1: Dearest Aunt Shelley, This cookbook was created with much love for you on your special day. On every page you will find recipes and messages from your closest family and friends. You're always there to bitch when I do something wrong or even if I don't and apologize later! You make sure I keep my head on straight and make sure I'm headed down the right path! 4: She is always there when others need her. She was there for Marilyn and for me when we needed her most! She remained strong through everything. | How would I have ever guessed that 50 years ago, I would have given birth to a daughter with so many wonderful attributes; spunky, pretty, strong willed (nothing like me) and caring! Over the years, I have watched her grow and marry a great husband. Together they are raising a wonderful child, Matthew! Shelley is a good mother, loving wife and a caring friend. She is also a wonderful daughter! Every mother needs a daughter like her. I am so blessed to have her in my life1 | My favorite memory probably was when Matthew was born. The second was our trip to Florida in 2011, a much needed vacation for all! So many memories were made on that trip, and who would have guessed what was to follow. Life has so many twists and turns! | How proud Grandma and Grandpa Punkin would be of Shelley and her accomplishments. Jim, thank you for taking care of Shelley! And "NO" she cannot have the spare bedroom at my house!

5: 8 pork chops (1/2 " thick) 1 tsp. seasoned salt 1 tbsp. veg. oil 1 can cream of mushroom or cream of celery, undiluted 2/3 cup milk 1/2 cup sour cream 1/2 tsp. salt 1/4 tsp. pepper 1 pkg. (26 oz.) frozen shredded hash brown potatoes 1 cup (4 oz.) shredded cheddar cheese, divided I can (2.8 oz.) french-fried onions, divided Sprinkle pork chops with seasoned salt. In a skillet, brown chops on both sides in oil. In a large bowl, combine soup, milk, sour cream, salt and pepper. Stir in hash browns, 3/4 cup of cheese and half of the onions. Spread into greased 9 x 13" baking dish. Arrange pork chops on top. Cover and bake at 350 degrees for 45 minutes. Uncover; sprinkle with the remaining cheese and onions. Bake uncovered, 5-10 minutes or until potatoes are tender and cheese is melted and meat juices run clear. | Pork Chop Potato Casserole

6: I write these words on behalf of my Mom: To my best friend, You are my best friend, the one I always turned to for everything. Our daily talks meant the world to me. We have shared laughter, tears and many years of a treasured friendship! I love you like a sister! The support and love you have given me over the years has meant so much! I am so grateful for all that you have done on my behalf. Your kind heart and loving nature was so graciously bestowed upon me, and now you have given my girls the same! Thank you for being there for me through everything, and thank you for being there now for my family! And know that whenever you want to talk, I am still here to listen. I love you, Shelley! Always! | Love you like a sister!

7: 2 (#10 large cans) tomato sauce 40 cloves of peeled garlic, chopped or sliced 1 1/2 tablespoons of salt 5 lbs. hamburger meat Basil, typically ten fresh leaves, chopped Olive oil 1. Cook the meat in a pot of water until the pink is gone. 2. In the sauce pot, sauté garlic in 2 tablespoons of olive oil for a few minutes, add just enough water to cover the bottom of pan before the garlic browns. 3. Add the 2 cans of tomato sauce into the sautéed garlic. 4. Add the drained meat and place in the basil. 5. Cook until done. 6. Taste to make sure it tastes good, add salt if needed. 7. If it is tart tasting, add a bit of cinnamon (1/2 teaspoon). Adjust to taste! To can the sauce: 1. Place sauce in jars. 2. Place cans of sauce in a pot of water, with water filled to the bottom of the lid (or top of the neck of the jar). 3. Bring to boil. 4. After boiling begins, boil for twenty minutes. 5. When you push on the lid, if the button pops up the seal is not good. If this is the case, take off the lid and repeat the whole boiling process again until the pop of the lid stays down. 6. Take out of water and cool completely. 7. Can store in cupboard for 12 months. | Marilyn's Sauce | 40 cloves of garlic, whole chicken thighs and legs salt and pepper to taste 2 tsp of dried rosemary olive oil 1. Place chicken in casserole dish and throw in the garlic and sprinkle with salt and pepper. Then sprinkle with rosemary. 2. drizzle well with olive oil to the point of the bottom of pan has oil. This will cook the garlic until it is creamy. 3. bake at 375 for an hour. 4. you know it is done when the bone is brown and the garlic is soft. | 40 Clove Chicken | garlic, sliced thin 1 can diced tomatoes (28 oz) 1/2 tsp oregano chip steak 1. Saute garlic until light brown 2. add tomatoes immediately. Cook until tomatoes break down (about 10-15 minutes). 3. Add oregano, stir. 4. Add chip steak, cover and cook for 5-10 minutes. | Steak Pizziola

8: Tomato Salad Sliced tomatoes salt garlic, chopped thin basil lemon oil Mix all ingredients with tomatoes and drizzle oil.

9: Shelley, I am not good at these things! You already know that I am happy you are a part of our family. You know what family means. You are a good person! I appreciate all that you have done for my family. You mean a lot to all of us!

