S: Family Favorite Recipes

1: This cookbook is inspired by all the amazing people that make up this family, viva la familia!

2: DEDICATION For all the time we spent together and all the times we shared, I only felt it right on this very special night to put my heart and soul into a gift for you. You have been a gift to me your whole life and you have brought me so much joy! I worked hard and at two things I am not very good at: 1) Cooking and 2) Computer skills; I put the two together and this is what I have for you. A book full of our family recipes, our beloved family members, some of the best friends and pets anyone could ever ask for. I hope that you enjoy it, use it and pass it on to my FrankieLou, Alexa, Matthew, Rheannon and all the other wonderful family members to come! 4: Kim's Blueberry Scones | 2 cups all-purpose flour 1/4 cup packed brown sugar 1 tablespoon baking powder 1/4 teaspoon salt 1/4 cup butter, chilled 1 cup fresh blueberries 3/4 cup half and half cream 1 egg | Preheat oven to 375 degrees. Cut butter into mixture of flour, sugar, baking powder, and salt. Add berries and toss to mix. In a separate bowl beat together cream and egg, and slowly pour into dry ingredients, stirring until dough forms. Knead just until it comes together, 3 or 4 times. Don't overwork the dough. Divide dough in half. On lightly floured board, shape each half into a 6 inch round. Cut into 6 wedges. Bake on ungreased sheet about 20 minutes. Serve warm!

5: KIM'S OATMEAL PANCAKES | 2 cups oats (Old Fashioned or Quick) 3 cups buttermilk 3 eggs, well beaten 1/2 cup flour 1 1/2 teaspoon baking powder Dash of salt 1 Tbsp oil Butter or oil for the griddle | Put oats into a large bowl, add the buttermilk. Let the oats soak in the buttermilk overnight. Mix in the eggs, flour, baking powder, salt and oil. Cook on a hot griddle. Serve with butter and maple syrup.

6: Kim's BANANA BREAD 5 tablespoons butter 1/2 cup granulated sugar 1/2 cup packed light brown sugar 1 large egg 2 egg whites 1 teaspoon vanilla extract 1 1/2 cups mashed, very ripe bananas 1 3/4 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1/4 teaspoon baking powder 1/2 cup heavy cream 1/3 cup chopped walnuts Preheat oven to 350. Spray bottom only of a 9x5x3 loaf pan with nonstick cooking spray. Beat butter in a large bowl at medium speed until light and fluffy. Add granulated sugar and brown sugar, beat well. Add egg, egg whites and vanilla; beat until well blended. Add mashed bananas and beat on high speed for 30 seconds. Combine flour, baking soda, salt and baking powder in medium bowl. Add flour mixture to butter mixture alternating with the cream, ending with the flour mixture. Add walnuts to batter and mix well. Pour into prepared pan. Bake until browned and toothpick inserted near center comes out clean, about 1 hour 15 minutes. Cool in pan on wire rack for 10 minutes. Remove from pan and cool completely.

7: AUNT JOAN'S CRANBERRY BREAD | Ingredients 1 1/4 cups all-purpose flour 1 cup sugar 3/4 cup whole wheat flour 1 1/2 teaspoons baking powder 1 teaspoon salt 1/2 teaspoon baking soda 1 teaspoon orange zest 2/3 cup orange juice 3 tablespoons light stick butter, melted 1/4 cup fat-free egg substitute 1 cup fresh cranberries, coarsely chopped 1/2 cup each dried cranberries and golden raisins | Preheat oven to 350 degrees. Spray a 5x9 inch loaf pan with nonstick spray. Mix flour, sugar, baking powder, salt and baking soda in a bowl. Mix the orange zest, orange juice and melted butter and egg substitute in another bowl. Add orange mixture to the flour mixture; stir just until blended. Add the cranberries and raisins; stir just to mix. Scrape the batter into the prepared pan. Bake until a toothpick inserted into the center comes out clean, about 1 hour. Let cool in the pan for 10 minutes. Unmold the bread; let cool on a rack

9: KIM'S KEY LIME PIE MARTINI Graham cracker crumbs 2 lime wedges 3 ounces vanilla flavored vodka 1/4 cup key lime liquor (KeKe Beach Key Lime Liquor is recommended) 2 tablespoons pineapple juice 2 tablespoons heavy cream (yields one martini) Rub one lime wedge around the lip of the martini glass, dip rim of glass into graham cracker crumbs to coat. Place glass in fridge for 30 minutes. Pour ingredients into shaker and fill half way with ice. Shake till ingredients are fully mixed. Pour into prepared martini glass, garnish with lime wedge. Enjoy!

