1: SOUP AND/OR SALAD | Sexy Tomato Tortellini Soup - (4 servings) Ingredients: - 2 (14 oz) cans of reduced sodium chicken broth - 1 (9 oz) package of cheese tortellini - .5 (8 oz) tub of cream cheese spread w/ chive & onion - 1 (11 oz) can of condensed tomato or tomato bisque soup Directions: - in medium saucepan bring chicken broth to boil - add tortellini - reduce heat, simmer 5 minutes - in a bowl add 1/3 cup of hot chicken broth into cream cheese spread until smooth - return all ingredients to saucepan - stir and enjoy
2: SOUP AND/OR SALAD | Lime Marinade Salad (serves 6) Ingredients: - 2 14 oz. cans Hearts of Palm, drained - 1 lb. fresh mushrooms - 1 pint cherry tomatoes - 1 medium red onion, thinly sliced - 1/4 cup fresh lime juice - 1/4 cup olive oil - 1/4 cup chopped fresh parsley - freshly-ground black pepper to taste | Directions: - Cut Hearts of Palm into 1/2-inch rounds - wipe and trim mushrooms, thinly slice cut tomatoes in half - separate onions into rings - combine lime juice, olive oil, parsley, and pepper - pour over vegetables - refrigerate for 2 hours
3: Fresh Peach-Plum Soup (serves 6-8) Ingredients: - 1/2 cup sugar - 3 tbsp. cornstarch - 1 tsp. cinnamon - 1/8 tsp. ground cloves - 4 cups cranberry juice - 4 peaches or nectarines, peeled and sliced - 4 plums, peeled, pitted, and sliced - 1 lemon, sliced thin - sour cream and parsley to garnish, if desired | Directions: - In saucepan, combine sugar, cornstarch, cinnamon, and cloves - - gradually add cranberry juice and bring to boil - boil for 1 minute - reduce heat and add peaches (or nectarines), plums, and lemon slices - cover and simmer 10 minutes - serve hot or well-chilled - add sour cream and/or parsley, if desired
4: SOUP AND/OR SALAD | Bacon, Cabbage, & Cauliflower Salad Ingredients: - 1 head cabbage - 1 head cauliflower - 1 onion - 1 lb. bacon - 2 cups mayonnaise - 1/3 cup Parmesan cheese - 1/3 cup sugar | Directions: - shred cabbage, cauliflower, onion, and bacon -layer in same order - mix mayonnaise, Parmesan cheese, and sugar -spread over layers of salad - mix well
5: Nappa Cabbage Salad Ingredients: - 1/2 head Nappa Cabbage - 1/2 head leaf lettuce - 1/2 head regular lettuce - 6 green onions & tops - 1 package Chow Mein Noodles - 1 stick margarine - 1/2 cup sesame seeds - 1 cup oil - 1 cup sugar - 1/2 cider vinegar - 2 tbsp. soy sauce - 1/2 tsp. pepper | Directions: - cut up Nappa cabbage, leaf lettuce, regular lettuce, and onion - sautee 1/2 package of Chow Mein noodles in 3/4 stick of margarine - once brown, add 1/2 cup sesame seeds - beat oil, sugar, cider vinegar, soy sauce, and pepper together - spread over vegetables and noodles
6: Dressings, Sauces, & Dip | Artichoke Dip Ingredients: - 1 pkg. of Hidden Valley Ranch (do not prepare) - 1 cup mayonnaise (Helman’s) - 16 oz. of sour cream - 1 can of artichokes in water (drained and diced) - 1/2 cup parmesan cheese (powdered) Directions: - mix all ingredients - chill for 24 hours - serve with Frito’s scoops | Chinese Rib Sauce Ingredients: - 3/4 cup soy sauce - 3 tbsp. honey - 3 tbsp. dry sherry - 6 garlic gloves, finely minced - 6 tbsp. superfine sugar - 2 tsp. salt - 1.5 tsp. Chinese five-spice powder Directions: - Combine soy sauce, honey, sherry, garlic, sugar, salt and five-spice powder - blend until sugar is dissolved
7: Celery Seed Dressing Ingredients: - 1 cup sugar - 1/2 cup vinegar - 2 cups vegetable or corn oil - 2 tsp. salt - 2 tsp. paprika - 2 tsp. dry mustard - 2 tsp. celery seed - 2 tsp. green onion, with stems, chopped Directions: - beat all ingredients together in food processor - refrigerate - serve chilled