10: so many | Chicken Enchiladas | In a large skillet over medium heat, cook the ground beef and onion until the beef is evenly brown. Stir in water and taco seasoning. Simmer until water has evaporated. In a medium bowl, mix together sour cream, condensed soup, 1/2 of the tomatoes w/ green chilies and cheese. In casserole dish, pour half the enchilada sauce on the bottom of dish. Divide the meat mixture evenly between tortillas. Place a couple of tablespoons of cheese mixture over meat, and roll up. Place in a 7x11 inch baking dish. Repeat for each tortilla. Spoon remaining cheese mixture over the top of the tortillas and left over enchilada sauce and tomatoes with green chilies. Bake in preheated oven for 20 to 30 minutes. | 1 1/2 pounds lean ground beef 1 onion, finely chopped 1/4 cup water 1 (1.25 ounce) package taco seasoning mix 1 cup sour cream 1 (10.75 ounce) can condensed cream of chicken soup 2 cups shredded mozzarella cheese 10-12 (6 inch) corn tortillas 1 can of mild enchilada sauce 1 can of tomatoes and green chilies Preheat oven to 350 degrees . | Note: add a can of refried beans for extra flavor!

11: LIVE WELL LAUGH OFTEN LOVE MUCH | Words cannot begin to express how much you mean to me! I may be the shy, quiet one, but you must know that I feel so blessed to be able to call you my aunt. I hope you know that I adore you! You have been there for all of us on countless occasions, through the good and the bad times. It gives me the greatest of comfort knowing I can come to you for much needed advice or simply for a shoulder to cry on when I need it most, just like I use to do with my mom. There is not a day that goes by that I do not miss her. She always knew what to say, and knew exactly how to help in anyway she could. I see those same wonderful qualities in you! I really don't know where I would be without your love, support and understanding. Thank you for loving me unconditionally, like she did! I know she would be so grateful to you for being there for us girls and my dad! From the bottom of my heart, thank you for being such a wonderful aunt to me. You, uncle Jim and Matthew mean the world to me. You are all a precious part of my life. I love you all so much! I want you to know that I am always here for any of you, just like you are for all of us. We are family! 12: Tuscan Summer Chicken | 4 small boneless skinless chicken breast halves (1 lb.) 4 oz. (1/2 of 8-oz. pkg.) Cream Cheese, cubed 1/4 cup water 1/4 cup pesto 2 cups grape or cherry tomatoes 1 cup Finely Shredded Italian* Five Cheese Blend HEAT large nonstick skillet sprayed with cooking spray on medium-high heat. Add chicken; cover skillet with lid. Cook 5 to 7 min. on each side or until chicken is cooked through (165F). Remove chicken from skillet; keep warm. REDUCE heat to medium. Add cream cheese, water, pesto and tomatoes to skillet. Cook, uncovered, 2 min. or until heated through, stirring occasionally. RETURN chicken to skillet. Cook and stir 1 min. or until chicken is coated and heated through. Sprinkle with shredded cheese.

13: Family | Aunt Shelley, What can I say that I haven't said already in our daily talks. They mean so much to me and I look forward to hearing from you every day. Whether it is a phone call or text message, it makes my day! Now, you know we are too much alike and probably don't help keep each other out of trouble ......LOL. But, it's good to know I will always have somebody on my side, which is the right side. In all seriousness, I have looked up to you from the moment I got to know you. And now, I look up to you even more! You are an exceptional Aunt, friend, wife and most of all mother. I don't know how I would have gone through everything without you. You have been my rock, and I can never thank you enough for that. I know you will be part of my life forever and Makenzie will get to know my mom through all of us. I know my mom is looking down on you and smiling, because you are making her so proud. I love you so much and will always be here for you. Thank you for being my Aunt. I love you. Happy Birthday. I hope this year brings you many happy memories!

14: 1. Oil (any other than olive oil) 2. 2.5g of magic per serving (an oz of mids works well) 3. A Grinder 4. A Filter (coffee filter, pasta strainer) 5. Brownie mix 6. A Frying pan 7. A wood spoon For a whole batch of brownies (1 box) a half ounce of magic or an ounce of mids is what you need. Grind up the magic in your grinder multiple times until it literally turns into powder. Once the magic turns into a powder spread it right onto a frying pan. It’s a good idea to match the frying pan to the burner size for an even cook which is important when extracting the active ingredient. Pour oil directly onto the magic powder on the pan according to how much the brownie recipe asks for. Turn the burner on low (numbers 2-3) until it starts to simmer and then lower the burner to the lowest setting (labeled as low or simmer). Leave the burner on for 2-6 hours depending on how much time you have (2hrs is average) and stir the magic in the oil every 30 minutes with a wooden spoon. When the magic is done, pour the oil mixture into a filter (coffee filter works fine) to strain all the excess magic out. You should be left with a musky brown color oil. Use this oil to make the brownies by following the instructions on the brownie box. | When making ‘magic edibles’, you don’t just throw the magic into the food and chow down, believe it or not. The main active ingredient must first be extracted into the oil mixture and then added or cooked with the food. | Magic Brownies

15: My Favorite Aunt, Thank you for making me feel part of the family from the moment I met you. You have always been true to your word and I respect that. You speak whatever comes to mind with no regrets, even though at times, it is not solicited. But, I know it's like the little voice inside my head that tells me it is the right thing to do! I am glad we have bonded so much over the years. I remember what Michelle told me after the first time I met said to her, "He is so cute!" And now, I know you still feel the same about me, even more so! You are an extraordinary parent with well-rounded morals and values. I can only hope that I will be the same! You like to have fun with the people who love you. It's never a good party without you and a bowl full of fruit for my sweet tooth!