10: Perfect for a girl's pool party!

11: Aunt Joan's Vodka Punch 1 quart pineapple juice 1 quart cranberry juice (make ice cubes with both juices) 1 bottle ginger ale 1/2 gallon sherbet 1 package frozen strawberries 1 package frozen melon balls 1/3 bottle vodka (or more!) Put all ingredients in punch bowl about 2 hours before serving time. Stir occasionally.

12: Dink's Malibu Baby | By the glass mix equal parts 2oz.. pineapple juice 2oz. cranberry juice 1 1/2oz. (shot glass or two) of Malibu Baby Rum can be made by the pitcher too!

15: Ingredients: 4 packages chopped spinach 1 box croutons - about 4 cups 8 eggs 1 cup parmesan cheese 2 small onions, chopped fine 1 1/2 cups melted butter salt, pepper, garlic salt or powder Cook spinach and drain well. Mix all other ingredients. Roll into small balls. Place on cookie sheets and freeze. When frozen store in plastic bags. When ready to use place on cookie sheets and bake at 350 degrees for 30 minutes. Serve hot. | AUNT MARGE'S SPINACH BALLS

16: MOM's PENNE VODKA 2 to 4 tbs. olive oil 1/2 stick butter 2 cloves chopped garlic 1 small onion chopped 1 small can tomato paste 1 20 ounce can crushed tomatoes fresh chopped parsley 1/2 cup vodka 1 pt. light cream 1/4 cup grating cheese Saute onion until light brown. Add tomato paste and crushed tomatoes. Cook for 20 minutes. Pour over cooked pasta. Sprinkle on parsley and add extra cheese if desired.

17: AUNT FRANNIE'S STRING BEANS 2 TO 2 1/2 lbs string beans 2 tbs. oil 1 tbs. apple cider vinegar 1 tbs. minced onion salt - pepper, as desired 1 tbs. or 1 clove garlic 2tbs. flavored bread crumbs 2 tbs. Italian grating cheese 1 tbs. melted butter Boil string beans, rinse and cool. Mix all ingredients and, if possible, let set for a while. Toss and then heat uncovered in a 350 degree oven for approximately 20 minutes. Serve hot or warm.


20: Miss Amanda's Vegetable Pizza 2 packages crescent rolls 1cup Mayo 2 8oz. cream cheese sliced grape tomatoes 16 oz. shredded cheese cut carrots 1 package dry ranch cut peppers (any broccoli color) 1. Roll out crescent dough onto a greased cookie sheet. Bake 375 degrees for 12 minutes. Let cool. 2. Mix cream cheese and mayo with the dry ranch and spread it onto the crescent dough. 3. Put vegetables and cheese on pizza. Let chill for 20 minutes and serve cold. I use reduced fat cream cheese, crescents, and mayo so I don't feel guilty about how bad this really is!!

21: MOM's CRANBERRY MOLD Everyone's favorite, especially UNCLE ANT'S! 1 package raspberry Jello 1 cup hot water. Mix the above together. Add to this: 1 cup apples (pealed), cut up and diced. 1 cup chopped nuts 1 can cranberry sauce Mix all together, pour in a plastic mold, chill till firm. Unmold before serving. This one is for you Uncle Ant Mangia!

22: B's BBQ Sauce | 1 onion chopped (small) 2 tbl. oil 2 tbl. vinegar 2 tbl. brown sugar 1/4 cup lemon juice 1 cup ketchup 3 tbl. worcestershire sauce 1/2 cup water garlic salt Brown onion in oil, add all other ingredients and simmer 1/2 hour