8: Dressings, Sauces, & Dip | Shrimp Dip Ingredients: - 1 lg. cream cheese, softened - 4 tbsp. ketchup - 2 tbsp. lemon juice - 1 tbsp. Worstershire sauce Directions: - mix all ingredients until only small chunks of cheese remain | Sour Cream Dip Ingredients: - 2 cups sour cream - 2/3 cup honey - 2 tsp. cinnamon Directions: - Mix well - refrigerate
9: Summer Salsa Ingredients: - 1 lg. mandarin oranges, drained - 1 (15 oz.) can white or yellow corn, drained - 1 (15 oz.) can black eyed peas, drained - 3-4 plum tomatoes, chopped - 1/2 cups wishbone Italian dressing Directions: - mix together oranges, corn, peas, tomatoes, and dressing
10: Snacks 'n Stuff | Sausage & Pepperoni Pizza Puffs Ingredients: - 3/4 cup flour - 3/4 tsp baking powder - 1/2 tsp garlic powder - 3/4 cup whole milk - 1 egg, lightly beaten - 4 oz mozzarella cheese, shredded (about 1 cup) - 2 oz mini turkey pepperoni, (about 1/2 cup) - 4 oz low-fat sausage, cooked and crumbled - 1/2 cup pizza sauce | Directions: - Pre-heat the oven to 375 - Grease a 24-cup mini-muffin pan - In a large bowl, whisk together the flour, - garlic powder and baking powder; - whisk in the milk and egg. - stir in the mozzarella, sausage and pepperoni; let stand for 10 minutes. - stir the batter and divide among the mini-muffin cups. - Bake until puffed and golden, 20 to 25 minutes. - Meanwhile, microwave the pizza sauce until warmed through. - Serve the puffs with the pizza sauce for dipping.
11: Bleu Cheese Bites (makes 40) Ingredients: - 8 oz. pkg. buttermilk-style refrigerated biscuits - 1/4 cup butter - 1/4 cup plus 1 tbsp. bleu cheese Directions: - separate biscuits and cut each into quarters - arrange in 2 8-inch square baking dishes melt butter and cheese together and pour over biscuits - bake at 400 degrees for 12-15 mins | Onion Rounds - (makes 24) Ingredients: - 1 cup mayonnaise - 1 large yellow onion, finely chopped - 1/2 cup parmesan cheese - 1 pkg. party rye bread rounds Directions: - mix mayonnaise, onion and cheese. - spread mixture on bread rounds - heat under broiler until slightly brown
12: Snacks 'n Stuff | Apricot Bars (2 dozen cookies) Ingredients: - 1.5 cups sifted flour - 1 tsp. baking powder - 1/4 tsp. salt - 1.5 cups quick-cooking rolled oats - 1 cup brown sugar - 3/4 cup butter or margarine - 12 oz. can apricot preserves | Directions: - sift flour, baking powder, and salt - stir in rolled oats and brown sugar - cut in butter until mixture is crumbly - pat 2/3 of crumb mixture into an 11 x 7-inch pan - spread with preservatives cover with remaining crumb mixture - bake at 375 degress for 35 mins or until browned. - cool and cut into squares
13: Corn Dogs Ingredients: - 1 Tbsp vinegar or lemon juice - scant 1 cup milk (I used skim) - 1 1/2 cup flour - 1 cup yellow corn meal - 1/4 cup sugar - 2 teaspoons baking powder - 1 teaspoon salt - 1/2 teaspoon baking soda - 2 eggs - 10-12 hot dogs - brochettes or wooden skewers, cut in half | Directions: - preheat oil in a deep fryer or large skillet to 365 degrees. - place 1 Tbsp of the vinegar or lemon juice in a liquid measure cup. - add enough milk to measure 1 cup. - stir and let sit for 5 minutes. - meanwhile, whisk together the flour, corn meal, sugar, baking powder, salt, and baking soda in a large bowl. - add milk and eggs then whisk until well combined. - insert skewer in hot dog and dip in batter. - coat hot dog well and fry in 356 degree oil until golden brown. - drain on towels.
