1: An Italian Cookbook for My senior Project

2: Zesty Italian Stuffed Peppers 3 bell peppers 1 pound ground beef 14 oz spaghetti sauce 1 1/3 cups French's Taste Toppers, French Fried Onions 2 tablespoons Frank's Redhot sauce 1/2 cup uncooked instant rice 1/4 cup ripe olives 1 cup shredded mozzarella

3: Preheat oven to 400 degree F. Cut bell peppers in half lengthwise through stems; discard seeds. Place pepper halves, cut side up, in 2-quart shallow baking dish; set aside. Place beef in large microwavable bowl. Microwave on HIGH 5 minutes or until meat is browned, stirring once. Drain. Stir in spaghetii sauce, 2/3 cup Taste Toppers, Redhot sauce, rice and olives. Spoon evenly into bell pepper halves. Cover;bake 35 minutes or until bell peppers are tender. uncover; sprinkle with cheese and remaining 2/3 cuyp taste Topper. Bake 1 minute or until Taste Toppers are golden. Servings: 6

4: 1 LB ground beef 1 Onion diced 1 Green pepper, diced 1 Garlic Clove, minced 1 tbsp Sugar 1 1/2 tsp. Salt 1 tsp Oregano Leaves 1/4 tsp pepper 6 oz tomato paste 28 oz can tomatoes 16 ox package spaghetti mix

5: In 4 quart sauce pan over medium heat, cook ground beef, onion, green pepper and garlic together till meat is browned. Stir in salt, sugar oregano, pepper, tomato paste, can tomatoes and spaghetti package into another pot. Drain ground beef and stir in all that was in the sauce pan. Cook for 45 minutes and serve. Serves: 10

6: Chocolate Espresso Cake 2 Cups Cake flower 1 1/2 teaspoons baking soda 1/2 teaspoon salt 1/2 cup butter, softened 1 cup granulated sugar 1 cup packed light brown sugar 3 eggs 4 squares unsweetened chocolate, melted 3/4 cup sour cream 1 teaspoon vanilla 1 cup brewed espresso*

7: Preheat oven to 350 degree F. Line bottoms of two 9-inch round cake pans with waxed paper;lightly grease paper. Combine flour, baking soda and salt in medium bowl; set aside. Beat butter and sugars in large bowl with electric mixer at medium speed until light and fluffy. Add eggs, one at a time, beating well after each addition. Add melted chocolate, sour cream and vanilla; beat until blended. Add flour mixture alternately with espresso, beating well after each addition. Pour batter evenly into prepared pans. Bake 35 minutes or until wooden pick inserted into canter comes out clean. Cool layers in pans on wire 10 minutes. Loosen edges and invert layers onto rack to cool completely. prepare Creamy Chocolate Frosting and White Chocolate Curls, if disred. To fill and frost cake, place one layer on cake plate; frost top with Cream Choclate Frosting. Place second layer over frosting. Frost top and side with frosting; smooth frostinjg. Place White Chocolate Curls on cake if disred. Servings: 12

8: Shrimp, tomato, carper with noodles 1/3 Cup Extra Virgin Olive Oil I Cup Onions Thinly Sliced 1 Can Fresh Tomatoes 1 Tsp Chopped Fresh Oregano 2 TBs Capers 1 Lb Fresh, Peeled, Deviened Shrimp and any choice of noddels

9: Put the olive oil and onion in a large skillet over medium heat, and cook until onion is golden brown. Raise the heat to medium-high and add the tomatoes. Cook rapidly until most of the liquid has evaporated. While cooking the tomatoes bring 4 quarts of water to a boil, add a tsp of salt and the noodles all at once. Add oregano, caper and shrimp to sauce. Stir together and cook until shrimp is pink. When the noodles are cooked add with sauce. Serves 4