24: GRAM ALDI'S SWEDISH MEATBALLS | 1 lb beef 1 lb veal 1/2 cup water 1/2 cup bread crumbs 1 1/2 teaspoons salt 1/2 teaspoon nutmeg | Mix meat and onion well. Add 1/2 cup water to bread crumbs, add to meat. Add the rest of the ingredients and 1/4 teaspoon of the nutmeg to the meat mixture. Roll approximately 40 meatballs. Roll meatballs in flour and fry in butter. When all fried, add back to pan, add remaining flour. Add milk, water and the other 1/4 teaspoon nutmeg. Serve hot. | 5 tablespoons flour 2 tablespoons butter 1 1/4 cup water 1 cup milk 1 egg 1 small onion chopped fine

27: ARTICHOKE DIP by LOUISE 1 can artichokes 1 package creamed spinach 1/2 cup mayo 3/4 cup parm. cheese 2 cups grated mozzarella cheese Drain artichokes and place in food processor. Mix with creamed spinach. Add cheeses and mayo and put into casserole dish and bake at 350 degrees until brown and bubbly (approx. 35 minutes) Let sit and serve hot or warm.

35: Aunt Joan's Cavatelli | 3 cups flour 1 lb ricotta cheese 2 large eggs - slightly beaten Put 2 1/2 cups flour into a bowl. Make a well and add cheese and eggs. Work together adding more flour if necessary. On a floured surface, knead dough until smooth. Let it rest at room temperature, wrapped in plastic for 30 minutes. Form dough into a round and cut into quarters. Keep dough covered while making the cavatelli. Roll dough into a rope 1/4 inch round. Cut into 1/2 inch pieces. Transfer to lightly floured pan and allow to dry for 30 minutes. Cook in boiling water for 6 to 8 minutes.

36: 1 can crushed tomatoes 1 stick butter 1 tablespoon olive oil 1 onion, chopped 5 garlic cloves, minced parsley 1/2 teaspoon salt Saute onion and garlic in butter and oil in a medium sized pot. Pour tomatoes plus 1/4 can of water into pot. Sprinkle parsley and salt into tomatoes and add salt. Bring to a boil and simmer for 20 to 30 minutes with cover tilted, stirring occasionally. Makes enough for 1 pound of pasta. | Aunt Marge's Pomidori Sauce

37: Gram Aldi's Baked Macaroni 3/4 pound elbow macaroni 5 eggs 3 cups whole milk 4 tablespoons butter 1 pound velveeta cheese, cubed 1/2 cup grated cheese Cook pasta and drain. Pour into a 9 x 11 glass pyrex dish. Beat eggs and milk together. Pour over pasta. Add grated cheese and cubed velveeta cheese, pushing cubes down. Cut up butter and distribute evenly over pasta, pushing it down. Bake at 350 degrees for 50 to 60 minutes or until golden brown on top.



40: MOM's MANICOTTI SHELLS 1 doz. eggs 3 cups flour 3 cups water Mix together Butter crepe pan and heat pan Pour batter mixture thinly but cover pan. Watch carefully and turn according to need. Makes 50 to 60 shells. Fill generously and bake at

44: Mom's Crab Cakes | 1 lb drained crab meat 1 egg 2-3 slices white bread, soaked in cream 1 tsp worcestershire sauce 2 tsp baking powder 1 tbsp mayo 1 tsp parsley | Mix all ingredients and refridge for a while. Prepare patties. Fry in oil and butter mixture.

48: Miss Amanda's Veggie Lasagna 2 teaspoons olive oil 1/3 cup chopped onions 2 1/2 cups zucchini, sliced 2 cups sliced fresh portobello mushrooms 1 cup fat-free ricotta 3 tablespoons finely shredded Parmesan 1/4 teaspoon black pepper 6 whole-wheat no-boil lasagna noodles 2 cups prepared pasta sauce 1 cup shredded part-skim mozzarella 1/2 cup chopped, seeded tomato

49: 1. Heat the oil in a large nonstick skillet over medium-high heat. Add onions, zucchini, and mushrooms, heat 5 minutes or until tender, stirring. Remove from heat, set aside. In a small bowl, mix ricotta, Parmesan, and pepper. 2. Assemble, place 3 lasagna noodles in the bottom of a 2-quart rectangular baking dish. Spoon half the ricotta mixture over the noodles. Top with half the veggie mixture, half the pasta sauce and half the mozzarella. Layer with remaining noodles, ricotta mixture, veggie mixture and sauce. 3. Bake, uncovered, in a 375 degree oven for 30 minutes. Sprinkle with tomato and remaining mozzarella. Bake 5 minutes more or until heated through. Let stand for 10 minutes before serving. Cut into 6 pieces.