14: Snacks 'n Stuff | Bacon Wraps Ingredients: - 2 cans water chestnuts, sliced - 2 lbs. bacon, uncooked and cut into thirds Directions: - wrap 1 piece of bacon around 1 water chestnut - secure with tooth-pick - place into 9 x 13 inch baking pan - repeat until all water chestnuts are wrapped
15: Sausage Cheese Balls Ingredients: - 2 lbs. Italian sausage, uncooked - 1.5 cups Bisquick - 4 cups cheddar cheese, shredded - 1/2 cup onion, chopped - 1/2 tsp. garlic powder Directions: - Pre-heat oven to 375 degrees - Mix all ingredients together well - form into 1" balls - bake 15 mins on ungreased cookie sheet.
16: Desserts | Pumpkin Spice Cookies (32 cookies) Ingredients: - 1 box of yellow cake mix (18.5 oz) - .5 cup oats - 2-2.5 tsp. of pumpkin spice - 1 can of pumpkin (15 oz.) - 1 egg - 2 tbsp. canola oil | Directions: - slowly add dry ingredients to wet ingredients - mix - bake at 350 degrees for 18-20 minutes cool - frost with butter cream frosting - can add orange zest
17: Pumpkin & Cheese Spice Cake Ingredients: - 8 oz cream cheese, room temperature - 1 large egg, room temperature, lightly beaten - 1/4 cup powdered sugar - 1/2 teaspoon pure vanilla extract - For the Pumpkin Spice Batter: - 3/4 cup brown sugar, lightly packed - 2 large eggs - 3/4 cup pumpkin puree - 2 tablespoons canola oil - 1 teaspoon pure vanilla extract - 1 1/4 cups all-purpose flour - 1 1/4 teaspoons baking powder - 1/4 teaspoon baking soda | - 1/4 teaspoon salt - 3/4 teaspoon cinnamon - 1/2 teaspoon nutmeg - 1/4 teaspoon ginger - 1/8 teaspoon cloves
18: Desserts | Pumpkin & Cheese Spice Cake (cont.) Directions: For the Cheese Batter: Use a handheld electric mixer to beat together all ingredients until smooth and creamy. For the Pumpkin Spice Batter: - Preheat oven to 350F; lightly grease 3 mini loaf pans with butter. - In a medium bowl, whisk together the brown sugar and eggs until light and fluffy, then stir in the pumpkin, canola oil, and vanilla. | - In a separate bowl, whisk or sift together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves. - Gradually stir the dry ingredients into the wet, being careful not to over-mix. - Divide the pumpkin batter between the 3 loaf pans, then pour the cheese batter on top. - Bake until golden around the edges, about 35 to 40 minutes, or until a toothpick inserted inside comes out clean or with just a couple crumbs. - Cool 10 minutes in the pans, then remove from the pans and transfer to a wire rack to finish cooling.
19: Ice Box Oatmeal Cookies Ingredients: - 1 cup butter - 1 cup sugar - 1 cup brown sugar - 2 eggs - 1 tsp. vanilla - 1.5 cups flour - 1 tsp. salt - 1 tsp. baking soda - 3 cups quick cooking oatmeal - 1/2 cup chopped pecans - 1/2 cup coconut | Directions: - heat oven to 350 degrees - mix all ingredients well - shape into 3 logs - wrap in waxed paper - let chill overnight - slice and bake 12 to 15 minutes
20: Desserts | Aunt Hildegarde's Dessert Ingredients: - 1 cuo drained pineapple, crushed - 1 lb. cottage cheese - 1 pkg. Jello, orange - 1 ctn. cool whip - mini marshmallows to taste Directions: - Combine all ingredients - place in refrigerator | Chocolate Fondue Ingredients: - 1 (14 oz.) can sweetened condensed milk - 1/2 cup freshly brewed strong coffee - 4 squares semi-sweet baking chocolate, chopped - fresh fruit Directions: - Heat condensed milk and coffee together in small saucepan - add chocolate - stir until completely melted - serve with fresh fruit
21: Million Dollar Spaghetti Ingredients: - 7 oz. pkg. thin spaghetti noodles - 1 tsp. butter - 11/2 lbs. ground beef - salt and pepper - 1 tsp. minced green pepper - 8 oz. pkg. cream cheese - 1/4 c. sour cream - 8 oz. cottage cheese - 1/3 c. onion - 2 tsp. melted butter - 8 oz. can tomato sauce | Main Dishes | Directions: - Cook spaghetti noodles and drain. - Saute beef in butter until brown, then add onions, green peppers, salt, pepper and tomato sauce. - Remove from heat. - Combine cheeses and sour cream. - Using a 2 quart casserole dish, spread half of spaghetti noodles, cover with cheese and then cover with meat sauce and add remaining noodles to the top. - Pour melted butter over spaghetti noodles then spread remaining meat sauce over the top. - Bake at 325-350 for about 30 minutes.
