisins 1 Cup of nuts chopped 1 Cup of candied cherries 1 Tablespoon of allspice 1 Tablespoon of cinnamon 1 Tablespoon of cloves

23: Fold in stiff egg whites. Add mixture to loaf pans and bake at 350 degrees for 25 minutes. Mix raisins, cherries, pecans, and spices together. Add 2 cups of sugar, 1 cup of boiling water, 3 tablespoons of cornstarch, and 2 cans of crushed pineapple. After it is mixed together pour mixture onto cooked loafs and bake at 350 degrees for 30 minutes. When finished baking pour the juice of two lemons over cake. Then cook at 350 degrees for 5 minutes. Then top with coconut. Let cakes cool and enjoy!

24: Caramel Frosting 1 Pound of light brown sugar 1 Cup of heavy whipping cream 1/2 Teaspoon of baking soda 1 Stick of butter In medium heavy sauce pan bring the brown sugar and cream to a rolling boil. Let boil for 1 minute and add baking soda, then let boil again for 1 minute. Remove from heat and add butter, do not stir. Let mixture cool. Then beat well until it thickens.

25: Chocolate Cream Pie 2 Eggs 1 Cup of evaporated milk 1 Teaspoon of vanilla 1 Stick of butter 2 Squares of unsweetened chocolate 1 Cup of sugar 1/2 cup of bisquick baking mix Sweetened whip cream Place all ingredients except for sweet cream into blender and blend for 1 minute. Poor mixture into greased pie plate and bake at 350 degrees for 30 minutes. Beat 1 cup of sweet cream with 2 Tablespoons of sugar until stiff. Spread on cool pie. Pie will make its own crust.