62: J 's | J | J | J | GRAHAM'S (Nellie) KNOTS 6 eggs 6 cups flour 2 sticks of butter or margarine 1 tsp. salt 1 tsp. vanilla or lemon juice 6 tsps. baking powder 1 cup sugar juice of 1/2 orange - optional Melt butter, add sugar and mix well. Add eggs vanilla and mix. Then add flour, baking powder salt and mix well. Spoon onto ungreased cookie sheet. Bake at 375 degrees for 10 to 12 minutes. Icing: Mix powdered sugar, lemon extract and water mix and ice when cookies are cool. THEY ARE AWESOME!

63: GRAHAM'S (Nellie) CARROT CAKE 3 cups sifted flour 2 cups shredded carrots 2 apples chopped small 2 cups brown sugar 2tsps. baking powder 2 tsps. baking soda 1 1/2 cups vegetable oil 2 tsps. cinnamon 1 tsp. nutmeg 1/2 tsp. salt1 cup white raisins (optional) 1 cup chopped nuts 4 eggs Boil raisins 5 min., drain; when dry toss with 1 tsp. flour. Mix all dry ingredients together. Add oil ad eggs and mix well with mixer. Add apples, carrots, raisins and nuts. Mix until blended. Pour into 9 1/2 in. greased and floured pan. Bake at 375 degrees for 45 to 60 min. Cool in pan 20 min.

64: Ricotta Cheese Pie 3 lb. can pot cheese 2 tbs. vanilla 1/2 cup flour 1/2 tsp. salt 8 eggs 2 cups of sugar Mix all together and pour into pie crust. Bake at 350 degrees for at least 1 hour. Do not remove from oven until set. | One of Gram's favorites

65: Grandma Nellie's Butter Cookies 1 lb. butter 1 1/3 sugar 1 tsp. baking powder 2 eggs 5 cups flour - sifted Grease cookie sheet Cream butter add sugar and blend. Add beaten eggs, baking powder and sifted flour. Put mixture in cookie press and press on to cookie sheet. Bake at 350 degrees for10 to 12 minutes. Check often as they may cook quicker in different ovens.

66: GRANDMA NELLIE'S RICE PUDDING 1 cup rice 1 cup sugar (or less to taste) 1 tsp. vanilla 1 tsp. nutmeg 1 tsp. cinnamon pinch of salt (makes a double batch) Put two quarts of milk (minus 1 cup) in pot with rice and sugar, boil slowly until rice is tender. Beat 2 eggs in1cup of milk, taken from the 2 quarts. Fold into mixture and cook for an additional 2 minutes. Cool, then refrigerate and sprinkle with extra cinnamon, if desired when serving.

67: NELLIE'S CHEESE CAKE Preheat oven to 300 degrees. 6 eggs beaten 1 1/4 cup sugar 2 lbs. softened cream cheese, cut up 1 pt. sour cream 2 tsps. cornstarch 1 tsp. vanilla extract 1/2 pt. heavy cream Cream together eggs, sugar, gradually add softened cream cheese and beat 10 minutes. Add sour cream, beat well, add vanilla, beat well. Beat all the mixture for at least 5 to 10 minutes. Bake for 1 hour, turn oven off, let cake remain in oven for 1 hour, then slip under broiler to brown top. Watch carefully as it browns so as not to burn. For best results chill overnight. | Bake in Spring-form Pan

68: BASIC POUND CAKE ala NELLIE 1lb. butter - softened 2 cups sugar 1 tsp. vanilla 6 eggs 3 cups flour 1/2 tsp. baking powder 1/2 tsp. baking soda 1 cup sour cream Sift together; flour, baking powder and baking soda. Set aside. In a large bowl cream together; butter, sugar and vanilla. Add eggs, one at a time, beating after each addition. Alternate adding flour. Use 2 loaf pans or one tube pan. Pour mixture in and bake approx. 1 hour Allow to cool.

69: Orange Juice Drizzle for Pound Cake 3 tbs. orange juice 4 tbs. powdered sugar Dissolve sugar in orange juice. poke holes in top of cake. Drizzle into holes, top with powdered sugar Drizzle gets added after cake is cooled and ready to serve! You can also leave off powdered sugar and ice with whipped cream, top with peaches (or the fruit of your choice) and enjoy!