22: Main Dishes | Lighter Beef & Broccoli Ingredients: - 1 large bunch of broccoli approx. 1.5 lbs - 1 lb. of beef tenderloin cut into 1/8 inch strips - 3 garlic cloves - 1 tbsp. of grated fresh ginger - 1/4 tsp. of crushed red pepper - 1 tsp. olive oil - 3/4 cup of chicken broth - 3 tbsp. of soy sauce - 1 tbsp. of corn starch - 1/2 tsp. of asian sesame oil | Directions: - cut broccoli flowerettes into 1.5 inch pieces - in a 12 in. skillet add 1/2 cup of water - heat to boiling - add broccoli - cook for 3 minutes uncovered (or until tender) - drain and set aside - wipe skillet dry - in a medium bowl toss beef with garlic, ginger, and crushed red pepper - add 1/2 tsp. of olive oil to skillet (medium to high heat) - cook meat for 2 minutes - in a cup mix broth, soy sauce, corn starch, and sesame seed oil until blended - stir into meat - cook for 1 more minute add broccoli - serve over rice
23: Flank Steak w/ Teriyaki Sauce Ingredients: - 1/2 cup soy sauce - 2 tbsp. vinegar - 2 tbsp. brown sugar - 1 tbsp. white sugar - 1 tbsp. ground ginger - 1/2 tsp. garlic powder - 2 flank steaks Directions: -Mix ingredients - marinate flank steaks for 2-5 hours - turn occasionally - slice against grain -serve with rice
24: Main Dishes | Spinach Casserole Ingredients: - 1 package of frozen spinach - 4 oz. of spaghetti - 1/2 cup of sour cream - 1 beaten egg - 2 tbsp. of parmesan cheese - 2 tbsp. of onion - 2 cups of monteray jack cheese (shredded) - 1/4 cup of milk - salt & pepper | Directions: - mix all ingredients together - bake at 350 degrees (covered) for 15 minutes - bake at 350 degrees (uncovered) for another 15 minutes
25: White Chicken Chili Ingredients: - 1.5 lbs. of boneless chicken breast - 3 16 oz. jars of Great Northern Beans - 2 14 oz. cans of chicken broth - 1 4 oz. can of chopped green chili’s - 2 cups of white onion - 2 tbsp. of mince garlic - olive oil - cumin - cayenne pepper - hot sauce - oregano Directions: - prepare in advance 1.5 lbs of boneless chicken breast | - bake breasts at 350 degrees for 30 mins - when ready to use chop breasts into bite-sized pieces - In a large soup pot pour 2 14 oz. cans of chicken broth - add white beans w/ liquid - keep heat low - take 2 cups of finely chopped white onions and 2 tbsp. of fresh mince garlic and saute them in a tbsp. of olive oil until onions are translucent - stir in 4 oz. can of chopped green chili’s - put onions, garlic, chili’s into pot with beans and broth - add cubed chicken - stir in 2 heaping tsp. of cumin, 2 level tsp. of oregano, 1/4 tsp. of heaped cayenne pepper, and a dash of hot sauce - heat for 10 mins - serve
26: Main Dishes | White Chicken Enchiladas Ingredients: - 10 soft taco shells - 2 cups cooked, shredded chicken - 2 cups shredded Monterey Jack cheese - 3 Tbsp. butter - 3 Tbsp. flour - 2 cups chicken broth - 1 cup sour cream - 1 (4 oz) can diced green chillies | Directions: - Preheat oven to 350 degrees. - Grease a 9x13 pan - Mix chicken and 1 cup cheese. - Roll up in tortillas and place in pan. - In a sauce pan, melt butter, stir in flour and cook 1 minute. - Add broth and whisk until smooth. - Heat over medium heat until thick and bubbly. - Stir in sour cream and chilies. Do not bring to boil, you don't want curdled sour cream. - Pour over enchiladas and top with remaining cheese. - Bake 22 min and then under high broil for 3 min to brown the cheese.