16: COCONUT MACAROONS 2 egg whites Dash of salt 1/2 teaspoon vanilla 2/3 cup granulated sugar 1 (3 1/2 oz.) bag flaked coconut (1 1/3 cup) Beat first 3 ingredients until soft peaks form. Gradually add sugar, beating until stiff. Fold in coconut. Drop by rounded teaspoon onto greased cookie sheet. Bake at 325, for approximately 20 minutes. Makes 1 1/2 dozen. | Yummy!

17: "There is always something for which to be thankful." -Charles Dickens | Shelley, I am thankful you are a part of our family. You are a good friend, a confidant, a good listener, a person that will be there for someone when they need you. You are a generous person with your time and help. You are a unique individual, never change! We love you just the way you are. I am giving you a recipe, that is one of my favorites and was Marilyn's favorite cookie. I hope you try them and enjoy.

18: Meaningful Moments | Memories with Shelley: I remember when I was in middle school, she took me to a mall to shop for some school clothes. It was a fun afternoon and I really enjoyed spending that time with her. I also remember being impressed with how quickly she could use a calculator without having to look at the buttons. :) She was such a fun, happy person. I was glad for that, not just for my own sake, but because I was happy that she was so good for my uncle Jim. They pick on each other a lot, but you can always tell that they love each other.

19: "Real abundance is found when we join hands with those we love." | 1 pound pork sausage 6 (1 ounce) slices of bread, cubed 2 cups shredded Cheddar cheese 6 eggs 2 cups milk 1 tsp. salt 1 tsp. ground dry mustard Directions: 1. Place sausage in large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside. 2. Layer bread cubes, sausage, and Cheddar cheese in a lightly greased 7 x 11 inch baking dish. In a bowl, beat together the eggs, milk, salt, and mustard. Pour the egg mixture over the bread cube mixture. Cover, and refrigerate at least 8 hours or overnight. 3. Remove the cassarole from the refrigerator 30 minutes before baking. Preheat oven to 350 degrees F. 4. Bake 50-60 minutes in the preheated oven, or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving. | Sausage Strata

20: 1 medium size diced onion 2 Ib hamburger meat 2 cans of corn 2 cans light red kidney beans 2 cans diced tomatoes 1 pkg taco seasoning 1 pkg Fritos 1 pkg shredded cheddar cheese | Taco Soup | 1. Brown the hamburger and onions 2. Add vegetables and tomatoes with liquid and seasoning to crock pot 3. Add the browned hamburger meat and onion to the veggies in your crock pot 4. Cook all day on low 5. Serve with Fritos and cheese

21: I love my Aunt Shelley! She always makes me laugh and I can always joke around with her and always have fun with her. Like all the fun we had on 2011’s Spring Break in New Smyrna Beach, FL. She is a great person and has a heart of gold. (As long as you don’t piss her off! (: LOL) She will always have my back and I LOVE HER! 22: Pecan Nugget Cookies 1 cup butter and 1/4 cup powder sugar, cream together T. water 2 cups flour 2 teaspoon vanilla, blend together 1 cup pecan, fold in. Roll into tablespoon balls Bake @ 350 for 20 minutes. Let cool, roll in powder sugar, eat! Makes about 22 cookies | Puppy Chow 6 cups crispix cereal 1/2 cup peanut butter ( can use crunchy) 1/2 cup margarine 12oz. chocolate chips 2 cups powdered sugar Melt peanut butter, margarine, and chocolate chips together in micro or on the stove top. Stir in cereal Put powder sugar in a paper bag. Next, put cereal mixture in the paper bag and shake until well coated! Its just as much fun to make as it is to eat! | Shelley means the world to me! First person I met when I moved to White Lake many moons ago! We've been bff's ever since! I can't remember her and I ever having a sore word between us. We're just like two peas in a pod. Lol!! 23: Brownie mix (9x13 pan) bake as directed and let cool 1 Box vanilla pudding (small) 8 oz Cool Whip 3-4 Bananas Strawberries While Brownies are baking: mix in bowl Vanilla Pudding with 1 Cup Milk. Add cool Whip then put in fridge. Slice Bananas and put on cooled Brownies Cover Brownies with Pudding and cool whip from bowl Top with Strawberries | Brownie Pudding Cake | Shelley is that rare type of friend that we don't need to talk to each other everyday, to remain close. In fact, months have went by before we've gotten a chance to talk or see each other. Yet I consider her one of my closest friends. I know if I needed something she would be there for me, and I would do the same for her. Whenever I have a Margarita I always remember the fun times we have shared and look forward to the many more to come. Karen Kepsel