72: AUNT KAR's HOPSCOTCH CAKE Bake any flavor box mix cake in rectangular mini muffin pan. On a large platter or aluminum foil-covered cardboard, place the cake pieces in hopscotch order (i.e. one up and down rectangular, the next sideways rectangular, etc.) Frost with canned white canned frosting. Separate frosting and make two different colors of your choice. Frost each mini cake in alternating color patterns. Refrigerate cakes after frosting until the icing hardens. Outline cakes with gel icing and place one number on the up and down rectangular mini cake and divide with gel icing and place two numbers side by side on the sideways mini cake. Re-chill so gel icing can harden and serve when ready, This is a kid's favorite!

75: Karen's Big Top Friendly Circus Cake Bake cake mix of your choice in two round layer pans, 8 or 9 1/2 inch rounds, as directed on package. Cool and frost cake with chocolate canned frosting. Add animal crackers to the top and bottom sides of the cake. Place green, red and yellow gum drops on the top of the cake between the animals. Outline the top of the cake with white gel icing and on the sides of the cake use yellow gel icing to simulate cage bars. Draw up and down lines, and then trace around in a rectangular fashion to liken the look of a cage. Add a squiggly line above the top of the cage with a blue gel and place a dot of yellow or white on the top and bottom of the squiggly line to add color

76: Who knew apples could be so much fun?????

77: Buy the deepest red apples you can find. Wash them, cut in half, removing any seeds. With a metal heart shaped cookie cutter, cut out apple hearts, dip in lemon juice to keep from turning brown. Place on a tray with alternating red side up and yellow side up. With the scraps, place the cut out of the heart shape to fill in space on the tray. Sprinkle with brown or white sugar, lightly and serve. Great for Valentine's Day parties or, just as a healthy, fun snack. | Just ask DeeDee and Lou! | AUNT' KAR'S HEART HEALTHY SNACK

79: Gram Aldi's Lemon Meringue Pie....Delicious!!!

82: Place oven rack in middle of oven. Preheat oven to 350 degrees. Crumble the almond paste into a mixing bowl. Beat with a handheld electric mixer until finely crumbled. Sprinkle the confectioners and regular sugar over the almond paste and continue to beat until the sugar is incorporated. Beat in the egg whites one at a time and continue beating until the batter is smooth. Put the pine nuts in a bowl. Pinch off a tablespoon size piece of dough using 2 spoons and drop it into the nuts. Then form into a ball and place on baking sheet. You can also just roll the dough in your hands to form the cookie and then press into nuts but it will be very sticky. Bake the cookies until lightly browned and soft and springy, about 20 minutes. Remove and cool completely on a wire rack. Cookies can be stored at room temperature for up to a week or can be frozen in plastic container. Dust with confectioners’ sugar before serving if desired. | Pignoli Cookies Makes about 3 dozen/ Oven 350 degrees Cover baking sheet with parchment paper Ingredients: 1 pound canned almond paste (do not use almond filling it must say paste) Most food stores sell it in 8 oz cans. 1/1/2 cups sugar 3 egg whites 1 cup pine nuts, (I use 1 pound of nuts) cup confectioners’ sugar

84: B's Jewish Apple Cake Set oven at 350 degrees, butter and flour tube pan. Combine 2 tsps. cinnamon, 5 tbsp. sugar and 4 large apples sliced. Combine 4 eggs, 1/4 cup orange juice and 2 1/2 tsps. vanilla. Add 3 cups flour, 2 cups sugar, 1 cup oil, 3 tsps. baking powder. Beat until smooth. Pour 1/2 of the batter in the pan, add 1/2 apple mixture, then remainder of batter on tow with apple mix. Bake for 1 1/2 hours.