27: Sides | Zooey Beans Ingredients: - 1 lb. of fresh green beans - 2 cloves of mince garlic - 1.5 tbsp of good olive oil - 1 package of sweet & low (sugar substitute) - 2 tbsp of soy sauce Directions: - cut and prepare green beans - in a large skillet add oil, garlic - set to medium heat - add beans and soy sauce - cover and steam for 4-5 mins - add sweet & low - stir - cook for 1 more minute - serve
28: Sides | Au Gratin Potatoes Ingredients: - 2 lb. bag of frozen hash browns - 1 stick margarine - 1/2 cup chopped onion - 2 cup shredded cheese - 1 can cream of mushroom soup - 3/4 can milk | Directions: - Cover bottom of 9 x 13 pan with hash browns - spread 1/2 of soup on top - sprinkle on chopped onions and 1/2 of cheese - dot w/ slices of butter - put other half of potatoes on top w/ other half of cheese and soup - pour milk over top - refrigerate for 4 hours - bake at 350 degrees for 1 hour
29: Taco Poppers Ingredients: - 4-5 med. Russet potatoes - 1/4 cup Vegetable Oil - 1 (1 oz.) pkg. Taco seasoning mix - 3 tbsp. cornmeal Directions: - Pre-heat oven to 450 degrees - pierce potatoes with a fork and place in microwave - microwave for 6 mins until barely tender - cut into large cubes and place in bowl - toss with vegetable oil - combine taco seasoning and cornmeal in large plastic bag, and shake to coat - place on an ungreased baking sheet - bake for 8 mins or until golden brown
30: Sides | Quick Rice Side Dish Ingredients: - 1 cup raw rice - 1 can French onion soup - 1 can chicken stock - 6 tbsp. butter or margarine Directions: - mix ingredients in casserole dish - cover and bake at 350 degrees for one hour - stir rice, add butter, and cut into 1 Tbl. chunks and continue baking | Macaroni & Cheese Ingredients: - 1 (7 oz.) pkg. macaroni pasta - 1 lb. cooked ham (optional) - 1 lb. shredded cheddar cheese - 1 (12 ox.) can low fat evaporated milk, undiluted Directions: - in a large bowl, mix cooked and drained macaroni, ham, and cheese - put in a baking dish - evenly pour milk over dish - bake at 375 degrees for 55-65 mins - let stand for 5 mins
31: Beverages | Double Berry Smoothie Ingredients: - 1 cup raspberry sorbet - 1/2 cup lemonade - 1 cup frozen, unsweetened strawberries - 1/4 cup sugar - 6 ice cubes Directions: - whirl sorbet and lemonade in a blender to combine - add strawberries and sugar - with blender running, add ice cubes one at a time until mixture is thick and smooth
32: Beverages | Hot Chocolate Ingredients: - 1 box dry milk (20 qts.) - 1 (16 oz.) jar cremora - (16 oz.) powdered sugar - 1 (32 oz.) box Nestle Quick Directions: - mix all ingredients together - mix 1/3 cup of mix to 1 cup of hot water | Hawaiian Party Punch Ingredients: - 2 (46 oz.) cans Hawaiian punch fruit drink - 2 cups grapefruit juice, chilled - 2 cups grenadine syrup - 1/2 orange sliced, - 2 (12 oz.) cans carbonated lemon-lime soda - 1 (10 oz.) pkg. frozen sliced strawberries - partially thawed ice cubes Directions: - In large punch bowl, combine punch, grapefruit juice, and grenadine - add strawberries - just before serving, add soda and ice - float orange slice on top
33: Colorado Bulldog (alcoholic beverage that I will not consume until I turn 21) Ingredients: - 1 oz. Kahlua - 1/2 oz. Coca-Cola - 3.5 oz. milk or cream - 1 oz. Vodka - ice Directions: - Mix, shake, serve over ice | Pineapple Orange Colada Ingredients: - 1.5 cups pineapple chunks - 1/2 cup pina colada concentrate - 2 cups orange sherbet - sliced pineapple (optional) Directions: - Place pineapple chunks, pina colada concentrate and sherbet in blender - blend on high about 30 sec. until smooth - garnish with pineapple slices
