FC: Secrets from Grandy's Pantry

1: Dear Cammie, Cooking has always been a big part of our family and some recipes are so special that they could be considered heirlooms. Although this cookbook doesn't even begin to cover all of our best family recipes, it is a start. Grandy gave me these special recipes to share with you as you start your new life with Brian. And hopefully one day, you can pass them down to your grandchildren to carry on the cooking legacy. Love Always, Natalie 10-2-2010

2: Hors D'oeuvres | "Cooking is like love; it should be entered into with abandon or not at all." Julia Child

3: Chile con Queso 1 lb Velveeta (cute in cubes) 1 can Hormel Chile (no beans) 1 bunch chopped scallions 1 4oz. can of green chilies chopped 1/4 tsp. Tabasco Bake at 275 for one hour | Hot Crab Spread 8 oz. Cream Cheese 1/2 cup of mayonnaise 1 bunch of scallions 1 can of Polar Fancy crab meat Worcestershire and Tabasco Top with sliced almonds Heat 20 minutes at 375 or kill bubbly Serve with Carr crackers

4: Cheese Wafers 1 cup of butter 2 cups grated extra sharp cheddar cheese 2 cups flour 1/3 cup of red pepper 1/4 teaspoon of salt 2 cups rice cereal (rice krispies) 1/2 cup chopper pecans Blend first 5 ingredients together. Add cereal and pecans. Roll in balls, the size of marbles and flatten in hand. Place on non-greased cookie sheet. Bake at 350 for 10 minutes or until lightly brown.

5: Louise’s Cheese Puffs 20 slices white bread 1 8 oz. cream cheese softened 1/4 cup grated sharp cheddar 1/2 cup of mayo 2 Tbl. Chopped chives 1/4 tsp. cayenne 1/4 cup of grated Parmesan Cut bread rounds, mix remaining ingredients in order given. Spread on bread rounds. Bake at 350 for 5-8 minutes till brown. Freezes well.

6: . | Shrimp Toast lb. raw shrimp 2 scallions 4 water chestnuts 1 tsp. minced ginger root tsp. sugar 1 tsp. salt 1 tsp sherry 1 Tbl. Dark soy sauce 1 egg 6 slices of stale bread 1 Tbl. Water Chestnut powder 2 to 3 cups of peanut oil or cornstarch for binding Shell, devein, wash, drain and dry shrimp, mince. Mince water chestnuts, scallions and ginger. Dissolve water chestnut powder in sherry and soy sauce. Mix all 10 ingredients together and chill at least one hour. Remove crusts and cut each piece of bread into 4 triangles. Spread about 1 Tbl. Shrimp mixture over each triangle. Heat oil in wok to 375 degrees. Gently lower bread into oil with shrimp side down with fingers. After 1 minute turn over and fry another minute or till golden. Lift toast out of oil with wire strainer and drain on paper towels. Blot tops with paper towel. Make sauce of sesame oil, soy sauce and scallions.

7: Caviar Pie 3 Hard cooked eggs, finely chopped 1 TBL Bermuda Onion, finely chopped 5 TBL butter, melted 1 jar Caviar 1 cup of sour cream Combine egg, onion and butter. Line flat dish with plastic wrap and pour in mixture and refrigerate till hard. Turn mixture over and cover with caviar. Top with thin layer of sour cream. Serve with Melba toast and lemon wedges.

9: Red Pepper Soup 3Tbl butter 3 large red peppers (seeded & chopped) 1 med. onion, chopped 1/4 tsp ground cumin pinch of cayenne pepper 3 cup homemade chicken broth or 2 cans 2 tsp lemon juice salt to taste Melt butter in 3 qt saucepan and pepper and onion and cook till onion is soft but not brown. Add cumin and broth. Simmer 20 minutes and puree in cuisine art. With slotted spoon add some broth and process till smooth. Return to pan. Mix in lemon juice and cayenne. Add salt if necessary.

10: Cheddar Soup 1 small onion 2 celery stalks 1 green pepper 2 carrots 4 Tbl Butter 4 Tbl flour 2 Tbl sherry 4 cups chicken stock 2 cups milk 3 cups grater cheddar Chop veggies and cook 10 minutes in butter. Stir in flour. Add stock. Stir till slightly think. Add cheese, cook till melted. Add milk, sherry. Salt and pepper to taste. Place kettle over hot water and heat 20 minutes.

11: Cold Curry Chicken Soup 1 can cream of chicken soup 1 can half and half 1 Tbs curry 3 tbs lemon juice Mix in blender and season to taste.