85: Grandma Nellie's Jewish Coffee Cake Set oven at 350; grease pan 3 1/2 cups flour 1tsp. salt 1 tsp. baking powder 1/2lb. margarine 4 eggs 1tsp. vanilla 1 pt. sour cream 2 cups sugar 2 tsps. baking soda 1/2 cups walnuts Beat margarine and sugar. In another bowl, 2 cups sour cream, 2 tsps. baking soda. Add 1 egg at a time to sugar. Alternate some sour cream and flour, add more flour until used up. Lastly, add vanilla. Bake for1 hour and 45 minutes. Filling: 1/2 cup sugar, 2tsps. cinnamon and 1/2 cup walnuts

87: The Old Woman Who Lived In The Shoe Cake Prepare box cake mix according to directions, minus two tablespoons of water. Pour batter in to two greased and floured aluminum (disposable) loaf pans (approx. 9x5x3) Form edges of one pan in a pointed, roof-like shape. The other pan should be rounded off at one end to form the toe of the shoe. Place the rounded toe shape loaf on a serving plate or tray; stand the roof-shaped loaf upright against the horizontal loaf. Tint canned frosting in a playful color (i.e. pink, blue, etc,), and frost both loafs. To decorate use pillow mints for the roof; red hots for the eyelets of shoe, red or black shoestring licorice for shoelace; milk or dark chocolate squares for the door and window. Tie a bow with shoestring licorice and place it on top of the roof or above the front window. It's sure to be the talk of your party!

88: Heart Cake Full of Love

89: Soften two half gallons of ice cream (any flavor). Scoop and press one half gallon into a heart shaped spring form pan. On top of the ice cream you can place any topping you like (i.e. crushed cookies, mini chocolate morsels, nuts or fruit. Then scoop and carefully place the second half gallon on top of the filled center, so as not to disturb the filling. Place in the freezer, covered with plastic wrap for 8 to 10 hours. Gently unmold the pan by dabbing the outside of the pan with warm water. Place the cake (unmolded) back in the freezer and allow to sit for 2 to 4 hours. Ice cake with cool whip (you can tint it to any color you like). Smooth sides and decorate according to the occasion.

91: Baseball and Mitt Cake Prepare two box cake mixes. Pour one batter mix into a greased and floured round layer pan 8 or 9 1/2 inch pan. Pour the second batter mix into a round bowl pan - also greased and floured. Bake according to package and cool. Place your right hand on the round layer cake and carefully trace around it with a toothpick. Spread your fingers wide and when cutting around the tracing, enlarge the area by cutting wider and longer in the finger and palm area. Ice with dark chocolate frosting. Cut licorice into short strips and lay between fingers for laces. The round bowl cake should be placed with the roundest side up. Ice with white frosting and decorate with red gel icing to simulate stitching.

92: EASTER DeeDee

93: IN YOUR EASTER BONNET CAKE Make two box mix cakes (any flavor) according to directions. Pour into one into a large round baking pan, the balance of the mixture should be poured into a smaller round pan. Ice with cool whip or canned frosting (tine in Easter color of your choice) Smooth icing and wrap a colorful ribbon around the top tier of the cake. Decorate with jelly beans or the Easter candy of your choice. You will be proud to display this cake on your Easter table!

95: Irish Jello Flag Make two boxes of orange and green Jello according to directions on the box for jiggler consistency. Pour contents into mini ice cube trays and place in refrigerator to set. Gently remove Jello pieces from the ice tray and place on platter or covered tray (as shown on the left of this page). 102: JUDY'S WHOOPIE COOKIES 1 egg 1/3 cup veg. oil 1 cup sugar 2 cups flour 1/2 cup cocoa powder 1 tsp. baking soda 3/4 cup buttermilk 1 tsp. pure vanilla extract Filling: 1/2 cup butter (1 stick), at room temp. 1 cup powdered sugar, sifted 1 cup marshmallow creme or fluff 1 tsp. pure vanilla extract Preheat oven to 350 degrees

103: Grease two large cookie sheets and set aside. In a large bowl, beat the egg and vegetable oil. Gradually add the sugar and continue beating until pale yellow in color. In another bowl, sift together the flour, adding the dry ingredients and buttermilk to the egg and sugar, beginning and ending with the dry ingredients. Drop the batter by tablespoons onto the cookie sheets. These will spread a lot, so only place 6 cookies per sheet at a time. Bake 8 to 10 minutes, until the top springs back when lightly touched. Remove to wire racks to cool. When fully cooled, spread the filling mix between two cookies to make sandwiches. For the Filling: In a medium bowl, combine all of the ingredients and beat until light and fluffy. Prep time: 30 minutes Baking time: 8 to 10 minutes per batch Serving per batch: 12
