89: Wine Ceremony Wine has been a big part of the way in which we celebrate special occasions for thousands of years. Alex and Nic are going to make wine a part of their celebration of marriage today in a Unity Wine Ceremony. They will create a new wine together, symbolic of the joining of their single lives, and the creation of a new beginning. Alex’s carafe contains a Cabernet Sauvignon. Cabernet Sauvignon grapes tend to favor warmer climates and are often an ideal wine for aging. Because Cabs take a bit longer to reach maturation, allowing their flavors to mellow, they are ideal candidates for blending with other grapes, primarily Merlot. This blending softens the Cabernet, adding appealing fruit tones, without sacrificing its innate character. In Nic’s carafe, there is a perfect match for Alex and her Cabernet: a Merlot. The fresh flavors of plums, cherries, blueberries and blackberries, mixed with cocoa and blackpepper tones, often dominate this wine. Merlot thrives in colder climates, and people love to blend it with other varietals, such as Cabernet Sauvignon. By blending a Cabernet and a Merlot, the Cabs are softened and mellowed, while the Merlot enjoys more structure and definition.