12: Chinese Cole Slaw 1 lb. cabbage, shredded 3 or 4 minced scallions 1/3 cup sesame seeds 2 packs Ramen Noodle soup Crush noodles and brown in 3 Tbl. oil with sesame seeds Dressing: 1/2 cup peanut oil 2 Tbl. soy sauce 1/2 cup sugar 1 Tbl. sesame oil 1/4 cup rice vinegar Mix and toss with cashew nuts. Dress salad when ready to serve. | French Dressing 1/2 cup olive oil 1/2 c salad oil 2/3 cup vinegar 1/4 cup sugar 1 tsp. salt 1 tsp. dry mustard pepper to taste

13: Green Goddess Dressing 1 cup mayo 1 Tbl lemon juice 1/2 cup sour cream 1 Tbl Tarragon vinegar 1 clove mined garlic 1/2 tsp salt 1/4 cup scallions Freshly ground pepper 1/4 cup parsley Mix all ingredients . | Poppy Seed Dressing 1 1/2 cup sugar 2 tsp. dry mustard 2 tsp. salt 2/3 cup vinegar 1 small onion, chopped 3 Tbl. poppy seeds 2 cups vegetable oil Mix well and refrigerate

14: Main Dishes | "The secret of a happy marriage is finding the right person. You know they're right if you love to be with them all of the time." -Julia Child

15: Hellman's Parmesan Crusted Chicken 1/2 cup Hellman's Mayo 1/4 cup grated Parmesan 4 boneless skinless chicken breast, pounded 4 tsp. bread crumbs Herbs, Salt and Pepper Mix mayo and cheese and spread it on the chicken. Then sprinkle with crumbs and herbs. Bake at 425 for 20 minutes.

16: Aunt Suzy's Mustard Chicken 6 - 8 boneless, skinless chicken thighs 1 jar Dijon mustard 1/2 cup safflower oil 1/4 cup soy sauce juice of 2 lemons Bunch of scallions, chopped few dashes of Cayenne Whisk the above ingredients in order. Marinate chicken at least 24 hours. Cook on grill turning once (about 10- 15 minutes)

17: Hamburger Deluxe 1/4 lb. ground sirloin 2 tsp. butter 2 or 3 dashes Tabasco 3 or 4 dashes worchestershire 1/2 tsp lemon juice Cook ground sirloin in salted skillet. Mix the rest of the ingredients together, heat and pour over sirloin. Serve on 1 slice trimmed butter toast and sprinkle with finely chopped parsley.

18: Budget Meatballs in Sour Cream 2 lbs. ground chuck 1 1/2 tsp. salt 1/4 tsp. pepper 2 eggs 1 large onion chopped 1 cup soft bread crumbs 1/2 cup tomato juice 1/4 cup flour 2 cups sour cream 1 tsp dill Combine chuck, salt, pepper, eggs, bread crumbs and tomato juice and shape into balls. Brown in skillet and remove meatballs. Pour off fat except for 1/4 cup. Stir in flour, water, sour cream and dill.. Salt and paprika to taste. Cook till thick. Add meatballs

19: Pork Chops Hongroise 4 loin pork chops salt and ground pepper 1 tsp. paprika 2 tsp. vegetable oil 3/4 cup finely chopped onions 1/2 cup dry white wine 1/2 cup heavy cream 1 Tbl. Dijon mustard Heat oil in heavy skillet. Season chops and brown 10 minutes. Turn and cook 10 minutes more. Sprinkle the onion between chops, cook briefly. Remove chops to warm platter. Add wine and cook till almost totally reduced. Add cream and cook on high heat about 5 minutes. Remove and stir in mustard.

20: Cheese Casserole Grease 10 x 13 casserole dish. Remove crusts from 10-12 slices of white bread. Enough to make 2 layers in casserole. Butter each slice and place butter side up in baker. Sprinkle with 3/4 lb. grated sharp cheddar- cover with another layer of bread. Beat together: 6 eggs 4 cups of milk 1 Tbl grated onions 1 1/2 tsp. dry mustard 1 tsp. salt Poor mixture over bread and let stand overnight in fridge. Bake for one hour at 325.

22: Side Dishes | “I cook with wine, sometimes I even add it to the food.” W.C. Fields

23: Nana's Rice 1/2 cups Rice 1 cup Heavy Cream 1 pat butter Salt and pepper to taste small onion, chopped and sautéed 1 (16 oz) can tomatoes fresh or dried basil to taste Place all ingredients in double boiler, cover and simmer 1 and 1/2 hours. Stir Note: This recipe can also be made in a rice cooker on the white rice setting

24: Rich and Sweet Tomato Pudding 1 15 oz. can tomato puree 1 1/2 cup brown sugar 3 cups slightly packed bread crumbs (cubes) 3/4 melted butter Soak bread crumbs in butter. Meanwhile, cook the tomato puree and brown sugar for 5 minutes. Combine and place in quart casserole dish. Bake 45 minutes at 350 degrees. | Puffy Sweet Potatoes Pare and cut into large chunks 4 or 5 medium potatoes (about 3 lbs.) Cook till tender in 1 cup orange or pineapple juice. Drain, reserving liquid. Mash potatoes and add 1/4 cup butter, 1 tsp. cinnamon. Beat till creamy and spoon into casserole dish. Press marshmallows on top. Cook at 350 for about 30 minutes.

25: Oven Roasted Portobello Mushroom 4 large portobello mushrooms, stems removed and chopped 5 oz. boursin 1 Tbl olive oil plus some for greasing pan 2 Tbl fresh basil, chopped 1/2 tsp kosher salt 1/4 tsp. ground black pepper 2 Tbl bread crumbs Mix together chopped steams, cheese, 1 Tbl live oil, basil, salt and pepper. Stuff caps - top with bread crumbs. Cover with foil and bake 30 minutes. Remove foil and bake 15 minutes longer till brown. | Squash Casserole Saute 1 cup finely chopped onions in 1/4 cup of butter. Peel and cook 2 lbs (4 or 5) summer squash. Drain. Mix 1/2 cup sour cream, 1 tsp salt and freshly ground pepper. Top with 1/2 cup soft bread crumbs. Bake at 3 50 for 35-40 minutes.

27: Goldies First Step: Mix 1/2 cup butter, 1 cup flour, 1/4 tsp. salt, 1/4 cup sugar. Press into 9" square pan and bake for 20 minutes. Second Step: Beat 2 eggs, then mix well with 3 Tbl lemon juice, 1 cup sugar, 1/2 tsp baking powder, 3 Tbl flour. Pour over first step and bake for 25 minutes at 350. When cool, cut and roll in confection sugar

28: Grandy's Apple Crisp 4-5 cups of sliced apples 1 tsp cinnamon 1/2 cup water Mix cinnamon and water and pour over apples. 1 stick butter, sliced thin 1 cup sugar 3/4 cup flour Mix above ingredients and spread over apples. Bake at 350 for 1 1/2 hours. Top with Hard Sauce: 5 Tbl butter 1 cup of confectioner's sugar 1/2 tsp vanilla Cream ingredients.

29: Grandy's Tollhouse Cookies 1 stick butter 6 Tbl brown sugar 6 Tbl white sugar 1 egg 1 cup flour 1/2 tsp. baking soda 1/2 tsp. salt 1 cup chocolate chips 1/2 cup chopped walnuts 1/2 tsp vanilla Combine sugars, egg, butter and vanilla. In another bowl, mix flour, baking soda and salt. Then slowly combine the two bowls using a wooden spoon to mix. Add chocolate chips and walnuts. Bake at 375 for 10 minutes.

30: Sticky Buns Dough: Cinnamon Mix: 1 pkg active dry yeast 1/2 cup sugar 1 cup warm water 2 tsp. cinnamon 1/4 cup sugar 1 tsp. salt Topping: 2 Tbl butter 1/3 cup melted butter 1 egg 1/2 cup packed brown sugar 3 1/4 to 3 1/2 cups flour 1 Tbl. light corn syrup 1 cup pecan halves 1/2 cup sugar mixed Dissolve yeast in warm water. Stir in sugar, salt, butter, egg and 2 cups flour. With spoon, work in more flour till dough is easy to handle. Put in greased bowl, cover with plastic wrap and refrigerate overnight. Lay pecans in 2 9" pie pans. Mix the topping and spread over pecans. Roll dough 1/2" thick 15" long. Spread cinnamon mix over dough. Roll like a jelly roll. Cut into 1" pieces. Place in pie plates and let rise 1 1/2 hour or till double volume. Bake at 350 for 25-30 minutes. Remove by inverting on plates.

31: Blueberry Pie 2 9" crusts 4 cups blueberries 1 cup sugar 3 Tbl flour 1/8 tsp. salt 1 Tbl lemon juice 1 Tbl butter Mix sugar, flour, and salt in large bowl. Toss blueberries in lemon. Pile into crust and add butter. Add top crust. Bake at 425 at 10 minutes then 350 for 30-45 minutes. | 1/4 cup butter 1 cup packed light brown sugar 1 egg 3/4 cups sifted flour 1 tsp backing powder 1/2 tsp vanilla 1/2 cup chopped nuts | Melt butter, remove from heat. Blend in sugar. Beat in egg an then the rest of the ingredients. Put into an 8" square pan. Bake at 350 for 20-25 minutes. | Grandy's Butterscotch Brownies

32: Peanut Butter Bars 18 oz. jar creamy peanut butter s sticks of butter 1 box 10x sugar melt and spread in jelly roll pan. Melt 1 stick butter 12 oz bag semi sweet chocolate and spread over. Refrigerate. Cut into bars.

33: Pumpkin Chiffon Pie Mix the following together in double boiler: 1 pack gelatin 3/4 cup brown sugar 1/2 tsp. salt 1/2 tsp. nutmeg 1 tsp. cinnamon Then, stir in and mix well: 1/2 cup milk, 1/4 cup water 3 egg yolks 1 1/2 cup canned pumpkin Cook over boiling water, stirring occasionally till gelatin dissolves and mixture is heated (about 10 minutes). Remove from heat. Chill till mixture mounds from spoon. Beat 3 egg whites till stiff. Beat in 1/4 cup sugar - fold in pumpkin mixture. Pour into 9" baked pie shell. Chill till firm. Serve with whipped cream.
